But the real culprits are those poor deluded souls who shake their Manhattans And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. However, we recently participated in a silent auction and won a bottle of Taittinger Brut Champagne, which seems to retail for $40-$60. The wife wants to open it tonight, but I prefer to hold onto it for the rest of my life, because I'm anal.

My basic rule of thumb on wine cost is, for white wine, cost is irrelevant. You can't rely on a $100 bottle of chardonnay being any better than one that costs $9. Wife of Cicero prefers whites so in addition to chardonnays we've tasted a lot of pino grigios, sauvignon blancs and others, and the rule seems to carry across the board.
For red wine, price is somewhat indicative of quality, to a point. A $5 cabernet is guaranteed to be almost undrinkable. Go to the $40-$50 range you can usually expect a good, complex wine that can be savored. In the $20 range it's hit or miss. Some are surprisingly good and some are bad. I recall hearing quite a few years ago about somebody entering a bottle of Two Buck Chuck in some prestigious blind tasting and it causing somewhat of a scandal when it won. My suspicion is that the bottler just buys whatever overproduction is available in a given year and for that particular year and that particular bottle, it just happened to be good stuff. I drink a lot of sparkling wine, it's kind of a thing with the House of Plus. If you've got a Total Wine in the area be sure to check out their selection, they carry a lot of Grand Cru from established but not heavily bling-bling marketing based champagne houses for 30 to 60 bucks a bottle.

Did the Tyler Florence Wellington version as promised last week. One minor error where I failed to eggwash the joint on a couple of pieces of puff pastry and the thing split open like a Matryoshka doll. That, and Tyler's recommendation to pull the beef at 128 deg. F leaves it a bit rare for my tastes. I did do the brined green peppercorn sauce but we rolled our own when it came to the potatoes and greens.

Korbel Brut for the win … under $20 and does a fair impression of a higher-end bottle. The really expensive stuff is a waste of money unless it’s a special occasion AND everyone drinking is an experienced drinker who can appreciate an excellent (very) dry taste. The vast majority of casual drinkers like and expect a sweeter champagne. If you give them a glass of $500 champagne, they’ll think the shit is sus and went bad. Don’t ask me how I know.

BLACK-EYED PEAS ... These are always on our NYD menu and, to be safe, I've always cooked them on the stovetop (after soaking overnight) ... This year I decided to cook half of them the way I usually do and the other half in the InstantPot (bone dry without pre-soaking) ... Was delighted that the InstantPot beans emerged fully cooked to the centers -- which isn't always the case with red or black beans -- and that the flavor was perfect thanks to cooking them with salt pork (which is getting to be more difficult to find each year).

We did Beef Wellington for Christmas dinner, following a recipe much like the one posted - and it came put perfectly, the beef nicely rare in the middle and the crust and mushrooms excellent and tasty. There was a red wine and broth reduction as sauce, and it was all very good, even rewarmed on subsequent nights. We ate every scrap of it, so alas, no pictures. Honestly, it's not that difficult - just a more than the usual number of steps, forming the roast, doing the mushroom mixture, then assembling the roast and letting it sit in the fridge for various lengths of time. I honestly don't see why it should be a difficult challenge for anyone accustomed to cooking entirely from scratch.

Possibly some the nicest NYE I've had were when we had a dinner and a worship service at one of the churches which I served-and no, we can't have alcohol on church property. It was just nice to get together and have a nice meal and worship. Some AA churches do Watch Night Services where they have worship about 10: or 11;00 but it's harder to stay awake longer as I get older, particularly when I'm used to getting up at 5:00. I have a 5# sack of evaporated Pacific sea salt from Ixtapa Mexico in the fridge. It's a local specialty, everyone does it. It's literally just salt from the ocean evaporated off probably in/on a sack or a cloth.

I recall hearing quite a few years ago about somebody entering a bottle of Two Buck Chuck in some prestigious blind tasting and it causing somewhat of a scandal when it won. My suspicion is that the bottler just buys whatever overproduction is available in a given year and for that particular year and that particular bottle, it just happened to be good stuff.

216 I have a 5# sack of evaporated Pacific sea salt from Ixtapa Mexico in the fridge. It's a local specialty, everyone does it. It's literally just salt from the ocean evaporated off probably in/on a sack or a cloth.
Seems to be more or less unavailable in the USA, I wonder what I should do with it. It's seriously like almost diamonds, it's big salt crystals. I didn't have the soggy problem at all as I cooked the Beef Wellington on cooking paper which apparently prevents the juice from collecting between the pastry and the pan and it can evaporate. On the topic of wet puff pastry, I cook the duxelles pretty slowly but I cook them considerably longer than Tyler recommends. Pretty much until the mushroom paste barely holds together when you assemble everything.

Well, if we're discussing illnesses, whatever has been going around certainly leveled the residents of Che Blake. I got wiped out to the point I hit the ER and they hit me up with a quart of Brawndo equivalent. I'm barely starting to feel better when the lovely Mrs. Blake gets sideswiped by this crud, which meant my time was taken up looking after her.

I must admit I did shake my manhattans early on. Had the shaker. But was convinced to get a stirring glass and the improvement was surprising.

Tonight's dinner will be a Cantonese dish called Steamed Pork Hash with Salt Fish. It has gone out of favor, a bit, but who cares about that. It's one of my favorite simple dishes, and one of Mrs. Splunge's, too. Tonight's Champagne will be Alfred Gratien's Blanc de Blancs Champagne, only because I couldn't source the Brut. I discovered this one at a winemaker tasting, and darned if it doesn't have most of the qualities of my favorite, Krug, at about 1/4 of the price. I use this litter called Okocat. Used to buy it in Safeway but get it from Amazon now. It's wood based but fluffy, not pellets.

Friend of mine made peary several years back. Peary is made like hard apple cider. Damn! but that stuff was good! Sadly, he never made another batch, and has passed away since then. He gave all of his brewing equipment to my oldest son. We're just waiting for the damn pear trees to grow a couple more years.
