I have a 1950s Pyrex percolator plus, a Bialetti and and a Cuisinart programmable coffee maker. These are supplemented with an adjustable hand grinder. The Cuisinart gets used during the week and the other two get exercised on the weekend.

Best coffee for anything other than the Bialetti is Ethiopian yergacheffe. Best stuff for the Bialetti is LaVazza Crema Gusto.

51 The Technivorm sounds technical but it's just a basket brewer. It's secret it it brews at the correct temperature and in the correct amount of time. Most coffee makers brew at too low a temperature and take too long. At least that's what I remember from an article about it.

My first coffeemaker years ago was a Braun, and I kept it from 1986 to 1998. Some gaskets began to leak, and nobody in Denver could repair it economically. I hope this one lasts as long.

Back in the early 90s, we bought out a shop down in Houston and part of the purchase included a coffee maker; the kind that plumbs into the wall. Judging from the patina on the stainless steel housing, it must have been in service for a few decades. Well we got it back to our shop and looked inside. There were more scales in the reservoir than any fish in the sea and they were about the size that you'd find on Godzilla's back.

No sweat. A little muriatic acid and a good rinse, followed by several runs with distilled vinegar and then several runs with just plain filtered water. Worked fine and last time I was in the area I stopped by to visit and that coffee maker is still in service.

FWIW, "Medium Roast" is almost always too roasted.

Most companies begin their "light", "medium", "dark" scale long after Vienna roast.

At Vienna, the "origin" of the coffee is almost gone. For blends, no one cares about origin, just coffee profiles.

OTOH, City begins at first crack and the origin slowly gives over to the taste of roast as one approaches Full City then Vienna, then French...

I think many of the higher-end machines are pretty good (judging by the reviews I have read), so I am tempted to buy one, and then return it and buy another one, and so on and so on, until I find the one that makes the best coffee for me.

I will concede however, there can be times when one cannot finish all the good coffee one makes. At those times, find a better solution, perhaps akin to the disposal of a damaged and retired U.S. flag.

114 O/T, replaced the dishwasher last night.

Turned out to be more of a PIA than I expected.

Worth it, though, as the new Kitchenaid with the SS interior is amazingly quiet. The new Kitchenaid I bought is rated at either 44 or 46 DB. Don't remember which.

We have a small house and having a quiet dishwasher means we're now able to hear ourselves think, unlike what we dealt with with the old DW.

Worst flooding here since 1993. Lots of crops ruined, many homes rendered unlivable. Roads closed. People stranded.

Worst I've experienced so far is all the idiot drivers who seem to slow down when the river comes in view, gawking at its swelled levels and disappeared banks...

Cold brew is good. I don't know about any pre-brewed ones, but at home, just leave grounds in cold water overnight and then filter, then add it to hot water to reconstitute. Less acid, I think, than traditional brewing.

Yup, the behavior of the Oberlin people was truly awful. There's more possibility for awarding damages - up to $22 million more, right? I hope that happens.

Given how small the town is, wonder how things will be going forward - if the school continues to have a grudge against the bakery, or if they move out the bad apples and try to make peace.

Makes the best coffee in the world. They also periodically send me coffee beans roasted locally by the growers and kept for their own consumption. It's great!

I guess that the doohicky Milady uses to make her coffee every morning. Too much fuss and bother for me, but it smells great, so I smell her coffee and drink mine. (Sometimes I steal a shot of hers into my cup.)

I'd thought sometimes of pouring the pot back through the filter a 2nd time, but I figure that really wouldn't work and would probably be some kind of disaster.

I have trouble enough with a single plain Melita filter.

I tried some when it first hit our market. It was very good, but not worth the price... I wrote it off as a novelty.

But it became a status symbol for rich, pinchfaced Manhattan society women, and demand quickly outstripped supply because

1.) It's harvested from the shit of wild civets

2.) who will ONLY eat the best cherries of the native coffee, which is very good to begin with.

Well, once Susan Olivia Cuthbertson Klein and her friends just HAD to have it, the Indonesians started capturing and breeding civets, and force-feeding them seriously cheeeeap, inferior coffee cherries.

Net effect: totally unremarkable coffee that costs $150/lb.

Shhhh... nobody tell Susan.

One can literally take the crap coffee that comes in those large metal tins and cold brew a respectable cup from it.

Cold brew is like magic in that no matter how bad the bean, goodness can still result. (Cold brewing a dark roast form Tibor right now)

I do that for any over roasts that I do. Over roasts can occur when I'm using a different bean and size, and I refuse to drink Vienna or French. I don't care for the taste of "roast".

When I lived in Denver, French Market was the only coffee-with-chicory brand I could find, though it was in all the stores. Good stuff. I made some once for the people at the office, figuring, you know, Christmas, give 'em a treat. An hour later I heard someone saying to the receptionist, "Is there something wrong with the coffeemaker?"

