Food Thread: Sushi: American Style!

I have mentioned before an excellent sushi restaurant in NYC...part of a small chain that began in Los Angeles. There are three or four in NYC, and they are just...damned good! Nothing pompous or or fancy; the atmosphere is a step above fast-food. But the service is good, the food is superb, and the pricing is, at least for New York, reasonable.

But the best part for me is the view of the kitchen. Most sushi restaurants pride themselves on their connection to Japan: Japanese waitresses, Japanese chefs. But a glance into this place's kitchen reveals a cross section of New York! A couple of black guys...one wearing dreadlocks (short!), one shaved head. A few obviously Puerto Rican or Dominican, a white guy with tats who looked like he lives in a fourth floor walk-up in Alphabet City, and one or two others who were equally typical. The last time I was there I asked the manager if I could take a photo, but I got the expected answer. Hell I wouldn't have let me either!

Why does that please me? Well, demystifying Japanese food is a good thing. I hate the arrogance and pomposity of some of the higher-end places who serve only "Omakase," which is essentially, "You'll eat what I serve you and then I am going to charge a ridiculous amount for it because I am Japanese!"

There is far too much acceptance of the progressive cant in this article, and they carefully avoid (or perhaps don't realize) the idea that simply promoting hunting instead of demonizing it would go a long way toward helping their cause.

Rack of squirrel, anyone? The chefs putting invasive species on the menu

Here's my favorite stupid line:

While proponents acknowledge it is not possible to turn all invasive flora and fauna into gourmet food, they say that taste is key to success.
And that is the reason this will fail! Killing invasive species is the way to go. Not, killing enough to stock the larders of hipster restaurants.

For instance, If Texans had to eat all of the pigs they shoot to keep the population in check, they would be eating pork three meals a day...forever.

But it is a good start, and maybe teaching people that their food doesn't have to come from a slaughterhouse or a corporate farm will temper the lunacy that hunting is evil.

Angel Face Cocktail

1 oz of London Dry Gin
1 oz of Calvados or Apple Brandy
1 oz of Apricot Liqueur

Shake with ice for 20 seconds. Strain into a cocktail glass. Garnish by floating a thin slice of apple therein.
Drink! And glory in the heartfelt praise Your Sweetie gives you for concocting such a delicious adult beverage.


This is seriously good. Give it a whirl.

One of our regular readers (and a lurker) sent me this photo of his batch of "Homesick Texan's" red beans and rice. She is a fine and fun cook. Her books are worthwhile, and the recipes are solid. Although she claims this recipe is for eight. That's just nonsense. I can eat a double portion before dinner!

Ina Garten does not screw around. Her recipes are always at least good, and sometimes they are great (best meatloaf recipe on the planet).

Yes, she uses too many damned bowls and pots and pans, because let us be honest, she is wealthy and has forgotten that most people don't have a legion of cleaners tiptoeing behind them in their 1,000 square foot kitchen. But the food is good, so let us forgive her.

Company Pot Roast

One thing I find puzzling is her use of both homemade chicken stock and a chicken bullion cube. Why? If you are making your own stock, then take one big batch and reduce it to a sixteenth of the original volume. You will be left with glace de viande, which is essentially homemade bullion cubes in gelatin form, but without all the salt!

Last week I promised kch's recipe for pulled pork, so here it is, complete with his notes, which are interesting, especially about the whole "plastic wrap under foil" thing that I have seen, read about, and am too chicken to try.

kch's PULLED PORK

- 5 lb Berkshire pork shoulder, lightly trimmed
- 1 med onion, sliced thin
- 2/3 cup hot apple cider
- 1/3 cup maple syrup

For the brine:
- ½ cup salt
- ½ cup sugar
- 2 cups water

For the rub:
- 2 tsp dry mustard
- 2 tsp cracked black pepper
- 1 tsp dry marjoram
- 1 tsp dry oregano
- 4 tsp smoked paprika
- 4 tsp salt

