Probably too late to get it by Thanksgiving, but keep it in mind for Christmas. Second suggestion: Pumpkin sausage soup. This is one of the best soups I've ever had. I've never hunted, but this is the kind of soup you want when you get home in the pitch darkness of 6:00 pm and want to eat and warm up. I think of it as "Autumn in a Bowl." You can search online for different recipes, but here's the one I follow, more or less. Note: I tend to just free-hand everything so I'm always making stuff a little different every time. So I can't be specific about how much you need of some ingredients. But here's the approximate recipe: 1 pound mild Italian sausage meat. Easier if it's out of the casings, because you want it in crumbles. 1 box (16.9 fluid ounces, or one pound in weight) of bone broth, either chicken or beef, plus another box. You could substitute normal chicken broth here, but that's not as flavorful or as hearty. You're going to use at least one box of this, and probably like 1 1/2 boxes, but this depends on how thick you want the broth. 1 can (15 ounces) of pumpkin puree. About cup or cup and a half of diced onions About a cup of diced mushrooms Maybe 1 or 1 1/2 tablespoons of fresh garlic Salt, pepperDirections: Put butter or olive oil in cooking pot.. Heat it up. Add the sausage and cook. Before it's all the way cooked, add in chopped onion and chopped mushroom. As all the ingredients are getting close to being fully cooked, add in the garlic. Add salt and pepper. Mix together. Now add a full can of pumpkin puree and a full box of bone broth (16.9 ounces). Depending on how thick your soup looks -- and how think you want it -- you'll add in maybe another quarter box, or a half box, or maybe three quarters of the box. (At this point the broth starts getting too thin.) Optionally, you can also add in savory spices like thyme and rosemary. But the sausage itself is already well-spiced -- you can skip adding additional spices (apart from salt and pepper), or add in a little more savory flavor. Cook over a low heat for like an hour or ninety minutes, stirring occasionally. I don't know if this is low carb. It's not high-carb, though. The main carb-contributing ingredient is pumpkin, and that's cut with at least a box of zero carb bone broth. Comments(Jump to bottom of comments)1

Thin-slice onions on a mandoline. Roll them in flour and fry them until crispy. Set to cool.
Cook fresh green beans whole in chicken stock or bone broth, maybe add some salt if the broth isn't salty enough. Drain them, top with shredded cheddar cheese (just a bit, not too much) and the onions. So damned much better than any canned soup casserole. I'm not doing anything on Thanksgiving except listening to "Alice's Restaurant" at noon and then reading the day away.
I'm working on Friday, and that is when I will have my turkey, mashed, corn, rolls, stuffing and gravy. And for the weekend, I will take the leftovers, put them atop little squares of pastry dough, add a touch of cranberry sauce, fold them up into squares, brush melted butter over the top, then bake them in the oven until ready. Old fashioned bread stuffing:
Bacon, and the bacon grease that cooked off of it. Dried bread torn in smallish chunks. Don't care what kind. Chicken or turkey stock, enough to keep it moist. Fresh parsley, Sage, Thyme, Basil, Pepper, a little salt but not much because of the bacon and stock. Celery, chopped. Mushrooms, chopped, if you like them. Giblets, simmered in water and then picked off the neck bones, and chopped. The amounts of any or all of these doesn't much matter so long as it isn't soupy. The original was from a place called Big Bob Gibsons. As I understood it they'd smoke birds and glaze them with the sauce and serve it with the plate for pouring or dipping. Now it's so ubiquitous on the border of Alabama and Tennessee that no one even uses a recipe. If you try it, the thing to remember is to make it the night before. It improves overnight. Best pecan pie I every made had finely ground pecans in the goopy stuff (also with the whole or pieces on top). It made it a bit less sweet and deeper pecan flavor.

I hunt. Killed a buck Saturday. Didn't plan on killing a buck as it was late in the day and didn't want to field dress in the dark. Then Quasimoto showed up. Buck with a shoulder so fucked up his leg was useless. Fucked up rack. So fucked up it was cutting the flesh on the back of his neck, and I mean to the muscle. He could hardly even walk. This is the first year in about a decade that I have cooked Thanksgiving, as my previous go-to has been terrified by the MSM into staying home and not letting anyone into their home. As it will just be me and one daughter, I am planning grilled turkey breast, Amish Potato rolls (currently in the bread machine), Serious Keto stuffing (new recipe for me), mashed potatoes, steamed corn, pumpkin pie, and blueberry pie (and lots of whipped cream).

