Food Thread: More Pig, And Big Salt Too

I live in a neighborhood filled with food shops of all kinds. From wonderful butchers (there are three of them!) to excellent vegetable stands, three wine stores within 3,093 .45ACPs (100 meters), an olive oil store, a honey store, and even a weird one entirely devoted to canned fish. The quality of the food is uniformly excellent...even in the small supermarket there is some superb meat and vegetables.

It's also pretty upscale (Yeah, they didn't realize who they were renting to), so the prices can be painful. Produce is inexpensive, but meat is quite pricey. Those prices are less painful because of the excellent quality of the stuff. The pork is spectacular, the lamb is the best I have ever had, and the veal is great.

Interestingly, the beef, while quite good, cannot match American corn-finished beef. The French seem to prefer grass-fed, which is fine, but no (or perhaps less) finishing, so marbling is not a part of their evaluation. They do have aged beef readily available, and at various stages. Nothing strange like six-month-aged, and the flavor is good, with a subtle funk. But...give me Midwestern corn-finished beef any day!

The butchers also pack meat into Sous Vide bags, which I found fascinating. My standard technique is to season before I Sous Vide anything, because the cooking process distributes the seasoning quite well throughout the meat. Maybe it is also for storage purposes? Sous Vide bags are great for freezing! But I have seen Rosemary sprigs in Sous-Vide-sealed lamb legs, so clearly it is at least sometimes for dropping straight into the water.

There is also a huge amount of prepared food available, with at least three or four stores dedicated to take out foods. They are of amazingly high quality, and at least at the one I like they are busily making food in the back to replenish the displays. I fancy myself a fairly accomplished Quiche maker, but they are forcing me to up my game! Hell even simple salads are good. One, called carottes râpées is a French favorite, and can be absolutely delicious. How they elevate grated carrots is beyond me, but I do know that the texture is vital. They have special machines to grate the carrots into more a cylindrical shape, rather than the thin ribbon one gets from a food processor. My store swears all they put in is olive oil and mustard, but that is a filthy lie designed to subvert cooking in America by keeping the recipe secret from Americans.

That is a chop from some French heritage pork breed. Gorgeously marbled and with thick strips of unctuous fat, it was absolutely fantastic...among the best pork I have ever eaten. It was pretty big too; about 1.5 pounds (that's .68 kilos for you European kickball players).

I'm most impressed by the texture and flavor of the fat. It rendered quickly, and what remained after cooking was delicate and tender. Amazing stuff.

I cooked it by searing the perimeter until browned, then a quick sear on both sides and into a warm oven for about 25 minutes. The damned thing was thick, so it took awhile.

Yeah, I know. I just wrote about pork! But it is so good that I can't resist!

By the way, if you look carefully you might be able to see the monstrous salt crystals I am using on meat. The crystals have to be 2mm in diameter! It's great, although for salting for immediate consumption it doesn't work unless you are partial to crunchy salt in every bite.

We are hosting a birthday bash next month, and the guest of honor has requested hot dogs. Not my famous beef short rib recipe, not gorgeous marbled steaks, not a carefully roasted leg of lamb with wonderful new potatoes.

No. Hot Dogs.

So...what are the best sides to serve? I have Cole Slaw, potato salad, and Boston (Go Yankees) Baked Beans on the list, but I would like to add something interesting and a bit different. Any suggestions?

Alton Brown's Cod Chowdah is a classic recipe that is easily modified to your particular preferences. Personally? I would replace the 1/2&1/2 with cream so there won't be much risk of curdling. That way you can laugh at his silly suggestion to whip in some leftover mashed potatoes. Sometimes he has good ideas, and sometimes he doesn't!

I thought France would have good garlic, but the Frogs seem to have the same problem we have in the U.S. At least they don't import filthy garlic from China. Pork is great here, but no game, so send all of your extra antelope to: cbd dot aoshq at gmail dot com.