Method:
- Make the brine by dissolving the salt and sugar in hot water. Allow to cool.
- Soak the pork shoulder in the brine solution for about an hour (best done by placing pork and brine in large plastic bag).
- Mix all of the dry rub ingredients together.
- Remove pork from brine, pat dry.
- Sear pork in hot frying pan.
- Coat with the dry rub mix, patting it on all surfaces fairly thickly.
- Line roasting pan with parchment paper and scatter the onion over the bottom of the pan. Arrange the pork pieces on top, then add the hot apple cider to the bottom of the pan.
- Cover the pans tightly with first plastic wrap, then foil.
- Put in 325F oven for at least 4 hours. [Or in a slow cooker for 5 hours or more]
- When done (falling off the bone), shred immediately (much easier to do when hot!). It's best to do this by first cutting away the bone, then shredding the meat and any fat with forks.
- Strain the cooking liquid. Add the onion to the shredded pork. Skim the fat off the liquid and discard. Add the liquid to the pork, along with the maple syrup. Mix well, then check and adjust seasoning as needed.
- Cool. Reheat gently, serve on good buns. Should make enough for 10 generous portions. (Will freeze well, though)


Some notes:

- Up here in Canuckistan pulled pork is usually done - or at least finished - with lots of heavy, sweet bbq sauce. I've always found it too heavy, too rich, too indigestible (even as I've served that style by the ton - give the customers what they want, good and hard if necessary). Given the opportunity here I decided to try a different route. It's kind of sloppy (you'll need napkins!), but much lighter on the stomach and in my opinion a better showcase of the pork and maple.

- You can do this without using the Berkshire pork, but if you can get it, it's well worth it. Actually, you can even do this with pork loin, but why would you want to? Unless it's really cheap...

-As I mentioned earlier, my recipe starts with 30 lb of pork. I tried my best to adjust ratios in cutting the batch size down, but would suggest giving this a try, then noting any changes you might want to make for future batches.

-The plastic wrap/foil thing. Yes, we do actually do that. The plastic wrap seals in all the moisture and the foil protects the plastic wrap. Trust me, if done carefully and correctly, it works.

There is an excellent Greek restaurant about 30 minutes away. Too far for a last-minute meal, but definitely worth the trip. There is nothing out of the ordinary on the menu; it's probably printed for 1,000 Greek restaurants in the country. But they execute everything really well, the prices are ridiculously reasonable, and everyone in the place is friendly and competent.

I love this sort of restaurant. They aren't trying to reinvent the wheel, they just want to do a good job with the stuff they know.

Yeah...it's usually crowded.

Brussels Sprouts that aren't as tough as trees, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

13 I went to a party some years ago and the fella that was throwing the party has a crazy sister, a real nut job. She showed up and brought sushi and some other weird Jap seafood stuff. I don't eat sushi/Jap stuff but everyone else dug in...munch, munch munch. About an hour later the party guy's sister told the story of how she was so busy and had left the sushi in the car overnight but it smelled fine in the morning so she brought it along in the cooler.

14 I'm so amused we have both sushi and BBQ on the menu - my favorite food and the one I'm making today, so I'll be in and out.

To be fair, this is my "I've got so much stuff to do" Northern Sweet Chicken BBQ. Alost 5lbs of chicken thighs (bone in/skin on in the crock) and 1.5lb sweet onion in the crock - did 8 hrs on low and just shredded it (tossing the bone and skin). Took out all the broth/fat liquid except about 1/4 cup (and left all the onions) and then grabbed a bottle of Aldi's hickory smoke and brown sugar BBQ sauce and added 1/3 of the jar with s&p - just enough to slightly darken and moisten the meat without going over the top. It's gonna go on Panera's Sourdough (bought for a soy allergy guest yesterday...and they ate it, but now I have 9/10 of the loaf left). Should be good.

The other name for this BBQ is "cheap" which goes with the whole dinner theme - this would almost fit the $12 for 4 challenge, even with my roasted calabaza squash, strawberries, and baked gingered starfruit.

25 Being that it is a cold and chilly day up here in NYC, I decided to make beef stew.
When I was at the supermarket last night getting the ingredients I opted for getting pre-cut bottom round instead of doing it myself. Well their beef chunks were a lot larger than I would do mine. I try to do mine to about an inch or less.
One thing I am missing in this stew is the McCormicks beef stew seasoning I throw in. I thought I had a packet at home but wound up it was for something else. So I added a bit more Worcestershire sauce, a little more thyme and a little more salt. So far it tastes good.
Will find out in another 4 hours when it is done.

