Food Thread: An Unexamined Food Is Not Worth Eating*

I make hummus all of the time, because it's really easy, tastes great, and is a great appetizer to plop down on the table with drinks. But for the longest time I made the baseless assumption that it needed lots of olive oil to taste good. Now, adding fat to a dish is rarely a bad thing, but olive oil is a strong-flavored fat, and there is a fair amount of variation in it, especially the extra-virgin varieties. So making hummus was always an exercise in tasting and adding and wondering what it needed.

But one day, long past the time that one would have expected me to have figured this out, I thought, "Hmmm...Dildo...maybe use much less olive oil and see what happens." My first fear was that it would be too thin, because the olive oil emulsifies wonderfully with the other stuff. But then I realized that tahini (sesame paste) has lots of fat, and off I went!

And there was much rejoicing at Chez Dildo, because the hummus was great! And easier, because I didn't have to drain the chick peas and carefully dole out the liquid to arrive at the correct consistency. I just dumped the whole can in and the rest of the ingredients, then drizzled a bit of olive oil in for flavor.

The moral of the story is that preconceived notions can be tough to change, or never get involved in a land war in Asia. Maybe both.

Anyway, it is possible to teach old dogs new tricks in the kitchen.

Shaking a Manhattan? Sacrilege! I have experimented with both and I think the stirred version is much better. Bourbon (or Rye) just doesn't taste right when it is frothy.

As for the Rose's Lime Juice? I will not cast aspersions on his choice of "sour," other than to say that his mother was a hamster and his father smelled of elderberries!

Two recipes from the always-reliable Garden&Gun. I like them because the recipes are almost always something I want to eat, and they keep the preaching to an absolute minimum.

Bloody Marys, when made well, are a pleasure to drink, and eat! I have tried the Bloody Mary bar at Atchafalaya in New Orleans, and I heartily approve. So their twist...using tomatillos...sounds like a good thing. By the way, I am not a fan of thick tomato juice in Bloody Marys, and the tomatillos sound like they would be the perfect consistency.

One of my go-to dishes when I am at a loss for anything interesting is a simple spatchcocked roast chicken with a spice rub or, during the summer a cilantro-based marinade. I am lucky to live just a few minutes from an excellent poultry farm, so getting great chicken is not a problem. And my default 425° on convection works just fine, so I really don’t have to think much about the cooking process. I put a temperature probe into the thickest part of the breast and set the alarm for 160° and wander off to have a cocktail. Cooking doesn't get much easier than that. But that final temperature? Where did that come from, other than those nasty preconceived notions and outdated USDA recommendations? Well, guess what? 155° works better.

5 I've been trying get hummus to turn out smooth and creamy like some of the local places do, and olive oil seemed like a good place to start. But it turned out that I get the best results by draining off the canned chick peas and gradually adding some of the liquid back in to the food processor until it gets to the right consistency.

8 Some moron mentioned cooking bacon in a black iron skillet and then making cornbread later that day with the drippings and bacon residual. I did it and yep, it's pretty good. I saved two pieces of bacon and crumbled it up in the batter for good measure.

25 I share many of CDB's food prejudices (savory over sweet and I don't care for syrup on French toast). The banana-flavored milk also made my stomach flip over in disgust.

But I have peculiarity that we don't share. I can't abide substituting canned beans for home cooked ones. Yes, lots of respectable foodies say it's fine, but to me they are mushy and flavorless.

Most beans are easy to cook overnight in a slow cooker and IMO, the consistency and flavor are a lot better. Chickpeas in particular are great that way, but you pretty much need to soak them overnight first whatever you do. They freeze well, too.

I usually have a package of cooked white beans and one of chickpeas in the freezer. Very handy.

30 I grew up eating hummus thanks to my grandparents. I don't recall Nana using huge amounts of olive oil (she was frugal) but she did use a LOT of lemon juice. Same with baba ganoush and the spinach mixture for spinach pies. Must be where I got my taste for lemon.

A big bowl of hummus with warm, not toasted, pita bread, carrots and celery for dipping was a common part of supper when we grandkids visited.

It's a bush bean, grows in little pods like individual edamame. I got some in a giveaway packet (from mom maybe) and that's what they looked like on the envelope, anyway.

56 Last night I went to some Italian restaurant where they had a special; It you bought two dinners you could take two dinners home so I treated my friend who drove me back from a meeting. I got chicken in cream sauce with caramelized onions and mushrooms and pasta. It was delicious but I couldn't eat it all. I also had spaghetti and meat sauce, so that's what the family had for lunch today-leftover pasta. They said it tasted fine. So tonight we are having corned beef and cabbage, potatoes and carrots but no beer-green or otherwise. I like doing things in the crock pot because-as I've noted many times-I had to cook on Sunday-especially after church, and I was exhausted after church today because we actually had some visitors-one who came back from last week!

