Food Thread: Fry It...You'll Like It!

Those are blowfish tails! Or Sugar Toads in some parts of the south, and delicious no matter where you eat them.

I was at my local and excellent fish store yesterday for some shrimp, and these were front-and-center in the display case, so what's a fellow to do? Of course I bought them, hoping to convince my wife to try them. I figured if I fried the little buggers they would be more accessible, and I was correct!

Buttermilk. then spiced flour, then another trip through, and that's it. Seven minutes in 350 degree oil and right to the table.

I trimmed the tails of the fins and some of the bones and membrane, but they are small, and with seven minutes in the oil I doubt I needed to do that. The spine was thoroughly cooked and I just ate it without much bother.

The flesh is sort of flaky and mild, and they are the perfect size and shape to cook and to eat. The recipe I saw from "Garden & Gun" suggested hot honey, which sounded odd but was pretty good. Next time I will make a spiced mayonnaise, but even Tartar sauce will work well.

So far...so good. The hardworking government inspectors actually did their jobs and discovered -- over the course of three weeks -- numerous significant health risks and disgustingly unsanitary ("insanitary? Huh?) conditions at this food warehouse.

But...and it is a very big but indeed...they took more than two months to shut them down! How much filthy food got into the pipeline while this pathetically inept crew took two-hour lunches and six weeks of vacation and punched out at 4:00pm on the dot?

Pathetic, lazy, inept hacks.

From a lurker who wrote me with her thoughts about ice cream. She claims to be a not-very-skilled cook, although reading her comments makes me think she is being a bit critical!

I cannot recommend highly enough to make your own ice cream instead of using store bought. They have little individual makers now that it is hardly any effort at all in order to make great homemade ice cream. I got one at Williams Sonoma and I use it all the time. The only time I buy out at a store now is if it is the dairy and I just want a cone while I'm out.

If you experiment enough, you can come up with some great flavors and excellent add-ons that will make it so you will never look back. (For example, my peach ice cream was a killer on the fresh peach pie my aunt made!) The internet has some interesting recipes although you have to be specific in what you are looking for. (For example, I found a recipe for Mint Chocolate Chip that uses fresh mint.) Also be mindful of the time and effort to make some of them. The internet has a lot to choose from but some of them can be very labor intensive and not really worth the payoff in the end. And with your own maker, you can come up with some of your own concoctions.

The simple ice cream recipe with the book is a good basic to start with and expand from there. The key is the milk products used in the creation. The less fat in the milk, the more icy the ice cream will be. So I typically use either 2% or straight up whole milk in order to make it with the milk component. Since I get my milk products straight from a dairy, they are better than what is in a regular grocery store. A friend of mine started experimenting in order to get a smoother batch using corn syrup and condensed milk, but I could not really tell that much of a difference between hers and mine with hers having expended much more effort. But either one is still absolutely better than what you will get in a grocery store.

I'm someone who really doesn't know how to cook well, so I'm always looking for simple and delicious and homemade ice cream fits the bill for me.

The ice cream maker she is referring to is the Cuisinart, and while they have a few different models It seems as though all of them work well and are reasonably priced.

I like ice cream but I don't seek it out too often, but the idea of making exactly the one I want in just a few minutes is intriguing.

This is Misanthropic Humanitarian's usual troll of me, but in this case it looked good, so I swallowed my pride and tried this Epicurious recipe.

It's definitely a keeper, and while the chicken skin was a bit rubbery, the flavors worked very well and it was also quite easy and quick. I will play around with searing the skin side of the thighs before I put the crust on, and I think it will help. But in the meantime this is a good dish that deserves a try.

Oh...the carrots were pretty good too. I didn't expect them to cook that quickly, but it worked nicely.

I've seen all types of idiocy displayed in the kitchen; trays put into the oven with plastic wrap still applied, water dumped into a vat of hot oil, hot pans, right from the oven placed on plastic counter tops, tomato soup used as spaghetti sauce, carrots in chili - I could go on.

36 My only contribution to the ice cream discussion is that I've used and like the old fashioned type you have to add salt to, BUT:

We bought a small unit on clearance a couple of years ago that requires you to freeze a cylinder and that cold cylinder transfers the cold to the ice cream. It yields a more custardy texture but I really like it. A lot easy to use and clean up, but the tradeoff is you won't have any in the freezer for tomorrow.

44 If you can find it, go to the freezer section at the grocery store and get the small Butterball cajun turkey breast. It's the size of maybe two softballs so it's probably only three or four pounds or so.

