Food Thread:The Hamburger: Are You For Them Or Against Them?

I hope all of you celebrated "National Hamburger Day" yesterday. Or maybe you are postponing this most important of secular holidays until tomorrow, when you grill (or smoke or barbecue) for Memorial Day. Or today...or Tuesday...or any random day when a burger would really hit the spot!

I make burgers every couple of weeks, and as a simple main course it is hard to beat with its extraordinarily pleasing combination of crispy or charred beef, fatty juiciness and the luscious mouth feel of a couple of slices of American Cheese. Yeah, I have entered a higher plane of consciousness when it comes to the cheese on my burgers...only the finest pasteurized prepared cheese product is good enough for my burger!

I won't refuse some good cheddar, or even a mild blue cheese, but plain old American Cheese really does hit the sweet spot of melty, gooey deliciousness. And if you can get a good char on the burger, or get it crisp in a pan, then you are well on your way to hamburger heaven.

But what about the bun? That is an often-ignored part of the equation, and while this might be heresy, I like a potato bun for most burgers. I will occasionally use brioche buns, especially when I am grinding my own and am shooting for a particularly fatty result. The brioche bun stands up to a bit more than the potato bun.

As for condiments? Caramelized onions of course (unless I forget), and that's about it. If I am making smashburgers I might briefly entertain the notion of a pickle slice, but tomatoes are right out, and don't even talk to me about lettuce. And your special sauce is mayo and catsup, just like everyone else's special sauce! Which I don't use except on the aforementioned smashburger, and then only under duress.

I wonder how maple syrup would be on a burger?

The Barefoot Contessa Tuscan Lemon Chicken I mentioned in last week's Food Thread was good, although I didn't like it as much as some others at Chez Dildo who don't have sufficiently evolved culinary taste and really should just sit down and let me cook.

The marinade has a lot of lemon juice, which I think changed the consistency of the chicken a bit too much. And weighing down the chicken on the grill is intended to get as much contact as possible with the grill itself and aid in browning. Otherwise known as chicken-under-brick. Sure, it works, but flattening the spatchcocked chicken as much as possible beforehand will do pretty much the same thing and is easier. And the pan sitting on top of the chicken keeps too much moisture in the skin, so it doesn't get crispy.

But the marinade added some nice flavor, so I will probably use it, or a variation with less lemon juice when I make chicken.

14 It has been my experience that whole milk comes with a Best Buy Date of about, at best, +15 days. This week I noticed that the Walmart Organic Whole Milk in my FiL's frig in Georgia has a BBD of 8/8/22. I sort of assumed that this was a misprint of 6/8 which seems normal. But the milk was really good, as creamy as half&half, so when I went to WM yesterday here in Alabama I bought a gallon here. BBD of 8/13/22.

Still, this has to be a mistake.

Sweet potato pancakes (which I have made) with a warmed fresh banana sauce can be very good.

Carrot cake pancakes (which I have also made) with a warm maple syrup (yup, I'm going there) can also be very good.

26 14. Grump it is probably not a mistake. There is a different type of pasteurization that used very high temperatures for a shorter period of time and allows for a longer use by date. Most organic milk coffee creamers etc use that process and it often gives a two month life to the product.

39 Hamburgers should be topped according to mood and desire to actually put in effort.

If there's no effort, just get some chopped sweet onion, hamburger pickles, ketchup and mustard OR mayo (not both) and the cheapest pack of Aldi's hamburger buns and have the equivalent of the Mcdonald's burger.

If you want effort, make bacon, caramelize onions, get green leaf or butter leaf lettuce, pretty tomatoes, pickles and go for the 3 fer (ketchup/mustard/mayo) on a nice bun.

Cheese optional - my kids will be any cheese. Back in the day, I loved a black and blue burger (bacon and blue cheese)...but those days are past.

So, lentils, pork, and beef - that's stupid. Most vegans (and Lenten Friday Catholics) use the lentils to be the beef. Not sure why you'd bother doing all that protein and then lentils, too...

55 Mrs928 does the opposite of smash burgers. She works the beef as little possible to form the patties and then sears them in a very hot pan without squishing the juice out.

They are very good, juicy yet with a crust.

56 I did not realize it was "Hamburger Day" yesterday, but it has long been tradition in my family to have burgers on Saturdays. I think my dad didn't enjoy going out to eat due to stomach issues (which I totally understand now that I'm 29) and preferred to make his own. And since Saturdays were devoted to chores in the morning and Wide World of Sports and Hee Haw in the afternoon, burgers were a quick dinner to put on.

