That we don't have masses of people dying because of food-borne illness is a testament to the improvements in knowledge and technique and technology, all of which is driven by free-market economics. I'll bet that just like every human malady, there is more food-borne illness in socialist countries than in comparable free-market countries. My favorite is that one must sear meat so that the juices are sealed inside. But there are more.... Most of this sort of link is just clickbait, and I usually get irritated about 10% of the way and close the tab. But this one was actually pretty good! Baking Tips Every Home Cook Should Know Some of them are for people who actually have talent at baking and decorating (see first section of this thread), but most of them are good, solid bits of advice. I like zucchini. And while its huge water content makes it problematic sometimes, it can be quite delicious. Especially with bacon! Actually, I don't think I have ever cooked zucchini with bacon, but I think I will remedy that oversight this week. However, commenter Bitter Clinger seems to have hit upon another way to cook it, one that might just work! I know, I know. he is really going out on a limb, frying it. Take two days off of picking your vegetables and what was Monday's "not quite ready to pick" is Wednesday's "holy hell, that zucchini would make a horse blush" and all seems lost. I think anyone that has grown it is familiar with this and every kid that had zucchini in the garden or a neighbor that did was forced to endure that one deadly summer of squash in which your mom tried to get you to eat zucchini in every abominable fashion available to the limited thinking 1970s and 1980s cookbooks. Zucchini boats, zucchini casserole, baked zucchini, zucchini lasagna. I had it all in my youth, to the point where I developed Post Traumatic Squash Disorder which ruined me off of it for decades. But as a dog returns to its vomit, as an adult I can't help but think there is some redeeming culinary quality there and so the cycle of history repeats itself. Wonder what cool ways the Horde has of dispatching oversized mutant zucchini? I included a picture of some of the ones that got away from me this year and some fried zucchini straws I made with a simple buttermilk soak, a dredge in seasoned flour and a shallow fry in my wok. Even the kid ate them. ![]() This looks like something Misanthropic Humanitarian would eat (the man is a cabbage maniac), but it also looks pretty damned good! How bad could it be? bacon, sour cream, cheese...and we're done. That's good enough for me. I also have a sneaking suspicion that I posted this before, but I am almost 29 and my memory isn't what it used to be. Twice-Cooked Cabbage with Sour Cream and Bacon One thing that irritates me about some cooking websites is the constant touting of branded ingredients so they can get a few cents from the Amazon purchase. This one is particularly irritating because they are linking to paprika. You know, the spice that has about 8,000 different producers. So what is special about this particular brand other than it is sold on Amazon? Nothing..that's what. But the dish looks good, so try it, but don't buy that brand of paprika! [Hat Tip: Weasel] Just send me oysters. Lots of oysters, and I will provide special dispensation for those without taste who insist upon maple syrup with their French Toast. And pork rib roasts from the front end of the pig where all the good and fatty meat lives, carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com. There was literally nothing to eat. The only way 'intellectuals' were able to eat was to hire themselves out to small-hold farmers. That area of The Balkans got away with it as it's so hilly, there aren't enough pastures, so it's mostly goats and human hands. I was rich as fuck and couldn't get enough to eat, I wasn't staying put, and I had no food trail to keep up. I lost 20 kg. I was craving chocolate chip cookies yesterday - I ended up making a potato leek meets fully loaded potato soup. Spouse offered to go buy me cookies, and then realized he can't b/c the only way I get halfway decent chocolate chip cookies is if I make it myself.
So, I gave in today. I followed the recipe on the Trader Joe's semi-sweet chocolate chips (leaving out the nuts and subbing in butter crisco for butter) and adding some dark chocolate chips, too...and damn if I don't have the best double chocolate chip cookies right now. Youngest son keeps saying there's dairy in it...I'm not sure how long 4 dozen will last, but I did try 1 cookie, so my craving is satisfied (and damn, homemade cookies are just world's better)... As for whether baked goods have to look good to taste good - I actually find it's the opposite. The prettier the item looks, the more likely you'll be let down in taste b/c they cared so much about the look.

One the many kitchen skills I do not possess is the attention to detail required to make beautiful baked goods. I am in awe of people who can roll out dough and make perfect pie crusts, or decorate cakes, or navigate multiple ingredients and form them into delicious things.

