Food Thread: Primitivo And Pig: A Match Made In Heaven

Back in the day, Zinfandel was a poorly understood grape that was used mostly to make insipid white wines that had some residual sugar. Pretty boring and crappy. But there were an intrepid few in Northern California who understood how good the grape could be. Some of them were the Old Italian grape growers who knew of the grape from Italy, where it is called "Primitivo."

Now of course the slim-hipped hipsters have discovered Zinfandel and it is no longer a lovely secret, and the prices have skyrocketed. But the Italian version is still reasonably priced, and it can be a great drink. I was in Hoboken recently for dinner, at an old-school Italian restaurant that served the classics...and did a really good job of it. They had a Primitivo on the menu for not very much money, and it was a pleasure to drink. Fruity and big and without the sere qualities that too many modern wines aspire to.

So all of you wine drinkers out there, give it a try. Don't spend too much...my favorite wine store has two...a nice one for $11 and a fancy-bottle one for $17. A cursory check on the internet has dozens for less than $10, so they haven't gone mad with pricing like the California Zins.

It's a simple recipe, with no weird ingredients, and the technique is basic. And that's as it should be! The liberal use of lemon juice is a nice touch, since it will counter the richness of the fatty meat. I would caution you to be careful with the dried red chili. The typical dried stuff in this country can be quite spicy, and while it will be damned fine eating, it might not be optimal for Red Sox fans and other weak-willed people.

Oh, I'll bet it will work with the other end of the pig. Hams are even cheaper than shoulders!

I like eggnog! Yeah, it's sort of sweet and sort of thick and to be honest is redolent of mucus, but for whatever reason -- probably the booze -- it hits the spot once each year. Alton Brown's Eggnog sounds like it would be good, especially in comparison to some of the commercial brands. Taste Test: Eggnog is obviously subjective, but a few of these sound repulsive. Home made is worth the trouble, especially since it's only once a year...

I love this idea, but the pie itself is massive, calling for two pounds of meat (smoked ham is never optional in Dildo World). If I were to make this I would make a few smaller pies, which would require actual thought before attempting, so..um...maybe not.

An old housemate of mine would only ever buy wine that came in a bottle with a deep punt on the bottom. His reasoning was that you might be able to find a good wine in bargain-basement bottles, but nobody's going to spend the extra buck to put lousy wine in expensive bottles.

It made sense, but I don't know if it was true.

I built my own wine cellar, 'cause manly men do stuff like that. Lots of racks. In theory it could hold a thousand bottles.

But I really don't drink that much wine. Discovered after the fact that having half of it devoted to white wines was the stupid, because they don't improve with age. Get a little off color, if my eyes are any judge.

So I gotta figure out a lotta recipes that require white wine. Chicken and turkey around my parts are unbelievably delicious and succulent. Because white wine has to go.

My BF's dad passed away suddenly last week. He has no appetite at all and I have to coax him to get some nourishment. I know how he feels because in my mother's last days and after her passing I had no appetite at all. I lost about 15 pounds.

Our family had the Woman's Day Encyclopedia of Cooking. It was published in the late 1960s. A lot of the recipes are dated, and sometimes I try and figure out how to update them, but nothing I've yet seen in those volumes matches the unappetizing samples of retro food in the linked piece.

49 As i understand it, there was red zinfandel back to the later half of the 1800's mainly because of Italians coming to 'fornia and they brought vine shoots with them. And so zin became an everyday wine and bit by bit somewhat common. Prohibition threw a wrench into the works for more than a decade but the cali wine industry rebounded.

White zin came about 1965 or so because some winery made a big booboo. Wine partially fermented and still a bit sweet. They arrested fermentation and figured they could sell cheap to get off their hands. I cant remember which winery did this, but Beringer was right on their heels...

Stuff sold out in record time.

Then the white zin boom happened.

I'm very suspicious of those numbers. Very. One egg is 60 calories. My daily caloric intake is just a little over 1,200. I can't imagine an 8 ounce drink with that many calories unless it's pure alcohol and pure butter fat.

114 Interesting thing is that different types of chili peppers have different spots in the mouth where they hit you, and how fast the work.

