Good afternoon and welcome to the Food Thread. My friend and fellow Cob, CBD, is currently a roving individual. Happily Mrs. CBD is by his side and keeping him out of trouble.

During his travels he asked me to step in for him. Because I certainly cannot fill his shoes.


So now that we have the introductory information out of the way, you're probably asking yourself why is the Northern Pike featured above the fold. Good question.

The Northern Pike can be found in numerous states and Canada. It is an aggressive fish and is easily caught. They are delicious to eat as well. However, there is a draw back. They are an incredibly bony fish. And just your normal filleting routine will not remove the pain in the ass "Y" bones.

The "Y" bones can be removed and are easier to remove in larger fish. But what is one to do with the smaller fish commonly referred to as "Hammer handles" or "snakes"?

You can and should pickle them. The nice thing about pickling Northern Pike is you don't need to remove those pesky "Y" bones. Those darn "Y" bones just dissolve. Just fillet the fish if you were filleting any other fish.


Here is an incredibly easy recipe to pickle Northern Pike or any other fish you would like to use:

Pickled Fish

Soaking brine: 1 cup canning salt. Mix with 4 cups of water. Cover fish with brine. Refrigerate 48 hours. Rinse with cold water.

After rinsing the fish, cover the fish with white vinegar and refrigerate for 24 hours.

Remove the fish from the vinegar and place fish in layers with alternating red or yellow onion in jar.

Pickling brine: 2 cups white vinegar
1 tsp. whole cloves
1 3/4 white sugar
2 tsp mustard seeds
1 tsp whole allspice
4 bay leaves
1 tsp peppercorns

Bring to a boil, simmer 15 minutes. After simmering cool brine in refrigerator. Pour over the fish. Refrigerate for 2 weeks.

Then enjoy!!!!

It is not recommended you use fresh caught fish for this. Freeze the fish for at least a week to 10 days to kill any parasites that may be present before pickling.

You may say, "Hey, Mis. Hum. Northern Pike is not available to me. What can I use?" The wonderful thing about this recipe is that you can use just about any type of fish. I have pickled Largemouth Bass. They turned out fine. A friend of mine has also pickled Black Crappie. He said they were delicious and I'll take his word about food.

Another fish that will work is Pollock. I really don't care for Pollock fried, baked or broiled. However, this plentiful and inexpensive fish does pickle quite well.

Crackers with cheese spread, pickled pike and onion. A pretty damn tasty treat that is easy to make.

Once in Canada a boatmate was reeling in a small pike of about 12" when a large one 30"ish grabbed it at the boat.

Caught a 100 pound halibut when we were stationed on Adak. That fed a whole bunch of people, we had beer batter halibut for a week after that. They have lines on the fish showing you where to cut them to fillet the fish.

I caught a small Muskie before, but it was wintertime, and it was pretty sluggish. It was on par with a large king salmon caught off AK. I am still angling to go Halibut fishing up there, where they go to300-400 pounds.

57 So Friday I made a spiced ground pork stuffing for burritos. Well, with burritos you need refried beans as glue. I've bought cans of refried beans in the past but it looks like, well, you know, dog food. So I opted to make my own.

Used two cans of Goya pink beans, 1 medium onion finely minced, 6-7 cloves of crushed garlic, half a teaspoon of Better Than Bouillon Chicken, cracked black pepper and around a half a cup or so of loosely packed chopped cilantro.

In a straight-sided non-stick pan, I sauteed the onions 'til soft, added the garlic until it perfumed. Added the beans and liquid, rinsing the cans out for a little more liquid. Added the bouillon, pepper and cilantro. Proceeded to mash (plastic masher) until I got the right consistency, then stirred on heat to get it to the right thickness.

Great batch of refried beans. Tasty burritos: With seasoned ground pork, refried beans, sliced black olives, grated sharp cheddar/jack mix and sour cream. Used Mission brand large tortillas, 8 in a pack.

Leftover meat will become soft corn tortilla/taco filling with lettuce, sour cream, etc.

Load the fish into Adobe PhotoShop.

