Food Thread: It's Not Your Mother's Tunafish In A Can

Crusted tuna is one of my favorite foods; tuna handles the texture of the sesame seeds very well, probably because it is a nice dense fish. Toothsome, as it were. One common problem though is when chefs use strong and vibrant flavors with tuna; it is a surprisingly delicate-flavored fish, in spite of its meaty appearance and moth feel, so it's easy to overwhelm the fish with the herbs and spices.

I realize that rare tuna isn't to everyone's taste, but it's easy to cook it medium...just treat it like a steak, only with milder heat. Just don't cook it well done, because the food gods will smite you for your sin.

One of the challenges of buying tuna for eating raw or rare is that depending on where the chunk is cut it may have lots of connective tissue. When it is cooked, the connective tissue is much less noticable, but when raw or rare it can detract from the texture. And tuna is not inexpensive, so try to choose a piece that has as little of it as possible.

Another reason for that photo is the beauty of well done food pictures. I have absolutely no talent at photography, and food is particularly difficult to photograph because...um...reasons. So when I see a nice photo of a food I really like, I'll grab it and torture you folks.

And here I was, just looking for some nice food photos. You were seconds from a clean getaway, but I followed the link attached to this photo and dropped down the rabbit hole of stupidity and cluelessness.

Being a successful vegan is about more than just food. Yeah, it's about being a pompous, superior, elitist asshole, whose virtue-signalling and blatantly offensive posturing probably does more harm than good.

Really? The only one? I have met plenty of people throughout my life who care deeply and passionately about animals...both pets and food animals...and act accordingly. But this deeply deluded and arrogant twit sees herself as some paragon of ethical behavior, and looks down on all of us peons.

Veganism is rapidly becoming a political stance in the tool box of the left. That some of its adherents are unaware of how easily they are used is a clear measure of their intelligence, or lack thereof.

From our reader of Ukraine tomatoes fame comes delicious looking beef ribs. He tells me that he cooked them in his Kamado, which is an intriguing bit of old/new technology.

What I want to know is where he got those ribs? The only ones that are readily available around here are pathetically trimmed remnants from boneless prime roasts and rib steaks. it's sort of sad seeing them in the butcher case...naked and unappealing.

Most of you have noticed that I take temperature quite seriously, and consider it just like any other ingredient. here is a commenter who took it to the next level, and used his very cool Meater probe for some oven testing.

I jabbed a probe into a potato, and set it in a cold oven. I set the oven to convection roast at 400F with the rack in the middle. It took ~30 minutes to get to 340-350 ish! You can see an angular point of inflection around 30 minutes (that is when I put the potatoes in the oven for dinner). Notice the temperature loss for opening the door. You can see the undulations as the temperature cycles through the thermostat - yet still climbs. You can see another angular inflection around the 1 hour mark - this is where I jab the potatoes with a fork to vent, and turn them over. Notice the heat loss and recovery time. Please note, the oven never hit 400F at the probe. I am guessing you never see the display temp at the probe because of the distance from the oven thermostat to the probe - the thermostat sees 400F, but the center of the oven does not.
I am a bit surprised by his results, since the convection fan should minimize hot and cold spots inside the oven by distributing heated air throughout the enclosure. It is also possible that it is simply calibrated incorrectly.

Regardless, it is very useful to know exactly how hot or cold your oven runs. Of course that begs the question: how hot or cold does the recipe tester's (or chef's) oven run?

You snobby Italian food purists will probably scoff at this dish, which is an Americanization of a classic Italian dish. This guy claims his version is straight from Italy, but I don't care. Chicken Sorrentino is a really nice meal, and one that I had a few days ago at an old neighborhood restaurant in Hoboken. I was immensely pleased that the bartender and the patrons didn't give a shit about NJ's nazi governor's mask edicts. But I was even more pleased with how tasty the dish was!

I haven't tried this recipe, but nothing looks odd or out of balance, so go to town, and tell us about it next week.

23 Had a couple of Cornish Hens so I tried cooking them in the barbecue/smoker. Worked pretty well, although the skin never got crisp. I tried two different rubs, one on each bird: a "Cajun" rub (red pepper, garlic and onion powder, herbs, salt), and a "Middle Eastern" rub (red pepper, cinnamon, cumin).

Neither rub could stand up to the smoke flavor. I think if I do this again I'll brine the birds first.