And for dinner tonight, I'm about to go shred pork spare rib meat into my crockpot Korean stew. In the stew, there's young radish and radish greens (33 cents for a bunch was hard to beat), Chinese leeks (from Mexico - which apparently, don't have the leek dirt problem so they are my new favorite), onions, green onions, celery, carrots, kennebec potatoes, ginger, garlic, cilantro, and s&p. Why yes, there's lot of veg b/c that's cheap, and the marinated pork was not, and when you cook for 7, you want to fill the crock. I'll do a cornstarch slurry, serve over white rice with my normal bluberry dragonfruit salad b/c dragonfruit was the cheapest it's been in a decade today. I only suppose that what dragonfruit was supposed to go overseas is now too expensive to ship, so it's uber cheap! Which is my silver lining to this disaster!

Made chile this week ( and just like Cowboys on the range had it with beans) and used about a dozen chile peppers from garden. Had last bowl at lunch and it was very good but kicked up a few notch. Going to freeze some as they ripen for the next time.

Baked a cake yesterday, and between prepping the 11 x 7 pan and mixing the batter, I *completely* forgot that I was making only a half recipe! So, now I know why the cake rose more than anticipated...

I'm a decent cook. A lot of the "yum" though comes from the wide variety of flavorings available from all over the world and if (when) they become difficult to get I'm going to be in trouble. American food, when done well, is often fairly simple but made with the high quality ingredients that we've been blessed to consider normal and requires only a light hand to turn out tasty. My favorite story is from some Uni prof, female, who couldn't get enough to eat so did a deal with her 'low-class' cousins to farm for her family's food, and had NO WORK CLOTHES. She has a hilarious pdf about how her urban shoes fell apart, so humiliating, and then her dress went to pieces, and then her underpants broke and she had to work 'sans coulottes'. Her answer to this, 20 years later? Marxism! She was humiliated!

And those were in the days when my mother (who is actually a great cook) simply followed recipes in Betty Crocker and other cook books. As much as I might tease vegetarians, they raised the bar on cooking vegetables. The zucchini was often a mush consistency. Any child that was forced to endure frozen Brussels sprouts that were placed in a pan of water and boiled until they were a grayish-green ball of mush and gag-inducing sulfur flavor, probably has similar memories to my zucchini plight. I like Garlic powder, and use it often, mostly for convenience.
It doesn't compare favorably with fresh Garlic, not even close. For a roast I'd take the time and crush a couple large cloves into paste - you know the chopped pieces covered in salt routine - mash into a paste on cutting board with a wide flat blade - and coat the outside of the roast with the real deal. There seem to be some Euros here, sometimes someone asks about 'kevlar vests', which are largely illegal in W. Europe. There is a way around that. Get a Kevlar bag and drop a ceramic plate in the bottom. American Tourister makes them, and the pieces aren't illegal.

I did some mahi-mahi and zucchini on the grill last night. Drizzled some olive oil on the zucchini and sprinkled with garlic and some herbs then tossed on a griddle with the fish. The zucchinis got a bit of char and were pretty good. I leave the skin on so they don't fall apart and the slices are only about 1/2 inch thick.

So, pork spare ribs (in mini form b/c HMart chops these up in the marinade) give off more fat, so I skimmed about 1/4 cup off before my slurry add. My spouse is questioning my judgment - I said a little fat in crockpot stew is great (especially since the slurry tightens it all up), a metric ton is a problem)...

For candy making, one MUST have a candy thermometer and watch it as though it were a nuclear reactor. My dad's mom was a terrific cook but a sometimes less than terrific mom-in-law (or grandma, but that's a story for another day). Grandma admitted near the end of her life that she always altered the recipes she gave my mom because she wanted hers "to be the best." I mentioned this in the gardening thread earlier, but I take our oversized and excess squashes and cucumbers to our neighbors. They will take what they want for themselves and feed the remainder to their chickens.

There is a pretty good anime about baking all different kinds of bread. Pan something. Funny but educational. A lot of pastry imitator animals called Patisserie or Patissiere.

I'm sure marzipan could be good in some fashion, I'm just not sure what it is, as I generally see it employed clumsily when someone is trying to make a cake look like something, rather than culinarily.
I generally peel it off the cake like a bland fruit roll-up and push it off to the side. IMO, definitely an example of form over function. Those super-laminated croissants in the picture, on the other hand, definitely create an amazing texture that adds to the flavor as well as the beauty of the finished product. We ate one of the top four best meals in my life, in NYC , this weekend. The appetizer was so good I actually laughed with delight.

