I made lazy (wo)man's green chicken chili the other day: cubed roasted chicken, chopped onion and jalapeno, can of corn, can of cannellini beans, garlic, spices, and half a jar of tomatillo sauce. Delish! Top it with shredded cheese and/or avocado.

Made meatball-stuffed sliders yesterday. OMG, so good. Like eating a handheld spaghetti dinner. Look at this video and try to not drool.
https://preview.tinyurl.com/y5mzksko Short version - Get some King's Hawaiian rolls. Leave them connected. Cut out a hole in the middle like you're making a bread bowl. Leave some bread on the bottom. Brush the rolls with garlic butter, inside and on top. Bake 'em for 10 minutes or so til they get a bit browned. Mean while you make some meatballs and bake or fry them. Make 'em small, they have to fit in the hole. Then you put a tablespoon or so of spaghetti sauce in the hole and then a bit of mozzarella and then a meatball. Spoon another tablespoon of spaghetti sauce on top of each roll and sprinkle more mozzarella over the entire top of the rolls and some parmesan too. I've never had crawfish. I even lived in Louisiana for a few years but never tried them. I did finally try frogs legs. Tasty.

Never eat a cooked crawfish with a straight tail.
Straight tail means it was dead before it was cooked. Only bent/curled tails. Also, suck the head and pinch the tail. Kinda like life. I've had crawfish a lot, but I like them better in a concoction like an etouffe'. I love seafood, and especially shrimp, and unfortunately crawfish, to me, have a bit of a muddy taste that I just don't enjoy. But then when I say I love seafood, i must say I mean that literally, as in I just don't enjoy any fresh water fish of any kind. Gotta be salt water stuff.

Crawfish are delicious. I loved eating the rice-fed ones from the Louisiana bayou.
Cut up carrots, potatoes, ears of corn and sausage and toss intoa big boiling pot for 20 minutes or so. The secret is to purge 'em - dump 50 pounds into a couple of coolers and pour half a box of Mortons salt into the water. They will purge all of the dirt and impurities in about 15 minutes. Then you can rinse with fresh water. And sorry, if you think this is gross , then you have never "deveined" aka gutted a shrimp before eating. So stifle your mudbug judgement, shrimp-shit-removers. There will be some dead ones so pick those out. Dump them into the boiling water and vegetables with enough water to cover all of them after adding one box and one bottle of Zatarains per 25 lbs of shellfish. Tape newspaper to a table and dump everything out on it when the crawfish are red and the potatoes are soft-ish. Plates are not needed. Break the crawfish in half, pinch the tail from the bottom like a tube of toothpaste. The white tail meat is lobsteresque in deliciousness. Hardcore crawfish eaters will suck the juice out of the head. You should try it at least once to get the full-on Coonass experience. He passed on the steamed corn and potatoes, because carbs. Which was a mistake. He just checked his blood glucose (just diagnosed with Type 1 diabetes---which was a shock, considering his age), and it was too low. We're still in the insulin learning curve. We usually boil mud bugs with a whole bunch of other stuff includung while garlic, red 'taters, corn, sausage, oranges and lemons. They just gotta go into the boil last and then turn the heat off and let'em steep in the pot until the desired level of spice is absorbed. Pull the basket and dump it on a picnic table covered with old newspaper and stand back...

It is high "touron" season here, so we were sorely disappointed the seafood place was out of blue crab, which is the main reason D'oh wanted to go there.

I agree 100%. And, yes, they still taste muddy to me after they've been purged. So do catfish and tilapia. And for reasons discussed last week, swordfish are out. Years ago we were camping as an extended family, and us cousins went with traps and such to collect crawdads from the lake.
My Aunt Virginia had put on a pot of water for the crawdads as we brought back the filled traps, and we waited for it to boil over the Coleman gas stove. When the water started seething we had a minor discussion about dumping the crawdads in alive, as usual, and it was explained (as usual) that this was the fastest way to kill them and cook them. So we dumped them into the pot of boiling water in one batch, and discovered that there was about an inch too little water in the pot and the top level of crawdads were not submerged in boiling water, but were being steamed, not flash boiled. My Aunt, quick thinking, grabbed the nearest pan lid to drop down on it, having dealt with lots of incidents that make kids to "eeew!!!" She plopped it down on the crawdads to both preserve the heat in the pot and hide the crawdad from a bunch of pre-teen relatives who were about to go into convulsions of ewww. The lid, however, was a bit smaller than the pan and there was a gap all around that the crawdads could poke their claws up through in their mortal agony. Which they did. Takes 3-4 minutes in the radar range to prepare. Taste: Good. I added ketchup, mustard, and a pickle. I must say, it's a damn good cheeburger for 3 minutes and no mess. Eris, my late Florida grandparents had to go to an actual ice house back in the day to get blocks of ice for their "refrigerator." Both of my maternal grandparents were great cooks, but I'm pretty sure my grandmother used Velveeta, too.
My grandfather was an incredible gardener, fisherman, and hunter. Every single thing they ate he grew or killed. Except for beef and pork. And my grandmother used a local canning facility to can big quantities of everything to see them through the cooler months. They were awesome. Miss them to this day. I went to a crayfish boil last month that put sausage, potatoes, corn on the cob, artichokes, and pineapple in with the crayfish. I got to eat the crayfish, sausage, and artichokes because carbs. The artichokes were very tasty.

