Bluebell, Weasel, and the rest of the staff of the vast bureaucracy that is Moron Cookbook Inc. have been doing a huge amount of work on editing the submitted recipes, creating a logical and pleasing template for each one, creating a legal framework for the endeavor, finding a publisher, and most of all making reservations at a dozen bars and restaurants at which the staff will drink up all of the profits in a bourbon-fueled orgy of oysters and foie gras and caviar and lobster and Kobi beef and Chateau Petrus....

In the meantime, please heed Bluebell's lovely and gentle request:

Would you mind putting something in the food thread for us about the cookbook? I've been sending out emails with questions re some of the recipes, and most have been good about getting back to me, but not all. Plus, there will be more emails yet to come, so I want to alert people. Who woulda thunk that morons writing a cookbook would be a problem?

The emails come from the Moron Cookbook gmail account that Weasel and I share.

And speaking of oysters...the reason that photo is up there is because for no particular reason I suddenly had a hankering for a dozen (or two or three) good fat briny East Coast oysters on the half-shell. No idea why. Maybe I dreamed of them, forgot my dream, but it was hovering just outside my consciousness?

So what food or drink jumps up and reminds you that, "Damnit, I haven't some in a very long time!"

Mine is usually oysters or fried chicken or a good braised meat like lamb shanks. But I am also not above meandering down to McDonald's for a sausage-egg-n-cheese biscuit.

Yeah, I know it sounds stupid, but endives are great in salads. I mean, it's not bacon, so why bother? But here is an Endive Salad Recipe from Eat Dangerously, which is a fun placed I have linked before.

Endives are sort of bitter, but not too bitter, and they have a great texture when raw. There is also a fun but sort of odd dish with endives, gruyere, ham and bechamel.

Yes, that was one of the foods I ate as a child. But I put my foot down after I tried calf brains. I think I am still traumatized.

Here's a very nice recipe for Simple Grilled Fish with Basil from Hunter-Angler-Gardener-Cook, which is an earnest but fun website that has some really interesting recipes, and his take on food is refreshing.

Maybe I am not as good a cooking technician as I think I am, but grilling fish is a tough one for me. Anyone have any tips?

Crispy Pan Potatoes
It's a pretty straightforward recipe to which I would add more butter and perhaps some heavy cream. But what caught my eye was the clever presentation. Standing the potato slices on edge looks great!

This recipe was given to me by a neighbor who served it at a Christmas party several years ago. It is good. Very, very good. My neighbor quite rudely moved to North Carolina, so I now have to bake this for myself instead of mooching off of her whenever she baked one.

Chocolate Velvet Cake

4 oz. semi-sweet or bittersweet chocolate, broken into ½" pieces
6 Tbl. unsalted butter
3 Tbl. flour
3 eggs, separated
¼ cup sugar

Prepare, for one recipe an 8" or for a double recipe a 9-10" spring-form pan by cutting a wax paper bottom, spraying with cooking oil then dusting with cocoa. Set aside.

Melt chocolate and butter over low heat stirring constantly until melted. Remove from heat and immediately stir in flour, set aside to cool.

Beat egg whites until foamy throughout and gradually add the sugar, continue beating until mixture form s soft peaks, set aside.

Temper egg yolks by adding 1-2 Tbl. of slightly cooled chocolate and mix well. Add this chocolate/egg mixture to the slightly cooled chocolate and mix until well incorporated.

Fold whites into chocolate mixture and pour into prepared spring form pan. Bake at 350 degrees for about 20 minutes for single recipe or 30 minutes for double recipe, or until toothpick inserted into center comes out clean. The top of the cake will rise in the oven and then fall and crack as it cools.

Remove form pan. If the top has cracked substantially, I usually try to peel the biggest pieces off. Invert onto platter and glaze with the recipe below.

NOTE: this recipe is best when doubled.

Chocolate Glaze
4 oz. semi-sweet or bittersweet chocolate, broken into ½" pieces
3 Tbl. water
3 Tbl. unsalted butter

Heat water until just ready to boil, remove from heat and add chocolate pieces. Stir until melted, add butter and let cool slightly. Glaze the cake. This recipe doubles nicely. Glaze will run over sides of cake, but, there is not enough to completely cover sides as a frosting would.

