Food Thread: Tacos! Brownies! Rye Whiskey! A Perfect Meal

My SiL bought some really good homemade tortillas, so I told her I would make tacos, because...duh! I bought a pork shoulder, cut it into 3"-4" chunks, and sous vided it with lots of fun stuff. Cumin, fresh chiles, orange juice, S&P, and probably lots of stuff I am forgetting. I didn't want it too spicy, just nice and toothsome.

Then all that needed to be done was prepping the toppings, which was easy. Chopped onions, some cilantro, a bit of Cotija, and some Elote on the side because I think it is absolutely delicious!

The real challenge was how to cook the tortillas, because I like them on the soft side but others like them a bit crispier and toasted. By the way, that was the rate limiting step...it takes a couple of minutes, and they were just big enough that only two fit on my little griddle. And even my big saute pan only took three. Well, I have a monster saute pan that I haul out occasionally, but I was well into my second Margarita, so I didn't feel like doing anything extra, and I don't think it would have helped anyway.

But all was fine and good and pure in the end. We finished the pork on the grill so it was nice and charred, then cut it into bite-sized pieces. No shredding...I wanted some texture.

And then everyone went to town making their own tacos. Which is as it should be...they are a deeply personal food!

And damned tasty too!

Oh, shut the hell up. We need less government intrusion in our lives, and inserting the federal government into more personal health decisions is simply a guarantee that we will even less healthy. And that is ignoring the idiocy of a "sustainable food system," whatever that is. How does that improve my health?

The federal government is probably the entity most responsible for our current obesity and diabetes epidemic. That anyone would take its advice about anything other than how to extract the most graft from the next budget is insane.

In fact, a good diet might be to do the exact opposite of what the government reccomends.

I think I might try this! I have about five pounds of ribs that I just sous vided, and I was thinking about a sweet and sticky sauce for a change, since I usually serve my ribs dry with sauce on the side. Maple Glazed BBQ Ribs sounds good, especially since there is some hot sauce in the glaze that will temper the aggressive sweetness of the maple syrup.

That is called an "Improved Whiskey Cocktail." Yeah...dumb name, but it has possibilities!


  • 2 ounces Rye Whiskey
  • 1 bar spoon Absinthe
  • 1 bar spoon Maraschino Liqueur
  • 1 dash Angostura Bitters
  • 1 dash Peychauds Bitters
  • 1 sugar cube
  • Lemon twist

I used a bar spoon of simple syrup instead of the sugar cube, because I think the whole sugar cube thing is an affectation. Regardless, it was a very smooth drink, and as I mentioned to naturalfake, one of our resident mixologists (I say that without condescension. What's the word for a serious home bartender?), it was perhaps too smooth! I prefer a little bite in my cocktails, and this one was missing something.

I'll play around some more, because I like all of the flavors, so I am confident that I will arrive at a pleasing recipe.

Here's a link to "Garden & Gun's"Grits section. One of their promotional emails had a recipe for Indian spice inspired grits, and after thinking a bit about that I realized that I have never had bad grits, so it is one of those forgiving ingredients that is pretty tasty no matter what.

Plain old grits with butter and salt for breakfast is delicious, as is classic shrimp and grits, with sausage and cheese and all sorts of other delicious stuff. And everything in between, including one that sounds really good...Fish and Grits! Made by the best chef in Savannah!

How do you folks prepare grits?

Somebody made brownies for the Texas MoMe, using one of the recipes from the Deplorable Gourmet. I apologize that I don't know who made them, but they were great! Moist and chocolaty with some extra chips tossed in. Whether that is in the recipe I don't know (I'll check later), but that recipe is a keeper!

[Addendum] I have been reliably informed that Helena Handbasket made the brownies, and I am eternally in her debt. They really were delicious!

10 So, I made molasses honey cookies this week. I just used the recipe on the Grandma's molasses jar for molasses crinkle cookies, subbing out 1/4 cup of the brown sugar for honey, adding about a TB of vanilla (didn't measure exact) and 1/4 tsp salt, not measuring any of the spices (but probably going high on all - cloves, cinnamon, and ginger), and adding a little extra flour (about 1/4 cup) to make up for the extra fluid from the vanilla and the honey switch...and skipping all the requirements to add outside sugar and dripped water, b/c honey is already sweeter and wetter.