28 If you want decent carrots, you need to buy Grown in AK carrots. Carrots in the Lower 48 taste like branches of alder bushes. Might be okay for moose, but not for human eating. Carrots up here are sweet and crunchy, moist and wonderful. Same for potatoes. I've never eaten better. Something about the cool growing season and the sandy soil, with some volcanic ash, I think, but whatever it is, they are just better.

the Missus is going keto, starting tomorrow, so that means a lot of non-processed food. I am not going full keto, but our dinners will be pretty healthful. Lots of stir fry, which I am cool with, since I do most of the cooking.

I LOVE NY strip...I'm stuck with a singular sirloin to make tomorrow (didn't use it for Beef and Broccoli on Friday b/c I had too much so tomorrow is the drop dead day). I saw an Asian Beef Bone Broth for 80% off at Hmart today, so I'm thinking about using it for a shabu shabu like soup tomorrow (with shredded baby radish tops and greens, carrot, cilantro, ginger, and maybe some green onion). It's the only way I can think that might feed a few people in the house and be worth the effort...

Green cabbage was $3 a head so I bought the last head of red cabbage @ $1. (Peasant food indeed!) Good stuff and the kitchen smelled like Grandma's place while cooking. The only thing missing were the nasty fly strips in the corner.

40 One thing to remember about sushi is that it is finger food almost snack food. It is like going somewhere and having them prepare you a bunch of popcorn and chex mix. Which is good, who doesn't like that? Maybe chicken wings is a more appropriate comparison.

But it is very indulgent, and rich, and high-carb and is ok every once and a while. Straight sashimi can be healthier and I like it too.

Yes, really does work! We use it when we want to do a long slow cook that's completely sealed. The wrap does the sealing, the foil protects the wrap from melting everywhere. Keeps all of the moisture in, so the best way to braise.

Kinda like sous vide, now that I think about it...

42 I once ate in a high end sushi restaurant in NYC. I think it was Kobe and was located on 41st between 6th and 7th.

I was not all that impressed and the portions were small. I wound up getting a burger or something when I got home.

That being said I do like sushi. The restaurants by me all have the chefs preparing the sushi right in front of you. Only the hot dishes are cooked out of sight in the kitchen.

43 I had wedding food yesterday. The appetizers were excellent. Some kind of chicken meatball with a sofrito mix and bbq pulled pork on a fancy cracker . The dinner was good but not so great. I say good because it was a lot to eat if you wanted. Each table went separately to a short serving buffet. Mixed squash, some type of fancy scallop or au gratin potatoes and chicken parm and prime rib. Not a choice . They would serve you both if you wanted.

53 Food related: I am very happy with my progress in using chopsticks. I recently gained enough dexterity to eat rice with chopsticks. It's weird, but the Asian foods we buy occasionally are easier to eat with chopsticks. As if it were on purpose.

1) Your favorite pizza dough (I make it ahead of time in large batches and freeze it in portions.... works fine as long as you give it plenty of time to warm up and get the yeast working again... take it out of the freezer the night before and put it in the fridge, then take it out of the fridge in the morning seems to work well for me).
2) Package of bacon

You can add more toppings if you want, but at some point you might as well just make a pizza. The point with this is that it's very fast and no fuss.

68 We had the omakase at Jiro's (from the documentary Jiro Dreams of Sushi) in Tokyo.

Whollee Kau! Was that good! Honestly, spoiled me for other sushi for a while.

And omakase is the only way to go as Jiro has decades old connections to the giant fish market in Tsukiji (now elsewhere) and gets first chop at the best fish each day.

So, you'd be kinda stupid not to go with what he serves. Anyway, delish. If you ever get a chance to go and the price doesn't give you a heart attack then go!!!!

When I lived in NYC, the family ate at Nippon for years. Don't know if they're still around. Lately, my favorite is Sushi of Gari on East 78th.

Here in Montana, it's all made by locals (not Japanese). Some of it's good but a lot is made by people who don't have a frame of reference. It's all overly complicated rolls to please the college students.

