Food Thread: Mailed In Edition (First Class Postage Though!)

This is exactly what I am talking about when I refer to English pub food as being quite good. That is a carefully boned rib chop, cured and smoked as bacon. Topped with a fried egg, and served with some sauce that was a mystery to me but quite tasty, and some onion/apple relish off to the left. I am not usually a fan of anything apple within 50 feet of my dinner plate, but that stuff was delicious!

The chips were wonderful. The beer was delicious.

If you don't like that sort of food you are simply taking the contrarian position and you will be sent to your room.

[This is going to be a bare-bones Food Thread. I am recovering from some sort of malady that I caught from some Frog trying to weaken Anglo-Saxon culture so they can express contempt for us without fear of getting punched in the nose. Plus, the snowblowing kicked my *ss!

So you people will have to open up a can of whoop-ass on the Gun Thread snobs and put them in their rightful place at the bottom of the famous and coveted AoSHQ 4:00pm-10:00pm Sunday Time Slot! Can you do it without the guiding hands of Dildo? Wait... what?

By the way, does anyone know where this competition came from? I suspect it was from a 9mm enthusiast, but who knows, it might even be a shaken Manhattan troglodyte!]

I took that photo at the tail end of the lunch hour, where pretty much everything else was picked over. And because I adore sausage rolls in their every form... even the most humble from a supermarket, I was just about to grab one when... yup! Fake meat!

And right next to that display was an empty display of... come on ... you can guess!

Who are those poor deluded souls We know who shake their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

$1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty of fifty years, but it is worth it!

5 So, made deconstructed shepard's pie for 7 with my 2 lbs of Aldi's ground lamb...

Took this recipe's lamb filling without any of the veg (and with draining off most of the fat) https://www.thewholesomedish. com/the-best-classic-shepherds-pie/ - no measuring spices or add ins either - did everything by taste.

Then I made my mashed potatoes. And I roasted (in separate spots on my sheet pan) with olive oil and s&p onions, carrots, and zucchini. And then I microwaved a can of corn (which I don't eat anymore, b/c my meds and corn don't go together) for the kids.

Gave everyone a plate. Told them to lay down mashed potatoes, add 2+ of the vegetables on top, and then get a ladle of the lamb filling over the top. A lot of work, but I was told it was one of the best meals they all ever ate...and to buy more lamb.

Of course, separating it, the meat and potatoes were gone, but I still had veg (went on a salad today)...but the whole "make it cheaper by having veg" only slightly works when it's split up...

12 Yesterday, we did crockpot pulled chicken sandwiches with both BBQ and buffalo options (took half out to a pot b/c again we have some who only eat one and some who only eat the other). My son joked we had to have buffalo chicken yesterday, b/c Buffalo never makes the Super Bowl.

Today, the boys wanted chili for the Super Bowl, so we're having beef and bean chili with Philly pretzel bites (big sale, and we gotta represent our team) with honey mustard and clementines and grapes.

No cornbread or chips today, b/c the pretzels will be enough of the "salty carb" folks want with chili...

I shopped Trader Joe's yesterday and saw them...but you're a little early for them.

I picked up cookie butter and sunflower seed butter (and a bunch of other things) b/c I can decide if the Valentine's fondue will be one or the other with dark and semi-sweet chocolate and coconut milk this year...leaning cookie butter b/c it's sweeter for the kids and we're doing a family fondue with hot dogs as the main protein (so no one OD's on chocolate, fruits, marshmallows, and pretzels)...

2 of my kids hate pie crust, so I'm leaning to doing the same and then having my bread girl make some good biscuits for a top...although I hadn't considered just doing the bed of mashed potatoes again (which would be popular, but is work for 7)...good idea!

Heck, I may now deconstruct that whole thing (b/c the guess can't do onions) and make the chicken filling, the roasted veg, and the mash...

And I have chicken skin from yesterday in the fridge (plus some of the jus from the crockpot since I sauced after shredding)...maybe cook the skin so I get the fat for the filling, and then use the skin on top for the missing pie crust crunch (yes, bone in thighs were 99 cents/lb this week, how'd you know)...

Here's how I know: an American was invited for dinner to his English girlfriend's parents' house. He said the food was "quite good". The mother was obviously crushed, and the father became irate.

To us Americans, "quite" means "thoroughly" or "completely", and it seems like a kind of classy English word like Alastair Cooke would use. But in England, it means "barely" and it has no class overtones at all.

37 I did sourdough bread baking a very long time ago and having had a rebirth as far a breadmaking goes, decided to make a starter.

