Sefton: sefton at cutjibnewsletter.com | Food Thread: Size MattersIt's actually important, even though many people (including me sometimes) just sort of chop stuff without paying much attention to what the recipe may say. And luckily most recipe writers are not fixated on the difference between a mince and a fine chop and a coarse chop and a slice and... But some ingredients really are different depending on their size, and onions are a great example! A fine mince will allow the onions almost to melt into the sauce or gravy or whatever, while a rough chop allows more texture and a more robust flavor.Taco Bell Is Actually One Of The Better Fast Food Restaurants Out There And the writer is a retard. Taco Bell is pretty awful stuff, and the few times I have eaten it is because there wasn't anything else available, and that includes microwaved burritos from the gas station convenience store. I've had a different experience with the brand. When I was following a vegan diet back in 2014 and 2015, it was one of the few cheap restaurants in my small suburban town that offered anything I could eat other than fries. This was before the days of the ubiquitous Impossible Burger, and I was deeply grateful for late-night black bean Crunchwrap Supremes and 5-Layer Burritos when the munchies hit. And unlike the oil-soaked McDonald's and Wendy's meals I had enjoyed in years prior, these indulgences never made me feel bloated and heavy the way a Big Mac would. See what I mean? She is definitely a sub-wit. And a vegan. But I repeat myself. First of all, Impossible Burgers are not ubiquitous. I think I have seen them a couple of times on a fast food menu, but Little Miss Vegan needs to put down the thesaurus. Second of all, the very reason you had limited options was because of your stupidity. Of course being a vegan was going to keep you from the tasty fast food that can be had in America with minimal effort. And third...Taco Bell may be the Platonic ideal when it comes to bloating. What planet does this twit live on? I like Garden&Gun. Their recipes are usually solid, and they don't shy away from butter and bacon fat. Of course there is a hint of Wokeness...maybe snooty pomposity is a better term, and this recipe is a good example. Why "heirloom" tomatoes? It's the summer...most of us are getting relatively fresh local tomatoes anyway, and that little tag adds a few dollars per pound! Just stop it. Heirloom Tomato and Caramelized Onion Tart does look good, so I'll give it a shot (it's a riff on a classic French tart). They do redeem themselves a bit with Pimento Cheese Tomato Pies. The recipe is a bit fussy, but come on...Pimento Cheese! The photo is from commenter "Gunslinger's" first attempt at ribs on his new Weber pellet smoker. Shivmaster Bluebell sent me this, claiming it is the easiest and best recipe for Sourdough Discard Crackers. I think she is correct. I have made them twice, and the only difficulty is making sure you don't overdo them. I think I might decrease the temperature to 300° or 325°, because the stuff is so thin it bakes almost immediately, and the only think left to do is get a bit of color and allow them to dry out completely so that they are crispy. I think that will be easier in a cooler oven... Good butter, and Flap Meat...whatever the hell that is...just send it, Broccolini that isn't $6/bunch, garlic...lots of garlic!, well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com. Who are those poor deluded souls who shake their Manhattans? These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too. My and the world's patience has run out. Shaken Manhattans henceforth will be banished to the land of Long Island Ice Teas and Frozen Strawberry Margaritas. And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. Comments(Jump to bottom of comments)1

Good afternoon, horde.
Peach canning today was less than satisfactory. Peaches we're too soft, so I didn't put them in them in the canner. I put the nice ones in fezzes containers instead. Only six pints, so I have room. The ones that I peeled and cut a few days ago were a little off color, despite lemon juice, so I'm taking Kindltot's advice to cook them down in the crockpot for peach butter. Hot and tired now, and would like someone else to make me some dinner. Posted by: Dash my lace wigs! at July 14, 2024 04:10 PM (OX9vb) 30

I've eaten at Taco Bell fairly recently a few times. It's .... "OK", though very bland and portion size very small. It takes a big feller $25 or more to get filled up. It's just silly how everything is just these twee sizes now. Food isn't more expensive, the dollar is going to shit. I predict pain, soon, because this trend will not likely improve. Higher prices aren't always due to inflation, but monetary inflation always causes higher prices. Either way, people just see eye-popping numbers regardless.

Good point on size mattering. I use this a lot in my own cooking. I like to vary the sizes of food I cut, to mix it up in the meal.
Why only have one size of onion or cucumber or pepper in the salad or whatever, or one size slice of chorizo in the stew, when you can have several. That makes for a more interesting taste profile, texture, and mouthfeel. I do the same with pasta. Why only have one kind at a time? I usually cook penne with medium shells. Or different size penne. Or throw some rice in there. If nothing else, it makes for an interesting presentation and conversation starter. All the single guys out there can thank me later! One thing that might be suited more for gains threads. I discovered for myself (everybody learns at their own pace) that a lot of the things that "disagreed" with me were very specific - but, it also has to do with quantity. When I was eating 3000 calories plus a day, with snacks in between, a can of Chili beans would have had me taking out a GP medium with no survivors. On a reasonable calorie intake a can of Chili won't even register on the richter scale.

