Food Thread: Why Do People Torture Themselves With Monstrously Hot Pepper Sauces?
I don't Know, But I'll Tell You Next Week How It Goes

It was a gift from the brats, and a direct result of my bragging that I, and I alone discovered Tapatio hot sauce. There are five more bottles of hot sauce, but this was the one that caught my eye, and will probably be the death of me. I did demand that they try it with me, so I will be able to share the pain, but still...

I think I will make scrambled eggs for the tasting. No reason, other than I can't think of a food that goes better with all sorts of sauces. I'm sure as shit not going to ruin a steak or pulled pork or something equally delicious.

I do have a new fire extinguisher, so if it is really bad I'll just blast it into my mouth...that should work well.

Which brings me to the question of the day: What do you eat hot sauce with? I know it can go on pretty much anything, but some foods really do lend themselves to heat!

Our Thanksgiving dinner was successful, and even though we had more people than ever, it went smashingly, mostly because I planned the meal a little bit more carefully, even thinking about the size and shape of the dishes that needed to go into the oven. That helped a lot, and one silly-sounding but amazingly convenient thing we did was set up a table in the dining room for the serving dishes. That way we didn't have any congestion in the kitchen, and there was plenty of room on the dining table. It made the meal seem more relaxed, and serving was MUCH easier.

Yeah...many of you do this already, but I am slow...

The mashed potatoes at Chez Dildo's Thanksgiving feast were particularly good. One reason was that I didn't make them; food often tastes better when other people make it, especially when one has been cooking for two days.

But the other reason was the recipe. It called for all of the usual things, but also said that the milk should be hot. Other than that it was a pretty standard recipe, but the potatoes were delightfully creamy and smooth and just right.

Why does hot milk make a difference? I can imagine all sorts of complicated chemical processes going on, but really...they are just guesses.

Dad Cooks Dinner is an excellent and relaxed cooking blog/website that I have linked several times. It's exaclty what it sounds like, and it's worth a peek, because the author knows what he is doing around the kitchen.

But the last several times I have poked around it all I found were "instant pot" recipes.

No offense to a fine site, but....BORING!

This was sent to me by a certain coblogger, who claims that this was his exact experience as a child, and in fact this film was made in his home.

I am suspicious, because the same coblogger has been playing psychological games with me; making me buy all sorts guns I don't need but apparently desperately want! This may be the opening salvo of a new campaign, probably to get me to buy something weird. But fun.

I grilled some "clod petite steaks" last night, and they were delicious, even though I put a commercial dry rub on them that was too hot for beef, and even worse, I overdid them by a few degrees. Medium rare might be tolerable at your house, but here at Chez Dildo it is a hanging offense.

Some of you may know what the "clod" is on beef cattle, but until recently I had no idea there was a portion that could be cut for steaks. it isn't a substitute for a NY strip or a rib steak, but it was reasonably tender and very flavorful, with no gristle or connective tissue to boot!

What the hell! Is everyone on the electric cooker bandwagon?

Anyway, this looks good, and can obviously be done in a regular pot; you know...the cooking utensil that everyone has!

Slow cooker pulled beef with Jerusalem spice blend

It's just pot roast with a bit of a Middle-Eastern flair, although the sweet component makes me think of Eastern European cooking...

Avocados sans thumbprints, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

Next time, if the store has fresh-baked French bread, you can use that as a delicious sub (slice down the middle and you have 2 pizzas ready to go)...and if that's too much for one, you can also pick up bagels - that's the summer pool lunch of champions...

9 Why slow cookers? Because they're good. They work. They tenderize meat. They give time for the seasonings to sink in. And they give the cook time to do other things, like shop, or sleep. There is also a flatbread pita that works well. I here that it was very popular for sending to people on Base. You can send the pita, can sauce, peperoni, and cheese even it if take weeks to get there and they can make a damn nice pizza!

18 I grow peppers and make hot chile oil from them: mix it in with sesame oil, and you can add other spices like ginger if you like.

Let it steep for a bit and it is good to go. Very tasty with a pinch of salt on rice, or anything else you would like to put hot oil on.

I also chopped them up and pickled them in vinegar and pickling spices, and migoodness they can be hot.

My wife is Korean so . . . She is nice and tones it down for me.

Ya need a different regulator though. Propane needs a higher % of oxygen than household/city gas.

21 I make mashed potatoes with a bit of yogurt and some of the warm water from boiling the potatoes instead of milk. I like to add butter in as well.

I was always told to use warm milk because it would make the potatoes grey, but I don't know

22 Hot sauce is great on most whole grains. Quinoa, oats, bulgur wheat. Heavenly with a bit of butter and ghost or habanero sauces.

If you want to lessen the burn, and some people do, add some shredded cheese.

It's only b/c my grocery keeps giving me $2 off bakery item rewards, and that's about the only item I can buy with my allergies, that I thought of it...

That, and I'll never make my own dough b/c I don't roll things in my tiny kitchen - there's no room on my counters, so pie doughs and pizza doughs are premade or replaced with other easier options...