It's my go-to for smoking turkey now. Really, really delicious and just enough. It will be plenty for one person to eat on for a few days.

Make some dressing, mix up some Alabama white sauce, get some canberries, and you'll eat like royalty for a while.

49 If you have a KitchenAid mixer, there is an ice cream attachment that's very reasonably priced. You have to chill it down in the freezer ahead of time but it's very easy to use. Husband and grandson used to make ice cream every time we kept the grandson when he was 3 or 4. We all love vanilla, but it's easy to make many variations.

When we first bought the attachment, I bought a Ben and Jerry's copycat recipe book that's very good. Nice thing to have now if you like their ice cream but hate their politics.

Recipe: First, thoroughly clean the carp. Pre heat over to 350 F. Place cleaned carp onto a wet cedar plank. Cover with a thick salt paste. Place into oven and cook for 45 minutes.
Remove from oven and let cool for 15 minutes.

Break salt shell, scrape off cod and salt.

Eat plank.

We were down in Chokoloskee, FL back sometime in the '70s at my maternal grandfather's 1st cousin and his wife's place. So, cousin Donovan takes us out on his boat and proceeds to catch several blow fish (or puffers as he called them). Brings the fish on the boat, deflates it and processes it right down to the muscle, which he then parked on a plate. The muscle mass then sat there and shivered on the plate for some time.

Well, it might have tasted good but *that* fish twitching on the plate was the thing I still remember some 45 years later...

I had some insanely good fried seafood in Japan. Might have been the beer. Regardless, it was damn good. Flaky, flavorful. Some sort of white fish chunks on skewers.

Got one here for nigh onto a year now, and it works like a champ. Everything the ads say it does, it DOES. You'll have to adjust technique here n' there, but the learning curve is worth it.

The problem I always had with VCRs is that I couldn't get a really good quality connection from the cable to the machine. Everything always seemed to record in not-great quality. I guess I should have tried something besides RF cables.

My Dad taught me how to make home made ice cream when I was a kid. It was something he did in the summer around holidays and when we were going to have family come over. I have my own ice cream maker now and still make it. Trying different recipes sounds fun but I still make the original recipe that my Dad taught me for Vanilla ice cream. It was handed down from his grandfather in the hand cranking-ice was rare-electricity didn't exist days. The taste brings back tons of good memories. If I did it more often, I'm sure I would experiment more.

My life long buddy and fellow Army dude drove me to my procedure last year. They gave me awesome drugs. Once we were all done, as as soon as we cleared the hopsital he headed for one of our favorite bars. He orders a couple of Irish Red Breasts and I'm sitting there just smiling and said, ya know, water for me casue I'm still totally on the ceiling. He laughed all the way back to the house.
Mrs D was not amused.

166 One fast food chain here in SoCal that *might* come a little close to satisfying Whataburger fans is Farmer Boys (which for years I thought was called Farmer Bros).

They do *big* restaurant-quality burgers, and their signature one (the Farmer Burger) is cheese, bacon and guac. They also have chili but not on the burgers. They're not inexpensive though.

167 I’ve made tons of ice creams without an ice cream machine. Old refrigerator manuals often had several recipes. Generally you make up the custard and/or syrup, put it in the freezer for a bit, take it out and use a hand mixer on it, and put it back to freeze.

While I know that homemade ice cream is delicious, it is not a skill I wish to learn, for the same reason I don't make cakes or pies. I have such a sweet tooth that it is best to confine my enjoyment of such wonderful things to like, maybe once every month or so. If I could make them, I'd be tempted to make it a weekly indulgence - and soon, my clothes would no longer fit.

249 I used to make a spiral cut honey ham from Aldi and split up the primo slices with my dad. Then take the carcass and simmer it in pea soup with a ton of garlic until it was falling off the bone. Picked it clean and put it back in the soup. I'd keep a couple containers but my depression era dad loved all that meat so much I had to give him most of it.

At home I will either drink water, milk or I drink cranberry juice with seltzer. Usually 2 parts seltzer, 1 part juice.

257 I did a smoked chuck roast yesterday, 3rd attempt at smoking something so still on a near vertical learning curve.

It was the best chuck roast I have ever made - tender, juicy, and pow! flavorful.

3.3 lb chuck smoked for 4-1/2 hours at 225-250 until 170 internal, foil wrapped and in the oven for 1 hr until internal 205, cooled back down to 170 then rested in the oven at 160 for the last hour. Pre-cook marinated overnight in worcestershire & lime juice [3:1], heavy Texas rub, and tallow coated wrap.