Rice with chopsticks is the way to stay slender! Since I eat a lot of Japanese, I've also gotten pretty proficient, but when you stick to chopsticks vs their Miso soup "scoop spoon" (which I have the kids save for eating the rice when main courses come), you eat slower. And slower means you get asked by kids finished with their meals to try some of yours...

78 There is a hole-in-the-wall sushi/hibachi place within walking distance from me, Hiranos. It's two separate restaurants with one entrance/exit. I like the sushi there a lot. In this town they also have a whole lot of froofroo expensive sushi places where you can get monstrous concoctions that start to look like a big burrito on your plate. But this little place by me is very good, better than anything else in town and takes advantage of whatever they can source locally and get to their customers. Simple fatty fish and occasional specials. Very acceptable prices. The head chef is a big golf fan, takes a pilgrimage to Agusta every year, and the place is adorned with pennants and flags from there. They will talk to the customers and most everyone knows each other's names.

Took me a long time. I started with California rolls, which is mostly cooked fish/crab, etc. But at the aforementioned King Soopers, I finally tried their ahi tuna, and it was really good. I prefer it to the salmon, which is also good. Don't like eel, or any of them ones with fish eggs.

97 This weekend's food experiment was pizza on the new pizza stone on the new grill. This particular stone is supposed to produce crispy crust--and surprisingly, it did! Since crusts are rarely crispy enough for us, we are really happy.

Toppings and burner settings need some tweaking, but it was probably a 90 out of 100 on the first try.

99 We went to a new izakaya place for Valentines.

It's run by Koreans, so the sushi can be a bit different. The Koreans esp for their rolls and such go crazy with sauces, which is usually a huge error in my book cuz sushi is so light in flavor that it's easy to overwhelm and in that case you might as well be eating tofu.

However-

the folks in this place for the most part really know what they're doing, and the sauces (mostly) were perfect. Delightful stuff.

As it's an izakaya we also tried the roast salmon collar which was totes yummy.

Pro Tip: If you see fresh fish collar being served in a Japanese-ish restaurant....go for it! It's almost always superb.

Anything that is needed to shove food into my piehole I can easily become an expert at. It took me one sitting in my teens and like that, I'm good. I had a lab that would eat too fast so we had to put big plastic balls in his bowl and buy dog bowls with knobs you have to eat around. I probably need something like that. I practically vacuum food up if I'm not careful.

If you are in the US, you can't die from it. It's required to be frozen 1st to kill off everything that would harm you. Normally, it's a flash freeze, so it doesn't ruin the texture.

They also would play Gojira movies on their bat TVs, which made the place even more perfect.

Sadly, it closed when the area it was in was redeveloped into apartments. I still miss that place. The food and atmosphere was fantastic.

If you don't feel like using a frying pan for a meatloaf recipe, try this one:

Mix together 4 eggs, 16 oz of tomato juice, 1/2 c finely chopped onion, 1 T salt, 1/2 tsp ground black pepper, and 1 /1 cups of quick oats in a large mixing bowl. Add 3 lbs of lean ground beef in pieces, and stir with a spatula, eventually mixing it all in (adding the beef in small pieces facilitates mixing. Form into 2 loaves, then place in a 9x13 baking dish. 350F for 1 hour.

This is incredibly moist! No pan of water required.

The kiddos wanted to watch the Super Bowl, natch. So, I thought I'd whip up some Sloppy Joes as the main course.

I was about to use my Mom's recipe when I came across a William-Sonoma recipe, which looked so much more gourmets than my Mom's 5-ingredient throw-together.

It took a lot more time and knife work and ingredients to whip the WS version up and it tasted fine and all.

But,when it came down to bun-biting time, the SW version tasted almost exactly like Mom's with Mom's even maybe being just a smidgen better. Very very much the same though.

Wasted effort, don't you see? applying lipstick to a pig, doncha know?

Three different dinners were not only not good, they were awful. Dunno what my problem was. But, food is too damn expensive to be such a failure.
Strip steak. Flavor ok, but tough as shoe leather.
Duck, tasted like liver.
Even my crustless quiche was inedible.

