I've been experimenting with shredded cheese a lot lately. One of my favorites is laying a pat of butter in a pan, turning the heat on, immediately covering it with a small handful of shredded cheese, and then cracking an egg over the top of the pile. Salt and pepper it. Let it sit for what seems like too long (you want the cheese to brown) , flip it, and cook it for half the time again.

- No, we ate at a local non-chain seafood place one night that I can't remember but was delicious, and a Caribbean place the next. Also delicious. I had some sort of fish taco dish that I ordered on a whim and it was one of the best things I've ever eaten. We went in December BTW. Lots of restaurants and attractions were closed for the off season. I enjoyed it immensely.

My Father in later years, used to plant about 15 or so Tomato plants of various varieties, Beef Steak, Plum, Campari and Early Girl. He would turn the Early Girl into a sauce. The rest he would gift to us children for salads and sides for dinner.