72 Making crispy smashed new potatoes to go with ribeyes. Boil the potatoes until they are tender, smash flat on a sheet pan--I use a potato masher--salt and cover with olive oil top and bottom. Roast at 400 (convection) or 450 (conventional) for about 30 minutes. Crispy and delicious, esp. with sour cream and chives.

Cast iron pans are a good addition to a kitchen but they need to be seasoned well before trying out pancakes. Non-stick pans are fool proof. Plus you can cook scrabled eggs in a non-stick. Cast iron is not eggs friend.

109 Apropos of nothing. I am no wine expert but I've learned a couple of my preferences.

The first is I like unoaked chardonnay better than the usual aged in oak barrels. It is a crisper, cleaner citrusy taste.

The second is a light retsina Greek wine, chilled, is great with hummus and similar dishes.

The third is discovering that pinot noir is supposedly the healthiest of red wines by a bit. That works for me as pinot is my favorite red wine.

Yes. Cast iron, scrubbed, then seasoned with oil in the oven. Finish seasoning by cooking about 50 lbs of bacon in the iron pan on the stovetop.
After that, always cook at least two strips of bacon before pouring in your pancake batter. Guarantee they will not stick!

i saved this on 29MAY16, so i'm not sure if it was from the HQ or FB:

I bought my Lodge cast iron griddle from WallyWorld.

Got some 80, 150, and 220 drywall sanding mesh from hardware store.

20 minutes with a random orbital sander and ... voila. Smooth as Mom's 50 year old Griswold.

Seasoned it by three rounds of baking in a 500 F. oven after coating with a fine wipe of lard.

It's now, black, smooth, non-stick, and perfect.

You're welcome.

and furthermore:

it's the silicon carbide drywall sanding screen.

Garnet sandpaper doesn't work; coarse silicon carbide emory paper wears out in a trice.

The drywall screen doesn't load up with cast iron grindings.

Maybe it's the batter that makes the difference, or thin ones don't work without a convex surface. But I have a Lodge 10" and liked it so much for general cooking that I got mom a 12" one. I haven't done any hot-rodding either, I just cook with it and wipe it out. Once in a while I'll splash some hot water in and wipe it down with a towel while it's still hot and leave it on the burner until it's dry, but that's it. Besides just cooking, I haven't put any effort into it. Or into anything else, for that matter.

Speaking of Hummus and tahini. You can use any type beans that you like. Dried beans are better. They can be processed to powder in a coffee mill. And processing your own sesame seeds is 10X better than tahini in tins. And when you taste it by itself you go, "HEY! This is very similar to peanut butter."

Think about it, the Middle Easterners are using the beans and nuts and oil available to them. But you needn't be stuck on their ingredients like they are.

Try it sometime; dry beans processed to powder then cooked in a few minutes with water in the microwave, homemade tahini or substitute peanut butter. Any oil that you like. You'll be amazed.

Usually just the paper towels, while it's still hot, are enough. Salt, if you need abrasive. If it's really clapped out and rusted and needs to be rehabbed, mom uses Barkeeper's Friend and the cuff of her sleeve (she wears a chainmail hauberk). Day-to-day, I just wipe it out with a damp paper towel while it's still hot. Drying it on a burner instead of with a towel also gets all the moisture out so it doesn't rust.

I have between 10-12 vintage cast iron Griswold and Wagner frying pans and a few other crap ones. The good ones are in daily rotation. Just like my kin, I wash them with soap and water when they need it. Don't need to reseason them. They are light years better than all the other non-stick pans out there. I do everything in them.

Answer - I've never had a garbanzo bean all over me at a bachelor party.

But when blueberries are in season the procedure is: a pancake with butter and a layer of berries, another pancake, butter, berries and repeat as needed. Top with an over easy fried egg and pour a moat of REAL maple syrup around the stack. Serve with good perked coffee and a glass of cold milk. Heaven!

A plate of orange wedges is a nice addition.

205 OK, here's my recipe for hummus, given to me by an Israeli friend:

1 lb dried chickpeas
6 cloves garlic, minced
1 cup tahini
juice from 4 lemons (tart lemons, not Meyer).
Salt to taste (more than you think)

Soak chickpeas in water to cover overnight.
Boil chickpeas 3-4 hours. Add water as needed to cover chickpeas.
Drain chickpeas. Reserve boiling water for use later if needed.
Add garlic, lemmon juice, and tahini to chickpeas. Process in food processor in batches. Or do what I do, and use a stick blender. Add reserved water to get desired consistency. Add salt to taste.

