I used thick-cut American bacon rather than "Canadian Bacon," whatever that is, and I think it worked perfectly. It is a great dish! Wait..."large batch" is actually the regular batch, and it is a lot of beans! Speaking of beans...I made hummus using the Balaboosta cookbook by Einat Admony. It was great! And as I may have mentioned a few weeks ago the first time I used dried chickpeas. Definitely better than canned! And I think that's one of the reasons why Weasel's recipe is so good...dried beans are simply better than the precooked canned ones! Bread crumbs have gone up in price enough that I now make my own. Bread crumbs? What can't the Biden/Harris/Obama junta f*ck up? I use bread crumbs to make Pork Milanese, which is oodles better than chicken! It's in my regular rotation, and is so damned easy that I have to resist making it a few times a week. For four chops I use about six ounces of breadcrumbs, which is most of my bread consumption! That doesn't sound like much, and big containers of plain breadcrumbs used to be inexpensive. But no more, so when I bake the occasional loaf of bread, I dry the remains and grind it up in a food processor. It's easy, and I feel quite virtuous and frugal! They are also better than commercial, because they have lots of flavor, unlike the commodity bread that is used in commercial breadcrumbs. Good butter, and Flap Meat...whatever the hell that is...just send it, Broccolini that isn't $6/bunch, garlic...lots of garlic!, well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com. Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too. My and the world's patience has run out. Shaken Manhattans henceforth will be banished to the land of Long Island Ice Teas and Frozen Strawberry Margaritas. And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. Comments(Jump to bottom of comments)1

I went to a church wine tasting last night, and there's one woman who always makes a nice beef tenderloin. I've asked her before if she trims it herself, and even gone so far as to volunteer, because buying pre-trimmed roughly doubles the price of an already expensive cut. She hasn't taken me up on it yet, but I hope she does. I can use the practice anyway.

Making chicken stock today in the insta pot. Let it cool, then measure out a cup and put in freezer bags to be used all fall and winter.

In any German Wirtshaus, the "Wienerschnitzel" is made wit pork cutlets instead of veal. That is, the Viennese version if "Veal Milanese" was corrupted by the Germans (and Czechs) to use a cheaper meat. I like the pork version better than the veal. By the way, it is very rare to have an allergic reaction to peanuts just by being near them. It can happen if there is a copious amount of peanut dust that is inhaled, but simply having them in a bowl doesn’t create this situation. Same with touching them.

On the topic of weird restaurant concepts, a restaurant opened near my office whose theme was toilets. You literally sat on toilets at your table. The lobby looked like an Army latrine with a row of about 15 toilets extending from the wall. Make yourself comfortable while you wait!

I remember when I first started commenting on the food thread several years ago I got some grief because I was an advocate of dried over canned beans. Almost everyone thought it wasn't worth it. Glad to see the light dawning. But in the meantime I've discovered that Goya beans are the only canned beans that aren't overcooked and I often use their canned chickpeas for a quick salad. Since I'm the resident adult-onset allergy person here... Yes, you can be allergic to alcohol, although that's normally more commonly b/c of its independent ingredients vs the alcohol itself. It is rare to be allergic to just alcohol itself, but it does happen. That said, alcohol intolerance is a more common issue for many folks. It is not the same as "being a lightweight" and makes folks feel pretty dang terrible. It tends to be an enzyme problem in the body, usually inherited (but again, not always)... Did make chili yesterday from 7 Anaheim, 11 chili peppers, oregano and basil from garden, 1 bell pepper, 1/2 onion, kidney beans and ground beef. Tje chili peppers are hot, way more than last year, so this time cut them up fine

Kids made a double batch of dairy and nut free cinnamon rolls for the 2nd kid's birthday celebration (she didn't want cake - she's my budding nutritionist so she wanted exactly what she wanted if she was gonna have sugar). They are pretty darn spectacular, and I am thankful I have kids who don't mind "kneading, rising, rolling" allergy safe baked goods that I just won't do (the 2 oldest took this on for me)...

