Food Thread: Coffee, Pecan Pie, And Shrimp! Maybe Not all together, But Still...

I do not understand people who don't drink coffee. Aside from the glories of its aroma, the seductive pleasure of an early-morning ritual, the social aspect of steaming cups of coffee at breakfast or watching the snow fall or the waves crash; damn! I need the caffeine to wake up!

One of the many advantages of our modern consumer society is the amazing variety of coffee we have available with a few clicks of our mouse and a very high limit on our credit cards. Yeah...it's getting ridiculous! I think some of the boutique coffee roasters are competing for the most expensive coffee with the stupidest descriptions, both of the coffee and their companies! here is one place that is particularly silly and pompous:

This is the sort of shit that makes me want to throw away all of my coffee equipment and buy styrofoam (screw you Gaiaiaia!) cups of coffee from 7-11.

Can we please not ruin one of the wonders of modern life by equating a cup of coffee with ridiculous social and cultural issues?

It doesn't need that embellishment or complication...it is wonderful on its own. One of my favorite coffee places is conspicuous in its lack of this sort of crap. They talk about interesting stuff that isn't thinly veiled virtue signalling. And they sell really good coffee!

Chilling wine (or beer or vodka or...) is easy with enough time. I keep my refrigerator very cold...just above freezing, so a couple of hours is all it takes. But what about trying to chill something quickly? Air is a mediocre conductor, which is why it takes a long time to chill bottles in the refrigerator. But water is an excellent conductor, which is why chilling bottles in an ice/water mix works great!

And if you are in a real rush, add a bunch of salt to the ice/water mixture and you will decrease the temperature of the solution by about 1.8 degrees C for each mole/Kg of water. It actually doesn't have to be salt, but salt is amazingly cheap compared to other stuff. Although...I guess sugar will work, but that would be a sticky mess.

I am going to make Helena Handbasket's marvelous brownie recipe and go toe-toe-toe with my wife's favorite recipe. I am confident that I will win. They really are good!

And you should buy the cookbook; it is vastly amusing, the profits go to truly noble and worthwhile charities, and maybe if enough of you nag Ace, we can do another one so that all of thos wonderful recipes that didn't make the cut or arrived too late will finally see the light of day. Like my Panda Hash recipe! Although I think Bluebell may have kept that one out of the cookbook on purpose.

Most shrimp available outside of the Gulf Coast is frozen. And that isn't necessarily a bad thing...the technology for processing and freezing food is marvelous, and seafood seems like a good candidate for prompt processing and freezing because it is less robust than other animal proteins. But there is also a lot of mediocre frozen shrimp on the market (I have ranted about this in the past)...the commodity stuff from the far east is a good example. It's okay, and certainly better than no shrimp at all (can you tell that I like shrimp?), but good quality American shrimp is hard to beat.

The stuff in the photo was not planned, but walking past the seafood counter yesterday was a mistake. They had some particularly good looking shrimp that caught my eye. And yes, I was hungry.

They called them "blue shrimp," but they were from the Gulf, so who the hell knows what they were. All I know is that they were delicious. And overcooked. They cooked quicker than my go-to Gulf shrimp, which puzzles me to no end, but that's my story and I'm sticking to it!

But don't get me started on skewers. Why do they have a corkscrew shape? Why not flat, so the food doesn't rotate?

These are the questions that keep me up at night.

Alton Brown is a bit of a loon. I can't figure him out, but this recipe sounds delicious! I love pecan pie, and I love rye Old Fashioneds. And Mr. Brown has obliged me by mixing the two!

Not really, but he uses spiced pecans, adds pecans to the dough, and then adds a bit of Rye Whiskey just for shits and giggles.

Bought a nice Braun drip maker w/ built in charcoal filter. I have a Pur filter 24oz in the fridge that I use for coffee only.

Skipped the gold metal filter and went to high quality paper filter. Prefer the taste.