Story: I was on a charter out of Ocracoke NC a few years back. The mate was so hungover (it was July 5th) he could barely do his job. I sort of stepped in out of boredom, we were just catching a few Spanish Mackerel. The captain noticed, and invited me up to take the boat (?!? that never happens) while he ate a sandwich. Told me that a week ago, they went out to the Gulf Stream, and a guy hooked a lunker Yellow Fin Tuna. Just huge. He got on the radio, and had the fish sold before they got to the dock. It paid for their charter, plus a couple of grand to the lucky bastard. A nice slab will go for 10 grand plus in Japan.

I will be making dry rubbed beef ribs in the instant pot with boiled new potatoes in olive oil and dill, corn on the cob and steamed broccoli. Maybe some salad too, because green veg.

It's my second foray into instant pot usage for something other than rice, and i admit some trepidation.

This food thread was made for me. You could not pick a better top pic than that beautiful tuna. The can has nothing on the fresh tuna filet...

That said, the can is still good with mayo, relish or pickle, celery, and s&p with lettuce, mayo, and onion on a nice roll...

Anywho, how many of y'all have had paddlefish?
We have mucho pounds of it in the freezer now, and have grilled it, smoked it, breaded and fried it... it's a firm fish like shark, but no fishy taste.

I've had great pieces of fish here in MO. The supply chain (used to be anyway) good enough to move fresh fish around. People think fish goes bad instantly on coming out of the water. I disagree. If pros are handling it, it can last a while, and not yield quality. I find the problem happens in the last 5 yards, when some hourly cook f's it up on the grill.

Sushi/sashimi are generally "meh" to me. Don't dislike them, kinda like some of it, but it's nothing special.

And I've been lucky, generally, to have only had it when of decent or high quality, almost only in Japan. Including an extended session at the Karato seafood market in Shimonoseki, one of the most famous places for it in Japan (including fugu, the fish with the potentially toxic organ that has to be handled correctly, 3 different way). And at the (old, original) Tsukiji fish market in Tokyo.

Just one of those things. I don't have tastes that are that exotic or differ from most food-lovers I know, but there it is.

It was once known as "horse mackerel" in English, until the marketers decided that it would sell better if they used the Spanish name. But no one knew WTF "tuna" was. I believe that's why they tacked on "fish".

My 2nd oldest teen beat you to that invention - although sometimes, she just does a rice bowl with rice and then adds pad thai sauce and soy...literally, with a piece of fruit, that's lunch. I let it be b/c I always make dinner (except today) and we have meat, fruit, and veg so lunch can be practically anything, and it's still gonna be a healthy day for the kids...so they get to make anything (within cost reason, and somewhat health reason...although see microwave rice with sauce as "okay", so I have a lot of flexibility on the latter part)...

74 Lovvve good halibut. I'm not smart enough to know whether frozen fish can be good, but seems to me I've have had some I liked. Of course fresh is still best.

Live in a coastal city with a small fishin' industry (San Diego), and a lot of the best restaurants are owned by former/current boat owners/captains.

If visiting San Diego, and you like seafood, don't miss Mitch's, down in the harbor at the sportfishing docks. Sit outside on the small deck that lines the outside of the restaurant - sportfishing boats right in front of you, comin' and goin', so a great show. Always good selection of local/semi-local (Sea of Cortez, nearby Mexican waters, coastal CA) stuff, great (local) beer and (sometimes local) wine list.

Pt Loma Seafoods, the long-time seafood deli and restaurant, is 100 yds away - it's fine too. But bigger/bit more "formal", in a way.

I am so glad he enjoyed organic chemistry, but very sorry he didn't get the job he wanted. But a good lesson in perseverance.

80 I have a local Hibachi/sushi place that makes me Poke bowls for $15 that literally includes 4-5 different sushi grade fish (usually what they aren't selling well that day, although it always has shrimp and either tuna or salmon, and sometimes both), 4-5 veg (lettuces, carrot, cucumber, avocado, marinated ginger, with whatever they have fresh that day), and a beautiful ginger based brown sauce on top. They even give me miso soup with it.

I LOVE that place. Funny enough, they only created the bowl during Covid, b/c they had to get rid of the lunch buffet and figure out takeout without waste...and this dish was so popular, it's stayed post-Covid...

Anyway, obviously salmon can be great. I'm not sure whether the cooking on the soaked cedar plank - which I've done many times - adds to the final product or not. I admit, that since I ate vegan last night (we got takeout Indian, and it's easiest for them to make Veggie Pakora, Aloo Gobi, and Chana Masala dairy free and tree nut free), and since I'm not allowed to cook tonight b/c it's Mother's Day...