Apple Pie:
Crust is 2 c. flour, 2/3 c. shortening or lard, 1 t. salt (or less if you want it sweet), and 1/3 c. cold water. For the insides: 6 nice apples, I use granny smith and fuji together, for sweet and sour. 3/4 c. brown sugar, 1 t. cinnamon, 1/2 t. nutmeg, 1/4 t. cloves, 3 or 4 T. tapioca or a couple of T flour, and a splash of lemon juice to keep the apples nice and balance the sugar. Stack 'em high and put the top crust on. Bakes at 450 for 15 minutes and then 350 for 45 minutes, or until it bubbles over and makes a mess. You definitely need to open some windows and disconnect the smoke detectors but it has the effect of melting out a lot of the fat right under the skin so the skin can cook up nice and crispy. The folks usually come down but just can't this year. I'll be whipping up my own meal. Not doing a whole turkey of course but just parts. 3 legs, a couple of small breasts, and a thigh. Some sweet and russert potatos. Stuffing in a box. various veggies, etc. I'll be using all my kitchen tools to do it; oven, stove, crockpot, microwave. I already baked a pumpkin pie. Instead of making muffins, use a roll of croissant rolls in the bottom of a greased 9x 13. Push edges together. Layer cooked sausage, 4 eggs, cheddar cheese, salt, pepper, onion flakes, another roll of crescent rolls on top. 45 min. 350 degrees. Everything except the croissant bottom and top can be mixed together the night before. Refrigerated overnight. Takes just a couple of minutes to get breakfast made.

That happened to me too; fatty foods were a killer. Doc gave me a Rx for Cholestyramine and it helped tremendously. (It's a powder that you mix with liquid of choice.) After a while (year or two?) I didn't need it anymore. It worked so well and I was so excited that on the second day of taking it, I treated myself to fettuccine alfredo and had no problem. There will be only seven of us celebrating at my mother's house, the usual local folk, no distant relations this year. But five separate households! Eek!
This is Mom's 100th Thanksgiving. She's been spooked by the fake dempanic news, but insisting we have our small family dinner. Yay, Mom! It's supposed to be easy on her - the rest of us doing all the work. We just might be able to get her to just manage the clipboard and direct, not go hands-on. Maybe. Meanwhile, bird and dressing and pies and so on are being prepared. We re-stocked her liquor cabinet last week. So, the important things are about ready. Naturally, we'll all be seated at separate tables, ten feet apart, behind plastic shields, outside, and wearing masks and goggles and gloves. Oh, wait, wait, we're in a free state. Inside, then, engaging in dangerous frivolity and naked camaraderie. And thankfulness, for so very much. Allergy free mashed potatoes... 5lbs of russets, cooked til very soft. A 1/2 stick of vegan butter (check the label for the top 8 allergy free one) A huge glug of olive oil Salt - don't go light Rice milk - don't forget to shake the container Mash it all together with an old fashioned masher...keep adding rice milk til it's beautifully smooth. We are having only our second just the two of us dinner this year, thanks to the 'Rona.
The worst part is not seeing the CA grandson in person. But we will Zoom with the kids for a bit. 47 years and I've never cooked a turkey. I bought one of those breast in a bag things, so we will see. If it's a disaster, we still have lots of good sides. For dessert: pecan pie or apple pear crisp. The guiding notion is that eggs will be the primary ingredient in every meal you eat. You can have other stuff with the eggs, but the eggs are always the main thing. After the food thread I have a taste for Reubens so I'm making a Reuben casserole tonight. Should last me the week in case I can't get turkey.
Put kraut about an inch deep in any size pan. Layer corned beef or pastrami as thick as you like on top. Then swiss on top of that drizzled with Russian or 1000 Island. I don't get the fad diets. I try to look at total calories and overall nutrition. The nonsense of trying to eliminate all meat or all fat is unhealthy, at least where I come from. A good mix of vegetables, lean meats, pasta, whole grain breads, etc. plus rigorous exercise and lots of discipline.

I just talked with the family, we have agreed to ban pumpkin this year. It will be cherry pie, and apparently all protein and carbs, no veggies to speak of. I said shouldn't we at least appear to have something somewhat healthy? Na, It's just us anyway they said, but then decided well maybe we'll open a can of green beans for the hell of it. I always seem to get half the leftovers, so theres that.