40 Everybody has a theory on the best way to roast a whole (non-spatchcocked) chicken. I bought a big ol' bird - 7+ lbs. - the other day, so I went on the internet to see what people recommended. I mean, I know it's a straight-forward proposition, but I usually just put the oven at 350 and wait until it's done. This time, I followed someone's suggestion and put the heat up to 425, and rubbed the chicken with a heavy dose of kosher salt. I also sliced a lemon, stuffed it into the cavity, and trussed it up. I turned down the heat after about an hour, but using the higher cooking temp did produce a superior result. Just my $.02.

The reason that coffee was so expensive is that it was harvested in the wild from the poo of civets who ate the wild Sumatran beans. Supposedly, their digestive tracts processed the cherries into an *even more delicious* bean.

Once Manhattan Karens told their friends about it, as they were shopping at Restoration Hardware with the money their husbands stole from taxpayers while they fucked their tennis pro, every grasping bourgeois Karen had to have it.

So Indonesians started cramming civets in cages and force-feeding them the cheapest possible (Arabica) cherries.

45 On a more serious note, CBD, I finally got around to trying your creme fraiche shallot salmon recipe.

I did use a cheap cut of Walmart atlantic salmon as the test case and the wife and I are reasonably impressed. We tried it both fresh and after refrigerating it to let the flavors mingle. Unlike a macaroni tuna salad, which really needs to sit in the fridge for some hours, it didn't make much difference in this case.

I consider your recommendation to top with either dill or chives mandatory for best results.

Last but not least, I haven't seen any Nova salmon around but I do have a smoked Pacific salmon I might open and use part of for this recipe.

52 The pecan pie recipe on the back of the Karo syrup bottle is the best pecan pie recipe there is, although Southern Living's is pretty close. The only addition I make is extra vanilla extract, because you can't have too much of that. But spiced pecans? Pecans in the dough? May as well put maple syrup on French Toast.

Island Creek Oysters was started by a friend. He used to have a seafood shop, sold it and leased a couple acres to grow oysters with a couple friends. It's grown into a national brand and they ship to some of the best restaurants in the country.

Still have to get you to the Matunuck Oyster Bar. Can't get any fresher unless you are on the boat.

My current roasting technique uses a hot oven just like yours, but I don't even bother with turning it down. 425 degrees until it is cooked. But...it is in a cast-iron pan, and that adds significant cooking from the bottom, so that may be different.

Best deal was $2.99 for a red leaf lettuce bunch (that was lousy looking). The rest were $3.99 and $4.99 a bunch. So I bought 2 bunches of watercress, not 1, b/c apparently no one in NoVa will eat watercress, so now it's "lettuce" for the week, too...b/c it was still 50 cents...

I can't speak for those things, but at least for sparkling wine--the Plus family's preferred vice--I actually prefer the $15-40 stuff more than the high end $150+ super premium bottles.

I have less experience with good red wine, but I do want to try a few nicer vintages at some point to have a better reference point.

$500 bottle of wine I don't get paying thay much more for (not from experience at least), but whisky/whiskey I do. You can tell almost immediately that something needed more years in the barrell. "Young" whiskey has very little nuance and is usually a bit harsh on the palate.

77 Just finished our VFW Thanksgiving pot luck. We did not have half the number of people we have had in previous years. Way more food than people. We had to do it a week before normal because some idiot scheduled the VFW District meeting on the last Sunday before thanksgiving, the day we normally have it. That may have contributed to the reduced crowd size. I doubt we had 30 people show up, we normally get 50-60 people.


It's free to anyone who wants to show up. The VFW post members and auxiliary provide the turkey and ham. Other people bring side dishes.

One and a half cups of semisweet or dark chocolate chips added to the filling - no chocolate in the crust! And a good splash of bourbon- 1/4 cup or so. Must be served warm so it's still melty goodness inside, and is only embellished with whup cream or vanilla ice cream.