Jalapenos are hot the minute they hit your tongue. I call it a front burn.
Thai and cayenne peppers taste nice, and then after you get over your first apprehension, they grab you by the back of the throat.

Now, I have started making a hot chili oil with dried and ground thai and cayenne peppers, cooked up in sesame oil with chopped garlic.

I mix a tablespoon of thai peppers with a tablespoon of cayenne pepper, a couple of thinly sliced garlic cloves, in with a cup of sesame oil.
I put that in a jelly jar with a canning lid and a ring, put it in a pressure cooker and bring the pressure up to 15 lbs, let it cook there for 5 minutes, and then let it cool down on the stove top.

It makes a very tasty, spicy oil with a smokey taste that takes a couple of beats to start burning.
Very tasty, very suprising.

James Lileks' "The Gallery of Regrettable Food," filled with repulsive concoctions from the 1950's, (cauliflower in jello, wieners smothered with pimentos) and Lileks' commentary, is one of the funniest books ever. I have to believe people's taste buds were so deadened by martinis in the 50's that they didn't realize they were eating crap.
But I've found even 1980's and 90's cookbooks with color photography can look weirdly unappealing, as if the food was shellacked or else the colors in the photos faded slightly - just enough to make everything look a bit gross.

142 Hey! Here's a fun cocktail I found in an online video for the late night NBC guy. He sucks but this cocktail looked good so I tried it.

There were no measurements, as the cocktail was from some restaurant, but it looked easy to duplicate and was.

This is for two people.

Step 1:

Finely grate an English cucumber, jalapeno, and ginger root. Roughly between one to two tsp of each. You can vary the amounts based on what you like. For
If you want your cocktail lighter and more refreshing, heavy on the cucumber and ginger. If you like spicy, heavier on the jalapeno.
Put that inside your shaker.

Step 2:

Add:

1 oz simple syrup
2 oz fresh lime juice

Step 3:

Here's where you also get to make a choice:
The original recipe was for vodka but it also works well with gin.

However, what really works best is:

Mezcal from San Luis Potosi!

Most of the mezcals from SLP don't have a smokey flavor, so if you hate smokiness...Don't worry.
These mezcals have a fruity flavor with a strong hint of green pepper flavor and it really blends well with this combination. I'll recommend a few below.

Okay. So...Step 3:

3 oz of vodka or gin or mezcal.

Step 4:

Shake with ice. Strain. (Don't worry too much about getting every little bit of grating out. Makes the cocktail look yummier - like confetti of deliciousness.

Drink!

Try it today! It's stupidly easy and...

You'll love it.

San Luis Potosi Mezcals - Made from Agave Salmiana

1) Mescals De Leyenda San Luis Potosi

2) Mezcal Derrumbes San Luis Potosi

3) Miel De Tierra Joven Agave Salmiana

garrett is onto it at #125. If I nap fifteen minutes too short or too long, I'm cranky and groggy. About 20 minutes is perfect, just get up and move as soon as I wake up instead of lying around.

Also napping just before sunset makes me feel like I've wasted the day because it's after dark when I wake up, even if I was up before sunrise and doing things all day.

Power nap. I go to the park if I have a little break at work. Put the seat all the way back and just lay back. Better if it's a sunny day. I don't actually sleep but sort of drift in and out. Feel much better after. Usually do that for about 20 minutes. Only on the days when I have zero energy.

Also have my second loaf of sourdough proofing right now. Made the first loaf a few days ago, it was very good but did not have much of a sourdough flavor.

