Lived in Lawrence MA until I was ten or so, and clam chowder was a creamy soup with tasty potato chunks that came out of a Campbell's can; once in a while there's a questionable bit floating around in there. We went to a decent seafood restaurant when I was six or so, and I asked for the clam chowder. When it came, it was full of these chewy mf'ers, and I may have been a little brat about it. It did not end well for me.

We use 1/4 cup of soy, poured on top. And there's 1/2 cup of water, but that's poured on the sides.

We also broil the top and bottom of the pork in the oven first (5 mins each side).

Also, 1 largish onion, cut into rings. Half of them under, half on top in the cooked.

Don't want you to try the recipe and not like it.