[Neighbor's comments]

The above is Kathryn’s recipe. Here are my annotations for more excellence.

1) Get a springform pan that has a glass bottom so you can see if the cake is coming out alright. You can run a knife under the glass to avoid unseemly potholes in the cake.

2) Always double the recipe for the cake AND the glaze. You’ll be glad you did!

3) I use semi-sweet chocolate for the cake and bitter-sweet for the glaze.

4) For the glaze, use coffee instead of water. You’ll be buzzing all night!

5) Be careful that absolutely no yolk gets into the egg whites. AND be sure you temper the egg yolks well or it will curdle.

6) My oven seems to take longer than the recipe directs. Test it with a knife, but don’t let it get too dry, certainly.

7) After you’ve put the cake on a fancy-schmancy plate, you can put some cocoa in a little sieve and decorate the plate around the cake. Also, it’s really good if you put fresh raspberries on top of the cake or around the side of it. Or make up something else you’d like to put on top. A beacon, perhaps? Your initials in edible gold leaf? It’s all good.
And now it is time to determine who is worthy of this cake. Take it to the home of him or her. But do not – DO NOT – take it to the home of someone who is unworthy. You will live to regret it.

Mentioned it to Milady more than once.

For breakfast a few days ago, Milady whomped up a hearty batch of pancakes, and packed the extras in clear plastic bags in the fridge.

Of course, when I open the fridge, there, where the teasing pancake mix illustration used to be, is a bag of actual pancakes.

17 Yum! Oysters are AH-mazing! Reminds me of a great little dive we used to go to in Panama City Beach; Billies-its a steamer. They had the coldest beer and freshest oysters. Beers were a buck and oysters were a quarter each. We'd sit and drink and eat, fun times! $20 in this place made for a great evening! > I miss irresponsibility.

33 Some advice please. Our 4 quart crockpot, of blessed memory, finally bought the farm after many years. Any suggestions for a replacement? I don't know what brands or features are out there these days.

BTW, I salvaged the heavy earthenware insert and lid to use in the oven. (NOT the stove top.) I've found recipes for old style baked beans, the kind that cook low and slow over night, bread, stews, and I can always use it as a crock for homemade sauerkraut and other fermented pickles.

Gumbo. Really good gumbo. My wife does it good, but she's kind of busy with school, which means I do most of the cooking. which means some kind of meat with steamed vegetables. Sometimes with rice, sometimes with taters.

Belgian endives are also good to use as an Hors d'oeuvre base. Perfect sized little boats to fill up with tasty treasures. I've used them for that before.

47 Apple cobbler ready for the oven. We ate it at Jack Allen's Austin last weekend and are trying to recreate it. Oatmeal crust with just a little brown sugar and pecans and very, very spiced apples. It was delicious. Instead of ice cream we are serving it old timey style with whole cream poured on it since it is so spicy with nutmeg, cloves, and cinnamon.

48 I cook fish; grouper, walleye and the like in a foil "boat" on the grill. Just a bit of olive oil on the foil, a bit on the fish then season with a squitch of lemon and top with fresh chopped tarragon, oregano, a wee bit of garlic the put it on a medium to hot grill. Don't close the foil. Grill until the fish fakes and isn't shiney/translucent. Let it rest a minute then serve. I will sometimes use a tiny bit of mayo on top of the fish also, it doesn't change the flavor and keeps it from being dry.

60 Much as I love shell fish, I never cared for raw oysters and I can't tolerate the hot sauces that usually go with them. Always preferred them lightly steamed in wine and herbs then dipped in lemon butter. Like mussels and steamed clams.

Did you watch 'Burnt'? Okay, okay, there are a ton of issues with the movie. But I kinda liked how he was in a Burger King defending their food -- from a historical basis. Making a comparison to French peasant food. Just because food is predicable and inexpensive and portion controlled doesn't mean it can't also be delicious.

63 speaking of feesh, i have about 5#s of wild coho i have to cook for Resident Evil this afternoon.

rinse filet off, pat dry, place on platter with light coating of olive oil.
very lightly season (key lime juice, garlic, dill, chili powder, raw sugar, wild honey, whatever)
place on grill, cook for 8-12 minutes, depending on size/thickness/heat then check.
if you see little white blobs all over the top surface, yer done.
do NOT overcook

this also means i don't have to worry about cooking her dinner for a week, main course wise.

