CBD and I were talking turkey the other night, such as it is.
He gave a great idea about pretty much freezing the breast meat before hand with ice packages. That was legit genius. I mentioned a bunch of ways to deal with a turkey. The one I forgot to mention was simply cutting the breast meat off 30 minutes before the turkey is done. It is sure fire if you want moist breast meat. The drawback is of course the Turkey is butchered, and no way will you get the brown skin and presentation. It is a simple idea that works. But his idea is better for fixing a complex situation. Upside down is good too, but still it can become dry and again, the browning issues. You are cooking something with three to four different needed temperatures to be done. I believe Sammy Hagar sold about 80% of his interests in the Cabo Wabo brand Tequila and whatever else that name was associated with back in 2008 or so. Then, sold the remaining interests in 2010? I think. He made about or close to $90M.

both are good ideas, but well known. The foil rarely does the job and then you have browning issues. Upside down is good too, but still it can become dry and again, the browning issues. You are cooking something with three to four different needed temperatures to be done. I get why some would say enough. I have been going for the perfect Margarita for decades, yeah I think I have it, but it wasn't for lack of effort.

I've has injected smoked turkey and it was melt in your mouth good. So good like meat candy. Someone at work brought it in and I've always striven to make it as good. I've got close with brined but I think the way to go is the cajun injection and smoking.

Ex wife lured ex husband to boyfriends house. She was late giving the son back and knew dad would be pissed. Said she wanted to talk to him at bf house. Kid was with grandparents. Husband shows up, starts an argument, bf uses it as a pretext to kill him. Bf is married to another woman (state judge). Ex husband was threatening to out the relationship if the wife did not stop her shit with his visits with their son. At the divorce proceeding, bf was more concerned about how quickly he could remarry, presumably because his new wife would not be able to testify against him. So, coming from white trash, domestic violence is something I've seen up close. Had an uncle who had a girlfriend who essentially was a common-law wife (because of course!) and fistfights and beatdowns were just part of their thing. She knew how to get him wound up and provoke him (which was not hard) and did it on purpose. It's all kinds of jacked up, but she experienced the ass-kickings as love. That's not right, of course, but some people really are that broken. Their wires are so crossed that they cannot have healthy relationships, at least not without unlearning a lot. They were together for many years but have long since split. If I had to bet, she's just with some other guy who smacks her around.

Got a frozen, brined turkey breast. Roasted/smoked on grill for 3.5 hours. Perfect. Not dry at all. Amazing how good it is, may be spoiled, if I can find frozen ones like this. No reason to do "from scratch". Boss likes it so much, already plan to do one again soon, possibly for Christmas.
For those with good gas grills, but not (yet) smokers, an amateur tip: poultry actually can pick up substantial smoke flavor in a grill. Usual drill. Indirect heat. Put smoker boxes and/or aluminum foil packets of soaked chips directly on whatever heat dispersal surface your grill has. Do several, so there's smoke most of the time. Put chicken stock, apple cider, and calvados in the pan underneath the bird. The drippings were amazing, added those to some store-bought gravy, bingo. Smokey, apple-y goodness in the gravy. Put chicken stock, apple cider, and calvados in the pan underneath the bird. The drippings were amazing, added those to some store-bought gravy, bingo. Smokey, apple-y goodness in the gravy.

Calvados was nearly the end of a no-name bottle I've had for years, used for cooking, and had neat last week (in my new exploration of sipping spirits). It wasn't bad. But I'm going to use it up cooking and get some much better stuff, which will be too expensive for cooking. I think there are "cooking level" ones out there I can get for that.
Oh, and forgot. Put a cut up apple, plus sage and thyme picked in the yard minutes prior, in the cavity of the turkey. Drizzled olive oil over the whole thing, lots of fresh ground pepper. SO, one evening he and 45's were at the video store (when they were still a thing) and In walks the Wife. Surprise! Well she went after him then and there - and he was big, but I knew her and she was a very muscular 250, easy. I mean she was a Big Girl. She caught him by surprise and knocked him through one of the racks - then he jumped up and grabbed her by the arms and tossed her through another of the video racks. Then she got up and came back at him! By the time they were done, they had laid waste to that ENTIRE store, every rack was down, every video box in that store tossed every which way. And hiding in the corner was the store manager, this 130 pound 21 year old white guy, shaking, trying to figure out what he's gonna do about the two insane sumo wrestlers who picked his store as their Battlefield. it's wrong, but that still makes me laugh today. Some things are just easy. Grabbing what's around the kitchen or the garden often works with poultry. Turkey's about as blank a canvass to paint on as you'll get in food, so it lends itself to this. Not having to brine the sucker myself (and it was only 9 lbs) is a big help. I actually don't always brine chicken but I always do with thin pork chops. Seems to make a big difference. The Lairds family gave the recipe to GW. There is an interesting history behind that. Today few drink apple brandy or Apple Jack. The first one is the better booze. Laird's has gotten mixed reviews at the HQ in the past. But it's price is good and I think it's quite tasty. I like calvados, but I think Laird's is as good or better than many calvados I've had.

Apple brandy died in this country well over a century ago as a main go to. Hard cider was crushed because of prohibition and some cultural factors. The Germans came in and went with beer. But Hard cider is coming back and has been for two decades. Laird's Apple Brandy is still around but for sure a niche product. yet it is way older than any famous whiskey distillery in this country.

Quint that's a great tip. Apple brandy was sort of the first big American spirit. I'll look that stuff up. The Normandy style of calvados will be interesting to compare to American apple brandy. Calvados can have pear juice as well, but I would like to get a 100% apple version. Pricey, but it's brandy, won't consume it very quickly.

Not having to brine the sucker myself (and it was only 9 lbs) is a big help. I actually don't always brine chicken but I always do with thin pork chops. Seems to make a big difference.

It's a hot mess, alright, but will probably end up being ruled a good shoot because the deceased was bigger and more aggressive than the shooter, he grabbed the gun and screamed that he would take it from the shooter and kill him with it, and he was out of control.
It probably will, because the dead guy grabbed the other guy and slung him around, pushing him away. That's when the other guy raised the gun and shot him. I actually didn't get the impression that the dead guy was actually a threat, he seemed to me to still be in chest beating pushy pushy mode, but I'm sitting here watching onscreen, not in the moment. If somebody physically grabs you and throws you around after threatening to kill you, I'm betting that reaches the standard of imminent threat. From a tactical standpoint, the dead guy was an idiot. He was inside the radius of the gun barrel, there was no way the other guy could have shot him, and he pushed the other guy away, which gave him the clearance to raise the rifle and fire. All that being said up at 360, I'm not convinced that the shooter didn't set the dead guy up, or at least maneuver him into a situation hoping to shoot him. He's much too calm afterwards, and the dead guy's ex, shooter's current GF, stayed well clear of the pushy pushy which is, I believe, NOT typical in cases like that. I wouldn't be surprised if it comes out that he told her "I'm gonna kill that SOB if he comes around here again, make sure you stay clear" or something of the sort, which would explain his eagerness to marry her to keep her off the stand. *IF* such testimony comes out - and I do not know that it will, I know nothing of the incident beyond the video and news reports, so I'm not even saying that it's likely - then it goes from self defense to premeditated murder.

Laird's has gotten mixed reviews at the HQ in the past. But it's price is good and I think it's quite tasty. I like calvados, but I think Laird's is as good or better than many calvados I've had.