I took her to eat and she got the steak and sides at this little pub I used to visit. Bacon or sausage, egg, and cheese breakfast sammiches (Tabasco). Mixed in soy sauce (siracha) for dipping or on top of almost any asian dish. Franks Red Hot for other. Tapatio for Mexican. Louisiana Hot Sauce for dips like crab dip. Sweet Baby Ray's Buffalo Wing Sauce for wings. We have a garage refrigerator that is substantially filled with various other hot sauces, but those are my most used. Spicy pickles and mustards, too. Not really a fan of the demon hot sauces.

94 I had a Carolina reaper sauce recently that wasn't a pleasant heat but it was manageable, no running for the tap.
The biggest problem with it is that it tastes awful.
Some of these things are sold as a challenge and expected to go in the bin nearly full but they should still make them tast good.

I'm on a high protein diet and I usually have a spicy sauce with Turkey bacon and particularly on poached eggs. I like Peri Peri orI have this nice green jalapeno stuff that goes great on anything.

Typical dipping sauce is mayo, BBQ sauce or ketchup and hot sauce. I will also try to use different things like mustard or Worcestershire sauce.
I try to change it around depending on what I am in the mood for.

I had a friend whose car I was in while cutting school. He decided to 'pedal to the metal' while topping a rise in the road. The car became airborne at about 60 mph. While we were in the air I just so happened to notice that a police car was traveling in the opposing lane. Sitting in the front seat was a bag that contained two joints, which I proceeded to consume out of an 'abundance of caution' for what I assumed was going to happen. The cop of course turned around and followed us, while my friend innocently turned into a random driveway. The cop drove by.

Yeah, consuming cannabis through the stomach only produces a very mild effect. But everyone, once we got back to school, for the rest of the day, expected I was wasted. I think I may have become a sort of 'folk hero' for that experience but actually hardly got high at all.

The original still tastes like vinegar and the original green is still... green. I've had the Habanero before, and it's hot but good. Their Scorpion sauce was hotter and not very good at all. Their Buffalo sauce was as vile as all Buffalo sauces, and their Sriracha doesn't hold a candle to the rooster sauce.

It's a decent excuse for leftovers. Last week I chopped up some leftover turkey, put some shredded cheese, and spicy sauce on top. Today, I had some leftover rice from a couple nights ago and put that in a bowl with similar cheese and sauce and nuked it. Pretty good with minimal effort.

It's what happens much later at the end of it's magical journey where there's a problem. I wasn't always this way. But around my mid 40s I started noticing that my body would give me grief around 2am in the morning. Good flavorful hot sauce or spices with moderate heat is fine for me now. And my wife can't handle anything spicier than vanilla pudding so I buy what I like.

Around here we call it "Dave's Profanity Sauce". If you like the garlic accent it is by far the most potent and enjoyable mostly for stews, chili and beans/rice.

I tried it in Chicken Noodle Soup, but the original Tobasco really is better for that application.

177 I put hot sauce on clam chowder (usually out of the can). It's so bland that I can basically titrate the sauce to get it at the perfect heat level, at which point I'm basically eating clammy queso dip right out of the bowl. My go-tos for that are Dave's Insanity Sauce and Dave's Ghost Pepper Sauce which are both in the "who thought this was a good idea" category of spice. I prefer the Insanity Sauce because the vinegar in the Ghost Pepper Sauce can curdle the cream, but half a teaspoon of either sauce per can is enough to make me sweat a little.

But neither of those are "pure ghost pepper concentrate", unlike the sauce that CBD's family is apparently trying to kill him with, so half a teaspoon per bowl may be a little much unless he's getting ready for a colonoscopy.

232 Not technically hot sauce... we use Zatarain's Crab and Crayfish Boil in some sauces like gumbo roux and spaghetti sauce. The one we use is a liquid and gives a little bite to the sauce, not much, but enough to tell. As the name suggests it's originally for seafood boils to add zest. A tablespoon or two is what we typically use.

I also have Tabasco for special occasions (e.g., Bloody Marys) and Dave's Gourmet Insanity ghost pepper sauce as a "food additive" for spicing up large meals (e.g., vats of pork 'n beans).

Limits. You can keep a maximum of 3 tarts per angler per day. All of the tarts you choose to keep must measure between 60-68 inches. As we mentioned above, you can keep one tart measuring over 68 inches per year with your tart Tag.

292 I've been making my own BBQ sauce and I have to split the batches because my wife also believes 2 flakes of pepper is too hot for her delicate taste buds...

Anyway... In Friday's batch I put a heaping teaspoon of ground chipotle into 12oz of the BBQ and simmered it for 15 mins (after a 45 min simmer for the other 1/2 of the batch).
The chipotle adds a follow-on heat that is quite tasty without a lot of drama.
Tried it on chicken wings, both the BIL and I thought it was just right.

Buttermilk is supposed to be good. That's what they used on that youtube series. Like I said, I don't actually have any problems eating it.