I'm having scallops with fancy butter sauce for dinner. The way I do a sauce like that is to saute the flavor ingredients, deglaze, add liquid and reduce. Then remove from heat and add the bulk of the butter so it will melt slowly and not break, stir until it all comes together.
(Most butter sauce recipes you see on the internet take the bulk of the butter up to saute temperature, which can only break it.) I don't know dink about scallops. I got frozen bay scallops. They say the bigger scallops are easier to sear without overcooking. Size does matter. Ask any woman how much difference one inch can make. For the record, Five Guys is the 2nd best place for my allergies (b/c I don't have peanut allergies) - bun and cheese are bad, but everything else on the menu is good, so I always get a regular burger bowl with every veg topping and ketchup/mustard/mayo (which they serve in tiny cups for me separate) and bring 1/2 home - aka 1 of the 2 burgers to make a burger on a bun for lunch the next day. They have a separate cook area for dairy allergies. That said, eating here more than 1-2 times/year would bankrupt me, so it's a birthday meal spot for my teen boys...and a spot to hit if I'm traveling... Jerry and Janie Murrell advised their four young sons Jim, Matt, Chad, and Ben, to “start a business or go to college.” After Jerry and Janie realized that their two oldest boys weren’t going to go to college, the family opened a carry-out burger joint in Arlington, Virginia in 1986. It was called Five Guys as a nod to Jerry and his four sons. (Later, a fifth son named Tyler was born, and the understanding of the name shifted to represent Jerry’s five sons. Tacos Dorados report:
Last week I made Tacos Dorados and we really enjoyed them. I assembled more tacos with the leftover filling and tortillas and froze them. A couple days ago I fried them, from frozen, in bacon grease. They came out pretty good, but I will try again sometime just toasting them in a dry skillet since the tortillas already had some grease on them. It might be enough as is. The tortillas actually held together pretty well although not as well as fresh. Better than hard shells, though. This is great because I love having things in the freezer that I can quickly get on the table. For those of you who remember my posting about Eddie Doucette (Chicago-area chef from fifties television and sixties IGA ads), I just published the second edition of Tempt Them with Tastier Foods. It collects all of his recipes I could find, mostly from IGA ads but also television appearances, promotional appearances, and even matchbook covers.
It also features a short article about him, gleaned from an interview I did with his son, the sportscaster Eddie Doucette. Link in nic. Its a free download as PDF or ePub, and a print version available as well for those of us who still prefer print. Posted by: Stephen Price Blair at July 14, 2024 05:02 PM (EXyHK) 155

How do YOU label your canned foods?
I print out labels with the type, the date and the ingredients and paste them on the jars I am currently using diluted white glue, but I used to use paste made from dried milk because I had a cat who's ultimate joy in life was licking up the reconstituted dry milk paste and would get on the table if I left it alone for a minute. How do YOU label your canned foods?
I cheat. I keep a list of what Ive canned and when on a sheet of paper taped to the inside of the pantry door. It makes it easier for me to know what the oldest canned items are (theyre at the top of the list), and I dont can so much that I cant recognize items by name. If I give canned goods away, I use a marker or space pen to write the name and date directly on the seal. Seals cant be re-used anyway, so they dont have to be erased later. We made Japanese curry last weekend, with baby potatoes and parsnip.
Sister wasn't sure about the parsnip, but I like them better than carrots, and I diced them small enough that you really couldn't tell that they were any different. I thought I cut them into bite sized pieces, which in my mind means you can chew them, even if they're really hot, without letting your mouth hang open. Dairy cattle should not feed on ramps (onions) or it will make the Milk taste like onion.
I've had good beef in Europe, but it was when the dollar was strong, and pre-Euro. I've no idea what a steak dinner would cost now. Grass fed beef is just cattle that hasn't been finished off correctly. I can deal without all the hormones and all that crap to be sure. Deer, or Venison - I've had deer meat that is absolutely fine tasting and tender with no gamey flavor whatsoever, provided they are corn fed and fattened up. Around here in Iowa that isn't too hard to make happen. It works the same way. Posted by: Common Tater at July 14, 2024 05:25 PM (+bPgI) 197

