Food Thread: A Lamb Chop A Day Keeps The Doctor Away

Lamb takes to garlic and Rosemary quite well, and as I have recently discovered, Sous Vide makes those loin chops particularly easy to cook. One of the challenges with them is that they are small and cook fairly quickly, so small variations in thickness or fat result in inconsistent doneness. But with Sous Vide those inconsistencies disappear because every bit of each chop is heated to the same temperature. And a relatively long cook time gives the lamb fat extra time to soften and melt and become unctuous rather than remain sort of hard and faintly greasy. Yeah, I have eaten badly cooked lamb (not in my kitchen!) and that is a deal breaker. Well, I'll still eat it, but I'll sulk afterward.

The chops I bought on a whim were fairly thin, so I was concerned that simply grilling them would require careful attention, and with several other things on the grill (hot dogs, ribs, asparagus) I didn't feel like worrying about it. The large Gin & Tonic had nothing to do with it.

So I popped them into a vacuum bag with garlic and fresh Rosemary, salt, pepper and a splash of olive oil. Then into the water bath at 131° for about 90 minutes. They came out ugly and gray and perfectly cooked! On to the grill for about five minutes and I was rewarded with juicy medium-rare chops that disappeared far too quickly. Next time I will get a double portion and have some leftovers.

One of the many advantages of Sous Vide cooking is the ease of timing. Everything was cooked in advance and required just a quick trip to the grill to be ready for dinner. And it doesn't even have to rest!

One thing I have noticed though, the more fat the better the results. That's why pork ribs turn out magnificently, but leaner cuts are good but not great. That may also be a function of my inexperience with the technique, but I think I am onto something.

I saw some ridiculous headline about "Food Insecurity," and it struck me anew how lucky we are that the hysterical soft left has to be ever more inventive with their crisis fomenting because let's face it, one of the biggest problems among the poor in America is their weight...a surfeit of it. It's difficult to convince any sentient American that there are millions of people starving when any drive through even the poorest neighborhoods in America yields a fair number of fatty sightings.

Diabetes, heart disease, stroke, and several other problems are highly correlated to excess weight, so maybe we can blame the Federal Government for its decades-long program of HIGH-CARB IS GRAND messaging.

Eh...just a thought.

I'll admit that the only way I eat pineapple is if it's accompanied by pork products and presented in the form of a pizza.

This, though...

There's a restaurant in the DC area that serves a lot of pizzas. The Hawaiian pizza has an olive oil base instead of pizza sauce (that's OK). Then there are the toppings: mozzarella cheese, ham, pineapple, mandarin oranges, and shredded coconut.

I don't know know what to think about this. And no, I haven't tried it.

I know exactly what to think about it, but this is a family blog and I must protect your tender sensibilities.

I made this a couple of times, because I do the heavy lifting so you don't have to. It's good, but the ice separated from the booze very quickly. I am no expert when it comes to frozen drinks..in fact I usually screw them up, so if anyone has some advice for me and the Horde it would be much appreciated.

So this one time our team flew from subarctic Alaska all the way to a meeting in Charleston. Took us a red eye and 12 hours and arrived to be boarded in a boutique hotel where the rooms were decorated with a female version of the haunted Vigo portrait from Ghostbusters 2.

But we know our fish. We starved for several more hours as you can imagine.

I am attaching a not so great but still impressive pic of fresh king salmon (one day outta the water, was a long drive). Now thatsa fish!

As to your recipe, perhaps lose the crumbs, add soy sauce for umami and brown sugar for caramelizing and grill it...(salmon not my favorite so the internet might be better on recipes, although strong yes to the mustard. If fresh, salt and pepper is all you need.)

Sigh...everyone is a critic! I stand by my recipe and challenge "Lurker Lou" to make it and then get back to us.

If you still don't approve, I'll toss in a Platinum Membership with Troll-B-GonTM and ampersand utility. But only one year...

Long-time commenter and chef extraordinaire "artisanal 'ette" sent along an interesting recipe for a coffee-based dry rub. it's simple:

Cowboy Java Rub


  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Ground Coffee
  • 1/4 Teaspoon Cinnamon
  • 1 Teaspoon Crushed Black Peppercorns

She used it on pork tenderloin, which is a good idea, because it is a mildly flavored cut of the pig and needs a bit of a kick to get the most out of it. I usually make it with an herb rub, but this sounds good!

24 Right before The Daughter of Stan and I got married, I worked in a little pizzeria in B'ham next to the Plaza Grill and Pub called Guido's. The owner was a NY Eye-talian who had a real live chef construct the food we warmed up for the customers at night.

We made the biggest, most awesome pizza I've ever seen called The All American. 16" and about 7lbs of every topping known to man. Most customers could only eat one slice, if all of that. Triple everything including pineapple and bacon. Had to drizzle more shredded mozzarella on top to hold it together. Took two of us to get it out of the oven.