I actually asked for McDonald's with fresh fruit from the home. So, soon, I'll have a double hamburger with customer toppings of lettuce, double onion, and double pickle with blueberries and red grapes. I haven't had McD's in months, so it will be a treat.

The kids did make me Belgian waffles with a fresh strawberry sauce and whipped oat milk topping (thanks Whole Foods) for brunch, so they did cook...and my kitchen can't take 2 homemade meals if I'm not allowed to do dishes, either...

Umm, isn't bug eating NOT vegan b/c bugs are animals, too.

That said, I have had bugs before, but only when someone else made them. My spouse made fun of me for ordering it, and then proceeded to eat half. It was a grasshopper taco from Oyamel in DC, and it was worth it. I'd order it again (although now with my needed dairy adjustments), and then I'd order the fish and red meat tacos, too, since bugs are fine to add to a diet, but not to replace in a diet...

I asked for it b/c the only way I can have belgian waffles now is at home b/c no one makes them without dairy at restaurants, so my Christmas gift was the belgian waffle maker which never got used til today, b/c the idea of a gift is not to actually have to put in your own work, and I didn't...and I think this will be a continuing Mother's Day and birthday tradition!

Believe it or not, some of the guys I used to work with who were stationed over in Japan or Korea have mentioned 2 or 3 places here in Kentucky that are pretty good for sushi. I'm assuming they're run by Asian transplants/spouses from way back when.

152 US tuna fleet used to be based here. In high school, only guys with new cars (Camaros, usually) had worked a boat during the summer. They could come back with 5K in their pocket, lots of $$$ at the time.

Of course, back then, abalone was common and not that expensive on menus. And one of the options for a metal shop project in 8th grade in city schools was .... an abalone knife (long flat aluminum tool for prying them off the rocks).

That's the best! My hubby loves to fish (surf cast, spear fish), and it's great when he can catch a striped bass and have it on the grill asap.

I bought two two inch thick ribeyes yesterday at Costco. Vacuum sealed one, and did my usual prep on the other: Montreal steak seasoning all over, sit with seasoning for an hour per inch of thickness, wash off all of the seasoning, pat dry with paper towels. Infrared grill temp maxed out, internal thermometer in place, sear 4 mins on each side, internal temp almost to the desired 130 degrees. Let meat rest 5 mins. The internal temp did not continue to rise as the meat rested, over the 5 mins it rested the internal temp dropped 12 degrees. I made slices and the meat was more rare than medium rare. It tasted great, but I knew it would be too rare for the family. Then the Good Idea Fairy perched himself upon my shoulder and seductively whispered in my ear *Just put the meat in the microwave at 10 per cent power, for 5 mins*.
Well, the red was gone, steak still tasted yum, but was a little tougher than I would have liked. This was my first time grilling with the internal thermometer. I have used it a couple of times reverse searing in the oven.

We had an impartial judge and the makers oh the top three dishes earned league points. I made Tuscan Deviled Eggs with eggs from Mrs SuperRon*s backyard chicken ranch. Anchovy fillets, capers, parsley, and olive oil were involved. They came out pretty tasty, but no points were scored. Other dishes included a couple of tasty ceviches, a killer salmon based lettuce wrap, and my boss*s sister made some insanely delicious crawfish etouffee, better than anything I ate when stationed at Fort Polk!

204 So, I had an interesting brunch today: sauerkraut chocolate cake and sauerkraut lemon ice cream. It’s from a vintage cookbook I picked up a few weeks ago out in Giddings.

Both are very good; I can’t taste any hint of sauerkraut in the cake; this may actually be the first chocolate cake I’ve made, so I don’t have much to compare it to. It’s certainly better than the store-bought that people sometimes bring to gatherings, but I don’t know that the sauerkraut adds anything to it.

The lemon ice cream, though is amazing. The kraut adds a weird tang to the end of the flavor that is very enjoyable.

205 In regards to tuna I do pick up the packaged tuna and try different spices and other things to perk it up. Last time I used some garlic powder, Emiral's seasoning and a splash of Worcestershire sauce. And in lieu of using mayonnaise I use avocado and mustard.
Put on a toasted english muffin and put your cheese of choice on top. Then pop into a toaster oven to get the cheese all melty and Voila!! Delish.

For a while, I was stationed at a base that had a cook's school. I'm pretty sure that etouffee (of any variety) was not in the curriculum. They were mostly devoted to overcooking large chunks of beef, as far as I could tell.