Oh well. It's humbling to fail so spectacularly.

I see you saw my Northern BBQ post tonight - when the kids' want "brown" sauce, I'm not screwing around with making that. I only put real effort into the southern types...

And if you are an Indian sauce maker who avoid dairy and makes amazing sauces, I'm buying your jars - looking at my new Maya Kaimel Goan Curry sauce (which will make a perfect fish, tofu, or veg or all 3 curry for Lent - tried it out last week with bay scallops, smoked oysters, and veg, and it was outstanding)...only thing I'd change was the smoked oysters for shrimp or tofu - a little too earthy for me, but spouse wanted and loved them...

Since Food Network taught me to cook, I learned a lot of lessons from a lot of shows. The lessons (if not the food) I took from Sandra Lee's Semi-Homemade...focus on where your effort matters and buy the cheats when you have a family to feed on limited time.

153 As promised, a report on yesterday's steak dinner with white wine.

The steak was a flatiron, which my BIL cooked perfectly to my taste (of course; he's an expert!) It was delicious, but I discovered I don't care for my steak to be cut into very thin slices except for a sandwich. Ah, well. Can't argue great taste, even if the form sucks.

For wine, we had Brancott Estates Sauvignon Blanc, and it was marvelous. Very dry, with a tartness sort of like grapefruit, and my new favorite wine. It was recommended by an employee of the local liquor store, who's given me good advice before

Um, forget the above paragraph. It was under 12 dollars, so I don't want it getting too popular!

I spent yesterday with my scout troop at a campsite on the east side of Chesapeake Bay near the outlet of the Susquehanna River(yeah, yeah, Camp Rodney). We had steady winds all day in the 20 to 30 mph range and that made it damned cold outside.

Anyway, the adult leaders, all male, prepared a jambalaya for our dinner (there was one heretical substitution -- kielbasa for andoullie sausage). Cooked over coals in a Dutch oven. It was fantastic and perfect for the circumstances. Having that experience of working together to create an excellent meal with the camaraderie that we have developed over many years made me appreciate what I had been missing since I stepped down as Scoutmaster at the end of last August. (To be fair, my absence was by my design so that my successor could establish his own way of running things and working with the youths.)

Our next trip is in two weeks!

Hydrolyzed protein is a precursor to MSG. You do get glutamic acid as a breakdown product.

OTOH, you might be surprised where straight-up MSG does show up. Knorr Chicken Bouillon Powder, for example, is basically what chinese cooks would call "chicken powder" and MSG is the #2 ingredient (right behind salt).

Works great in certain stir fries...

168 I have, very occasionally, seen wasabi root in a grocery store. It looks like a shrunken green horseradish root, and is expensive.

While most restaurant wasabi is indeed dyed horseradish, I have had the real thing. Easy to know; it looks sort of moist and almost foamy compared to the usual stuff. At the really top places, or at many places in Japan, they will grate it right in front of you, on a special kind of grater, to show that you are getting the real deal.

Real wasabi is much tastier, and much less of an attack on your sinuses.

I used to meet up with a bunch of friends every year to do an annual tuna fish. We always blend the tuna after we caught it and put it on ice to prevent blood from spoiling the meet. And we always brought along some wasabi so we could have a little sushi on the boat.

And the night before we always met at that restaurant for drinks in the upstairs bar before heading out the next morning, well middle of the night.

Wow! Bannister's Wharf is a bit fancier than it was 40 years ago. And sushi in Newport? We had to make do with Mack's Clam Shack, which probably burned down in a grease fire decades ago.

The other day you mentioned seeing the port, almost, from your front yard where that luxury car ship was supposed to land. I had no idea such a huge facility had been built. Things have changed since the 1970s. Did the facility take out that house with the seasonal hen and rooster on the mailbox? (Along route 138 if I recall.) We always looked for them when we drove by as youngsters.

181 In Japan, omakase is a cultural thing and very common at all kinds of restaurants, not just sushi places. The customer puts their trust in the chef to put his best foot forward and it usually works out very well. Not just an invitation to run up the bill, in my experience anyway.