Recently made chaana daal, chickpea curry, after trying some in a heat-and-eat pouch from an Indo-Pak grocery. Used dried chickpeas and was satisfied with the results using the pressure cooker. There are lots of recipes on the web. I just chose one that seemed pretty basic and called for ingredients I already had.

Mangos went heavily on sale last week around here, so I bought the maximum. Ended up using the remaining ones yesterday to make (a) mango-peach chutney from an Australian cookbook seriess canning volume and (b) Zaklog the Greats mango jam from The Deplorable Gourmet. I added jalapeño.
I havent tried the latter, but it was good cleaning the pot. Although I probably used too much brown sugar. The recipe just calls for brown sugar, and I always have dark on hand. I think it would be better if Id diluted it down to light. I had the chutney this morning from the one jar that didnt seal and it was quite good. Ham hock? You mis-spelled "Navy Bean Soup" for split-pea but OK.
I always liked the meaty ham bone, not so much the hocks, which are part of the leg and hoof or whatever, and not a lot of meat on them. They tend toward a little funky, I thought. I have good results using a pressure canner with the bones regardless, to extract all the marrow goodness for flavor. It also speeds up the cooking process naturally. Dolly Parton's Stone Soup Recipe
In a large soup pot, combine 2 qts, chicken stock or canned low-sodium broth; 1 lb. of russet potatoes, peeled and diced; 1 (14 ½-oz.) can diced tomatoes; 1 small head cabbage, coarsely chopped; 1 lb. of turnips, peeled and diced; 2 large carrots, diced; 1 small onion, chopped; 4 garlic cloves, minced; and a smoked ham hock. My friend has 2 kids with nut allergies, and (when they were younger) she's had to grab epis b/c her neighbors through open (empty) peanut shells in their yard (which blew into her yard) and her kids picked them up, then eventually put their hands in their mouths (we all do it - chew nails, lick fingers, etc) - then epi pen reaction and scary hospital visit. So, I get a restaurant saying "no nuts here" for a certain section - a surprising amount of non-Asian chain restaurants don't actually serve nuts anymore. I make a regular size loaf of sourdough, and it lasts me about a week and a half. I do have to put it in a zip lock bag and refrigerate it for it to last.

I was on an airplane several years ago and they asked over the public address system for passengers to voluntarily not request any snacks containing peanuts because someone was on board with an acute allergy. I am OK with Piper's recipe, but I would skip the broth and just go with peas, water to cover, shredded carrot for sweetness, possibly a couple of tablespoons of vinegar, black pepper, as much of the ham hock as you want to add and cook it down for 20-40 minutes at 15 lbs pressure.
I might add celery seed but I might forget it too when it goes back to pressure and gets cool enough to do so, after you take it off the burner, shred off the meat as fine as you can do and put the bone to one side. Came out a lot tastier than normal, maybe from the packet of onion soup and a tablespoon of chicken bouillon. Made 7 pints, so I froze most of it. I just cooked up and canned 7 half pints of peach preserves.
Recipe is simple, 2 qts of chopped peaches, lemon juice, pectin, and 6 cups of sugar. Cook the fruit, the pectin and the lemon juice down until the finely chopped peaches are soft, add the sugar, and stir it in, then cook it until you get to jelly stage as judged by your thermometer or by running it off the wooden spoon then can it in boiling water bath for as long as the extension service says to can it. 3 lbs of peaches at the farm stand was 15 bucks. Because I can function as an extrovert but am really an introvert I am really tired after church. I love them but leading a service and preaching wears me out. Therefore kindly spouse either makes lunch or we go out. Today we went to the local Mexican restaurant-not it is not Chipoltes and none of us has ever had intestinal issues from eating there. Husband and I share a bowl with meat and vegetables and beans, and son has his own thing. I am going to make BLT's tomorrow with delicious bacon from the Amish market and great tomatoes. I freeze it until I have a need for it. I dont grind it first because I might want to use it in bread pudding. I generally grind the bread in a blender or food processor but have been known to risk just chopping it with a big knife. If frozen, the bread needs to sit out (probably on a cookie rack) to dry, especially if grinding using machinery, since any liquid will turn it into a gooey mess. Here’s the specific anime/food connection for that restaurant. The character Uzumaki Naruto (from the famous anime/manga Naruto) is known for loving ramen, and he is named after the narutomaki fish cake with a spiral pattern that is used in ramen. Naruto is the guy with spiky blonde hair eating ramen in the window.