And since I'm a traditionalists, lettuce, tomato (preferable out of the garden) pickles (not my mom's in a million years) and ketchup. Cheese is for people who don't have my stomach.

71 Dinner tonight was based on the overgrown herb garden I have driving my guest nuts. He cut it all back and gave me a load of oregano, parsley, and dill...so I took it all, tossed it in the blender with garlic cloves, the zest and juice of a lemon, s&p, and olive oil and have a greeky-style pistou. I bought fresh Swai (cheaper than chicken breast at the store today) and I'll lay the sauce on the swai, add sliced tomatoes on top (b/c I have an overripe one) and bake it.

On the side is the HMart noodles (1 kid doesn't eat fish, so this is his main), fresh corn on the cob, and dragonfruit blueberry salad. And then dark chocolate brownies with a peanut butter swirl.

73 FenSpouse did make me a burger for lunch-no bun and chipotle avocado dressing on it. Also a few French fries and some cucumber onion salad. One thing about having surgery is you don't feel like eating much. Tomorrow we may-or they may-have hhot dogs.

In poboy land where I live, the best way to order one is 'dressed and pressed'. Dressed means with lettuce tomato and pickles, and pressed means lightly fried with an oil (mayo) at high heat for a minute or so using a spatula to flatten it. Yum.

No, the best burgers involve pressing a thumb down the center before laying them down to cook...and then only going to medium.

Smash burgers, by definition, are pretty much always cooked well done and the idea is to get the most surface area for char/crispy outside-ness (if in a pan)...

I don't think it's "protocol" to smash grilled burgers due to loss of moisture as well as the risk of pushing meat through the tines of the grill onto the fire/coals. For flattop burgers, I think smashing is used more to get the caramelization on both sides of the meat. Note: this is my "thinking", I have no idea if this is true.

Get some ground chuck, 80/20, that is NOT SMUSHED TOGETHER. I have found non-smushed ground chuck at a Kroger-affiliated meat counter and also at Braum's.

Delicately separate the strands and form patties by criss-crossing the strands and pressing just enough to keep them from falling apart. Make the perimeter a bit thicker than the middle.

Plop the patties over a hot fire on the grill and salt and pepper the tops. As soon as the bottoms brown, turn the patties, salt and pepper them, and top with Monterrey Jack or Muenster cheese. The cheese will melt in the time it takes to finish cooking the other side.

I can't tell you what is the best thing to do next because at this point, Grillmaster Bassman and I devour a couple of patties each, sometimes with ketchup, mustard, or A-1 and a side of grilled veggies.

I've adapted pretty well over the years, but I really miss cheese and yogurt. The fake (cheese) stuff is usually made with soy, to which I am also allergic, and I'm starting to have trouble with nut milks, so that rules out coconut yogurt.

And Huey, I keep scrolling past that pile of bread, and I want to reach into the computer and grab one. They look amazing!

110 I did ribs among other things yesterday for 10 people. Got a pack of spareribs from Sams that had two racks in the package and cooked them the way I normally do. One turned out to be meat candy delicious and was one of the best I ever did, the other rack from the same package was tough and chewy. Never had that happen before. I just assumed that both racks of ribs in the package were from the same pig but I guess that's not the case.

116 Lots of things go well on a hamburger. Tomatoes are fine with me if they're sliced thin enough. Jalapenos and avocado slices (or guacamole) are also good. Fried egg is good. I like mustard and ketchup but not mayonnaise. Pickles, lettuce and onions are standard.

As popular as bacon is I could take it or leave it on my burger.

Ground venison mixed 3:1 with fatty ground beef makes a pretty good burger patty if you don't cook it well done.

Things that some restaurants have offered on burgers that I can't abide: alfalfa sprouts, mushrooms, beets.

The best "cheese sauce" I've ever made mimics a light alfredo with olive oil, flour (into a semi-roux), garlic, rice milk, acres of nutritional yeast and salt, pepper, and any Italian herbs you like.

If you always thought alfredo was too heavy, but liked something lighter, this will remind you of that cheese sauce, and can be used in lasagna (as a bechamel for a very loose version) or on top of pasta with sauteed greens (I always like greens with alfredo) and a preferred protein. You can also add a little vegan butter to the sauce to up the fat and butteriness.

Nope, it's more the texture of powdered parm meets the "deli" shredded parm. It's just nutritional yeast - it's what vegans use so they don't die of malnutrition b/c it is a nutritional powerhouse...and being a yeast, it has that "something" that cheese tends to deliver, but it has it without the salt and dairy cheese has (thus, why it's not as good as parm, but in a sauce when you add that salt in and something close to dairy, you can get it close)...