That's it. No olive oil. Never tried using canned chickpeas.

212 I've had a flat cast iron griddle/grill for over 30 years now. It was a gift from mom when i was in my 20's.

Smooth on one side and ribbed for grilling on the other side. Sits on top of 2 burners on the stove.

It's the best for making pancakes, and here is how I do it:

Fry thick bacon first, scrape the excess fat to the side, and then pour the pancake batter.

The griddle hasn't failed me yet. Pancakes are perfect, rise the best, and have the perfect crunchy face and edge that I can't get from an aluminum surface. And the centers are soft and fluffy.

No detailed stories. The PNW was in full show off mode for Insom. It was gorgeous! Snow capped mountains surrounding us, the Sound was sparkling blue. Everything ran as easy as pie.

Road trip was amazing.

He is truly a sweetheart and I am so lucky to have found him. I cooked for him daily. It was so fun.
And, go figure, with all the activity, we both dropped a couple of pounds.

235 I love hummus, fresh is best but I usually just buy it prepared in store. It is not currently on the food list though because is not Keto. Probably for best; my fave thing to eat it with is a whole bowl of carrots and cucumbers and that is not Keto either. Adding roast pine nuts and herbs in olive oil as a garnish to hummus is tasty.

Made slow cooker corned beef today with veg and herbs. Cannot wait to eat. A cob posted a recipe for cabbage rolls years ago that I fell in love with, am going to make that with the leftovers. To make Keto mashed potatoes, am going to fast cook cauliflower rice in my instant pot and mash it with a lot of lovely Kerry Gold butter, heavy cream, Romano cheese and my extra herbs, plus a few spices. The cob recipe uses parsnips, and I am bumping up my carbs a teensy bit to have that and some carrots mixed in with the corned beef and faux potatoes in the cabbage rolls.

I cooked a huge Alaskan King salmon for him. We had it the first night with my boys at my home. I didn't a raspberry sauce, Raspberries, lemon, butter and a pinch of sugar. It goes beautifully with salmon.

It was a hit.

No, but I've have their cast iron Cornbread Wedge pan. It's fun to use. Heat it up in oven while making my batter. Trick is using enough oil to ensure it comes out of pan easily.

No detailed stories. The PNW was in full show off mode for Insom. It was gorgeous! Snow capped mountains surrounding us, the Sound was sparkling blue. Everything ran as easy as pie.

Road trip was amazing.

He is truly a sweetheart and I am so lucky to have found him. I cooked for him daily. It was so fun.
And, go figure, with all the activity, we both dropped a couple of pounds.

I mean the WALKS on the beach!

I do it the lazy way. Cornbread goes into a regular Lodge, not a wedge type. I add a few tbsp of butter to skillet while oven is warming and then swirl it around the bottom and up the sides. The excess melted butter goes into my batter. I almost never have a problem with sticking, but I have a very old, seasoned skillet.

I stole reverse engineered a raspberry/blackberry fish sauce from a Nantucket restaurant.

Basically sautee garlic in oil, add berries until they reduce, then hit it with a shot of balsamic vinegar.

287 I cook eggs in my small cast iron pan all the time. This is one of those old Griswolds, from the era of the special ore, and is flat, not knobby.

Also I use the chives/scallion trick that I learned from a wok store to make a wonderful shiny slippery surface on cast iron or steel. Basically any time the pan starts getting a bit sticky, you brown some chives or scallion greens in oil or fat, moving them around to spread some essence on the whole surface. Get them fully brown, but no need to blacken them. Wipe out the pan, and I think you'll be impressed by its performance after that, until the coating needs renewing.

My wife believes in living poor to save money. Her latest phase is hummus. You can have hummus on a nuked potato, open face on a tortilla, or rolled up in a burrito. If a tortilla is involved there will be optional salsa, cheese and a salad green.
You flinch, but for her, she can feed a family of four for a couple bucks per week.
It is odd, and hardly believable, but it is the way she was raised and it is what she is comfortable with. So much for the idea that eating should be a joyous occasion. No, not when it is just an expense.
The moral of the story is to be grateful for a good meal. It is too easy to take blessings for granted.

298 I do like hummus, but what I like even better is baba ghanoush. Problem is, apparently, that it lends itself to food poisoning, so the local store stopped making it. Found some at a local Farmer's market that was really good, and ate it for months, until Mrs. Splunge came down with a bad case of food poisoning.