Years ago, I figured out how to get rid of a meatloaf's soggy bottom ... Bake it only halfway in the loaf pan, invert it onto a wired rack atop a rimmed baking sheet (to catch drippings), then put it back into the oven to finish roasting ... Yes, more bakeware to clean ... But this method ensured I could actually serve meatloaf SLICES instead of chunks and blobs.

Tamago is a good way of introducing kids to sushi places. Most will eat and like tamago. Just a simple egg, what's to be afraid of? Then let them try a few tiny pieces of sashimi. Then move on to the harder stuff.

Another good "kid intro" sushi is Inari (sushi rice stuffed inside fried tofu pouches) - all my kids liked it even before they ate fish and veg...

This is also a good "I've never had anything sushi or Japanese before" sushi.

208 The cheapest (and freshest) sushi I had was conveyor belt sushi somewhere near Ueno Park in Tokyo.
Each plate of 2 nigiri was about 80 cents. Just the basics -- tuna, salmon, eel, tamago, octopus, etc. Each seat had its own tea spigot (free, btw).
They just count up your plates when you're ready to leave.

There is a small, dumpy oyster place in New Orleans you might like. Only open in "R" months. It is pretty well known and pricey. Small oyster bar and seats maybe 20. Cooks fried food in lard in iron pots. Best fried oysters in town. Casamento's Restaurant

210 kch, great recipe. I will try it in the crockpot. Last week had half a pork butt left from another recipe and made Hawaiian pulled pork in the crockpot. Couldn't finish pulling it the day I made it. Left it in the crockpot and reheated it 2 days later on the warm setting. Worked well since the meat absorbed some of the juices. Fell off the bone and pulled apart easily. Made great tacos with a pineapple slaw on top.

212 Just finished cooking (and eating) margarite (sp?) grilled cheese sandwiches.

Layer mozzarella, tomato, basil, mozzarella on rye (supposed to be sourdough, but I didn't have any). Season with garlic pepper. Coat outside with olive oil, and grill on the Blackstone.

Since it is so bloody expensive in restaurants, I used to go to the giant Asian grocery store in downtown, Uwajumaya. I bought sushi grade hamachi, ahi, clam, eel, salmon, black cod, just about anything I could find. Salmon roe and flying fish roe. Pickled ginger, wasabi and seaweed sheets to make our own rolls. Make sushi rice and serve with bowls of sprouts, English cucumbers, avocado and pickled radish.

For a fraction of the cost, we would eat sushi until it was coming out our ears.

231 After being impressed with what sous vide did for brisket, after 36 hours at 155, I am slowly coming around to the idea that sous vide might be useful.

After taking delivery of 5 lbs of lamb shank, which will go into a massive pot of Scotch Broth (5 lbs of shoulder will cook with the soup), I was preparing to simmer them to tenderness before stripping the meat from the bones. Then I thought: why not sous vide that?

After some reading, I've settled on 48 hours at 143.

Anyone know if it would be a bad idea to sous vide them in the vacuum bag they came in?

Yes. A bad idea. You won't be able to season the meat, so it will come out bland. And whatever seasoning you do use will just sit on the surface.

I am completely obsessed with my air fryer. I have a basket style air fryer. Looks like a giant egg, basket pulls out like a drawer. I try EVERYTHING possible in there now!! Last night I made a grilled cheese in there, and I will never do it the old way again! Butter each slice, assemble the sandwich (combo of American and provolone on Texas toast was the choice last night), 365 for 4 minutes, flip the sandwich, 365 for 2 more minutes. Perfect!!

Pro tip -- insert a toothpick into the sandwich while cooking the first side. Otherwise, the top slice can be blown off by the force of the air. Toothpick can be removed before flipping.

I use the Club Crackers, the original in the green box in my meatloaf, which begins with 2/3 ground venison and 1/3 ground wild boar. There are never any leftovers if I cook for a crowd.

262 Down here in Tejas, 30 minutes is *not* too far a drive for a good bite to eat, anytime. Galveston to Houston is 45 minutes, and that's on clear roads with light traffic.

As it is, I've gotta make the hour-and-twenty minute drive to FM 1960, just a bit North of Bush Intercontinental Airport, just to get a pizza worthy of the name. None such exists here in Galveston, sad to say.