Speaking of steak...
The exciting and flamenco-dancing Mrs naturalfake and I were in Spain over the last two weeks. At several places, I noticed that they served the steaks seared but rare inside and topped with quick-fried padrone peeps and crispy-fried small potatoes. Finally, I got my shot to try it when we were in a nice restaurant with a nice price for a 45 day dry aged entrecotte steak served in that fashion. It was great! I recommend you give that style a try. If you can't get padrone peppers, try shishito peppers quick fried. They're pretty close. I also if the opportunity presents itself, recommend you try a dry aged steak, after eating one. I'm not sure I've eaten a dry aged steak before. The meat was meatier in flavor and denser in texture with a light roquefort cheese-like flavor running through the meat and fat. I assume that's from the molds that grow on the meat during the aging process. Anyway (hat tip to Senile Joe), it was delicious and different, give it a try if and when you can. Posted by: Skip at July 14, 2024 05:50 PM (fwDg9) The delightful and athletic Mrs naturalfake and i often take a constitutional after dinner. We took a slightly different path and on the way back noticed the most delightful peach odor in the air as we approached an alleyway. Hanging over into the alley over the fence was a tree branch just laden with ripe looking peaches. A few had fallen to the ground, split and that was the source of the peachy fragrance. I thought about grabbing two to eat on the way home. buuuut being an honest sort decided not to. The next day, the same thing except more peaches on the ground and some bird-eaten on the branch. Again I resisted temptation, but told myself if they were still letting those great peaches go to rot the following day, I was grabbing some. On the following day, all of the the peaches had been harvested and the tree picked clean. Did you ever do the right thing, but kinda wish you'd done the wrong thing instead? Yeah. That. By Sarah Fortinsky, 06/13/24 In part, Thompson, in his statement, said Trump has continued to flout the rule of law since the Capitol attack. “Since January 6th, Donald Trump, a twice-impeached convicted felon, has repeatedly doubled down on his disrespect for the rule of law and continues to sow hate and division,” Thompson said. “He still presents the same dire threat to our democracy that he did three years ago — and he’d be wise to head back to Mar-a-Lago and await his sentencing.” Posted by: L - If they'll do it with you, they'll do it to you, too at July 14, 2024 06:39 PM (NFX2v) 316
As someone born and raised in Iowa, where 13 ears of sweet corn used to cost a dollar ....
Meh. Never cared for it too much. It's OK, just doesn't grab me. Now popcorn is a staple around here, as a health-ier alternative to commercial death snacks. Good tender white corn popped in coconut oil, salt, cayenne etc. Hot sauce is pretty good mixed in with butter. Good popcorn has a definite subtle sweet flavor, it isn't just a vehicle for butter and salt! Not completely anyhow, lol. Posted by: Common Tater at July 14, 2024 06:39 PM (+bPgI) 317

Yeah. That. I made a plum conserve with it, and it was delicious. I took a half dozen jars of it to him and handed it to him while he was out back grilling, much to his surprise. The next year when I saw the plums were getting ripe, I was planning to go over and ask again, and the next day all the plums were picked off the tree. so darn. Known shooter was a good student in high school.
CBS, about an hour ago: Trump rally shooter identified as Thomas Matthew Crooks, 20-year-old Pennsylvania man. Here's what we know so far. In part, "Crooks graduated from the Community College of Allegheny County in May 2024 with an Associate in Science degree in Engineering Science, a spokesperson for the college confirmed to CBS News. Crooks also worked at Bethel Park Skilled Nursing and Rehabilitation Center as a dietary aide, according to the facility's administrator. Crooks also had a membership at a nearby gun club for at least a year. Bill Sellitto, the president of the Clairton Sportsmen's Club in Clairton, Pennsylvania, told CBS News that Crooks was a member. "We can confirm that Mr. Crooks was a member of the Clairton Sportsmen's Club. Beyond that, the club is unable to make any additional commentary in relation to this matter in light of pending law enforcement investigations," Sellitto said in a statement. "Obviously, the Club fully admonishes the senseless act of violence that occurred yesterday." --- Another kid on the spectrum? Would have 'worked' alone or not? As for the rub, I agree with substituting the mustard. Celery seed can be overpowering, and mustard plays better with ribs. I like to use something similar, but with cumin and a tablespoon of coffee for pork butts. The coffee adds to the richness of the meat.
I finally did the AoSHQ spatchcocked chicken recipe. We have everything for it but the whole chicken. It turned out wonderful. My only complaint is the dry brining made the pan juices salty. I need to re-read any rinsing or salt management instructions. Posted by: Advo at July 15, 2024 07:57 PM (jO4mz) Processing 0.06, elapsed 0.0674 seconds. |