I hadn't had fish in a while, so Friday night I made something I hadn't made in a long time, I thought it was going to be baked fish but it really turned into a fish stew (but tastes great) In a 5 litre baking dish, I placed
- 2 large yellow onions, cut up
- 1 stick butter
- 2 lbs of tilapia filets
- 1 lb of scallops
- 1 bunch of fresh green onions, diced
- 1 box of mushrooms.
- plenty of salt, pepper, and Tony Chachere's seasoning.
- some cloves of chopped garlic

baked for about 40 minutes at 375 and it was wonderful. You see I didn't really put any fluid in it, but enough fluid bakes out of the ingredient to make it more of a stew than anything else.

I will not deny this. They have gotten much slower in service and the quality appears to have dropped. They've taken good stuff off the menu and added some strange things. They're really off the mark on their wings, tho, which does sadden me.

162 Crispy burger in a pan, or The Fire Alarm Burger

Iron Skillet, max heat. Let it get super hot. Solid, stiff metal spatula. Bigger is better.

A small handful of 85/15 ground beef. Don't pat it out, just drop it in the hot pan, and Hulk Smash. Really, smash it flat, flat, super flat.

Cover until it starts to cook all the way through to the top.
Flip it. Add cheese. Quickly. (I usually melt the cheese on these in the microwave).

Delicious and very thin and crispy hamburger. My favorite.

Burgers New Dawn. H.E.B. 90 % sirloin, 1 lb., divide into two patties. Blend seasonings in by folding/tearing apart/folding a few times, forming into a loosely rolled "ball" and re-pressing into a patty. Pronounced dimple in the middle.

Skillet, 1/4 lb. unsalted butter, and turn frequently. Keep those juices IN the burger, not flowing out. 1 min. before finish, splash of beer, wait 30 sec., flip, add cheese. Nice, crusty burger, absolutely bursting with juicy goodness.

Toasted Crustini buns, lightly buttered, mayo, serve & eat. Yum!

Twin Peaks food is actually quality in most cases. Best 'breastaurant' by far was Bone Daddy's. Quality smoked meats and high talent staff.

199 My taste in hamburgers has changed. In younger days it would have been a huge patty on a regular bun and drowned in ketchup. Fries or chips on the side. That was it.

Now I like two patties, charred on the outside but just on the rare side of raw on the inside. (Cast iron is our friend.) Between the patties go slices of aged swiss and a layer of roasted onions. The roasting brings out the natural sweetness of the onions and contrasts nicely with the swiss. Salt and pepper. No condiments that get in the way of the beef flavor. These carb-concious days I might skip the bun or just do an open face on potato bread. Anyway, if done right, it's too juicy to pick up easily. Mrs. JTB's bread and butter pickles on the side and corn on the cob dripping with butter.

Heaven on a plate.

This morning Miss Linda and I drove out to the Cracker Barrel in the eastern exurbs for breakfast. As always, the food is good, though it's a little startling to read the menu description of, say, the Smokehouse Breakfast, and then have it appear on a plate much too big for it. To be fair, the biscuits that are part of it come on their own plate with the gravy and butter.

Usually I pick up a pound of salmon filets at Walmart in the frozen aisle, 4 filets for (now) about $6. The store was out of that, and I didn't want to spend $11 or more for 2 lbs. I settled for a packet of 2 smoky barbecue salmon filets, under $8. I'll try one tonight. Plus I have ground beef, chimichangas and burritos (frozen type, but they can be enhanced with cheese and seasoning), and a couple of pot pies.

209 Thanks for the Chow Talk, CBD! Made some Instant Pot Dirty Rice from a recipe I found on the Fox News website, of all places. It was well received by my household constituents. Just trimmed up some chicken thighs for pulled chicken bbq sliders. Going to make my first batch of homemade Goetta. The Germans who settled in the land of my youth mixed steel cut oats with beef, pork, or whatever meat they had, spiced it, and called it Goetta. The need to make it from scratch is the result of me forgetting the 4 lbs of Goetta I had in my friends fridge when I was up home last week. While home, I discovered that my favorite hometown family owned restaurant had had a kitchen fire and will not be reopening. This restaurant was my first dining out memory. Mom and Dad took my brother and me there often. I have a couple of cheap steaks and two very nice tenderloins to reverse sear and finish on the grill tomorrow. Also going to take a stab at some sous vide lobster tail! Enjoy!

I just got told by the guest that the pistou is fabulous, wonderfully fabulous. So, I think that means dinner is a hit.