Go to "Select" and then "Color Range." Choose "Bones."

Press the Delete key, and the bones are gone.

I make a cheese tortellini pasta salad w/ small sliced sweet red peppers (just slightly cooked), sliced Kalamata olives, red wine vinegar and olive oil. I add fresh grated hard cheese (Locatelli, etc.) to each serving. Also great in the hot weather.

I do the grocery shopping so there are no kind of turkey products in our house, unless it's the actual bird.

5.5 hours at 210 degrees, with a 30 minute blast at 325 to crisp the skin and take the internal to 175 degrees.

When it comes to turkey, I'm pretty basic. I just like roasted turkey breast, that's about it. Every other turkey product has a weird aftertaste to me.

And the ground turkey's color and consistency was just so icky! It's all pink, reminded me of human flesh. Then it stuck together like play-doh. And that weird aftertaste just couldn't be disguised. Not even chili seasoning got rid of it.

Oh well, I tried.

Another is green chili chicken enchiladas. It was mid winter and didn't have a lot of money. Had some cans of Stokes green chili and poached a few chicken breasts in broth, cumin, garlic, s and p. Doctored up the canned green chili, cut up chicken, shredded cheese, roll in flour tortillas and smother with green chili. Freezer clean out days are fun.

Anywhere but the coast in East Africa, tilapia was all you would find for fresh fish. Lake Victoria abounds in that fish. That's almost the only fresh fish I ate for years. Hated the bones as a kid.

Thanks so much for the pickled pike process. I first had it at a restaurant in Wisconsin over 20 years ago. Don't know why I ordered it as an appetizer because I had always heard it was all bones. Turns out it was tender and delicious. It was the first freshwater fish I ever ate. (The first decades of my life all seafood had come from the ocean.) BTW, I have since learned of the wonders of other freshwater fish. Fresh caught perch and trout are at the top of the list.

I've since become a big fan of pickled fish but never made my own. That is going to change.

I agree with you on the crappies. However, they were old and he found them in the bottom of his freezer.

I would smoke them but never pickle them. Walleye is too damn delicious to do anything than pan fry in a cast iron skillet.

I do a fusilli one with tri-colored pasta, crumbled Italian sausage, slightly cooked sliced fennel/sweet red pepper, balsamic, olive oil and lemon juice/zest. Cheese of your choice, grated, small cubed mozzarella, or even smallish chunks of imported provolone. I always like sliced Kalamatas, too; I can never get enough Kalamatas.

It was brought up here, in reference to the "world's largest freshwater fish" news of a stingray caught in the Mekong.

Sturgeon were bigger, the record one by a factor of two or so, but I guess it was weasel-worded that sturgeon are like salmon and can live in both fresh and salt water, so they're not exclusively a "freshwater fish."

Very much like, but bigger. Northerns can get up to 60+ pounds, pickerel top out around 2 pounds.

Same genus. Northern pike is Esox lucius, pickerel is Esox americanus.

Biggest one I ever saw was at the mouth of the Columbia River. I estimated it to be about 12-13 feet. They are also remarkably long lived. This one was probably well over 100 years old.

217 My family had a fish cake recipe to get rid of all those northern filets. We fileted them with the Y bone in. Froze them solid, partly thawed them and ground them in a meat grinder (one of those old school hand cranked cast metal ones). Added eggs, garlic, onion, salt, pepper and ground-up saltines. We'd freeze them in portions and deep fry them up for parties with homemade cocktail sauce. We never wasted those snakey filets. Trick to the recipe is getting the correct amount of crackers to not make it too dry.

I've no idea. Only had "trout" once. As I said, it was awful. I'd try it again tho'. I really like saltwater fish, crab, lobster, clams, oysters, etc. so I'm not sure what the deal is with fresh water fish.

It was brought up here, in reference to the "world's largest freshwater fish" news of a stingray caught in the Mekong.

Sturgeon were bigger, the record one by a factor of two or so, but I guess it was weasel-worded that sturgeon are like salmon and can live in both fresh and salt water, so they're not exclusively a "freshwater fish."

