I got some fermentation weights for kimchee.
Will try them out on a fresh batch of bog standard napa kimchee with green onion, daikon, and julian carrots soon. But first need to get and pound or so of red pepper powder (korean kind) and a jar of those litte salt shrimp (love it when I can the little eyes looking back at me). oh, and to get the chef ready (me), i am having my nightly Kentucky Mule. I have found that the best Mule Fuel is Evan Williams White, which is a bottle in bond (100p), and sells very reasonably in the 1.75L bottle. cant beat the value and taste, in a Mule.

Daughter made me a citrus olive oil semolina cake (in mini bread pans). Since she hates "wet" cake, she make a delicious orange sauce to go with it, but it was served separately.
It was a dang good cake, even knowing she probably went half whole wheat flour and the minimum on sweetener. As for me, I made Yuling duck and egg fried rice today for lunch. Why Yuling? B/c I ordered Yuling Duck for the 1st time last night, and since it was takeout, it came with a bucket of sauce (along with all our fried riced). I diced the leftover duck, and fried 4 containers of rice with olive oil, 2/3 of a container of the sauce (it had a kick), the tiny hoisin from the mooshu veg, the leftover soy packets, and 2 eggs. Family destroyed it, and it made last night's meal way more cost effective when you can add 6 lunches for the cost of 2 eggs and some olive oil... Got those from the holiday sale rib roasts at Christmas time. I got a bunch (whenever I saw one with decent marbling) and sliced up some steaks after cutting off the ribs and fatty tale. Bunch of ribeyes cheap. Plus ribs. Wish I knew what to do with the fatty tails... hindsite maybe some cheap lean chuck and make 80/20 burger, or render it down for frying... Just back from Oxford and Cornwall. Favorite food from my England trip was Cornish pasties. I enjoyed them even more than the 35 quid lobster at Cadgwith Cove (which was excellent). The first pasty I had was at Kennack Sands after hiking about 6 miles (including sinking into ankle deep mud and my first encounter with stinging nettles) with several more miles to go that day. It was manna from heaven.

Spotted Dick
6 ounces of flour 3 ounces of butter 4 ounces of sultanas or raisins 1 teaspoon baking powder 1 Dick Water Chop the butter as you would suet, and mix into it the flour with the sultanas or raisins, and the baking powder. Add as much water as will make a paste thick enough to roll out, as for roly-poly pudding or jam roll. When rolled out, add dick, fold over, and put into a pudding cloth, and boil for about one hour. I've been on a breakfast sammich kick.
Today was sweet Italian sausage, scrambled eggs and cheddar on a ciabatta roll. Add some Trader Joe's Green Dragon Sauce and it was splendid. I put the roll with the already cooked sausage on half and the cheese o. The other half in the oven and preheat to 350. Scramble the eggs (not too dry, I hate dry scrambled eggs). When the preheat tomer goes off, turn off the oven and assemble the sammich. Takes about ten minutes from walking in to the kitchen to eating at the table. Yum! Haggis is pretty much sous vide, as are so many boiled puddings made at the simmer. I suspect a black pudding or a morcilla would be wonderful too, but then again you probably don't want a plastic bag with it in it because it looks like something medical that went really wrong. \
I had been looking at getting an under-counter tankless water heater to heat the bath for when I can fruit juice and want it pasteurized instead of boiled in the quart jars. My cherry tree produced this year. I planted it two summers ago. Just had a handful last summer, which the birds got. It was pretty loaded this season, but it's only about a five-foot high bush. I picked it clean this afternoon and got about two quarts of cherries. Should be enough for about a half- pint of preserves. Ha.

a while back I canned a batch of "stew meat" that I seasoned with salt, vinegar, pepper, allspice and nutmeg. It is OK in a stew with potatoes, but as a sandwich spread it is downright awesome. It has more aspic than I would like, but that is what happens when I cold-pack meats for canning.
I think I was working off a Russian canned meat recipe, and I will do it again. I used to can meat with just salt and maybe a slice of onion in the bottom of the jar as a cold-pack but it is a bit bland that way. Searing the meat helps firm it up, and gives it better taste, though I have had some that tasted a bit burnt. Beef is always better fresh, but it can be decent when canned. Here's a new (to me) cocktail that instantly made the rotation. It lives in the Manhattan neighborhood.
Fall Back 1 oz rye whiskey 1 oz Applejack or Calvados (I used calvados) 3/4 oz Sweet Vermouth 1/2 oz Amaro Nonino Quintessentia 2 dash Peychaud bitters Shake shake shake with ice. Strain. Pour into cocktail glass. Garnish with Orange Peel twist. Drink! Very delicious. Lots of flavors whizzing around in this one. Makes a regular Manhattan seem boring. Don't worry about purchasing the Amaro if you have to-It's also used in the very popular Paper Plane cocktail and just plain delicious by itself as an after-dinner drink. Go for it!!! Even as I roll my eyes at the bag nonsense, I will admit that I like reusable bags. We can get more than two items in a bag, they're strong, and we can get groceries from truck to house in one trip.

I use to have enough reusable bags for all groceries except made sure meat and chemicals were in disposable bags. Still have them but Covid rules wouldn't let me use them.

"Maker's Mark Bourbon Private Barrel Select" at about $75 a bottle is also good "Balcones True Blue Cask Strength" around $70 is an bit of an oddball but a tasty one.