Who are those poor deluded souls We know who shakes their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

$1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

Except for the austere post-war period (that lasted well into the 1970s, and maybe beyond), British food was never really that bad. So I think you have an interesting point: anything to differentiate them from the French was perfectly fine!

Some of the better hotels do a good breakfast, but in general, British breakfasts are just okay...at best!

I remember going to a working class breakfast joint that proudly advertised their socialist roots.

Wow. It may have been the worst meal I have ever had in Great Britain.

30 SAUERKRAUT
400g of sauerkraut (14.1 oz)
8 smoked streaky bacon slices, finely chopped
50g of unsalted butter (1.8 oz, 3.5 tbsp)
2 sprigs of fresh thyme
2 garlic cloves, finely chopped
1 chicken stock cube
sunflower oil, for frying
100 ml water (3.5 oz / @

Meanwhile, make the sauerkraut. Sauté the chopped bacon in the butter over a medium heat until crisp. Turn the heat down, then add the garlic and cook for a minute or 2 until fragrant. Pick the thyme leaves, then add these to the pan too

Add the sauerkraut and crumble in the chicken stock cube along with 100ml water. Cover the pan and leave to simmer gently for 30 minutes, stirring regularly

From my 3rd grade cafeteria in Kenmore, NY 1964

Scale quantities as required, need several tablespoons per dog.
Chopped onion sauteed until golden.
De-glaze the pan with sweet relish.
Generous quantity of French's yellow mustard
* IF * your religious restrictions permit: add a small squirt of Heinz Ketchup (TM) - not too much you don't want an orange sauce.
No need to cook, just allow flavors to mingle, serve warm.

I'd also second #18 recommendation of salt potatoes.

35 Fallow is a hot new restaurant in London, and the chefs run a video channel. These chefs work with all kinds of stuff you wouldn't think would be good, like meat from dairy cows. They put out a video titled "We Cooked Every Steak to See if Wagyu is Overrated".

They rated steaks from the English Longhorn, British Wagyu, Simmental, Fresian, British Blue, Limousin, Belted Galloway, Dexter, Bianca Modenese, Angus, Sashi, Galician Blond, and A5 Wagyu breeds. Other than the A5 Wagyu, they're all English and Continental breeds, generally grass-fed.

Try popping off with some of these breed names, next time you're in the butcher's shop. You might get an exceptional steak.

I have gone to Fallow for their Sunday Roast.

Superb.

My only complaint is that it is sort of a hip and upscale restaurant, so it doesn't have the classic Sunday Roast vibe.

But those f*ckers know how to cook!

I have been really into cheesy potato bake. There's all kinds of recipes, but basically make a cheese sauce and mix it in with cubed hash browns. With bacon of course. Then covered with shredded cheese and baked.

Shockingly, he too likes hot dogs. He has one of those little round charcoal grills and will frequently cook hot dogs on it - but only when they don't have guests!

When you've grown up with beef BBQ and steaks your entire life, pork doesn't come close!

Unfortunately, when traveling to see the kids, the "meat" of choice at BBQ places is almost always pork - they don't even offer beef 😭😭😭

A long time ago, I attended a "barbeque" at an Englishman's home. I volunteered to help cook, and he, being an Englishman, assumed all Americans know how to cook steaks on a charcoal grill. Anyway, he was surprised to find out that we actually use utensils to eat a grilled steak. Apparently, he thought we just picked the meat up with our paws and gnawed away.

I had a daughter that was a fairly picky eater when young. However, the first time I made her a chili dog, she snarfed down the whole thing and said, That was really tasty, Dad!"

Fifteen years later, if we go out to a burger place, and they have chili dogs on the menu, she opts for the chili dog.

I was experimenting not long ago in the kitchen (which is code for twice the time to clean up as to make anything appetizing). I ended up taking phyllo dough and creating little pockets. You can put anything you want inside, but I went with spinach, brie, red onions, and, of course, bacon.

I categorized it a winner. Tasty, easy to eat (with fingers), not greasy if you seal them using butter. And the bonus, it takes only a few minutes in the oven to finish them (just look for them to brown a little).