Mmmm, now I'm hungry for a pizza...

It has layers of cake, vanilla ice cream, blueberry sauce, and raspberry sauce. And it was delicious. Best to make it a day ahead of time though, as there are a lot of steps to putting it together where you have to put it in the freezer for 30 minutes or so before the next step.

Hamburger, Hot Dog, Brats Extravaganza was delish with plenty of leftover for later.

Here's a delightful new cocktail I found this week from the book "Be Your Own Bartender":

ITALIAN GENTLEMAN

-1.5 ounces Campari
-1.5 ounces bourbon
-.75 ounce lemon juice
-.25 ounce simple syrup

Directions: Shake all ingredients with ice, optionally adding 2-3 dashes of orange bitters to taste. Strain and serve up. Garnish with a lemon wheel.


Even those of you who are Campari Fragile will enjoy this one.

The fresh lemon juice smooths out some of the bitterness and picks up on the citrus flavors of the Campari, so that it matches perfectly with the bourbon.

It sort of makes a cross between and Whiskley Sour and a Tiki drink.

I recommend a high proof cheated bourbon like Weller 107 or maybe, Lone Elm Single Barrel Straight Wheat Whiskey.

Also, I don't believe the Orange Bitters are necessary. YMMV.

41 The lamb chop photo reminds me of a recipe I got from a coworker. It essentially is the coating/topping I see in the post photo but with some salted pistachios chopped up and scattered on top as well.

Grill that or put it in the oven and that's good eating.

Yes. Today is an experiment. I am doing them on the grill instead of the oven. I suspect the bacon will get extra crispiness from the grill with indirect heat.

Be sure and plate the rosemary for nibbling the leaves and the garlic cloves for skinning on the plate.

And drip the oil from the pan onto the chops when plating for final touch of goodness.

Grilling (indoor or out) wastes some perfectly good fat, IMO.

Just off the top of my head, I might take a hint from the Brits and their fondness for Summer Cups, where they mix gin and bitters with slices of fruit.

I suspect this would work really well using frozen fruit instead of straight up ice for the blender.

The blended fruit would tend to melt more slowly and still maintain the drinks flavor even as it melted instead of simply watering things down.

You might get the same effect to a lesser extent with frozen juices or lemonade.

As a example, one of my oddball faves is to use frozen cherries with to make a frozen Manhattan with Cherry Bitters instead of Angostura. It's great though more of a Fall thing than Summer.

Turned out that it needed sharpening, which really means flattening. That was a serious piece of work. Those discs with the holes take a whole lot of elbow grease to flatten, even for just one side. The blade part was easy, though.

After the sharpening, it worked fine. I still covet a real grinder, though.

I usually wrap each individually in a bit of plastic wrap, then put them all in a freezer bag. I do the same with leftover hot dog and hamburger buns as well. That way, you can take out just what you need. They defrost on the counter in no time at all. (Leave the plastic on when defrosting so any condensation will stay outside on the plastic.)

1-4 dumps of flakes (depending on milk rise and flake to liquid ratio)

1-2 Pours of milk
the big spoon
Instructions -


Pour slowly until you can see the white of the milk just between the lowest flakes. After one to two bites, you will need to add another dump of flakes because you don't want to waste that milk. Depending on how hungry you are you may have to add another dump of flakes. Or two. Be sure to smoosh the flakes down into the milk. Slop it around a little or else you might as well be eating them out of the box. Finish by picking up the bowl and slurping down the rest of that frosted milk.

111 I just made a Yuge stir-fry that for lack of a formal name I will call Sharkman's Artery-Blocker, which consisted of the following ingredients in this order:

1/2 stick butter
2 Tbsp crushed garlic
2 Tbsp minced ginger
1/4 cup soy sauce
1 diced yellow onion
1 pound of chopped up thick-cut bacon
1 Tsp salt
1 Tsp pepper

All that was cooked together until the bacon was crisp. While that was happening I stir-fried the following together in a separate pan:

1/2 stick butter
1 Tbsp crushed garlic
1 Tbsp minced ginger
1 Tbsp soy sauce
1 x 8 oz. package of bean sprouts
1 x 12 oz. package of baby spinach,
chopped
8 large white mushrooms, chopped
1/2 pound small gauge scallops
1/2 pound shrimp

Once the bacon was crisp in the first pot I dumped all of that into the second and cooked everything together until the scallops were browned and then ate an enormous bowl of it.

It was delicious.

Lamb doesn't need it (see gyros or roast leg), but I can imagine a sprig of fresh mint being nice. I like mint, though. First plant Grandad taught me to ID in the woods. Second was huckleberry.

