Quality control at a lot of these joints is failing. I got a steak biscuit the other day that wasn't done. I just threw it away. I've heard similar tales from everyone around here.

I sous vide chicken at a temperature of 205 degrees for two hours. A human being would be dead, every germ in his body deceased, in fifteen minutes under those same conditions. I have no experience in human flesh, but the chicken is incredibly tender under those conditions.

I guess I could add "Human Sized Sous Vide' to my Amazon Wish List without notice.