They were AWESOME! One kid called them a taste of Christmas, another called it gingerbread but way better...and they were so soft and so perfect for tea.

Here's to the recipes on labels...at least as great inspiration if not perfect copying...

You really could make your own flour tortillas, you know... not difficult at all, and they tend to be more substantial than those that are purchased. (I've never made corn tortillas but am told they are easily made also, and that the right press helps!)

I think I've posted tons of grits' ideas. If you have a fluid, fat, and salt, you can make an amazing grit. If you have actual veg, herbs, or proteins, you can take it up even more.

Grits aren't a recipe - like meatloaf, they are a technique...at least to me. An artist palette to paint complementary dinner meal flavors or to make as a main dish lunch...

The sad plain dish of grits you get at Cracker Barrel is about as bad a grit as can be made...that was my 1st experience with grits, so I didn't make them til I lived down here...

My favorite coffee cake recipe is one taken from the Land O' Lakes butter box, Blueberry Streusel Coffee Cake. I have modified it to make it my favorite muffin recipe, which is now called "Sugar Muffins" by the grandkids, due to the sugary streusel on top.

41 I made a beef with mushroom soup last week that was spectacular.
Roast beef bones 400 degrees for an hour.
Put roasted bones in the instapot with carrot, onion, celery, garlic, bay leaf, peppercorns, salt and a whole star anaise. Hit, make broth.
Strain and refrigerate.

Skim fat from stock and use to sauté more carrot, onion, celery. Add more fat if necessary. Add short cut beef ribs. Stock and 1/4 bottle dry red wine. Add bay leaf and another star anaise. Bring to a boil on stove, put in oven at 350 for two hours.
Add a bunch of mushrooms and some kale.
Oven for another hour.
Add thickly diced polenta, put back on stove and give another 1/2 hour. Salt to taste.

43 Hubs made chili verde the other day and we had it slathered on bean burritos. Yum! The chili verde is not spicy, and this batch was a bit more vinegary than normal because of the tomatillos he added without rinsing them first. But the chili was still plenty tasty and the pork chunks were nice and tender.

44 I alluded to this on the last food thread, and promised something special earlier this week, but thank you to SnailRacer for the wonderful old 1950 calendar she gave me at the TxMoMe.

On Wednesday (after recovering from the MoMe…) I made “Meat and Olive Loaf”. Pretty much ham, green pimento olives, and mayo ground together. I had it on a sandwich the next day (it’s supposed to set for a few hours), and it was good, but not good enough to add to my rotation. Added to salad the day after, however, and it was really good. Kind of a 1950s American Bulgogi.

45 On Saturday I made “Bacon-Corn Fondue”, which is not at all what I would consider a fondue. It’s more of a bread pudding. And I replaced the bacon with ham, because as I was discussing with someone at the MoMe, while bacon will enhance almost all foods, few foods will enhance bacon. This is not true of ham, which is almost always improved by the food it improves.

And today I made “Butterscotch Squares”, which sneaks in some bran for mom. Because each month’s recipes highlight some feature of that month, and May is Mother’s Day.

That's awesome! - I do have to ask, though - did the blueberries survive the recipe change, or did the grandkids nix them (I had one kid refuse blueberry muffins til this year...and he still won't eat fresh blueberries - thus, why I tend to have 2 fruits min every time we have blueberries)...

58 Somewhat weirdly, and I have a suspicion its a holdover from WWII paper-rationing, the recipes for a month are not displayed when that month is displayed. Each month’s recipes are on the reverse of that month.

So I made a version that will show the recipes with the month. That’s at clubpadgett.com/2023. If this is a “would hang”, which it is for me. I’m definitely going to make at least one recipe from it each month.

I did mahi on my last fish tacos... thumbs up on that. Red snapper was good too. Orange Roughy too. Had Salmon tacos while living in CA and wasn't thrilled with that. Weird taste combo.

66 Mahi is nice.

Made a nice little spatchcocked Cornish hen, with a paste of bacon and herbs stuffed under the breast skin. Worked nicely for lunch, although it was a grill recipe and I had to adapt for cast iron skillet and oven.

