Food Thread: Young Is Good! (No, It's The Food Thread, Not The Lincoln Project)

We had a very nice dinner last night with some new friends, and for the occasion I decided to open a very old wine. While I am not a Bordeaux fan I have a few, and since they sometimes age well, I thought it might be interesting.

And it was, but it was clearly over the hill. And not by a a little bit! My guess is that I missed its peak by 15 years. That being said, it was still fun to open and enjoy with people who knew a bit about wine.

Unfortunately it isn't my last old bottle. I am one of those stupid wine collectors who made the reflexive assumption a long time ago that older was better. And even though I have had a huge amount of first-hand experience that strongly suggests the converse, I do not drink my wine young enough. And that is sad, because aside from a very few bottles, like Thomas Jefferson's collection, wine is meant to be drunk and enjoyed, not gazed at through glass.

Winemaking is better than ever, and both the technology and the farming techniques have combined to allow winemakers to make stuff that is excellent, without requiring quite as much age as the traditional methods produced for centuries.

"Yeah...so what?" Well, even if you aren't a wine collector or just keep a couple of bottles around for shits and giggles, I'll bet a fair number of you have been given a bottle of wine to celebrate some special occasion. So drink it. Drink it now! Don't wait.

On a completely unrelated note; is anyone interested in a bunch of very old wine that has been stored correctly?

Trust California to discover a new way to make life there even more of a pain in the ass. Food waste becomes California's newest climate change target. And the solution of course is to mandate recycling. Because mandates that demand solutions that do not yet exist are always the best way to reach a goal.

I wonder whether the greenhouse gases produced by composting and conversion into biofuel are exactly the same as those produced by simply discarding organic waste? It doesn't matter, because the mandarins in Sacramento and their masters at the various NGOs that drive so much policy in California have decided, and if their solutions are nonsense, well then they will pass a law!

Pork ribs are, along with beer, peanut butter and beef cattle, proof that God loves us and wants us to be happy. But which kind? I know that there are legions of otherwise normal, well adjusted Americans who for some reason like baby-back ribs.

In case you don't know the difference, the baby-backs are taken from the back of the pig, and the spare ribs are taken from the belly, near the bacon. Read that again...NEAR THE BACON!

So why would anyone buy baby-backs when for less money one can buy spare ribs? For a few reasons that I don't think are particularly important, but here goes. The baby-backs are smaller and more tender and do not require as much cooking. And...uh...that's all I can think of.

Spare ribs are meatier, have more connective tissue, and most important have more fat, because....come on...you know the answer!

I will now climb down of my pork-rib high horse and suggest that if you want to cook baby-backs, you try this recipe.

Crispy fried baby back ribs sounds like a crappy Chinese restaurant preparation, but it is a perfectly sound recipe that takes advantage of all the good things about baby-backs while minimizing the downside (less fat). I will try this in the near future and get back to you if I remember.

From commenter "Kathy" comes a nice looking marinade with a creole (Cajun? What's the difference?) flair.
Hot Sauce? I don't put it on any foods but do use it when marinating shrimp or pork medallions before grilling:

CREOLE BBQ MARINADE

1/4 cup butter
2 tbsp. creole mustard (or 2 tbsp. yellow mustard plus 1/4 tsp. Cajun seasoning)
juice of 1 lemon, strained
5 large cloves garlic, minced
1 tbsp. Worcestershire sauce
1 tsp. Tabasco sauce
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
1/2 tsp. salt (omit for shrimp)

In a small pan, melt butter on low heat. Add rest of ingredients. Stir until blended and warmed through, then allow to cool. For best results, apply marinade to shrimp (30+ minutes) or pork medallions (overnight). Peeling shrimp before applying marinade will make serving and eating less messy, but there will also be less flavor.


She then sent me a second email, warning me that the marinade looks sort of gross. Yeah...sometimes that happens, but looks can be deceiving.

Chicken cutlets for Chicken Parm or just for snacking or slicing onto a salad or into a sandwich or a million things. Check how much they cost at the corner deli and then reconsider the minimal amount of skill required to make them.

Oh, and they aren't frying at an insanely high temperature, so there isn't much spatter. And damn! They are great!