Unless you enjoy making pie crusts, just buy a frozen or refrigerated uncooked crust at the grocery. I enjoy making pie crusts and experimenting with them. But if you don’t, you’re going to get just as good a result if not better by fresh-baking one of the commercial options.

I made this gravy for our game night thanksgiving meal last year, and there was very little left when it came to eating leftovers the next day.

There’s a little work involved, but it’s worth it.

That Karo Syrup recipe was the one my Mom used for my whole life (29 x 2 + some extra), and even before I was born. No one ever complained about her peh-CAHN pie (she could make a mean soft flaky crust, too; thanks Crisco!). That was and is a very good recipe. My Mom hated the one time I took some of her peh-CAHN pie slices and coated the edges of the slice with melted chocolate, then I let it harden. But I liked it. That worked with either whipped cream or vanilla ice cream

I’ve made ground-pecan pie crust before. It’s great, because not only does it taste wonderful, there’s none of that rolling out the dough and fitting it to the pan. You just press it in, like a cookie-crumb crust.

His version seems to take the worst of both worlds!

112 Turkey turned to brown the breast. Made a compound butter for under and on the skin. Used herb salt from my first ever try at salt preserving herbs (smells wonderful and doesn't *only* taste like salt, just mostly). "Wolfberry wine" a Chinese full-bodied wine with goji berries that reminds me of port. A shallot, fresh herbs, and a stick of butter. Filled the cavity with lemon wedges and another shallot. Cooked with back up for 90 minutes at 350 and now giving it another 60 minutes with the breast up.

119 Fry the bacon first, save the drippings, crumble or cut into small pieces
In a soup pot, add the olive oil, set to medium heat add the chopped onion, 2 STALKS (not stacks) of celery, garlic. Sautee for 4 or 5 minutes
While that is cooking, slice the potatoes into either narrow slices or chunks.
Add 3 cups of water with the cube of stock
Stir, cover and bring to a boil.
Once the potatoes are cooked, add the spinach (did I mention fresh spinach) leaves, the 2 cans of mush, the crumbled bacon and cook on low heat for 5 minutes or so. Serves 4 to 6

139 I like gravy and I like pan sauces. Gravy is great when you really need to make a lot, but it is work and takes a little time, especially getting that roux browned. But I also like quickie pan sauces. Unfortunately, I have only one at the moment but it's a keeper.

It's a pan sauce I put on chicken breasts but it could also work on pork chops.

As most pan sauces are, very few ingredients and quick to prepare/come together.

You need one lemon (zested and juiced), a healthy dash of Dijon mustard (and Grey Poupon Dijon is the best for this), and a TBS of drained non-pareil capers.

Once chicken is cooked, remove chicken. Into the pan add the lemon juice and slightly reduce. Add about 2 TBS butter and the mustard and whisk together in the pan. Once blended, turn off heat, add capers and lemon zest and stir again. Top the breasts with drizzles of sauce. It's really good. As an option, you can add sliced fresh green olives, too.

144 I finally seem to have successfully innoculated some of my own rice with koji (the culture used to make nearly all the quintessentially Japanese flavorings) mold. In fact, if the sourdough bread that molded recently is an indicator, I may have managed to get koji into the air here which is okay with me since it makes everything taste *better* instead of "off". The trick is having a yogurt function on a pressure cooker. All the DIY videos had super complicated systems for maintaining a high enough (but not so high as to kill the culture) temp and humidity, but the yogurt functionhandles all that with no trouble on my part.

150 My friend gave me a recipe for deconstructed Rice-A-Roni. I've made it a few times and it really tastes like the box stuff except way cheaper. It's kind of like the Colonel's 'secret recipe of 11 herbs and spices'. Takes a little prep to measure the spices, rice and fideo pasta, but it cooks in about 20 minutes.