Oh, and some of the best food in Texas, is to be found on a certain ranch some 200 miles North of Galveston. See you there in October!

277 Austin is a leftist hell hole but there are some excellent restaurants. Uchi sushi restaurant by Tyson Cole was excellent last time I was there about 5 years ago. Very expensive. But was one of the top rate in the country.

Prices are causing me to shred my own carrots. I mentioned my previous shredded carrot purchase was $1.99/package at HMart in Sept and then went up to $2.99 in Dec. Today, it was $3.99. This is 100% inflation in 6 months which annual would be 200%. It's why I bought starfruit - somehow, that hasn't budged from $3.99/package, so if I'm gonna pay that much, I might as well get something fun to cook.

If you see it, Rothman and Winter Orchard Apricot is the best. The Luxardo is also good.

The nice thing about Apricot liqueur is that it's actually used in quite a few classic cocktails from the "Angel Face" era. So, you can get good use out of it.

I have a Blackstone half griddle/half charcoal grill.

It's awesome. It definitely suggest making sure you have a good cover or else reseasoning the griddle every spring is quite the task.

Have checked out about 8 sipping rums now, various styles, quite a few more to go. Price and availability are issues.

Sipping rum I think is an exploding market in terms of demand, as more people discover it, but supply is more/less what it's been for ages, with a few new entrants responding to demand.

It's been yuuuge in Europe for years, including of course the UK. Think the American market is still in early stages of rapid growth.

346 One of best restaurant meals of all time was at a small (well, they're all small, that's kinda part of the formula) place in Kyoto, the nightlife area (Ponto-cho). Grilled stuff. Sat at the tiny 4-place bar in the back, right at the cooking area. Owner took care of us. Probably 3 hours there. Just kept sampling what he recommended.

The economics of Japanese restaurants are clearly from another planet. They're tiny, and therefore intimate and personal, owner/chef is usually the one cooking and serving. Restaurant eating in Japan is a joy that never gets old.

I have eaten the rabbit stew that my grandmother used to cook. It was excellent!

My grandfather also used to hunt squirrels. (My grandmother's squirrel potpie was also excellent.) His pro-tip was to NOT throw any old male squirrels in the pot. He said their flavor was strong and nasty. They were only good for skinning.

385 Nova local's slow cooker chicken way up-thread is about the same as one of my other favorite staples. When chicken thighs are cheap (I now get deboned/skinned), just pile 'em in the cooker with some dry spices and 5 hours later shred, reserve liquid, put back in, add favorite BBQ sauce/seasonings, add liquid to desired level, and viola. Done. Amazingly good. Cheap, and almost no "cooking".

417 Ben Had I think I just toss in smoked paprika, garlic powder, onion powder, salt/pepper (could be granulated garlic or onion, depending on what I have). Then a basic BBQ sauce (store-bought) at the end. All to taste of course.

But in the end you have a ton of delicious pulled chicken and have done zero prep and almost no cooking.

That is actually where my grandfather shot them when he was young.

When he got old, he would shoot them with a 20 gauge.

He used to give us a dime if we spit a pellet on the plate when eating squirrel or quail. That policy made it fun for young boys to eat wild game - and also lowered our consumption of lead!

I used to trap and shoot the gophers at my Dad's place when I was a kid; caught more than 100. Had a pellet gun with a scope (found the scope in some weeds at the back of the property). With that pellet gun and scope, I could hit a yellowjacket 30 ft away. Used it once to snipe a gopher that kept eluding my traps. When he popped his head out, I popped him; the pellet went in his head and out his ass.

455 So some sort of USA trucker thing starts Tuesday, rumor says. And here there was a long-term tradition of Luke Days, where every two years there's an open day at the USAF training base west of PHX with ground displays and air shows for a weekend..Big crowds. The last one got canceled due to Vid and there was supposed to be one this year next month. It just got canceled, reasons stated were financial, logistical and Covid. Not liking the implications of this much.

There was a case I know of where an illegal alien was throwing rocks at golfers. One of the golfers ran over him with his golf cart...several times...leaving him either dead or crippled. Long story short: golf club went belly up, became field of weeds.