It had additions of edible wax to keep it stable. One of Dad's friends mentioned when I was a kid in the 70's that he went through a duffle bag finally and found a block of the chocolate. He said sometimes they would have a pale streak through it from the stabilizing wax, and you could put it on the fender of a car or the deck of a tank in full sun and it wouldn't melt. Yesterday was my cheat day on my no bread , wheat products and sugar diet . I blew it because I got up too late for breakfast and had a protein drink before playing tennis. Barely avoided heat exhaustion so was too tired to go sit down for a nice Italian dinner as I had planned. Eventually got up and did a McDonald's drive thru which was terrible.

I'd imagine a truly righteous outdoor slurp n burp would have pit barbeque and mud bugs, waitresses in daisy dukes and SRV, Skynyrd and all the great blues artists on the playlist. Wooden picnic tables and adirondak chairs under big oak or pecan trees and a river or a pond on site. And only scooters would be parked in front.

The reason Chinese crawfish tail meat is sold here in abundance as opposed to American raised is because of the same old story of cost of labor. If you could invent a machine that could economically peel a crawfish tail you would become very rich. Many have tried but to get the tail meat in one piece is the holy grail of crawfish farming.

Jane, your hubs needs a complex carb to go with the fast carbs like juice or ice cream. Otherwise his sugars are going to spike high then plummet.

Welp, since Velveeta is just the scraps of cheese from the cheese mnaufacturing line that have been swept up and processed into a block, I'd guess the FDA description would vary depending on how much floor debris, bug parts, etc. that get into the mix on a weight basis. I had my first cup of their Blackbeard's Delight blend today. OMG!! So much flavor and so smooth with almost no acidity. I found myself sipping it slowly just to prolong the taste. The only coffee I've had that compares was at an auberge in Quebec City. I usually drink coffee black but I'm going to try this blend as a cafe au lait once in a while. Preferably with a beignet. velveeta - I remember the worst nachos I ever had in my life was up north somewhere, they had no idea what mexican food (or tex-mex) was actually supposed to taste like, so for "nachos" they just poured out a plate of doritos and melted a block of velveeta over it.

It's been a great crawfish season here on the SE Texas coast. A real wet winter and early spring kept the bug farmers happy and the prices steady. My oldest daughter requested a crawfish boil for her college graduation party 2-3 weeks ago and if I remember correctly I paid $1.75 a pound for a Lg/Med mix. We buy them by the sack which usually averages about 35-38 lbs a sack. It was a small party. 4 sacks for about 20 people. 5 lbs per person is usually a good guide for us webbed feet folks.

I gotta use the food thread this week to give a shout-out to Doordash. I told the story a number of ONTs ago about what happened when I tried to order Chipotle via their service. Anyway, first Doordash gave me a $20 credit for messing up the delivery of my order. That was nice. Just a few days ago, I got a second email from them, letting me know they're ALSO refunding the entire cost of my Chipotle order. So I've already had one almost-free delivery from Popeyes by Doordash, since then. Now it looks like I'll get yet another almost-free delivery from Popeyes. Crawfish seem like way too much work for the small amount of actual food you get from each one. Loved Captains Courageous. I was late in finding Kipling, but he is certainly one of my favorite authors. First novel of his I read was Kim, which was brilliant. Was up at the northern casa this week. Smoker is at the southern casa. I had three racks of ribs. Using a regular Weber grill, I inverted a cast iron pot over a pile of coals and sprinkled hickory chips on top and around the pot. It was just hot enough to produce smoke, but not hot enough to burn. Had to finish them off in the oven, but not bad. Redneck ingenuity.