Here's a nice simple recipe for chili, and it has a bit of a twist...blending some of the beans to thicken it. I like little tweaks like that.

But you know? I can't recall a bad chili recipe. It's just good, pretty much no matter how you make it. Unless you you something weird like tofu or ersatz meat or some other abomination before the food gods.

Beef & Black Bean Chili with Chipotle & Avocado

No carrots though. Too bad, because they really add a certain je ne sais quoi to chili!

13 The only "old" bottle of wine I have is a 2005 amarone. My understanding is that amarones have to sit a good while to be drinkable. I've thought about busting it open and decanting it at this point.

14 I think I've found the best spice to use for dry-brining. Badia sriracha salt.

If you use it as a table seasoning, there's no real flavor; it's nothing but heat.

But if you use if for dry-brining... basically, coating your meat with it and putting it in your refrigerator for several hours... The heat dissipates, and you're left with the flavors of the garlic and chiles all the way through your meat. And it's very tasty!

I have learned buying a 2 year old wine and letting it age a year makes a big difference. But more than 5...it's taking up space.

I had a lovely bottle go vinegar a few years ago. I had popped it for a special dinner with friends and.... welll. Yuck.

The food of the gods.

Sauerkraut: A bag of Kissling brand, add a couple slices of onion chopped very fine.

Slice an apple in half, core it then plop the two halves on top of the kraut.

Remove apple after 30 to 45 minutes.

That's it.

I really like those steamed microwave veggies! You cook your meat, and then you need to let it rest... That's the perfect time to microwave some veggies to eat with it! The meat has to rest for at least 5 minutes, right? And a bag of frozen vegetables will take 5 or 6 minutes to cook. It works out so well!

So in the old day say 1996 to 2000 you could ride up to Jordan or Rafinelli and they would reach in the case and open a jug.

We would go by the store and buy some cheese and meat and bread for the people running the tasting room (shed) and they would sit and eat and talk with us.

I always bought enough so that anyone that drove up could have a bite too.

The kids ate them but only after being smothered in catsup and sweet relish.

So was in England in 1996 or 7. The G5 was in Birmingham out side of London. We went to the Swallow Inn right in downtown. I think it had 3 stars. I was running a division that was a companies number 3 or 4 customer the first year and we were on there card.

So we Jock (wtf kind of name if Jock) to order for us and he decides to sever us what Clinton would have then very next night for 100 pounds a head. WINE AND ALL.

So we burn through 3 bottles and Jock says NO MAS. We ask why and he say he need 4 bottles for Willie. I said I will take them.

I bought the wine they had reserved for Bill.

Dust with flour.
Dredge in egg.
Dredge in bread crumbs.
Fry.

I also seasoned everything, including the raw cutlets.

That's a 10 Year Tawny Port.

It won't age in the bottle, so drink it! And I'll bet it is going to be loads of fun. Tawny ports are usually delicious.

75 Dry Creek Valley runs into the Russian River road. People frequently use them interchangeably but 15 years ago or so Dry Creek became its own appellation. That's where Rafanelli is located.

Mixing up the dough for Italian Christmas cookies - four hundred different recipes if you DDG them but my version:
eggs, sugar, butter, flour, a metric half tonne of baking powder, clear vanilla. Mix, bake, ice, sprinkle, eat.

Best wine I ever had was a 1998 Vieux Telegraphe Chateauneuf-du-Pape. That happened to be a very good year for wine. The wine was so good that I wanted to lick the wine glass to get every last drop!

The bottle was given as a gift and I was advised to hold it for at least 5 years for best consumption (and provided a copy of a page from a wine magazine with that advice so I would not forget). Opened it in 2006 and it was absolute perfection. I still have the empty bottle as a memento!

It's a big deal now, but a long time ago it was just a bunch of wineries serving food and wine and maybe a bit of entertainment. Fun stuff in one of the best viticultural areas in the world!

One of the differences between the two cuisine types is that Creole food typically uses tomatoes and tomato-based sauces while traditional Cajun food does not.

Cajun is also, sometimes, referred to as "lowland" (as in poor) cooking as they typically don't use the seafood that's popular in Creole cooking... like shrimp.

My family has Cajun roots in New Orleans... thus our cooking tends to be "Cajun" influenced. Our gumbo is Andouille sausage and chicken... no seafood. Thus "lowland" style.