71 So, today was an Eagles game, and I had Safeway as my "shop" (after an HMart produce run Friday), so I gave in to the youngest, so I could do housework and watch the Eagles (when you're watching World Series games, too, you get behind).

So, it's Safeway fried dark meat fried chicken with their bakery french bread (since they gave me a deal for $1.40/loaf...and dairy-free bakery bread at that price must be enjoyed). To go with it, Hmart still has cheap broccoli and blueberries, so tonight, the broccoli will be roasted with garlic, salt, pepper, and olive oil (and then dippable in the chick fil a sauce anyone dips their chicken in) and the blueberries will be had with grapes b/c both HMart and Safeway had them on a great sale, so I bought 2 bags.

Spouse discussed produce feels like the 80s again, but instead of only having x, y, z for every week of a month b/c of seasonality/availability, you have it b/c those are the great priced produce that month...and you can't bear to buy the regular priced produce.

HMart almost doubled their sushi prices this week, so that nice lunch deal ended...($4.99 to $8.99 for the salmon and tuna sushi rolls).

Safeway now has a regular price of $11.99 for Hillshire Farm 1lb turkey and ham lunch meat. Spouse almost passed out looking at that price, and now knows if I buy him and the kids lunch meat (b/c I don't eat it), it better not go bad...

Although speaking of cheese and peanut, a few weeks ago, I bought a clearanced "peanut puffs" bag from Aldi's. Apparently, the Germans don't believe in making cheese curls, but they make equivalent peanut curls. The dang things are odd, but addicting, so it's good there was only 1 bag and it's not coming back again for 6-10 months...

Yes, it really is a cool calendar. I’m fascinated by the holidays. Compared to modern calendars, there is a dearth of holidays. Four months have no holidays at all. Only September and November have more than one.

They do have Independence Day and Constitution Day. They don’t have Halloween, and I don’t know if that’s because Lutherans of the time didn’t like the idea, or because Halloween had only recently evolved into what we know it today.

And they have Armistice Day instead of Veteran’s day, because that’s what it was. People had started celebrating it as Veteran’s day a few years earlier, but Congress wouldn’t make the change official until 1954.

Easter will move around a bit, and including it means there are far more than 14 possible calendars.

Including Ramadan means you need at least 365+366 calendars, though. It's lunar, but not tied to an equinox or solstice like Easter is, so it can start on any day of the Gregorian calendar. Since 1938, it's been as early as 1/4 and as late as 12/31.

The cherry smoke gave it great flavor and I watched the temperature like a hawk.

But you can add turmeric, or lemon, or cumin... variations are endless. And it's so easy to make.

I do like Rittenhouse. I also keep a bottle of something else around if I really want some Rye punch. Currently, that's Bulleit.

Rittenhouse BiB is 51% rye; the minimum to be a "rye whiskey". Bulleit is 95% rye. But the BiB is 100 proof, and Bulleit is "only" 90 proof.

My suggestion for people with sourdough starters that just won't rise right, is to make your sourdough starter, stick it to one side and make your usual sponge with store bought yeast and then when you make the bread, add a cup of the starter for flavor.

I fix them the way Publius and his parents like them. 7+ tbsp of white grits, 1 tsp salt and 2 cups of water. Cook them 15-20 minutes until thickened, and stir so they don't stick. He says I've mastered their way.

I would submit that the gap between low and high end bourbon is not nearly as great as with, say, scotch. Kentucky Tavern, or Early Times is not so much worse than Pappy as to justify a 50:1 price differential. The difference in scotch is much more apparent.

Using sugar cube (or even just a bar spoon of loose table syrup) does have some practical application and minor differences.

As Chris McMillan points out, if your drink isn't sweet enough for your individual taste, a second sugar cube can be employed to up the sweetness ratio without further diluting the cocktail with more water content from the simple syrup.

Also, how you concoct your simple syrup can yield subtle changes. I heat my simple syrup to aid in dissolving the sugar in the liquid (or even sometimes steep it with added flavors to make flavored syrups). During the heating process the sucrose breaks down into glucose and fructose, which while subtle, doesn't taste as sweet as the original sucrose.