Mashed potatoes Stuffing Green beans Rolls Pumpkin pie Apple pie I'm doing all the baking tomorrow. Pies and possibly some zucchini bread. The rest gets cooked Thursday. While we wait for the feast to be ready, we will watch Charlie Brown Thanksgiving. After we feast, after the kitchen is cleaned, we shall start the holiday movie season by watching Die Hard. From the old Trout Inn near Oxford (and older than Oxford itself, 1278 AD), a Mulled Ale is a wonderful holiday beverage. In a pewter mug or pyrex-heat-tempered mug, pour a pint of English brown or spice ale, then from your fireplace, take an iron fireplace poker or rod that has been heating up over the fire for some time, plunge it 1/2 way into your ale for 5-10 seconds and then remove. Grate nutmeg over the foam and drink.

i mentioned this earlier but Aldi's now carries what is ALLEGEDLY a net zero carb bread.

I'm going to make that pumpkin sausage soup! I think I'll add some Cajun spices to it. And it is low carb. If you cook pumpkin in the oven and eat it with butter, it tastes like acorn squash with only half the carbs. They make pretty good fries for about a third the carbs of sweet potatoes,or a quarter the carbs of potatoes.

4 day weekend coming up. Prime rib and the usual sides. I plan on sleeping a whole bunch. These last couple of months have been exhausting. Wife dislocated hip. This will be about the 5th time they've opened that hip up. 2020 can't go away fast enough.

Cranberry sauce, and stuffing, made using recipes the cook is trying-out for the first time. If you cook pumpkin in the oven and eat it with butter, it tastes like acorn squash with only half the carbs. They make pretty good fries for about a third the carbs of sweet potatoes,or a quarter the carbs of potatoes.

The best advice I ever got was from a nutritionist in the military. He taught me how to get certain types of calories my body needed from various foods. It was taught in a way that you could use it across various regions of the world and apply concepts like what proteins were best, what vitamins you could get from certain vegetables or plants, how to get fats to avoid protein poisoning,etc. it just stuck with me and has paid me back. That's why I am so persistent.

I am so sorry for posting this here. But I see so much negativity and heartbreak around. Nothing seems to break for the President. I fully understand the ramifications of what a Biden so called presidency will do. Both husband and I are naturalized citizens originally from communist countries.
My son's wife is a full blown leftist. My son is a conservative. He and wife are actually attending counseling due to marital strain secondary to their diverging political views. I never thought I would consider this, but I am thinking of speaking privately with him about just not seeing them. That shall he need us we are there for him. But no visiting. The best advice I ever got was from a nutritionist in the military. He taught me how to get certain types of calories my body needed from various foods. It was taught in a way that you could use it across various regions of the world and apply concepts like what proteins were best, what vitamins you could get from certain vegetables or plants, how to get fats to avoid protein poisoning,etc. it just stuck with me and has paid me back. That's why I am so persistent.

This new round of lockdowns has greatly curtailed my Thanksgiving options.
My friends all take the threat of COVID more seriously than they should, IMO, so I'm probably not getting an invitation to eat with any of them. And all the restaurants are closed, too, so that nice Thanksgiving special they always have at The Black-Eyed Pea isn't an option, either. They do have a take-out version, but it's family-sized and I don't feel like spending $100 for takeout that I might not be able to eat before it turns into some combination of stone and leather in my refrigerator. I do have a nice organic pasture-raised spiral-cut ham, though, and some apricot-pepper jelly to use for a glaze. I took the ham out of my freezer for thawing the other night. I had intended to make that for some sort of get-together, but I don't see that happening anytime soon. So, I guess that'll be my Thanksgiving dinner. I'm not quite sure what to have on the side yet, but the funny thought that's popped into my head is some sort of breakfast-type setup. Eggs and hash browns, maybe some tortillas and green chile (if I can find a good store-bought brand; I don't know how to make it)... If you ever get the opportunity to try smoked turkey at a BBQ restaurant in a sampler plate or something similar, try it. How is it a fad diet to look at total calories and nutrition you can get from the foods available?
For example, at Thanksgiving I can eat a certain amount of calories from any foods I want. That's based on how my body gains or sheds weight, my exercise level, etc. I just put limits around type of foods and nutritional measures. It's not like I am saying eat nothing but X. Here is today's menu well as I can remember. Breakfast was a plain bagel with lox, cream cheese, tomato, onion and capers with black coffee that has some kind of unpronounceable African name. Then for supper I pulled the leftovers out of the fridge and added them to some ramen soup. After that was sweet potato pie and whipped cream. Now I'm thinking a drink.