However I make an awesome Chicken Creole too.

Warranty long since gone I decided to call around and see if I could get my $2600 fridge fixed. No one can get parts because Samsung has a lock on them. Called Samsung expecting bad things and damned if they didn't install a new $500 ice maker, no charges for it or labor. Service tech came back a second time and fixed $400 worth of temp controls free. This time he charged $200 for labor which I figure is better than tossing the thing. Shock and awe with the customer service. I expected to be told to go scratch.

I gotta bottle that plum and marigold wine pretty soon. I do 5 gallon batches. Did 42 gallons of apple/pear one year. 2 cousins and i stayed high all that next fall and following summer! I put 8 gallons on the front porch that winter that saw minus 16 degrees. Made apple jack the old-fashioned way! This was the favored drink of men in Colonial America. No wonder they got itching for a fight with the British while in the alehouse.

My grandfather had bought a case of Jack Daniels sometime in the late 1950's based on the box, the tax stamp and the bottle label. Fast forward to the early 1990's after his death and we're rummaging through the attic and come across a half case of this stuff. The Whiskey had more or less solidified into Jack Daniels crystals on the bottom of each bottle. Nothing would fix this. However we did get some of those crystals out of a bottle to taste.

Horrible. Nasty. Barf. So, it's not just wine that goes bad.

Usually I buy this or that and drink it right away but I do have about 50 bottles of stuff ranging from Mad Dog 20/20 to expensive Italian and French reds and domestic small wineries like Falco out in Commifornia. I have found that after about 7 years the wine has been stored too long, corks go crumbly and the wine is like liquid ass.

I now try to drink a bottle now later than 5 years from the date on the bottle if I remember right.

I had a bottle of carmenere (sp?) at a winery harvest party I was invited to. That was good, I had never had that before. I was drinking a cab before so it could have not been that great. After the second glass of wine I really can't tell.
Some of the wineries here did not harvest last year becuase they were short workers.

No one drinks the Chard so I give it away or trade for a case of something else.

That's what the winemaker does here, but the wine is in the barrels for a year or more depending on the grape. They have to top it and they keep wine in carboys for topping.
the plug in the barrels is called a bung.
When it's first put in the barrels they have these bungs that have an hourglass looking thing on them and he puts vodka in them, those type won't fly out.
The bungs come flying out from something that I don't remember and it's my job to go check and find the bungs at put them back.

The whites got murky and barely worth drinking. The reds got better. But the Cabernet's became outstanding. So then the Pennsylvania Liquor Store System of effeminate males shut down for a couple of months because of covid and row after of cab savs were sacrificed.

It's a strenuous process to build back better, but I'm trying. From here on out, nothing but cab savs.

JEZEBEL SAUCE
15 ounces pineapple preserves
15 ounces apple jelly
3 tablespoons dry/ground mustard
1/2 cup prepared horseradish

In a medium sized bowl, thoroughly combine all ingredients. This will store well for several weeks. When ready to serve pour over a block of cream cheese, and serve with crackers (Triscuits are our favorite). Other ways to use Jezebel are as a glaze for ham, or as a dipping sauce for chicken nuggets or egg rolls. The pineapple preserves and apple jelly can be either store-bought or home-made using canned crushed pineapple and bottled apple juice.

Which would mean that the observation in the scriptural account that normally the good wine was served at the beginning of the wedding feast and the cheap stuff only after the guests had already "well drunk," but at this wedding the reverse had occurred, would make NO sense whatsoever.

Skip - Hit Canal 60 today. A ton of cars with Crossfit logos on them in the parking lot. I hear a bunch of people laughing at the top of this hill about 300 feet above the canal. What's the harm of joining them? So a mile through the woods and over all the overturned trees and slippery leaf covered slopes to the summit with a 20# backpack. Old Grandad is not awful, I don't think. I know it was what my, well, old grandfather drank, much to my amusement, and he could afford whatever kind he wanted.

210 I have a similar story regarding a bottle of 1977 vintage Port, which I finally opened this Thanksgiving.

It wasn't horrible or anything like that, but it didn't have that richness and deep decadent flavor which you associate with a good vintage port. Kinda light in flavor and texture.