I poured myself some cranberry juice and was sipping it (the 100% pure juice not from concentrate, no sugar, so I have to sip it. I do love it though.)

My wife loves this oyster combination dish made in special individual oven proof dishes: a bed of spinach, then a flounder filet, then some oysters on either side, some shrimp, some crab, some cheese, a little white wine.

It's her 'thing' but the combined juices at the end are incredible. Soaked up with fresh bread.

Makes me burp just thinking about it.

What comes to mind is old style baked beans, no tomato of any kind, and they cook in a low oven for ten or twelve hours. Haven't had that since my grandmother passed. Also, what we called Indian meal pudding, another low and slow baking recipe. The thought of autumn and winter weather makes me think of stuff like this. Hell, I can't remember the last time I had a baked apple.

Try a light...LIGHT dusting of roach powder around the edges. It's main ingredient is boric acid which is not harmful to you unless you eat a shitload of it and then you just poop yourself silly. Low toxicity for pets. You can also put a light amount on the floor if you can find the ants trail

Boric acid gets on bugs and they bing it to the nest. Kills them. Someone made a bundle selling Roach Proof which was 100% Boric acids at 10x the price. Get some and spread under sink cabinets and along the trail you see them on. At most hardware/grocery stores. Cheap. They get it on their tiny feetsies and bring it back.

What you need to do is find out where they are coming in at and follow the trail back to the ant hill. Put out a bait like Andro and kill the queen. I get them from time to time and 9 times out of 10 they are coming in the back door. I bait every mound in the back I can find and that ends the problem. . . Until next time.

149 I submitted a recipe "Dunkers" that probably should be moved a "historical" section. Original recipe is pre-1900 German, and probably wasn't written down until we asked my grandmother for it. Neither me nor my cousins have actually made them for a long time and none of us remember how many that recipe makes. If you do include it make sure "Do not eat without dunking" appears in boldfaced caps. They really do come out rock hard.

My son took me for sushi once. It was OK but it seemed like too much money for too little food that didn't taste near as yummy as a steak and baked potato. But oysters just seem like they'd be slimy. And I don't get what is to enjoy if you are swallowing them whole. Where's taste factor in? Maybe I'm missing something in my understanding.

182 I suppose I like Gulf oysters best.

However, the giant oysters at Miyajima in Japan are larrupin'.

Not kidding about the giant part. They are the Godzillas of the oyster world.

2-3 finger widths wide and about an inch thick. They are "meatier" than regular oysters as well.

They are lovely fried but I think if I lived there I'd have to experiment with grilling and/or smoking them.

I believe that is their true destiny.


Anyway, if you're ever in that neck of the woods in Japan and love oysters.

Heh. Definitely not bitter. It has just gone differently than I thought.

There was less of this than expected.

Oyster Kimchi


We were at a Korean BBQ place and because we ordered a bottle of soju,

they gave us their special oyster kimchi.

I don't think they age the oysters along with the cabbage.

From their texture I believe they mix the oysters in for maybe 10-15 minutes with the kimchi before serving.

It tastes pretty darn good and

I think that a nice spicy kimchi chopped to a fine texture would be a great topping for slurping down raw oysters. (instead of the usual hot sauce and lemon).

Drink with a glass of soju and you got you something there, pal.

Yeah, there are people for whom texture is a big deal - you might want to avoid them if you were not crazy about sushi. The flavor is ... hard to describe. Stronger than sushi, much weaker than other shellfish, such as clams. Sorry about Sam-I-Amming you.

You would probably like deep fried oysters, as in the oyster po boys from New Orleans. I'm not an oyster fan, even before the shellfish allergy kicked in full gear, but when I could eat them, fried was about the only way I could manage. It was a texture thing.

I seem to recall from my ass-kicking from OSHA that there's a time component involved, too. 120 db for two minute exposure was fine, for example. 90 to 100 db might be an hour. 70 db was an average office environment. I still have my meter around here somewhere. I used to have to document exposure levels.

So it depends. I doubt the kid did more than a five minute photo-op with the President which will change his life forever and help to humanize the President -- to those so inclined.

I wondered the same thing, but contemporary mowers are pretty quiet, I would not be surprised if EPA/Osha, whatever, dictate that they meet a noise standard.