Don't get me wrong, I love espresso and dark roast coffee, but I also love a flavorful medium roast coffee, which when brewed strong has deep flavors not found in burnt coffee. (For some reason "burnt" has been conflated with "strong" when it comes to coffee.) Dunkin whole bean coffee, ground fresh, and brewed strong at home, is an exceptional cup of coffee. I've given up on just about every other "medium roast" coffee because they're all still burnt and oily.

191 I tried a Jersey Mike's last week because Jimmy Johns was out of bread (?!?). Compared to JJ's, the meat was a bit better but the bread wasn't as interesting, and the chip selection sucked. The spice mix they use really added to the flavor, glad I didn't hold off on that.

One thing that really put me off is that the payment processing system included a tip request. I'm supposed to tip for fast food, now? That sort of thing makes me not want to go back, because it puts me in the untenable position of either screwing staff out of money or paying 2-3 bucks just for someone to portion out some roast beef and cheese, put it on a bun and hand it to me. And it was carry-out so they don't even have to clean a table.

I get my beans from SweetMarias out in Oakland (SweetMarias.com) They have everything you need, not that you need much more than green coffee. Look up 'heat gun / dog bowl' for the cheapest, easiest way to try roasting out.

Stocking Mill coffee down in Florida sounds good but since I'm in KC all I could do to support them was buy their branded BruTek mug. Think I'll go use it to make myself another cup.

207 A couple of the "slice of life" animes I've watched recently have had recipes. The one that I've really taken to was for ume plum syrup. You just layer rock sugar and green plums in a jar, shake occasionally for about two weeks as the sugar dissolves, and then boil the results for about 15 minutes to make sure it's not harboring any bad microbes.

I've used several types of fruit (and ginger) and it's worked pretty well except for the sweet cherries which turned out so mildly flavored as to be nearly tasteless. Tart fruit seems to turn out very tasty. I'm currently working on a star-fruit and it certainly *smells* like it should be good as well.

Trader Joe's. I am no fan of about 99% of their stuff, but their big dark chocolate bars are great for baking, and those soups are pretty good.

Rice-A-Roni Deconstructed

1 cup White rice
1/3 cup Fideo (cut spaghetti)
3/4 tsp Garlic powder
3/4 tsp Onion powder
1/2 tsp Turmeric
1/4 tsp Paprika
2 tsp Dried Parsley
1/4 tsp Celery seed (measured then ground)
1/4 tsp Cumin seed (measured then ground)
4 Black peppercorns
2 tsp Better Than Bouillon (Beef or Chicken) or 3 bouillon cubes
2 cups Hot water
2 TBS Butter

Grind the cumin seed, celery seed and peppercorns. In a small separate bowl, add to the rest of the powdered spices/herbs.

Separate the measured rice and fideo.

To the hot water, stir in the bouillon until well-blended.

In a saute pan, add 1 TBS butter and cook the fideo until golden brown. Add the other TBS butter and the rice and cook until the rice is browned.

Once the rice/pasta is browned, add the bouillon water and herbs/spices to the pan. Stir, cover and reduce heat. Cook for 20-25 minutes, until liquid is absorbed and rice is tender.

224 I've given up on just about every other "medium roast" coffee because they're all still burnt and oily.

If you have oily beans, that is roasted more than French (I think the next is Italian) but just less than Charcoal.

As I get lazier in my personal roasting of coffee, I try to identify beans that shout out when they are roasted just right. The usual clues are: first crack, color and smoke.

From Sweet Marias, I found this wonderful bean: a dry processed bean from Flores (lesser Sundra islands) that screams "I'm Ready" at the City+ roast by cracking loudly, coloring appropriately and having the exact right amount of smoke.

Excellent brew with great finish.

I try to hit right at the edge of second crack but I use a Behmor so it's tricky. Does reliably get to first crack and the ever-indulgent wife likes chocolatey coffees and those are good anywhere in the area. Just ordered another 12lbs yesterday.