And swai was perfect for the herb sauce (15 minutes at 350 for 2.5lbs of swai, coated in the sauce and topped with the tomato) - it let the sauce just shine. I ended up dicing the tomato after deseeding it so everything wouldn't get to wet, and the little tomato chunks were perfect with it.

My local chain grocery I think still carries the Santa Fe green chile mix and the red sauce mix -- a company in Taos sells them. The green chiles are quite hot, as in super spicy. If I use them I'll need to have some chocolate or honey afterward. The red is not so flaming hot.

228 Welp, took a crack at doing sea bass, sous vide. Not bad for a first outing on fish, except for the fact that the ziplock bag I used for the fish pinholed while it was cooking. So, the fish was a bit waterlogged. Next time, I'll use the bag sealer instead, especially now that I know the time/internal temperature progfile

Accounting for all that, fairly decent and my wife (not a big fish fan) liked it.

Once I couldn't have cheese and lost that fat, I moved on to adding it back with bacon, mayo and/or avocado/guacamole.

It's not so much having the mayo to taste the mayo...it's to have that mouthfeel for the cheese that's no longer there. Which is why I almost always have bacon b/c it replaces the salt and fat of the cheese...

for me, it's always worked to just really knead the ground beef into a very cohesive ball (this is when I add spices) and do it until it really sticks together. Then I just flatten the ball into a patty.

You have to read the label on those things with an eagle eye. Lots of them are crammed full of soy.

The ones that are labeled "100% beef" at least come from some part of a cow. Maybe not the best part, or a part that you would eat if you saw what it looked like before it was ground up, but *some part*.

No binder needed.

Either make the patty bigger and flatter than you want, or put a "dimple" in the middle of it with your thumb. Without the dimple, it will pull itself into a thicker patty with less diameter as it cooks. Hamburgers wanna be meatballs for some reason.

275 Late 70's, into the 80's..... I don't remember when they went away, but G. D. Ritzy's had smashed burgers, very skinny fries, hot dogs (I think) and ice cream.
The burgers were what I cared about. The edges of the burgers were smashed out to carmelized lace..... honestly, they almost tasted like candy. I would love to find something similar today.

My family gets grass fed and finished from a farmer in WI. I have to lean way to the rare side so it doesn't over cook but who knows what's in anything these days. Way better than anything in the grocery store imho.

It's totally cheating, but I use a set of largish cookie forms. I make giant patties of the meat on the cutting boards, and then punch them out with the forms and leave them there until it's time to cook them. Perfect patties, every time.

315 I like my burgers with veg and not too pink in the middle. Lately looking at menus in burger places, I just have to think: Overkill! You do not need 75 additions on top of your burger. No blue cheese/mushroom/caramelized onion (raw, if you please! It sets off the unctuousness of the burger so much better). And yes to pickle, lettuce, tomato.

I'll take mustard on a burger but I think I like "special sauce" better.

The Shark Shack, intersection of Strand & 24th St. OMG, wow, they're perfectly seasoned, they cook 'em *exactly* to order (done-ness), and the fries, are without a doubt, the best in Texas, not just best on the island. Perfectly stacked, presented and served, and the portions are in a word, generous.

Then, go diagonally across the same intersection to LaKing's Confections, and order their chocolate milkshake. Best you'll have in this life, period. How can I say that? Well, they make the ice cream that goes into that shake, right there on site, along with all the other "from scratch" confections. They're every bit as good as the Swiss. A mile from Casa New Dawn, and it's a wonder I don't weigh 350 lbs. (I allow myself a LaKing's shake just once a year!)

I use the same broiler for a NY strip steak and have had no problem. When the smoke alarm went off, I grabbed the flaming pan and ran out with it to the deck. It took five minutes for the smoke alarm inside to stop blaring. I wonder is there is some way the patties are processed that makes them more likely to catch fire.

I like buying the smaller size avocados, b/c it is just slice and scoop. The pit tends to almost fall out at this size and is never an issue, and 1/2 an avocado is perfect for 1 stuffed sandwich/rice bowl or 2 more scant ones...

The scallops had been in the freezer for a really long time so I started thawing them out on Friday. I served them over some white rice with a salad and some grilled tomatoes. It was a tasty supper.

It usually will have a cheese, like sharp cheddar, Swiss or a Mexican Cheese mix.
Lettuce, tomato and green chilis are also regulars.
I always add spices to the burger meat.
Usually garlic, salt, pepper, thyme or basil, some chile powder.
The bun is important, too.
Sesame seed or potato or homemade Hawaiian.
