Food Thread: Chocolate? Chocolate!

There's nothing quite like a box of excellent chocolates. Dark chocolate of course, because milk chocolate is for children, and I will fight you on this, so just step outside for a bit while I tell the rest of you that white chocolate is not real, has never been real, and should be banished forever.

And keep that execrable ersatz food called marzipan out of my chocolate! Who are you people who eat that crap? Sand, almond paste, and a bit of Elmer's Glue does not a confection make!

The highest and best use of dark chocolate is as a wrapping for caramel. And good caramel too! Firm, not too sweet, a bit toasty, and with a hint of vanilla.

Don't worry, I understand that there are other delicious dark chocolate concoctions, but I could happily eat a good dark chocolate caramel every day for the rest of my life and not miss anything else. Truffles and crunchy stuff are good though, so if a box of chocolates comes my way that has some of that stuff, I will smile and eat them.

So...what kind of chocolate floats your boats?

Food distribution in big cities has always been problematic, because a relatively low-revenue activity runs smack into the reality that city real estate is immensely valuable. So a 900 year run is pretty damned impressive! Sadly and predictably, the city of London is well on its way to screwing this up totally and completely. They spent a huge amount of money on the relocation, then abruptly cancelled it because...government!

I had some crappy pizza yesterday. Suburban pizza joints can be good, but this one clearly didn't get enough competition to stay on top of whatever game they have. And rumor has it that they are not the worst in the area!

Crap dough that tasted too much of corn meal. Commodity cheese, sweet sauce, and the pepperoni was mediocre. Hell, I only had two slices, so that should tell you how bad it was!

A lurker who prefers not to be identified asked me my thoughts about pozole, and this is what I said:

I have many thoughts on Pozole. All of them are good. It's a simple dish, and with quality ingredients you can't go wrong. I have made it several times, and while I prefer pork, there are good versions with chicken. I also have had excellent ones with both chile and tomatillo bases, so....

A very big deal is made of the garnishes, but I think that attention is misplaced. A few fresh ones is all it needs.


He mentioned that he roasts the hominy along with the peppers and tomatillos, and I am embarrassed that I never thought of that! What a good idea!

Anyway, Pozole is delicious, it's simple and it is worth seeking out a good recipe.

I love Chicken Piccata, but for some stupid reason I don't make it at home, I guess because it is too easy. The video is Chef John, but the recipe is good and his voice isn't quite as irritating as usual, probably because this is an old video and he hadn't come into his current lilting weirdness.

I would add minced shallots, but that's just me.

Ever make one? I have eaten a fair number of them, and they are usually pretty tasty, although I think the more important thing is the quality of the decorations. I have seen some wild ones!

But when I think of the Christmas season I don't really think about desserts. It's seems to be focused more on special and complex main courses, but I am sure I am just missing out on some fun desserts that may be regional, or in the case of the Yule Log, from Frogland.

Anyone make any specialities.

Who are those poor deluded souls We know who shake their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

$1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty of fifty years, but it is worth it!

31 I’m not a chocoholic, by any stretch of the imagination. But when the urge hits, I prefer dark chocolate. The other day I got a Ghirardelli sea salt and almond. I gave most of it away out of fear I’d demolish it.
Sometimes I’ll head to Sprouts, they’ve got a pretty good bougie chocolate aisle, and their prices are easier on the wallet.

33 See's Candy is the epitome of top quality chocolates. It was a California-only brand for years but since Buffet's Berkshire-Hathaway bought it they're expanding geographically.

I even ran across a See's Candy outlet in Macao a few years ago.

43 Today is day 3 of my rib roast and farm box...

Had the tallow fat layer and the ribs, so we're having beef and leek/veg soup. I used up my Thanksgiving champagne to deglaze the leaks and onions (which cooked in the chopped tallow) and added poblano, creminis, and some carrot, with salt, pepper, garlic and the 2nd to last amount of Thanksgiving thyme. I had made bone broth with the ribs, so added that and cut the meat off the ribs and added that, too. A fresh sourdough loaf is for dipping and raspberries/blackberries/clementines (the Aldi sale trip) are the fruit.