196 A few years ago, I went to the Dominican Republic to get some training and everywhere I went I had great coffee. Even from the beat up old office coffee pot.

It was all the same coffee.

"Santo Domingo Coffee" - which is a medium roast.

The Dominicans don't have much to be proud about but they are justly proud of this coffee.

You can buy it on Amazon for the same price or cheaper than you can buy Starubucks.

Give it a whirl.


Also , on Amazon(and elsewhere,) also a great coffee, is-

"Illy Caffe Coffee Drip Dark Roast"

Great rich flavor, though it's expensive. And they make several grinds for different types of coffee makers.

Agreed on both counts. Though my experience in Texas during Katrina was that Texas pickup drivers, while fast, will at least leave lots of space when they pass you. Lousy-ana people will practically nick your bumper, they cut back in so fast.

I haven't been back to Texas since 2014, so I don't know if that's changed.

Interesting that you brought this up. I was going to mention that some of the health studies done on coffee have made a point that they only got those results from paper filtered coffee. I don't know what that means if anything as I question they MSM stories that shriek coffee is bad and then coffee is good just to sell papers. But you can do your own research, some of these studies like the coffee fights liver issues make a point of saying the results were from paper filtered drip coffee.

Thermal carafe is good, nothing worse than boiling out the coffee; plus steam from a hot plate carafe will go back up into the coffee filter, condense and then drip back into the carafe bringing in nothing but bitterness.

The temperature thing is a bit overrated, but does have an influence on the final product. If you have the money...

Extraction plays a large role. Even extraction is required where the heated water hits the ground AND as it sinks through the grinds. I don't know what technology Technivorm is using, but it is probably far better than a Mr Coffee that sort of dribbles out the condensing boiled water from a plastic spout...

Someone on Legal Insurrection posted an interesting letter from the trustees of Oberlin about Oberlin's long-term financial problems.

I went to a liberal arts college like Oberlin, which currently charges half of its students full tuition, and gives half of its students tuition discounts, averaging half tuition. (Hint: if you pay full tuition to this institution, you are a mark.) I bet Oberlin is similar.

Oberlin had a serious recruiting shortfall, which led to a significant deficit. They fixed the shortfall, but they were successful in recruiting people who get the tuition discounts, not the people paying full freight, so that didn't help Oberlin's financial situation very much.

Long-term, the trustees are worried that the supply of marks willing to pay north of a quarter-million dollars for an Oberlin education may be drying up. (Particularly since you would have to be insane to send your son to a left-wing college with sexual kangaroo courts.)

Well, Oberlin still has a few hundred million dollars in endowment to burn through...

363 So I'm starting to see some daylight between Deep State Collusion for Hillary and what the "Intelligence Community" did against Trump.

It's starting to look to me that this is *mostly* CYA for the biggest IC fuckup in history: the hole in not detecting Hillary's private server and taking steps.

Thus what we might see here is not necessarily a hyperpartisan IC, but an IC that made a deal with the projected Clinton administration on their mutual motivation to not expose what a security hole Hillary's private server had been.

All the 302 and evidence destruction seems to have a common theme of covering up how much intelligence damage had been done by the server.

And I think that's why the IC has been trying to push meetings with Russian lawyers as some sort of unquestionable high treason, the information coming out is that they have been selling over one-time IC assets as "Russian contacts", such as Page, Mifsud, and Kilimnik. After all, they're lying about something that the general public doesn't have a "need to know".

At this point, I think the IC wants something drastic or momentous to happen to turn the attention to Trump and make the rest of it go away.

This episode they made coffee using hot sauce instead of water. It killed the coffe maker and it was unbearably hot but they insist that it doesn't taste bad.

Depends if you don't care about the resulting product.

A good grinder gives uniform grounds (and less dust). Then you need to decide on how long to let the grounds (how much) be exposed to the hot water (and what temperature) so that the coffee is not under or over extracted.

Makes the best coffee in the world. They also periodically send me coffee beans roasted locally by the growers and kept for their own consumption. It's great!

I spent 3 months in Costa Rica, many years ago, and remember drinking much coffee that was made that way. Good, but not good enough for me to want to switch from my ancient Phillips cone filter drip machine. Just replaced the stainless steel "permanent" filter cone a couple of weeks ago after the mesh came free of the plastic frame.

Even drug-addled homeless people can figure out how to migrate to the cities where they will receive maximum benefits. (In Portland, the homeless migration is even seasonal, since winters in Portland are less pleasant than in California.)

In Portland, you get abundant homeless services, free needles, and a lack of law enforcement directed at junkies and meth heads.

You don't get that in Boise.