In short, if you like more sweet, the cube of sugar is the way to go versus the simple.

I am mostly an aged rum, not bourbon, sort, but I like to have some bourbon around for variety. It was pretty good - for my simple bourbon tastes. I've previously had a Woodinville port-finished bourbon that was similar, and good.

A few of the very good/very $ aged rums are "bourbon-ish" due to their aging in oak, often in ex-bourbon oak casks.

Is there a particular shape or size it needs? I have a nice set of stainless steel bowls, with tops even, from Williams-Sonoma that have rounded bottoms and vertical sides. I've had them for a while but I think they were maybe $40-ish when I bought them.

I picked up a replacement bowl for $10 at an antique store. But it does require patience.

They also appear to be available used on eBay, but of course shipping something that bulky makes it effectively more expensive.

231 I would submit that the gap between low and high end bourbon is not nearly as great as with, say, scotch. Kentucky Tavern, or Early Times is not so much worse than Pappy as to justify a 50:1 price differential. The difference in scotch is much more apparent.

I agree. I’ve had some crazy expensive bourbon and I’ll swear to you it was hard to tell the difference from a $50 bottle. I think it’s the sweetness that smothers the flavors. But really high-end scotch is a noticeable step up from the cheaper stuff. I won’t spend a lot of money on bourbon. Don’t ask me the same question about scotch …

I get around that, partially, by making double-strength simple syrup. Twice as much sugar as water. That also waters down the cocktails less.

It's even supposed to be shelf-stable that way, but I still keep the bottle in my bar fridge.

I know it winds up not-even-fridge-stable with certain flavorings added. Cinnamon seems to last forever (or at least until I can drink it all), but fruit flavors get fuzzy after a few months.

Basically, I fried them crisp, dusted with cinnamon, tossed with some brown sugar and put 'em in the air fryer at 400. The bacon burned before the sugar even melted, let alone caramelized. You don't precook the bacon...and normally, baking it (on a rack) will give you the most leeway on not burning the sugar/not undercooking the bacon. And I wouldn't pick thick cut.

The original Kitchen Aid mixer, now called The Artisan, had a bowl that screwed into the base of the mixer. This one is the newer stand mixer where the bowl has two lugs that fit into arms that hold it and raise it up and down, while the mixer stays fixed. It is a custom item, though I suppose I could put something together with bailing wire that would completely infuriate me when I used it, like every other make-shift in my life.

Yeah, I mean there are solutions, obviously. And when home bartending, it fairly easy to dial in your preferred flavor profiles.

As you can imagine, though, at a bar the client list is wide and varied. Using loose sugar or cubes allows for the storage of one item (sugar or cubes) instead of multiple bottles of simple, rich simple and light simple (1/2 strength). Instead the bartender can just tweak the drink on the fly.

Honestly though, it depends on the bar environment. If I'm at a college bar cranking out Jaeger Bombs and Fireball shots to go with the PBR draft, no one is critiquing the subtle difference in drink sweetness. They are just getting shit-hammered and trying to get laid.

I drink all rum neat or with a cube, but it's the kind intended for that. Only rum drink I currently mix, only during hot weather, is a dark 'n stormy. Use good ginger beer and Hamilton 86 rum, which is a very nice dark-ish Guyana rum with a lot of depth and flavors (it's also perfectly sippable with a cube).

264 Probably, my favorite bourbon right now that punches way above its weight and price point is -

"Legent Bourbon"

It a Beam Suntory product. The bourbon is made by Beam's master distiller part of which is finished in red wine barrels then another finishing in sherry barrels than it is blended by Suntory's Japanese master blender.

There is a whole lot of delicious flavor in these bottles. Straight or in a cocktail, it's all good with Legent.
BONUS!: Cost? Roughly $35.00/bottle.

Yep I'm mostly coronas now, or rubustos. Coronas can have that advantage of wrapper being more of the total tobacco, so you get more of the flavor the blend was aiming at. Robert Caldwell of the brand bearing his name only smokes coronas and lanceros, I think mostly for this reason.

Yes, the SFPD has begun a bizarre series of back tracking contradicting the original official reports of the three officers on the scene who filed the original arresting report. Who now isn't sure who had clothes on when you made the arrest? Come on!