There are multiple reasons for employers supplying food. Employees tend to produce more because they aren't going out to chase down food and spending time away from tasks, meetings, etc.

The other reasons is that it is part of the compensation package that isn't subject to a personal income tax. Getting good talent is difficult. The crappy talent that is part of the DIE movement isn't worth the meals since these lowlifes come a dime a dozen and do nothing for the bottom line except pump up the DIE stats for the investment funds that are obligated to buy those equities.

But if the companies only allowed the productive, high value employees have the freebies, the worthless people would publicly complain, file lawsuits and form unions.

Using my stick blender, I make a pureed carrot soup two ways:

One is with ginger, garlic and chicken broth and the other is beef broth, garlic and cumin. Easiest soup I've ever made and I make a lot of soups; quick to make, too. It only takes as long as getting the chunked carrots cooked soft then pureeing. Pretty cheap ingredients and freezes well, too.

One of these days I'm going to make a pureed butternut squash soup, herbs/spices to be determined.

Unfortunately, I got our winter carrots sowed a wee bit late, so they will be sitting carrots. The 10 hour of daylight barrier has been passed (a few days ago, here) so no more growing until we hit 10 hours of daylight next year.

I drink Costco brand coffee. I will get a bag of SB Cafe Verona when I have a store coupon. I really like that blend/roast, whatever it is. The Kirkland is good enough for me, made in an ancient French press. One spoonful of regular, two of decaf. I wish I didn't have to drink decaf, but I just can't handle fully regular coffee anymore. Heavy cream powder, a T of good butter, whirled in a blender. Yum.

The market will crash but the grocery stores are going to keep prices high and blame shortages or bad weather even after the price falls.

Behmor for the win, although I hate that stupid 4:30 feature the lawyers demanded. Also one has to account for the slow cool-down inherent in the Behmor design so how exactly to handle the Roast-n-Coast? For the more finicky beans I have a high powered shop vac. Lower the door and pull cool air in to the roasting chamber.

One really has to go out of their way to make a French roast in a Behmor.

I read someplace where they had red wine on tap and all sorts of goodies like truffles, a full lunch bar, caviar and the like for employees in the cafeteria, so if that is true, I can imagine it being extremely expensive.

259 233. I cannot speak to Twitter but Googles new hires were given a major breakfast and lunch buffet, coffee and wine bars. On-site fitness room, massage rooms, yoga studio, bus passes. My friends daughter lived with a roommate in a subsidized apartment hat was part of her compensation and was built by and located next to the Google campus. She was able to transfer for temporary assignments to any Google campus she wished and received many of the same perks including relocation expenses. It was absolutely insane and why these tech companies lose money regularly.

271 Last weekend, we were visiting my brother, who recently got one of those Ooni Mini Pizza Ovens. He got the wood burning one.

Making your own pizzas was fun. You'd load them up and he'd cook them, as there's a bit of a learning curve to get them right. A good time was had by all. Cocktails were involved.

He said they've thrown a few pizza parties, and that seems to be an easy way to have a good time. Everyone loves pizza and "making" their own. Cocktails are usually involved.

Ooni ovens are pretty expensive, but if you order pizzas on a weekly basis, you break even before a year is up. And you can do things like bake bread, cook steaks, etc.

Not sure I'll wind up getting one cuz my wood pellet grill can handle pizzas.

But, if you're looking for a new cooking toy or Christmas gift, check it out. You may just become the Pizza Party Maven of your town!

Love my Behmor. I use a timer to make sure I don't miss that 30 second 'push the button or lose the roast' time. I've got a ton of ways to roast so I can always fall back to my GeneCafe, or Rosto, or original FreshRoast, or my cobbled up Turbo/Crazy (half turbo air oven, half stir crazy popcorn popper), or, of course, heat gun dog bowl. Post apocalypse, I've got both my Whirly Pop and the made just for roasting AromaPot plus lots of stick-based stoves. I'm also all set for brewing without power.