Dessert for us and youth group is Christmas cookies - vanilla spritz cookies and dark chocolate hot cocoa cookies.

And I've made Yule log cakes before, both the traditional bûche de Noël like the one above, complete with meringue mushrooms, and a less fancy but still delicious simple rolled chocolate log with whipped cream filling and chocolate mocha icing. I actually like that one better.

55 I had to perform emergency procedure on a veggie wrap the other day. Someone brought them in to work, which was thoughtful!
But there was no slice of cheese to form a barrier between the sauteed veggies and the wrap, so it got real soggy.
I took it home, unfolded the wrap, stuck it in 400 degree oven after scraping off the filling. When the wrap had dried I added back the veggies, also cooked chicken and shredded cheese. Some red pepper flakes.
Took it out, folded it in half, and it was finally edible.

Family called it chocolate crack b/c it was so good, they got addicted. If you put salt and dark chocolate together, it seriously is the best thing you can put in your mouth (if you're not eating foie gras for price/ethical/availability reasons)...

134 Except for baking, we've pretty much switched to Kerry Gold butter. The hormone-free, grass fed cows make some really superior butter. And the butter fat content is higher than most American butters like Land O' Lakes. It's more expensive but worth it.

Just discovered they also make cheese. We tried their Dubliner cheese. It is delicious. The texture is firm but not crumbly, sort of like gouda or edam. The taste is creamy with a subtle sweetness. Goes great with fresh fruit. This will probably become one of our main go-to cheeses from now on.

Also got a package of their aged cheddar but haven't tried it yet.

Anyone familiar with Kerry Gold cheese?

139 Chicken Posole?! Where the hell are you, California? No, it has to be pork. My mom's New Mexico traditional posole had pork knuckles, but a good, fatty BONE-IN Pork butt works too. Basic recipe for NM Posole from the Best of NM Kitchens (Pesole Ortiz): 2 cups of hominy, frozen 1 Quart of water, 1 pound of pork shoulder roast or chops*, 1/8 teaspoon oregano, 1 tsp whole black peppercorns, 1/3 cup chopped onion, 4 dried RED chile peppers, crushed, salt to taste. *We (OK, my wife) use a whole, bone in pork butt and simmer it all day. Drain and use the stock for the posole, Take out the bones, of course. This will of course, give you more than one quart of water - scale up as needed.

My late father had a business which utilized very large expensive machinery. All the equipment salesmen sent copious Christmas gifts of chocolates and fruit, meats, nuts and candies. As a little kid, it was magical to have that laying around through the holidays.

So last year I sent myself a box of chocolates and those memories came flooding back. It was an unexpected delight to have those memories come flooding back. So I did it again. So what if it's twenty ten ka-thousand calories.

169 All kinds of chocolate is good chocolate. But I do especially enjoy a good chocolate fudge. I recently made some marshmallow fudge from my mom’s high school home ec (or whatever they called it then) notebook. My mom threw away everything but she kept this notebook.

1-2/3 cup sugar; ½ tsp salt; 2/3 cup evaporated milk; 1-½ cups mini marshmallows; 1-½ cups chocolate chips; 1-½ cups nuts.

Heat sugar, salt, and milk over low heat to boil. Boil five minutes stirring constantly (it will get to about 236°-240°). Remove from heat, add marshmallows, chocolate, and nuts. Stir 1-2 minutes. Pour in a buttered dish.

I take a pain au chocolat from Aldi and fortify it with a half stick of a small flat chocolate bar from TJ because there's no such thing as too much chocolate. Warm it in the oven and consume it with coffee after giving thanks. Yum.