I don't know what it really means in terms of economics or survival but I know people who came from the Balkans during the 1990's but recently decided to return to their small farms in Bosnia for at least several months. They've often said our purchases and lifestyles are frivolous, and also that books are important to have (own) in every home. But, they love this country & plan on returning.
------- I can bake but it's usually not pretty. My parents could both bake & my mother would harp that food - especially baked goods - needs to be put out in an appealing manner - on nice plates, doilies (does anyone still use?) beneath cakes, attractive cupcake papers and napkins, etc. along with powdered sugar, berries or cherries, whipped cream, etc. as may be appropriate. I haven't answered the question either but fooling the eye will at least invite someone to taste something I've baked. I found a really good way to make daiquiris.
Start with a 1 gallon zip loc bag. Add a cup of rum, a 1.75 oz fresh lime juice, 1.5 oz simple syrup, a cup of water, and a pinch of salt. Squeeze out the air, and put it in the freezer the day before you need them. It's simple and easy. Better still, the ice has a completely different texture than stuff made with a blender. My granddaughters were here this morning and we read Amelia Bedelia Bakes Off. It is a lot of fun full of puns and recipe misreads that somehow turn out terrific. A bit over 29 years ago I used to work as a baker. Donuts, pastries, and bread. Was pretty good but chose a different career path.
To this day I don't care much for bakery products. Not because I have had so much that I am still sick of it but because most are what I'd have tossed out as a failure. It should look good. How hard is it to make a circle round? If they cannot make something as obvious as appearance well then imagine what the ingredients and flavor is going to be.* On the other extreme - it can look too good. Like the deluxe cupcakes beautifully frosted with a 2 inch high mound of frosting - just get the store bought frosting in a can and eat it with a spoon. The pic up top looks beautifully burnt and it will surely taste burnt. Some char on food can add flavor but all baked goods are just flour, sugar, and fat. None picks up a good flavor when burnt. *Mishapen pizza with random giant gas bubbles may get rave reviews because "they have a real wood fired oven" but if they cannot make a round pizza 'round' then I will pass. Lobster is by far my favorite food and I prefer it cold but will take it anyway I can get it. One time in Florida, took my growing boys to an all you can eat lobster place. They were NE style lobsters but 1 lbs and you could only take one at a time. They were boiled so really really messy. My son Alex ate 20. Not kidding. You should have seen the table. Definitely lost money on us.

After tasting a French Macaron for the first time I decided to make some. Easier said than done. I had to get some piping materials as both the cookie and the filling requires piping. I do not pipe well (nor do I caulk well).
After numerous attempts, my wife would leave the room, if not the house, when I decided to try, I finally made a batch that was acceptable. The fillings were easy to make and quite tasty. 144. I can't vouch for its processes now but years ago, the USDA inspectors would shutdown a huge poultry or meat processing (not slaughtering) room if two flies were spotted within that room. The room would be tagged and the poultry or meat (usually ground meat) got dumped and the room & processing equipment would be thoroughly washed down once again.

When he was 12, he was a skinny kid who could eat anything. He didn't grow into his adult body until he was a s sophomore in HS. Both of my sons were foodies from an early age. The thing about wedding cakes is that they have to stand up to frosting. My ex-cousin (still family) made a great anniversary carrot cake with pineapple that could be frozen before frosting. The frosting was still nasty, though.
The key to good frosting is cooking it like candy, with butter or cream. Or like divinity. Most people don't do this. Tricky, and it doesn't stand up to air on the cake for long. I started watching this couple in Azerbaijan whose chef son films them making cooking videos under the name Country Life Vlog. They get 10-15 million views on many of their videos, they have over four million subscribers. People find it soothing and peaceful to watch. No talking. They cook outdoors over a fire on a saj (flattish wok like pan) in the most gorgeous countryside. Lots of flowers, fruit, animals, gorgeous little country house and outbuildings. Just got up from a nap and nearly missed the food thread.
I seem to recall someone asking about making clear ice cubes. The ice we make in our camper freezer compartment is clearer than the ice from our regular freezer. I think this is because the camper freezes more slowly than the household freezer. So perhaps putting ice cube trays in a small insulated container before placing in the freezer might slow things down enough to produce clearer ice.