So, when an allergy order is on, they are concentrating on the group of dishes that it's ordered with (very few restaurants have separate spaces where they bring it out separate - the cruise ship did and big places do, but that's abnormal). So, having no nuts in the order means the guy who got the new gloves and knife (which is pretty standard) for my dish doesn't then touch tree nuts while still in the process of making my order, when he's trying to juggle 2 dishes at once... Stephen Price Blair, when I buy pectin it is Sure-Jell, but this year I made pectin out of the early green apples
Pectin is fairly simple, you chop up the green apples, cook it down until the chunks are soft and beige, then you strain it out. You test it by putting a teaspoon in a cup of rubbing alcohol, if it gels into a gooey lump it is pectin. I cheated this year and ground the apples up in a juicer, and then cooked it, and I am not convinced it worked right. when I do a shredded pear or apple conserve I often don't use pectin, since the fruit is solid enough and has natural pectin in it, but you have to keep an eye on it because if you don't cook it long enough to the right temperature you have syrup, and if you cook it too long you wind up with really stiff jam, that is something like Turkish Delight. I was informed by my doctor at the ER when being discharged after a kidney stone that leafy green vegetables can lead to their formation. Yes, it's very strange. There are a lot of kids with food allergies, not only nut allergies. Wondering if it's something during food processing, pesticides, or other causes. Industrial farming, genetically modified foods/designer seeds, chemicals used to boost growth in crops and livestock, Gates now pushing vaccines on farm animals. I just pulled some boneless pork chops off of the grill, melt in your mouth goodness. Seasoned them with mortons nature's blend seasoning put them on the grill and flipped them at 125 and then turned the grill off and let them sit for 5 minutes. Pulled them off and let them rest in the house for another 5 minutes and they were fantastic.

Okay, so I served the soup with the Most Stupidly Easy Yet Delicious Spaghetti Dish in the Universe
I'm sure this has an Italian name but I just memorized the recipe (very easy) and it is very delicious and was recommended online by some chick who lived in Italy for awhile. So then- The Most Stupidly Easy Yet Delicious Spaghetti Dish in the Universe Ingredients: 1lb dried spaghetti 10 oz canned tuna* .5 cup butter(1 stick) freshly grated black pepper salt 1) Boil spaghetti in heavily salted water. 2) open cans of tuna, drain, and put into large bowl break into pieces 3) Slice butter into thin slices and add to tuna in bowl 4) Grind a lot of black pepper into bowl with tuna and butter. A lot. Like you think you ground too much a lot. 5) When spaghetti is done, drain and place while still hot in bowl. 6) Toss until all butter melted and spaghetti is glossy and tuna and pepper well distributed throughout 7) Eat! Surprisingly delicious. Reminds me a little of Cacio a Pepe. Every bit was eaten by the crew at home. An easy addition to the rotation. *I think it's worth paying a little more for a really tasty tuna like "Sea Tales Solid White Albacore Tuna in Olive Oil. As cooler weather approaches (and it's taking it's taking its damn time) I'm thinking more about making our own bread, especially sourdough. Haven't done that for a long time but used to enjoy it. It isn't like I have to make tons since it's just for two older people who also watch their carbs. A small part of my renewed interest is growing concern about the 'stuff' being added to commercial breads and other baked goods. Might be paranoid on my part but baking is fun.

JTB, I make quite a bit of bread. If you're going to be doing it beyond the "I want to make this completely from scratch" aspect, pick up a bread machine. You can find them all day long for $10-$20 at thrift stores. I don't use them for the actual baking, but being able to program in the tedious bits and let the paddle do all the work while I go tend to other things is worth it.

Laurel's Kitchen Bread Book has a recipe that makes a single loaf of bread. It's whole wheat, which is what I usually do and I've used it with sourdough starter. I'm waking my starter up now, since I think it will be cool enough to bake.