For those of you who like big crunchy salt with your food, I suggest-

Maldon Sea Salt Flakes.

It's a kind of finishing salt in flake form. Just sprinkle some over your chow like saline snow flakes from above just before serving.

It works really well on things like grilled fish and meat.

Obviously you have to moderate your salt used in the cooking process when you use it.

Great stuff and a kind of fun surprise for your guests...unless they're humorless snobs with poor palates. Then you must show them to the door and point the way to the nearest Burger King.

84 A local grocery had pork butt for the best price we've seen in a few years. Prepped it earlier and it will sit in the fridge over night to let the meat and spices meld. Tomorrow it goes in a slow oven for a good ten hours.

Can't wait to try it with the balsamic dressing I make for salads. I use good balsamic (not the cheap stuff that tastes like burnt wood) and top notch olive oil. A bit sweet and garlicky and quite thick, not runny. Should go great on pulled pork sandwiches. There is so much flavor, it only takes a drizzle to add depth to the food.

Boil red potatoes in their skins. Peel and slice. In a heavy iron skillet, fry finely chopped bacon, celery, and onion. When the bacon is a little crispy and most of the fat has melted, mix in some white vinegar, plus a little corn starch to thicken. Stir until it thickens, then pour over the potatoes, and stir. Serve hot. Absolutely delicious.

As far as the dogs go, crinkle-cut fries, but ONLY if you can serve them straight from the deep fryer, at approximately the same temperature as the surface of the sun, covered with enough salt to make a replica of Lot's wife.

Healthy? No. But if you were after "healthy", you wouldn't be eating hot dogs in the first place.

It goes without saying that hot dogs must be made from beef or pork offal, ONLY.

No chicken. No turkey.

And definitely no tofu.

Use a quality brand like Vienna Beef (Chicagoland) or Nathan's (East Coast).

It's a sad world we live in when they start coming up ways to make hot dogs cheaper.

193 Son took us out for dinner. He had French Onion soup and Filet mignon sliders FenSpouse had hotdogs with toppings and I had spicy fish tacos. Son also had a couple of drinks. He is currently on some 18 hour fast thing during the week so it's nice for him to have drinks and dinner occasionally out since he works hard during the week.

Texas caviar (sometimes mistakenly yclept Cowboy caviar). It's what I take to most pot lucks. Everyone raves. Plus, if you're serving hot dogs, none of the otherwise effete Yankees/Easterners who might be present can get too snooty about the name.

following last Sunday's Kaiju-Sized Breakfast, I made-

Smash Burgers
Blackened Salmon ( i will have to make Blackened Redfish ala Paul Prudhomme's classic at some point)
Griddle Chili Cheese Dogs

everything was great and fun to make.

Probably fajitas with all the fixings will be next on the menu this week.

Got the baby backs down, and am trying the beef now. I’ve found a spectacular vendor called The Country Butcher here in NorCal. Seriously meaty cut of spare ribs, with the last rack taking over 9 hours at 225*.
I just use mustard as the binder, then kosher salt, a little garlic powder, and fresh-ground black pepper.
Delicious, but am interested in upping my game.

Frozen 1/3 lb wagyu patty, cooked. I threw mine on a 500 degree RecTeq Bullseye Deluxe and just barely cooked it through, but the only thing that matters is that it's cooked through.

2 slices bread.

2 slices Havarti cheese.

1 slice ham.

Chicago Packing Wagyu Tallow, or butter, to grease the bread.

Grease the bread, throw it in your sandwich press (or skillet), add the cheese, wagyu patty, ham, cheese and top with other slice of greased bread. Press until cooked through, or grill in skillet as a normal grilled cheese.

222 Roast chicken on the grill....endive and artichokes on sale so roasted the endive, braised the artichokes...cherry clafouti for dessert....Russian River Chardonnay from Dehlinger Winery....not exactly the typical Memorial Day thing but whatever....we fought in France a couple of times I think.