Those things are excellent smoked. We would catch them in the Wisconsin River up in the Dells. Catch them and let them swim around in kiddie pools for a few days to detox, gut them and brine for a few hours and toss on the smoker low and slow. Sweet and smoky fish candy.

223 On a slightly different note, I discovered the ease of nuking fresh picked corn a couple years ago. What an astonishingly easy way to do corn.
I especially like shucking them when done (you need oven mitts), the silk comes right along with the husk when you squeeze and wiggle the ear.
Bonus--try it with lemon butter and salt.

I've always wondered if there was a way to remove some of the "yuck factor" from wild-caught catfish. Growing up, nobody ate catfish because of that. When I was a young Boy, I recall hearing about pond-raised (farmed) catfish and when I got a chance to try some of it fried up as nuggets, I was impressed. Nice, light and fairly flaky meat. The little mini-hushpuppies were good as well. Not many puppies were used, so they didn't overwhelm the catfish.

250 Anchovies are a nice way to start a pasta sauce, especially if you've got more expensive fish to add last minute. I chop them up tiny, and will interchange sardines or anchovies b/c they both fill the umami role you want in the end...

I only add them to my fish-based pasta sauces, but I know some Italians who add them to pretty much all of them...

The fish pretty much fades into the background anyway. I do Tilapia with some cuman, garlic, lime and a bit of salt 'n pepper. It's fine. Almost like chicken. But not.

Drink enough Tequila and it won't matter anyway.

Mahi-Mahi (I still call it Dolphin*) is really lean and muscular. I suggest whatever you do, add or cook in fat.
*I love catching Dolphin, hate killing them: the prettiest fish in the sea. They are a rainbow of colors when alive, they turn a dull blue and white the minute they die.

293 I smoked a brisket the other day that I got form Kroger for $1.97 a pound. USDA Choice Angus beef. There was almost a fist fight at the counter when the manager put a limit of 2 on them. Everyone and their brother that owned a food truck or a restaurant was lining up to buy them by the cart full when they heard they were on sale at that price.


Soaked it overnight in beef broth and smoked it at 275 degrees until it hit 165 internal. Wrapped it up put it back in until it was a solid 200 degrees, pulled it and let it set for two hours. Tender juicy brisket resulted. The wife and I ate our fill while I was slicing it up no plates required.

That's not a bad start. I agree with the previous poster about adding fat to Mahi. It can be as simple as adding and rubbing in an olive oil or adding pats of butter to the recipe above. I do like to keep most of my fish recipes fast and straightforward b/c you're more likely to eat it if it's simple and quick!

I do make a killer cioppino meets fish pasta sauce (with 6 people, I add a ton of veg to stretch my fish, and I always add the fish that's on sale, so it's never the same thing twice, or I'd post a recipe)...I have it with french bread and the kids have it on pasta...

Corn pudding. I also like stuffed baked potatoes with the BBQ as one of the toppings. That and cheese, sour cream, and your preferred BBQ sauce is really good together.

Lexington slaw is interesting, too. It includes hot sauce and just enough ketchup to give it a slight red color.

Applecidervinegar (no spaces because of the way it sounds when people say it), yes. Some Morons a few months ago were talking about putting it in tea for its therapeutic effects so I've taken to doing that. Does it work? NFI. What's the harm? Well, if you don't dilute it enough, it causes all sorts of facial spasms (heh). I don't use the kind that has "the mother". That sounds gross.

Daily, I make 4 cups of coffee (diluted to fill 1 pitcher to which I add whey protein and a teaspoon of coconut oil) and thence afternoons I make a pitcher with 1-2 bags of green tea, a bag of white tea (if I have it), and 1-2 bags of an herbal, such as rooibos or turmeric/ginger, et al., + the aforementioned ACV. Aside from the neurological issues plaguing me, I'm quite healthy at 53.

362 One more is quick pickled onions and peppers. I don't have it in front of me but IIRC mix up 1/2 cup water, 1/2 cup vinegar, 1/2 cup sugar in a bowl, add sliced onions and sliced bell peppers (cucumbers are good, too), and let sit in the refrigerator for a few hours.

It's a really good "bright" summertime side.

382 When I was married and thus BBQing a lot for the whole family, my favorite side was always sweet corn on the cob. I would cut the silk off the corn but otherwise leave the husk on, and soak the un-shucked corn in a deep pot of hot water with a stick of butter melted into it for half an hour before throwing the corn on the grill along with the meat.

The corn ends up taking as long as the meat to cook and is wonderfully buttery once you remove from the grill and complete the shucking process.