So I guess I have to make it myself, which is really the best anyway. My two tricks are: 1) use those long, thin Japanese (dark purple) or Chinese (light purple) eggplants; they have more flavor and are less watery than the usual Western kind, and 2) Cook them, whole, over charcoal until very soft.

What I don't know is how to avoid food poisoning issues that others have run into. That's kind of a deterrent.

As for food poisoning issues? Eat it quickly, and keep everything cold. So chill the eggplant after you grill it and before you make the babghanoush. That should.minimize risk.

I've never lost more than 3 lbs a week, but it's because I am weak, and I hover around 50-60 carb grams rather than 20 net.

I just had a super-carb weekend, so I spent all afternoon making chicken (no noodles) stew, and prepping veggies for the upcoming week.

That sourdough baguette was killer though. No regrets.

No I don't. I use my cheap blender, pop a couple of chunks of beef in it after a bit of trimming, cover, blast it, unscrew the bottom of the blender and use a spatula to empty it. Repeat as necessary.

It takes a little practice to get the meat just so, not too course or too fine. The meat chunks need to have room to fly around, so just use a couple of small chunks at a time, or half of the meat will be a chunk and half the meat will have the consistency of a milkshake.

The texture of the meat comes out good, but it is a frigging mess to clean up. To keep my temper in control with all the mess I make and have to clean up, I just keep thinking how good it will taste.

If I had to cook for a bunch of people, I would certainly use a meat grinder.

There's a Japanese grocery store in a tony town up the road from me. They're in a high end retail area, but the store is crammed with shelves and narrow aisles like an old fashioned urban grocery store, except everything is in Japanese.

One side of the store does have tables for hipsters to eat ramen, but I don't go to that side of the store.

One of the things they do is sell boxes of sushi. It's pretty hit or miss which kinds they'll have, but usually there's something good.

One of my life hacks is trying to hit them before closing time. They mark down a $7 box to $5, so all of a sudden you can get a feast for $10. And it's really good stuff.

What can also happen is that you get there before closing on a Sunday and they're all out of everything, and that just happened to me.

416 292. Mr. Delurk - I feel for you. My job situation has been hit or miss for the past two years. For the first time I have to watch my food budget. I didn't realize how expensive food had become when I was working steady. Not talking luxury items, produce for example. I said to my friend 'I love rice and peas but I really don't want to make a lifestyle of it.' It's not good to be a spendthrift or waste food...but dang your wife needs to loosen up. Here's to hoping my finances improve and your wife gets some common sense about feeding her family.

419 I sort of sympathize with delurker's wife. I like to eat fairly cheaply so I can splurge on horses (and the pickup and trailer to go places with them.) But all things in moderation. At least 1 day a week should be a nice meal.

Maybe a nice roasted chicken or pork chops if the price of beef is too cringe inducing to start. (sometimes I have to remind myself that compared to everything else in life that red meat in the supermarket is not that bad, but mostly I still don't buy it cuz there is still a bit of deer meat in the freezer.

are both good middle range for sipping and cocktail making.

If you pay a few bucks more for the Knob Creek single barrel it's almost always well worth it.

422 Also I had my own "what not to do" role model for living too cheaply in my mother's parents. Granddad at least enjoyed cars after they got fairly wealthy, but that was the only exception, they pretty much had no clue how to enjoy a vacation, or dining out, shopping for fun. Dave Ramsey tells people to do 3 things with money after the bills are paid. Save, give and spend enjoy. When his show used to be on during my commute home probably once a week would be some call where Dave had to remind people not to drop spending and enjoying some money, especially once they are debt free.

426 The lovely Mrs. Blake & I stayed at the Casablanca Resort and Casino overnight on our trek from commie CA to one of the few freedom loving outposts left in America, Idaho. I mentioned, in the Gardening Thread, that I was trying to entice Mrs. Blake to Idaho to escape the socialist tyranny of Sacramento and received a request that we join the Idaho population in an attempt to help beat back the votes of the socialist hordes currently invading Idaho.

Why do I bring this up in a food thread? Well, we both enjoyed a decent meal at the casino. While the Chicken Fettuccine was nothing to write home about, the 16 oz Ribeye for $16.99 is.

The steak was cooked medium rare, as requested, with excellent grill marks and was very tasty. However, I will admit, this was the bottom quality Ribeye and did lack some of the marbling and fattiness a good Ribeye should have.

However, at that price point, it's hard to argue with the quality of the cut along with the well-seasoned and well cooked steak I had the pleasure of enjoying.