Trader Joe’s is the bane of my shopping trips, and it’s mainly the chocolate. But Aldi’s excels, sadly; when I visit my family in Michigan, I go for a walk every day across the city. It’s a very small city and there’s only really one route across it. I guess you could call it a shotgun city. At the end is an Aldi’s, and all that chocolate imported from Germany and thereabouts.

201 That top photo looks like Sees. Was that question already answered? Anyway, I like all kinds of chocolate. Sees I grew up on and is excellent.

Of course all the Euro styles (Belgian, French, German, etc) are good, just in different ways.

Japanese chocolate is very good, basically it's similar to European styles, and there are several Japanese companies that are essentially European in their recipes and training. One funny thing in Japan is that Sees can be highly prized, and not just due to rarity (I think there's one store, in Tokyo). I think Sees has much more salt than typical Euro/Japanese chocolate, so it's got a different base flavor.

205 Store bought panettone is not the same as homemade. It has a different texture, and the ones I’ve had seem to use a rum extract or some kind of flavoring. The ones my family make have more of a brioche texture and the flavoring they use is caraway seed or aniseed.
It must be a regional difference because the bif panettone factories are from the North.

We figured that along with all the industrial equipment and rocket engineers, the Soviets made off with some German chocolate-making know-how and gear after the war.

216 Cicero I didn't know Sees had expanded beyond CA - except those kiosks in western airports. They briefly had a store in Alaska a while back. And there were the seasonal stores that would open in vacant commercial space at malls around Thanksgiving, for one month, in the east - they still do that? State Dept. gift shop had a sign-up list, limited to 500 or something, to get Sees around the holidays.

Of course all these sort of outlets have only the pre-packed boxes, you can't pick your own.

AFAIK there are still only the two factories, one in LA and one in SF. The one in LA is on La Cienega. The one in SF is actually South San Francisco, just north the airport, not far from the national cemetery where you can see Nimitz's grave, among many other notables. Have dropped by both of them over the years when in the area.

222 Time I visited the SF Sees factory while on a trip, there was a tanker truck pulled up in front. Talk about clean. You could eat off the fenders, the tank itself was like a mirror. The driver was hooking up a line to one of three pipes that protruded from the front of the building.

The pipe he connected to was labeled "Milk Chocolate".

So XXXXX gallons of milk chocolate were being pumped into the building. Industrial-level food production is amazing.

We love baba ganoush (sp?). We use Baron's pure tahini which I believe is made in Israel. It's the best tahini we've found and use it for hummus as well. We get it from Amazon.

Suggestion: if you have any REALLY good olive oil, a drizzle on the baba makes a difference. And Moki's flat bread recipe does a great job to scoop up baba and hummus. We get our olive oil and real balsamic vinegar from A Taste of the Old Country store. They are local for us but also ship. Their olive oil is from their own groves and is excellent. Their website explains the different qualities of the various olive oils.

Swede who grew up in Chicago here. Unfortunately Wikstroms closed their retail store at least ten years ago. They maintained an online store and catering business until fairly recently, but it looks like that is gone too. Their competition across the street, Erickson's Deli, where my family usually got their smorgasbord provisions, is also gone.

Wikstrom's and Erickson's were primarily delis although both sold some baked goods. The Swedish Bakery in Andersonvile (formerly Bjuhr's Swedish Bakery) was a very popular place and expanded greatly over the years. But alas, they also closed a few years ago...I recall reading that they got an offer they couldn't refuse for the property.

235 We're at the point where a number of the places we used to go to dine out are gone. The owners might have retired, the lease might have gone up too high, or something. Bummer. We haven't found newer places that are as good.

The upside is that we are looking into better, usually more expensive, ingredients for our own cooking. The Kerry Gold and superior olive oils and balsamic vinegars mentioned above are examples. Same with spices from the Spice House. Given the costs of good restaurants these days, it's still cheaper than eating out as often.