Some of the beans from Yemen have a very strong mocha tone to them. The Yemen beans also make a great breakfast coffee.

I have this five year old Sumatra that was deliberately aged and has a very strong musty, earthy, rustic flavor. I wouldn't want it every day, but it is a delightful change when one is in the mood for something really muddy.

We do have a Swiss office that I sometimes have to have a phone call or web meeting with, but they put that sort of thing on the calendar ahead of time. It's more the exception than the rule though. I'm in embedded hardware development, it's not the sort of thing that lends itself well to being farmed out to low-rent Tata types.

Which is one of the reasons why I do it.

The most amazing cup of coffee I ever had was shortly after sunrise in Jamaica. Freshly brewed Blue Mountain. Cream was probably hours old. As the sun rose, Marcie and I (a young woman from Canada) and I snorkeled around for a couple hours while my wife and her husband slept. Once we hit shore she had a daiquiri of some sort.

Canadians are fun people.

Freshroasted coffee *does* taste like it smells. Find a small shop near you that roasts their own. If their sign doesn't already tell you ask them what the different ones that have taste like. Take the first sip black to see what it tastes like, then adulterate as needed. I'm a super taster (really sensitive to bitters) so I pretty much always add some sweetener.

Same coffee roasted different ways will taste different, *and* different ways to brew also make it taste different. You do *NOT* have to go nuts and spend $$$ for great coffee. My morning cup(s) are from a very nice super-auto that grinds and brews. My afternoon cup is usually from an AeropressGo. I like the taste and ritual. Right now I'm having a cup using my FrenchPress cup - the BruTek cup solves the usual travel frenchpress problem by having a valve disk that keeps the coffee from over-extracting while you drink.

One problem with that for me, and I'd bet a few other people, too, is the sodium content of prepackaged/canned food. I am really trying very hard to avoid as much unnecessary sodium and high fructose corn syrup as I can. (Cutting out crap and snacks, I've lost just over 30 pounds since the summer, with many more pounds to go.) I don't hate salt, I just need to control the amount for health reasons.

Their prices are around $7/lb. Typically I buy 25 lbs every six months or so. I keep the green coffee in a food safe 3 gallon bucket with a gamma lid, which keeps the green coffee fresh for months.

I'll roast about a lb of coffee per week on my stove top, and alternate between two air tight containers of coffee on the counter.

Basically, I roast a batch, and put it into one of the containers to de-gas for a week. I brew from the container of coffee roasted the week before. By that point it is perfect.

I find that the de-gassing does very little for the taste. What I did discover is that you can make coffee volcanos and a mess in the kitchen from your French press with roasts made just the previous day.

The wife is on an extremely restrictive sodium diet, no more than 2,00mg per day. She has meinere's disease an inner ear thing that has no cure but very low sodium diets do help with the bouts of vertigo.


It's tough but doable. There are days where she blows through her sodium but they are rare and are usually for special stuff like Hard Eight BBQ or the like.

Here's my Thanksgiving go-to dip
1/2 jar Libby's pumpkin pie filling
1 package Jello pudding - I usually use vanilla, but you can use butterscotch or whatever floats your boat. And if you ask me big or small size, I ask you how thick you want your dip
1 container So Delicious CoCo whip (this started as Cool Whip, but the Coco Whip is allergy friendly and actually better for you vs Cool Whip).

Mix the 1st 2 items together - add some vanilla extract (optional) if you want to amp that combo. Fold in the whip. Put in the fridge for an hour or longer. Serve with sliced apples, pears, pineapple, and/or clementines (and pie crust triangles or graham crackers) and be almost done the Thanksgiving lunch tray.

I've gone this the cream cheese/powdered sugar way, too, but this is better.

That sounds good. I do the same but usually with white wine vinegar.

I will also use a tiny drop of hot sauce...sometimes even one of the sweeter ones.