So, perhaps it was just one of those not so great years or was past it's prime or a combo of both.

It was a gift so I didn't feel bad or anything. I also have a 1980 bottle of vintage port also a gift. Which I'll finally crack open at Christmas, so fingers crossed!

Amarones do not have to age to be drinkable, though they do pick up complexity with age. They have monster fruit and monster alcohol, and you want to get to them before the fruit recedes enough to make the alcohol evident. Open that sucker.

238 197 - we lived in Warsaw about ten years ago, and there was no problem finding fruit in the winter. If your house guest is from one of the more remote villages, it might be more difficult to find things beyond typical root cellar fare, but certainly in the larger cities, there is almost everything one could find here. Even some of the H-Mart stuff, because there is a significant Korean population in Warsaw. Our favorite mall there was Korean owned, as was our favorite Polish Pottery store.

I suppose I should mention at the top of the hill the wind was out of the WNW at about 20 mph, and with the 40 degree temps and wind chill factor the 'real feel' temperature was lower then Kamala's approval ratings and these Crossfit guys were in shorts and shedding their shirts like it was August.

242 Here's an excellent, sophisticated in taste cocktail which I found yesterday. It has some ingredients you may be unlikely to have, for instance the bitters can be found at Amazon.
But, this would be an excellent cocktail before or after a nice Christmas feast. Lush yet light- that's a tough trick. anywho, here it is.

Et Moi Je Te Dis Maud
1 1/2 ounces bas armagnac, preferably Marie Duffau Bas Armagnac Napoleon
1/4 ounce Yellow Chartreuse
1/4 ounce Maraschino Liqueur, preferably Luxardo
1 dash Mister Bitters Fig & Cinnamon bitters
DIRECTIONS
1. Combine all ingredients in a mixing glass over ice and stir until chilled.
2. Strain into a chilled Nick & Nora glass.
Follow the suggested ingredients if you can. This one's a real winner. And this is one of the few cases where the type of bitters really make a big difference.
Give it a whirl.

I wouldn't say that exactly.

It's more like this. George Dickel is a tightly quality controlled and blended product, so that it always tastes the same at an acceptable but mediocre/average level. Like a McDonald's hamburger.

PvW is also controlled but at a higher level. It's meant to be the best bourbon they can possibly make because it was originally made for family. So, it's more like a you making the best hamburger at home that you possibly can for your family.

Yeah, their both hamburgers but one is better and tastier at a much higher level.

Real answer is sometimes. Most wines today are made to drink better early. Some still improve over time but typically they are pretty high end.

There are KitchenAids and there are KitchenAids.

Our mixer is nearing 50 years old, very much American-built, doesn't get used a lot these days but works like it did the day my mother bought it, and it was an unusually luxurious purchase for her but she used the crap out of it for the first ten, fifteen years.

Our blender is also US-built, and the motor side of it works great...except for the crappy little rubber drive dog thing that strips out routinely. Fortunately they're cheap and fairly easy to replace. Oh, and the jar that has no useful pouring spout and wants to dump all over the place. I think they fixed that in later ones.

We've only got the one mixer, but for some reason my wife has accumulated four or five blenders, a couple of them utter junk. The Kitchenaid isn't junk but it has that one particular weakness.

Mine is about 25 years old. It does leak a drop or two of grease out of the planetary housing. Works pretty good but I've never been happy with it's slowest speed. Seems to spin a bit too fast.

On the other hand, a 40qt Hobart floor mixer would be a bit of overkill.

Wifey's company holiday party (owner's family is Jewish but damn near everything represented in management) last night...restaurant is a partner in the restaurant...salad was very good.

416 I think I've found the best thing for dry-brining steaks. Badia sriracha salt! If you use it as a table seasoning, there's no real flavor to it; it's pure heat.

But as a dry-brine seasoning, it's awesome! The heat dissipates, and you're left with that nice garlic and chile flavor penetrating deep into your steaks along with the salt.

I was raised in an American Baptist Convention church. They used to be the Northern Baptist Conv. after the split around the CW. Think ABC has since changed the name.

There was something in our 'church creed" that mentioned abstaining, it got much quieter when that part was recited, eventually it was dropped, maybe in the 60s or 70s.