236 This will sound weird, before my time but I used to get surplus MCI rations for camping trips. They would have a can or stack of round pilot crackers, and two foil-wrapped discs of Chocolate w/ Toffee made by the Wilbur chocolate co. of Lititz, Penn. They were really good.

Milka Alpine chocolate is a reasonably priced import of excellent quality. Good luck keeping any around, wish you better luck than I’ve had

Sadly, I can't find any online source for this combination, although I know there are several who will be happy to sell you the standard chocolate cake with vanilla filling. Williams-Sonoma is having a sale on their mocha cream filled version.

Bingo! I've been a bad boy and ate chocolate, beans and other high purine foods and wine, but I have made srure to drink several glasses of water a day to flush the system, I do have a supply of colchicine and Indomethacin just in case but thankfully, no need to take them.

282 I didn't see where the chef added the wine to the piccata pan, so don't forget. I usually add a sweeter wine (like a gewurtztraminer) to offset the lemon tang, but that will depend on the amount of lemon added.

Otherwise, I do it pretty much as illustrated, with one important exception: you don't have to pound the chicken to get to desired thinness. Just cut the breast into three pieces across the grain. Slice the thickest piece into three lengthwise, and the other two into two. This way they will brown quickly--say two minutes on either side.

The sauce, however, needs to be thickened, so after you saute the chicken and remove to warming pan, add some of the remaining flour (which we are told not to waste) to the oil, stir to make a roux, mix the wine and lemon first (this is important), then add and stir at lower heat so it doesn't get lumpy or too thick. If that happens, just add a little more wine and lemon.

Prior to my allergies, their version was good - not as good as my Oma's, but bought off the shelf for almost next to nothing (this is 2018-2019, so before food inflation was a thing and they had made their cheap price half off to hype it), it was one of the best value things I've eaten.

332 We're doing lamb racks to avoid the all day in the kitchen. Shrimp cocktails to start. We did duck one year and I think I liked that best.
We are having a Hannukah party early because of travel plans. That will be brunch start with bagels and lox, quiche and of course latkes. My DIL is a fabulous cook and the latkes were amazing. Last year she made jelly donuts too.

335 This will be a "duh" observation to most, but I am amazed at how good bread pudding can be - made from leftover burger buns from a party that otherwise would be tossed (or made into croutons, I guess). So simple, so good.

The bourbon sauce makes it. Just brown sugar, bourbon, butter. Friend had a Blue Angels party and had grocery bags of leftover buns. For some reason I thought, shame to toss all that ..... bread pudding! Just the basic version, cream/butter/cinnamon/sugar/eggs. Froze most of it and still enjoying it.

361 I like dark chocolate, milk chocolate and white chocolate. One of my favorites at Christmas is the dark and white chocolate bark with the crushed peppermint candy. The only sweets I indulge in. That and the occasional peanut butter cookie with the hershy's kiss.

363 I make pozole but I can't eat it because I'm allergic to corn. Using two kinds of peppers (Chile California and a dark one) to put through the mill is recommended by locals here.

Frozen pastry dough from store, very flakey, roll out thinner, cut rounds with cookie cutte, use mini cup-cake pans. Easy Peasy

369 As for chocolate, I prefer plain chocolate that is almost dark. Lindt double-cream from Switzerland is my favorite. It isn't sold here. You have to have a friend ship it from Switzerland.

Can't eat much chocolate with caramel (corn syrup) but I love See's dark butter chews. Also their dark chocolate truffles. Don't like the raspberry ones.

Turtles I like with milk chocolate. Sees makes black walnut fondant and at one time they cornered the market on a contraption to extract black walnut meat from the nuts.

For cheap chocolate Trader Joe's makes a pretty good dark chocolate.

We make the cast iron pizza in a 10 inch lodge skillet. That makes as good a pizza as anything I’ve had. Well, maybe except for Giordano’s stuffed pizza, but that’s hard to come by in Texas.