I eat keto normally but these are not normal times.
So, what is called potato stuffing among my people: A fine mess of mashed potatoes - (I boil mine with the skins on btw and only remove the accumulated skins on the bottom of my masher.) Add loads of butter, whole milk or half and half to get the consistency you like. To that add a pound or so of cooked uncased sausage, bacon or ham; two cups bread crumbs - NO, that shit you buy in a bag, two day old good bread and cube it. Salt and pepper the bejeebers out of it and placed into a heavily greased 13 x 9 baking pan. Top with a shitton of butter pats. Bake for about 30 minutes at 325. It's just not practical, for so many reasons. Who wants to "fry" a steak? It's difficult to find a good quality, very thin steak for fast frying. And that's what you want -- a fast-cooked meal for breakfast. Plus, I lost the ability to properly fry an egg. I don't know what I'm doing wrong.

They're barely held together as it is. A proper ranch egg is incredibly elastic, and usually a deep orange yolk. When you drop into a pan, they stand up! The whites don't spread out. Some Costco crap sits for ages, and isn't necessarily well cared for before they make it to the refrigeration units. I prefer a stainless pan I've got that works better than any nonstick. Advantage is I can use a super thin spatula to get underneath it, instead of a 1/8" thick silicon one. Once they're broken in, you can slide the eggs around like a brand new teflon pan. Making our usual Thanksgiving menu: Convection baked bird barded with bacon, Mashed Potatoes, Roasted root vegetables, GravyCornbread stuffing with chestnuts and tons of other wonderful things, Fresh cranberry relish, Green bean casserole thingy, Shaved Brussels Sprouts with Pancetta, and Fireball pumpkin pie I never cared for store bought eggnog. It just doesn't compare to homemade. Last year we tried grocery store almond milk eggnog and it was delicious. Not too syrupy or stale tasting. Works well with a nice tot of spiced rum. Steaks I can't help you with. I'd say get a good hunk of sirloin tip, a sharp knife, and cut as thin as you want.

Costco has a packaged sous vide steak that you can warm up for several minutes in the pan. I've been making my steak and eggs with it. If you're having trouble frying an egg, I'd look at the garbage eggs from Costco as the first culprit. They're barely held together as it is. A proper ranch egg is incredibly elastic, and usually a deep orange yolk. When you drop into a pan, they stand up! The whites don't spread out. Some Costco crap sits for ages, and isn't necessarily well cared for before they make it to the refrigeration units. Posted by: clutch cargo No shit? You mean there's a difference in Eggs? I'm deep frying a turkey for the first time, managed to find a 16 lb bird despite the small turkey shortage. I also got rice bran oil instead of peanut. It has a 490 smoke point and I've only heard good things about it. I got a pretty good sized box/handled jug for $30 at the local resaurant supply.

Speaking of Eggs, true story: I buy Eggs in bulk from the hellhole known as Costco, so I always have several dozen in the house. A couple of weeks I got a brilliant idea to eat Steak & Eggs for breakfast every morning. It's just not practical, for so many reasons. Who wants to "fry" a steak? It's difficult to find a good quality, very thin steak for fast frying. And that's what you want -- a fast-cooked meal for breakfast. Plus, I lost the ability to properly fry an egg. Floridachick, My heart goes out to you. I'm in the same boat. Except my son has gone left along with his wife. I couldn't do it. God knows I tried but it got worse and worse and I walked away. Haven't seen my son in almost 2 years but I have peace of mind now, but I miss him. My husband still sees him but he told me the day is coming when he has to say goodbye too. Not much advice, but I feel your pain.

Soothsayer, tenderized round steak makes good steak and eggs. Either floured or just seasoned and fried. Fajita meat makes really good steak and eggs. Have the butcher thin slice any cheaper cut of beef and season to taste.

I think I've gotten pretty good at pan-frying steaks since COVID hit.
I take them out of the package, pat them dry with a paper towel, and coat them with a seasoning mix (I like Goya Adobo Seasoning with Cumin for just a good, cheap, everyday seasoning mix), then let them sit on a plate in my refrigerator for a few hours. Then I put a skillet on my stove and turn it on to about a 6. Once it's hot enough for a few drops of water to sizzle immediately, I put in a little oil and then add my seasoned steak. I cook it for about a minute, flip it, give it another minute and flip it again, etc. It typically takes about five minutes total (three minutes on one side and two on the other) to get to my desired degree of doneness (about a medium; I like my steak firm all the way through, but still juicy).