Meat candy!

I am another LeCroix fan. I used to buy Aldis brand bottled water, but wondered why I was always so thirsty after drinking it. It turns out it has sodium in it. LeCroix does not and I'm willing to pay a few more bucks to have water without salt in it.

Years ago, I found I couldn't handle drinking soda anymore - and I used to be a big Diet Coke drinker. My stomach rebelled. So now I drink lots of water. Although it's a healthier choice, I can't say I started doing it for health reasons. It just didn't agree with me anymore.

278 So, last night I was drinking Macurichos Conejo Pechuga Mezcal.
Pechuga is a sort of celebratory or special occasion style of mezcal which is distilled dripping over fruit, spices and a raw chicken or turkey breast.
In the case of the Conejo Pechuga, they use apple, cinnamon, banana, pineapple, orange, and various wild fruits. Instead of chicken, the conejo pechuga use a skinned rabbit. Conejo is Spanish for rabbit.

So, there I was drinking Conejo Pechuga when it suddenly occurred to me that the word "conejo" is similar to the word "coney" used in The Lord of the Rings. Sam and Frodo are always blabbing about snaring coneys or getting a "brace of coneys". That's pretty much all they talk about until they toss the One Ring into the fires of Mt. Doom. They probably tossed in a brace of coneys too.

Anyway, I thought, hey! I best those words are derived from the same Latin root word. And they are! The Latin word is cuniculus.

No point to this story, except that -

drinking mezcal is an educational experience.

I recommend it.

I had a 3.5 lb tri-tip I decided to use as my first excursion into the wild and wonderful world of sous vide.

(we won't mention the veggie stir fry, or the au gratin potatoes I also made. Pretty standard stuff, this time of year)

Anyway, after much back and forth with CBD, the sous vide whisperer that he is, I decided to try 2.5 hours at 120 degrees, then move to the pellet grill to get the nice color and crust I was looking for. I might mention, this was an untrimmed tri tip, which necessitated removal of some fat. But not all, as I know where flavor country is.

After sous and pellet, the taste was phenomenal, but, tenderizing wasn't quite there. Probably needed to go another hour to hour and a half in the sous vide. But, first time out, definitely a success.

About half the shop started doing some variation of this; it went on for a couple of weeks

until some nimrod set a can of Progresso clam chowder up on the barrel of their machine...without popping the top on the can...and it exploded

I have 50 quatloos that says there's still clam chowder on the ceiling in that building

Catfish turns bad and fishy tasting very easily.

So, if you're buying from the store, you need to buy it a use it on the first day that it comes in. You'll have a wonderful experience with one of the tastiest fishes.

After a couple of days of sitting in the case, catfish es no bueno.

There is a place down here, in Manchac, LA, called Middendorf's that fries up very thin catfish fillets that are pretty good. They slice the catfish fillet into lengthwise and then fry.

She usually cuts the fillets into large "nuggets" then marinates or seasons them 5-6 different ways then fries them up perfectly.

Great dinner every time. Catfish lends itself to a variety of styles wonderfully.

Most simply, a beef clod is the shoulder; part of the chuck region. As a primal, it generally is broken into 2 sub-primals. There are 5 muscles, 3 of which can be processed (in various ways) into retail cuts (including flat iron steaks, and the little known shoulder tender (or teres minor steak), which is filet-mignon quality).

You can do the whole clod, or sometimes find the clod-lifter or nose cone cuts sold as clod. (A true clod is probably 12-15 lbs, the lifter/nose cone probably run 3-6 lbs. These aren't good for retail, but when smoked and pulled are fantastic. (The big clod is also fantastic, think brisket. Some Texas BBQ joints, like Kreuz Market in Lockhart, have it on their menu.)

I've always had to go to a restaurant store to find clod, but it's a great addition to your smoking palette!

However, their sale ribs were very weird. The rack only had rib bones in about half the length. The rest of the "rack" was a large boneless flap of meat. And this was true of all the sale ribs.

I've never seen anything like that before. Is this a thing? New York Floppy Ribs or some such dealio?

I'm guessing you got untrimmed ribs. You can trim off that flap. Then you have the choice of trimming off the cartilage 'tips, or not.

The flap and tips can be rubbed and grilled while you're doing the ribs. These are then known as "cook's treats".

I'll buy a rib roast, trim off 1/2 to 2/3 of the roast, leaving really meaty baby backs, and do those. (The rest is grilled later.) Folks always seem to like them.