I ate them once a few years ago, because I was on a date with a woman who thought that was normal.

I don't remember anything distinctive about the taste of the snail itself (the texture was gooey) I think the conventional wisdom is correct: the sauce is the main thing with escargot.

But it was unpleasant. My brain classes snails, insects, reptiles and rodents as Thing That Are Never Fit To Eat. Better starve to death than compromise your dignity by eating those things. They defile. Sorry, Mr. John the Baptist, I disagree with your culinary choices.

Now, that wretched "beep" I had to endure every time I received a call back when I was working as a customer service rep for a big NE bank, THAT screwed my ears up for a long time. Still don't think I've ever recovered all my hearing in that ear...my bosses considered tinnitus an occupational hazard. Still pisses me off...

I read a story a few years back about a couple that went to some "trendy" club and ate *live* crabs. Thing is, these crabs contained fluke microorganisms that made them severely ill. So dead food is sometimes for the best.

Back when I was a young fellow of 62 I came down with H1N1 with high fever and felt like crap. My immune system was in turmoil and bacterial pnuemonia (which most people have in small numbers in their lungs) flourished. I felt so miserable death seemed a good thing. 5 days in the hospital being pumped full of 6 different antibiotics whipped the bugs.

If your dad was in relatively good shape before he became sick the odds are very likely in his favor. And when I had a fever of 104 I saw and heard things that were not in the room. Stay strong, think positively, and pray.

392 CBD, planking is a good way to do fish on the grill. Inch thick cedar that hasn't been treated with chemicals, you can frequently find these in the supermarket. I soak them in white wine instead of water. It takes longer than directly on the grill, but the wood smokes the fish sort of. It takes a couple of tries, at least it did me. Good information:

That oyster picture just reminds me of my favorite seafood joints that Harvey did a number on. My little beach town is shredded.

Here in the big city I've had the fancy oysters that are flown in from the other coasts, but I still prefer Gulf oysters. Ike fucked up some of the oyster reefs up the coast, and I bet Harvey hit some too. Landsat shows the geography has been somewhat rearranged.

Keep your spray bottle of olive oil handy. Spritz onto your fire for instant flame. Repeat. As often as necessary. Spray the grating beforehand for satisfying char markings and zero stick.

Wegmans sells the spray bottles of olive oil, sprayer is good quality. Re-fill often.

I consider planking like poor man's sous vide. Instead of a moderate temperature water bath the wet plank is always moderating the arid environment of the oven, replenishing the moisture in your protein and ensuring even cooking.

My dad has a really bad uti at one point, and his urine was almost light brown. Then he started retaining fluid, which was absolutely terrifying. He had a bad heart, and I was sure we were going to lose him then. But.. .they got the correct meds in him and he recovered.

So.. keep praying, and never lose hope.

485 382 - Ghost : To each their own but. . .Boiling potatos is soooo yesterday;-) I'd microwave the potato because it eliminates their gluey texture that can happen with boiling. Or steam them if lack of microwave. Both methods prevents the potato's amylose starch from getting sticky, gluey. But in this crispy potato recipe I would shorten the microwave (or steaming) time down a few minutes so the potato is nearly cooked but still kinda firm. Rinse in cold water to stop cooking process. Then allow the potatoes to get cold before the oven & easier to handle. Then peel (if desired) & slice & arrange potatoes in the fancy pattern as seen in the photo. Cream is fine addition CBD, but I wouldn't add cream if ya really want it crispy. Thanks for the yummy food thread.

Circus Peanuts scare me, but I bet you'll be able to find those orange and spearmint jelly candies once you get out here. Other colors too. I see them all over, but you really do have to look on the bottom shelf. It's like the store owners are embarrassed to offer them for sale. Walmart sometimes has them in plastic tubs.

500 I had half a grilled peach yesterday.
Take a peach (ripe), cut it in half.
Remove the pit.
Put it on a hot grill for about 30 seconds until it gets a char on it.
Turn it over, put a dollop of vanilla ice cream where the pit used to be.
Delightful as a dessert.

We do have Big Lots here in Hell Lay but I don't go often. Partially because English is my only language. And, while I like that stuff, I'm sort of project-averse and will basically eat whatever's on hand. Craving for sweets? Slug of hershey's syrup right out of the squeeze container, problem solved.