Holiday Mincemeat
(Yield 12 to 14 Cups)
2 lbs lean beef brisket
1 bay leaf
6 whole peppercorns
2 tsp salt
½ lb beef suet
2 C raisins
2 C currants
4 C apples, peeled and chopped
½ C diced citron (optional)
½ C diced orange peel (no pith)
½ C diced lemon peel (no pith)
1 C granulated sugar
1 tsp fresh grated nutmeg
1 tsp cinnamon
½ tsp allspice
½ tsp ground cloves
Brandy or other spirits
1. Place the brisket in a pot just large enough to hold it and cover with water. Bring water to a boil, add bay leaf, peppercorns and 1 tsp of salt, and reduce to a simmer. Cover and cook the meat for 2 ½ to 3 hours, or until it can be shredded with two forks. Cool. Shred. (Note: I find it can take up to four hours depending on the brisket)
2. Finely chop the beef suet and add to the brisket (a little vegetable oil on the blade will keep the suet from sticking to the knife).
3. Mix the shredded brisket and all remaining ingredients except the brandy in a large bowl.
4. Spoon into 1 qt Mason jars. Fill jars with brandy until just covered. Put on lid (without the rubber gasket) and let stand on the counter for at least two weeks. Top up with more spirits as the fruit absorbs it (tasting the spirits, of course, to ensure no one did anything to them while your back was turned).
5. When ready to make pie, use one jar of mincemeat. Drain mincemeat well, reserving the now very well flavored brandy, and heat in a skillet for a few minutes to drive off alcohol (otherwise, it can be a bit boozy). Add to 4 C chopped apples, pears or both, stir to mix well.
6. The pie has a top and bottom crust. I use Pilsbury ready-made pie crust. Fill pie crusts, seal, egg wash, and bake as per the instructions on the crust (I think it's about 400 deg for about an hour).

Note: I save the drained brandy and reduce it to make a syrup. Do this on low heat and be VERY careful. The vapors will ignite spectacularly otherwise. Mix in a little cream if you want to make a nice sauce. Serve with a nice slice of aged, extra sharp cheddar, or other favorite cheese, a mug of smoking bishop, and enjoy Christmas in a very Dickensian fashion.

Damn, the thing is delicious! I don't know if it's a different recipe for the chocolate itself or the combination of peanuts and raisins with the milk chocolate. But it is so tasty I have to limit myself to a nibble now and then to keep from scarfing the whole thing down.

We had ports going back to the forties at that time.

I had said to her one day...you truly like vintageport...
She responded...'i just want the jam'. She told me her valet got the juice.

I made a deal with her...we decanted the port for her, she got the jam, we got at least 2/3 of an old bottle...all were good with it 'cept her valet.

Then i asked 'what do you do with the sediment?'

I spread it on my scones!

It had volume markings up one side for 1000 ml, and it would sit on the table flat and I told them it wouldn't tip and spill, and it had a broader area to allow the wine to breathe.

No idea if they ever used it, but the sister sure was holding back laughs when she accepted it.

I can't say that the .270 as obscure. It is very likely the most versatile cartridge in existence.

I'll point out that Jack O'Connor regarded the .270 as suitable for all North American big game. Wags come and go, but if O'Connor said it, you can take it to the bank.

He wrote several books, and 'The Rifle Book' merits space on any shooter/hunter's bookshelf.

Love it. I cooked a 'test turkey' before Thanksgiving and another for the holiday. i have two turkeys in eh freezer, after holiday sales. Made a pork loin for guests (best they ever had), and ribs you can hand from hooks (about 20 minutes). It really seals in the juices and you get that crispy 'fried' skin. So easy to use. basket inside. throw that in the dishwasher. Coupla different accessories if you wish for veggies, and kaboobs.

It's one of the reasons I did it. Just had my checkup and she wants me on something to strengthen my bones. I have what they call Osteopenia..not osteoperosis.. yet. Not sure how I feel about it. She tried last year and I balked. Hated the side affects. But I don't want to end up like my mom.

Another, and often cheaper yet good quality are Petit Syrah, they are not in the same family of grape but to me taste similar. I think cheaper because they are off the beaten path.

Some of the Deerfield Ranch bottlings have a bit. The Three-buck Chuck, not much. The Rhône style Syrahs generally have more than Austrailians, another good source for Syrah.

If the taste is of green bell pepper, or green peppercorn, it's often from a class of molecules called pyrazines, generally methoxypyrazine, and this is not generally considered a Good Thing. If this is what you're referring to, neither TBC or the Deerfield's have it.

Deerfield Ranch makes an effort to histamines at very low levels, FWIW.