Prep Time: 25 mins Cook Time: 1 hr 25 mins Servings: 6 Source: southernliving.com 2 Tbsp. olive oil 1 1/2 cups chopped onion 3/4 cup thinly sliced celery 4 cups unsalted chicken stock 2 1/2 cups water 1 1/2 cups coarsely chopped carrots 1 lb. dried green split peas, rinsed and drained 1 lb. tasso ham (in large chunks) 3 large thyme sprigs 2 dried bay leaves 1/2 tsp. freshly ground black pepper Kosher salt to taste DIRECTIONS Heat oil in a Dutch oven over medium. Add onion and celery; cook until softened, about 10 minutes, stirring occasionally. How I make split pea soup (no measurements. I just figure it out like Grandma)
First put your ham bone/hock in the slow cooker. If you try to put it in later it won't fit. Rinse the split peas and add them to the slow cooker. Mince a carrot, a small potato or two, and one or two stalks of celery. Add them into the pot. Add a diced onion and some garlic if you like. Cover with homemade chicken broth. (I make mine from the Costco rotisserie chicken carcasses.) Add salt and freshly ground pepper, some fresh thyme and some rosemary if you like it. Cover and cook on low all day. Remove the bone and cut up the meat and put the meat back in the soup. It usually is a bit runnier than I like the first day, so I mash up everything with a potato masher. Putting it on this thread because I'm too late for the first, but you'd think they'd glue a little plastic scabbard to the side of aerosol cans for the little straw. You could probably do it yourself with a plastic straw, glue, scissors, and pliers - cut a length of plastic straw, put a bead of glue in the bottom, crimp with pliers, then glue to can. Seems easy to automate and would be a one-penny bit of plastic, if that. Wonder why not?

I am permanently off tuna, I'm afraid. 5 or so years ago I was making a tuna casserole and when I opened the tuna took a big sniff as the lid popped open and nearly puked. The can was bad. That was the first and only time I ever got a bad can of anything. Stomach still rolls thinking about it. Considering the sheer volume of canned goods it's a wonder that isn't a very common occurrence.

They are incredibly useful since I can watch things cook or boil in my cast iron and stock pots and I don't have to risk getting spattered doing so. they do break if you use them too hard or drop them, so the steel lids are better in some ways. . What temperature and for how long?
-- 375 is what I use for the temperature. I've had two air fryers and both have cooked substantially differently (I assume the fans), so I check mine after two minutes and will flip them and apply some more seasoning if I think I want to. Just use salt and pepper or a lightly applied brown sugar rub. I like to use an oil spritzer but a can of Pam works, too. Melt some butter to spread on it if you're feeling fancy. You want a fat on the outside, though, because it gives it a pleasing crisp outer texture. Two more minutes and check temperature again. You really want to do several coats, so heat the pan, put in a little amount of lard, and mop it around with a paper towel until it is soaked in and gets that odd look, then do it again. Just made a batch this afternoon. But I want to try other recipes so your link will help. We had a bread machine some years ago but it never worked well. They may be better now. 250 I am permanently off tuna, I'm afraid. 5 or so years ago I was making a tuna casserole and when I opened the tuna took a big sniff as the lid popped open and nearly puked. The can was bad. That was the first and only time I ever got a bad can of anything. Stomach still rolls thinking about it. Considering the sheer volume of canned goods it's a wonder that isn't a very common occurrence.

Posted by: JTB - I've never used my Kitchen Aid for bread but I know a lot of people who do. Should be fine. Biscuit-wise I could make them fine but they always seemed to be hit or miss. They were still good, but I was never proud of them because it didn't seem like I could make them the same way twice. This technique trades off some flakiness for rock-solid consistency and tenderness. I'll never go back. One of the problems with making sourdough anything, which I prefer, is maintaining the starter. It used a lot of flour and required me to remember to feed it. I've heard of ways to used dried sourdough dough to make the next batch of starter. More economical given the price of flour these days and less messy.

Watch some videos about sourdough. It's easy to keep alive in the fridge even if you forget about it sometimes. And, since it's already sour, it's not going to go bad easily.