Seriously, it is amazing how good grilled vegetables can be. My current favorite is zucchini and squash chunks with some thick-cut onion. I salt everything and drain it before I cook so it doesn't get soggy. And then olive oil for cooking.

What did you use to sharpen the disc? Diamond sharpeners make short work of anything I've ever sharpened or flattened, even tungsten carbide.

Well, it's not that horrible Mint Jelly.

This is a British sauce that more sour than sweet and compliments and enhances the flavor of the lamb perfectly.

It's a much better dining experience because of the sauce.

It's not used to cover up the lamb's flavor. This isn't like splashing ketchup all over the lamb.

Several thoughts,
Put the gin in the freezer for an hour or two. Bring its temperature down.
Double blend it. Make it really smooth.
Add a piece of frozen fruit (mentioned above)
Drink faster! ( my personal method for my blended margaritas).

Check out the Spyderco SharpMaker. It's fantastic with kitchen knives, and does scissors well, as well. You can do serrations with it, but in general, I prefer to use diamond rods.

No. Absolutely not. The wands are the way to go, and I like the Anova because it can be used independent of the smart phone App, unlike the Joule.


For instance, I can put my Anova into a big cooler and cook six racks of ribs. The stand-alone cookers don't come close to that capacity.

Sure, but there is also a civil society that can and does help those who are going without. But there is no mass-scale famine for people to take on, so things have to be invented. And it's easier to ceaselessly whine about "food insecurity" than it is to hit a food bank to do something about it other than whine.

(Another one of my favorite stupid terms in this same vein: "food desert".)

By the way, speaking of crack, I love the orange Cokes. I first tried them in Japan and was geeked to see them make their way to the United States last year. And...I'm not the biggest Dr. Pepper fan - nothing against them at all, they have just never been a go-to for me - but the cherry Dr. Pepper was amazing, the Vanilla Cherry Dr. Pepper even more so, and the Dr. Pepper with Cream Soda is also damn good. (I'm not a big consumer of sodas but I do drink the occasional one.)

When the new one opens in Lubbock, that is going to become a cash machine for H-E-B. Make book. I am already plotting how to do H-E-B runs to Lubbock and otherwise avoid going to Walmart or United (pretty much your choices for groceries in the Panhandle).

Dried bark. Chunks, not powder, for easier straining through cheesecloth. I generally shake any powder out first in a strainer for that reason.

332 dartist @ 320, first you take your scrapple and slice it 1/2 inch thick. Brown both sides in bacon grease and set on paper towel, fry your eggs in same grease over medium and place scrapple (remove the paper towel, that's important) on top the scrapple. Cover with grits, and put some Tabasco on top. Now that's a meal right there.

333 I've always marinated lamb with olive oil, garlic, and rosemary too. Perusing some Italian cookbooks recently, I came across a recipe for a lamb marinade of olive oil, garlic, rosemary, and mint. Surprise, surprise! I never knew Italians used mint. Anyhoo, now I add fresh mint to the lamb marinade (about equal in amount to the rosemary). Curiously, it doesn't taste "minty". The rosemary and garlic are still dominant but the mint adds a little something savory.

This is substantially adapted from an Imbibe recipe. It makes about a quart of unsweetened syrup, of which I use 1-3 Tbsp to make a liter of tonic water, depending on what strength I'm after. I have actually taken to drinking it unsweetened, but you can of course add Splenda or simple syrup to adjust the syrup to your taste.

What you don't want to do is what the Imbibe writer did, and add sugar when you make the syrup. His subsequent struggles to filter the result of that are amusing.

4 Tbsp Cinchona bark chunks
2 Tbsp food-grade citric acid
6 Limes. The full-sized ones.
1 Orange
1 stalk lemongrass
2 Tbsp whole Coriander seed
4 cups water

Zest the limes and the orange. Peel the outer tough layer of the lemongrass, and cut into 1" lengths (not the top part). Add everything to a saucepan (NOT any juice yet). Bring slowly to a gentle simmer, and simmer gently 15 minutes.

While that's happening, juice the limes (NOT the orange; if you add the orange juice, the syrup will gel. Don't ask me how I found out). When the simmering time is done, add the juice. Heat gently for 2 minutes. Turn off the heat and let cool to room temperature, then strain through 2 layers of fine cheesecloth. Keep in the fridge. It keeps for a few months.

339 Frozen Drinks:

Keep in mind that when you mix a cocktail with ice in a blender, the ice will dilute the ingredients. I usually try to use concentrated syrups and purees, like frozen concentrated fruit juice right out of the can, and concentrated bar mixes, like lemon and lime juices, available pretty much anywhere. When you're ready to start mixing, start the blender with less ice than you think you'll need, take the top off the blender while it's mixing, and add more ice until you get the thickness you want. And frozen drinks usually need a little simple syrup (50/50 sugar and water) to bring out the flavors and help keep the cocktail from separating in the glass.