Today, they refused to name or suggest that the defendant had been appointed counsel, or who that counsel even was - as is his right. And suggested reporters talk to the DA, who then suggested that that information will be forthcoming when charges are "formalized"

WTF? None of this is standard - you get an attorney immediately - like when you are arrested - not at the whim of the DA - this has become some sort of shit show that the Dems are going to regret.

321 'Boid, You'll like that XO. I've mentioned it before. I just finished the Doorly's 8 year old. Just came back from TW and saw they were offering both for $19. The 8 has more of a silky finish and maybe more vanilla in in the nose. The XO (if I recall correctly) had more cedar on the palate. I took home a bottle of Foursquare spiced rum today. 14 bucks and 70 proof. Will report back with my findings..

322 naturalfake I sort of feel that rum has been the surging premium spirits category for a while - at least in the American market, where it's much less prominent - and talking with some industry people confirms this. Never pleased to find myself in a crowd, but apparently I (independently) got interested just as many others were.

Europe is a much bigger market for premium rums, has been into it for a long while (there are rum cruises in the Baltic). And many of the big (and small) brands are either Europe-based or actually properties of big Euro spirits brands (like Plantation).

Hard to tell whether current inflation is the cause, or the increased demand for better rums is the reason. So far, not too bad.

325 Joe Kidd, I remember you mentioning it - and in fact I'd already downed a bottle of the XO prior to that, and was pleasantly surprised. Now the 8-yr is added to my "to try" list for inexpensive options.

I splurged on a couple of costly bottles this summer, still haven't opened them - a Worthy Park from Jamaica, and the Real McCoy 92-proof (which is hard to come by). But as I said I've got a stable of $20-35 bottles of widely varying styles that I like a lot.

Nuoc mam (fish sauce) I haven't tried, but that's an intriguing idea. Use that for my V'mese dishes. Speaking of which, haven't made caramel chicken or pork in a long time ....

Yeah, Jamaican, Guyanan and the other funky rums used to be held at arms length. And you could buy great stuff for a very reasonable price.

All of a sudden(for certain values of sudden) people are deciding they now like their rums to have lots of hogo or pot still flavors.

Ah well.

Smith and Cross is still a great bargain and loaded with hogo. Great Jamaican rum. Makes every cocktail it touches awesome.

Unfortunately, my favorite super funky white rum for daiquiris, yo. Has fallen off the face of the Earth.

As someone on Twitter suggested - was this guy read his Miranda rights - he's allowed an attorney - does he have one? Who is he? Has he talked to his client - I mean the guy was arrested 2 days ago and is rotting in a jail with no arraignment on charges - the list of charges, I note, do not include breaking and entry or felony kidnapping, which pretty much undermines the narrative supplied by the Dems. This is a fact - butyric acid, a short-chain fatty acid is abundant in beef, and is secreted through the sweat pores. We're around it so much it becomes a 'background smell', and we don't 'recognize' it.

Most animal fats do similar; what varies is the intensity of the smell of the secreted chemicals. Fish oil is similar, but much less intense. Some westerners say the Japanese smell fishy, but the smell is much less detectable than the beef one we have.

399 371 KitchenAid calls the bowl lift the "Pro" series. I think it has a stronger motor. This new one is not as heavy as the one I got in 2007. The one I was using before was probably 30 years old.

The amount of different models they made was maddening. I got Mrs B 2 of them over the years. There was the classic and then it just kept moving up the ladder. The entry ones had a plastic gear, which was no biggie, easy to change and cheap to buy, and saves from breaking other shit inside if it jams. Then you got to the metal gear models, and then the bowl lift, and then the super duper version with a motor that was rated in horsepower, not amps. I ended up upgrading her to a bowl lift, because the regular one with the screw in bowl would end tightening the bowl up super human tight from the mixing action, and *I* would have to break the bowl free.

They did. We made a rice ration that came in a resealable pouch. You opened in the morning, poured in some water, resealed it and put it in your pack, and had rice ready to eat in the mid-afternoon or later. The Vietnamese wouldn't eat it until they came up with a nuoc mam powder that added that flavor.

It's amazing how certain scents become inextricably intertwined with certain memories.