Bought one of those glass jars with a stick on temperature gage, an elastic band for remembering level and day of feed, and a couple of caps, one that screws on, and a linen cap.

First try doing 50g WW flour and 50g water resulted in a bubbly thing by day 3, and then I killed it by doing the flour and water feed, using tap water instead of good water. May have been just enough chlorine in the tap water to bring things to a halt.

So I am one feed into my second starter and all looks good.

I usually drain about 80-85%...a little goes a long way, and a lot goes too far...

I did the same for my chili today...half saute the veg, then toss the beef in, cook fully and drain out 80-85%, then add the tomatoes, chilis, seasonings, beer, and beans...then reseason in an hour if necessary...

If you happen to have a lawn mower blade kicking around, you can use it with a two pound sledge hammer to cut store brand frozen pizzas in half.
They will then fit in the toaster oven nicely.
My new oven should be in "by the end of the month".

It's more my digestive system can't tolerate that type of indigestible fiber anymore - I can have corn without the shell (so I'll do broths from the cob b/c I love the flavor), but I can't do the actual corn item. I don't do popcorn either - still too much hull...

I have a list of items I buy, and then I always do a twirl around their produce, seeing what they want you to buy. Yesterday, it was purple cauliflower (at $2.50/head, cheaper than their white cauliflower) - so we had that with dinner, too b/c both sauces for the chicken worked on it.

I also get some of their more fun veg and fruits...

73 After the recent besmirching of Costco's Australian rack of lamb, I had to make it again to see if it was as gamy as had been suggested.

Not only was it not gamy, it was, in a word, spectacular. After removing the fat cap and silverskin, I seared it in my Made In 12" SS skillet for a couple of minutes on a side, then covered it with a mix of panko breadcrumbs, EVOO, Italian Seasoning, salt, and pepper. Then, into a 450 F oven for 18 minutes. While that was going on, I made a red wine reduction with some of my dinner wine, onions, garlic, and a cube of demi-glace. The sauce turned an excellent rack of lamb into ambrosia fit only for the gods.

You need a foodie weekend getaway...then you drive home after the weekend with all the stuff...

The cookie butter put into a chocolate cake or chocolate frosting or layered on a chocolate chocolate cake as the middle filling is divine (which is why I'm thinking I'm finally gonna put it in fondue - we've done chocolate coconut, chocolate amaretto, chocolate peanut butter, chocolate cherry, double chocolate and chocolate vanilla...and the kids like variety)...

I have 2 college girls who also are getting home late for meals, and don't want to eat on campus...instead, they are craving sandwiches...they've been doing PB, but getting bored...thus the sunflower seed butter and the cookie butter (which they had finished my supply of cookie butter last week on their pbs - thus, my trip)...

Yesterday, I found canned lentils. My college daughter is always wanting a bean lunch, and with Lent coming and Indian sauces on my shelf, having a can of lentils dunked in Indian sauce with rice seems like the world's fastest Lenten lunch still with protein.

And 99 cents a can for those lentils. Those were my other 1st time buy yesterday...again, interesting stuff around each time...

It's really very good. The curry doesn't dominate. It just deepens the flavor and winks at you in the aftertaste. It eats very more-ish with beer.

The delightful and discerning Mrs naturalfake shocked me when she said that she prefers KCC to the regular bowl of red.

I just microwaved an egg, sliced it up, and put it in the dog Ralphy's dog food. He liked that.

$90 Canadian bags of dog food, mixed with steamed vegetables, now with egg, and the almost $6 cans of dog food which he no longer seems to care for. This was after our vegetable and turkey gravy phase.

Old people, and old animals are so hard to feed.

I'm really tired of trying.

My late father in his 80's knew how bad sugar was, avoided it like the plague, ate healthy but dropped so much weight, and I put him on Ensure and similar stuff.

Pretty much sugar.

And the dog is just fussy and old. And I spent years trying to get my elderly parents to eat.

I love the cats. Through my depresseion after Mom died, they were thrilled with their food.

Sadly, I turned Snowflake into an adorable snowball.

391 I’m not going to tell you it’s ‘worth’ it, but a friend of mine splurged on a bottle of Pappy Van Winkle 12 yr, for his promotion to LtCol and I was able to sample a short pour. I will say this: if you can discern the step from $60 to $100, you WILL be able to tell you’re tasting something very special.

Iif you have the opportunity to splurge on a shot of it out of a freshly opened bottle… spend the money, and see what you’ve been missing. I don’t think I’d take a chance on a bottle that’s been opened for months/ was near the end.