I'd try it again for sure. Like I said, there's not much that swims in water I won't eat. Figuratively speaking.

As an aside, I went on a blue water tuna fishing trip about 15-20 years ago and landed a 40 pounder. Best tasting tuna... ever.

They start bringing out bowls of all types of food, family style. It was a test so there's lots of room for improvement but on the whole, not bad.

293 I caught a 36 inch Northern Pike when I was 12 on Diamond Lake in Michigan. In a boat alone. Didn't know what I had on the line. Thought I lost it because the line went slack. Then its head came out of the water and with a big splash the fight was on. Managed to eventually bring it back up and get it into the boat. My Mom was excited. She stuffed it and cooked it that night. It was excellent. I'm sure there were bones but being the last of six children and feeding your entire family made it that more special.

Take a nice ripe mango and peel and slice it about .25-.33 inches thick and roughly the size of the hole when you put your thumb and middle finger tip to tip.

Top with a small spoonful of sushi grade salmon eggs.

Eat in one bite.

That's it. Your guests will think that you're a culinary genius cuz it's such an unlikely combination but matches perfectly together - the mango's sweetness, flavor and acidity combine with the eggs salty creaminess for a delightful flavor.
BONUS! The colors look pretty and appetizing together.

I don't remember where I picked up this recipe years ago but it's always a hit when we serve it to guests, and, of course, when we eat it at home.

In the latest Iron Chef iteration on netflix, one of the competitions is with sturgeon.

And one of the contestants extracted and used the notochord cooked in a dish. I guess mainly for crunchiness(?).

Extracting the notochord looks super easy, barely an inconvenience for those who might wish to try that and have fresh caught sturgeon available.

375 When I was a Boy Scout our troop would load up in a school bus (the school superintendent was a scout master) and be driven from Western Kentucky to Minnesota to camp and fish for two weeks. Lake Ely as I recall.

We had canoes and fished out of them. I don't recall catching any fish but I did manage to dump a scout master out of a canoe into the lake one day. Accidentally of course.That was fun.

378 Polenta the Roman way:
Cook the salted polenta in a pot until it's a thick paste, then pour onto a large pasta-making board and square it up (rectangle it up?). It will set. It should be an inch or two thick.
Ladle bolognese sauce all over it. Sprinkle parmesan (and pecorino) over it.
Using a piece of clean string, one end in each hand, cut grids into the rectangular polenta, such that each person partaking gets a slab. Everyone sits down around the table and digs in to their own slab with a fork.
This is a family fare. If people are squeamish then serve the slabs on plates.

There is a totally different recipe for polenta Torinese. It involves milk, butter and parmesan. Not suitable for those allergic to dairy. Delicious.

Kippered is salted and smoked. Pickled, when talking herring, I consider it to be more of the type with a wine or vinegar solution, without smoke. Usually like the recipe in the OP.

SoCal, didn't grow up with grits, never really had them til, happily, turned out they were a regular breakfast feature in US military dining facilities. Great versatile breakfast building block. You can go savory, or sweet, or both.

Arrived late but got here. There is a very easy polenta recipe that you bake in the oven. Turns out great and no stirring, leaving your hands free to make mischief elsewhere.

I always jam the recipe with extra butter and chicken stock but you expect that from me.

437 All I've got to add to the food thread is that I cooked four pounds of pinto beans yesterday, using lots of black pepper, salt pork, and minced garlic. Soaking and rinsing are very important. The beans turned out to be pretty good, even though I had to leave them be for a few hours to look for a lost dog (further to a comment from yesterday's ONT). There were enough beans to put away in food containers and freeze for another day. No Blazing Saddles consequences so far.

444 As implied by a number of 'rons above, pike is good, but walleye > pike. It's not even close. Freshwater perch scores high too, but walleye is the top, the Colosseum, the Louvre Museum.

Very late to dinner, but this is another pair of fish that are similar enough to crossbreed, like Northern Pike and Muskie.

The result here is a Saugeye. Which are not sterile, so calling the two fish different species may be incorrect. Or at least incorrect-ish.