My last adventure was when I went to a thai place and ordered Nuclear Chicken, how spicy? they asked, thai spicy I answered with a steely look. It was so good. It was flaming hot and had flavors of a garam masala. Set my mouth on fire for hours, and it tasted really good. Later that night ... it was like those times when you drank too much, like obviously too much because whatever blessed digestive trigger that causes you to expel enough alcohol to keep you from dying already happened a few times, ... and you're just sitting there with your buddy the toilet ... that's your night. Well, this was the same but with spicy food and I've never pushed it since. Horrible night.

More research showing that the vaccine causes the heart problems and that if vaxxed during 1st 20 weeks of a pregnancy will result in a miscarriage. And to top it off the vaxx will also affect the reproductive system both male and female.

I suspect some folks are correct in that if not enough get the vaxx they will unleash small pox because that has a record and the courts will go along with mandatory shots then. And who knows what else they will put into the brew they inject.

There used to be one of those at Jantzen Beach, near Portland, OR. The chefs were star performers. They'd flip the meals, and pirouette wit the plates. It was like circus acrobats. Food was good, too.

362 Only thing I regularly put hot sauce in is buffalo chicken dip. It's super complicated: canned chicken, cream cheese, and hot sauce warmed in the microwave.

A few months ago my dear husband bought the hot sauce and accidentally picked up Fred's Extra Hot. I had to laugh because he is the reason we don't eat painfully spicy foods. Been working through that bottle and enjoying it immensely.

Years ago I worked for a company that was founded and staffed mainly by Indians, dot not feather. We were at a trade show in Atlanta and the CEO took us to an Indian restaurant that he knew and got the waiter to let him order off menu.

I have no idea what he ordered, he spoke to the waiter in Indian, but when he ordered the waiter looked at me since I was the only non-Indian and just chuckled. Hottest food I've ever eaten by far. I was sweating, my eyes were watering and I couldn't drink enough water. The rest of them seemed totally unfazed.

389 I principally use hot sauce with Mexican food. It really does perk up some enchiladas or a plate of refried beans and rice. I like mine mildly hot; "Louisiana Hot Sauce" is my favorite.

In season, I grow peppers that are mildly to fiercely hot. They liven up a chicken or beef stir fry quite nicely. I can't see ghost peppers, though: any vegetable that requires you to wear gloves to handle it, is, in my estimation, good only to leave out for the squirrels. I must confess, I get a kick out seeing one of the little bastards take a bite of one of my really hot peppers, then take off like a rocket.

392 Only one thing I use hot sauce for. Slice leftover steak (yes, that can happen, especially if you plan for it) very thin. Melt chunk of butter in skillet, add Tabasco, Worcester sauce, and sliced steak. Heat meat but don't over cook it. You want some pink still showing. Put hot steak slices on a piece of toast, then spoon some of the seasoned butter, then add second slice of toast. All seasonings to taste.

Wow, that turned out great. Did the breast at 145 deg. F, panroasted the skin and made the gravy from the breastbones/leftovers. Burp.

Sometimes some ingredients will bunch up inside and cause a concentration of the microwaves and heat it far above the rest of the pie.

I've done that with their deluxe pot pies. I learned long ago that if you're not following a recipe and winging it to under time it and then if it's still not done you can estimate how much more time you need. Otherwise stuff gets burned up.

480 I messed up my Yu Xiang pork -- added too much pickled hot pepper. It's super-hot. I will eat all of it, but I will suffer.

Seeking to soothe my stomach, and redeem my cooking ego, I pulled some Sauce Bolognese out of the freezer, and made Marcella Hazan's baked rigatoni recipe. Very simple. Rigatoni, Bolognese, grated parmesan (if you don't have a ribbon grater, get one), and bechamel. That, and butter, is it. Bake in a 400 degree oven for 10 minutes, and the pasta pulls in the sauce, and you have a delicious, creamy dish that is worthy of any restaurant.

Of course, to get there, you had to spend like 10 hours making the Bolognese, but that's a sunk cost once it's in your freezer.

I've been doing the same, thinking about replacing a 17 year old F-250. What happened to pickup prices? I remember paying less than 25 grand. Now everything is all messed up. They cost like $60,000+, the used ones are more expensive than the new ones, and the Ford dealer that claims the largest volume in the state has one (1) F-250 in stock, and it has the wrong engine.

If it's an eagle (or maybe a bat or quokka) do it while it's on the sawbucks. As far as hoisting the flag, it's pulleys and halyards. Salty can provide you with the required maths on that.

I've got all that covered. The problem is that I have a 20 foot hollow pole, and the thingy that sits on top of it, and tightens to the top of the pole with three screws. On top of the thingy is the truck with pulley and the decorative ball (I admit it shoulda been an eagle).

The thingy is at ground level. The top of the hollow pole is 20 feet in the air. They need to meet. That's the problem I have to solve.

Unless you live on a farm or ranch or do work that requires a pickup, you probably only need a pickup once every couple of months but when you do, nothing else is a good substitute. On the other hand, you might be surprised how much crap you can get into a minivan with the seats removed.

That is an interesting thought. If my "rent 15 ft scaffolding from Home Depot" idea does not work out, I will do that.