And yes...sometimes even cocktail sauce, but I spice it up with hot sauce and more horseradish. But I usually just put a tiny bit of it on the oyster...too much and it overwhelms them.

My coffee maker is an ages-old Phillips cone-filter job. I think I bought it when I moved into Peon Manor in '98. Currently using "Java Time" coffee, bought at the Big Lots store in Apache Junction. Five bucks for a 24 ounce bag! And it's pretty darned good coffee. Packed in Australia, I think.

I put mine in a mason jar with the lid on loose. I find that the flavors develop much better if you let that outgassing CO2 escape. But yeah, brewing in the day or two after roasting means that the beans are as gassy as a bunkhouse on chili night.

Our super-auto is a Phillips 5400 we got at Williams Sonoma. It actually has an auto-frother that works! It's not as efficient as I am, but it's quick and easy so it makes my morning latte nice.

346 When I was making shrimp cocktail often, I came up with a variation on the regular cocktail sauce (ketchup, Worcestershire, Tabasco, lemon juice and horseradish). I added lemon zest and fresh chopped cilantro to the basic ingredients. If you like cilantro, it was quite tasty.

I'm sure one could swap in lime juice and zest instead of the lemon.

350 Forgot to mention, if you do want to have capsule coffee get the Nespresso unit. Aluminum pods, fully recyclable, and actually good coffee. It's a fallback that I mostly use to make a daily Swedish KafeLemonade - a 50/50 (ish) mix of iced coffee & lemonade. Nice and tasty drink to sip throughout the day if you make it an insulated travel mug.

Nespresso also makes a nice frother if you want a kind-of latte.

360 I find that the de-gassing does very little for the taste. What I did discover is that you can make coffee volcanos and a mess in the kitchen from your French press with roasts made just the previous day.

That coffee volcano, is excess CO2 releasing. It does have an effect on flavor, the CO2 bubbles shield the coffee from the hot water during extraction. Personally, I find that letting the coffee de-gas for a few days mellows out the flavor and aroma, plus I don't get a huge bloom on top of my french press.

You could cover it with a sheet, or plastic, if it's not going to get extremely cold; but don't let the sheet touch the leaves, or they will get frost burn. Green tomatoes will ripen off the vine, so I would just harvest.

I bought the trager turkey pellet special deal from Home Depot last week. It has a bag of a special blend of pellets designed just for turkey and a brine kit contained in the bag. I am gonna try that for Thanksgiving this year. I have never done a whole turkey on the pellet grill. I have done whole chickens on the pellet grill and they come out fantastic.

408 I made vindaloo for the first time today. Pork vindaloo.

The "liquid" in which the pork (cubes of shoulder) simmered for an hour was a puree of tomatoes and onions. Lots of onions -- 4 medium onions for 4 lbs of shoulder.

I'm not sure how I feel about it. The spicing (all ground from seed) is pretty great, but the onion insists on itself.

My current thought is that it will be better after a night in the fridge calms those onions down.

451 Well, that was cool! I just took a picture of a mirage. Big range of mountains on the western horizon. Yeah, the Rockies are out there, but they are over the horizon for me. But there they were, plain as day, floating just a titch above the real horizon, Snap!

452 As I sit here, I can look up to the top shelf of my bookcase and see the exact coffee grinder. Probably 100 years old and still in working condition.
The Coffee industry DID use slave labor to make their fortunes. That is why they are called Coffee Barons. I can drink tea, but coffee keeps me alive.

I use 3/32" gas welding wire (cleaned) and use two of them side by side for my shrimp kababs.

454 I'm a cheap date. I made chili cheese dogs with onions and mustard while watching football. The food was good, football kind of sucks. The receivers can't execute, and the officials undermine the whole league.

459 My mom mostly got Folgers Coffee Mountain Grown for Better Flavor used a scoop she got a can of Hills Brothers my dad hooked up a old Coffee Percolator to a electric timer to create makeshift Mr. Coffee
