Thanksgiving Cocktails [Bitter Clinger]

If you want to create cocktails and think like a bartender, you have a couple of options. One is to become deeply knowledgeable in all the finest products available, experiment and find what optimizes existing cocktails. The masters do this, guys like Chris McMillan, Dale DeGroff, and David Wondrich. They have nuance and refinement. They stand on the shoulders of the great bartenders of yore, the Founding Fathers of bartending, like Jerry Thomas and Harry Craddock. These guys are the Rembrants of the industry.

But then you have bartenders like me. I’m the Dogs Playing Poker on crushed velvet of the industry. So when I create cocktails, sometimes they have elements of skill to them, but I mainly want them to be fun and tasty, even if they are not always exclusive and refined.

One way I like to create new cocktails is to think of food or flavors that are reminiscent of a particular theme I’m developing drinks for and see if I might be able to deliver those flavors in cocktail format.

For Thanksgiving cocktails, there are plenty of iconic dishes to be sure. But I’ve no desire to create anything to do with pumpkin pie or cranberry sauce. They are both done to death and there are great drinks out there that deliver on those flavors. Well, at least cranberry, anyway. Pumpkin spice can DIAF.

Turkey and dressing seems a bit too savory. I suppose a cocktail onion and pickled green bean garnish might make a green bean casserole martini, but that seems rather unpleasant as well. Mashed potato and gravy daiquiris, umm no. But pecan pie and sweet potato casserole…hmm. I can work with that!

If you are into simplicity, the may be for you, no muss/no fuss. Or if you are a bit more adventurous and don’t mind doing a little prep work, the Yam, What I Yam is a fun little cocktail that might give your Thanksgiving guests the impression you know a thing or two. If you make these drinks, I highly encourage you to eat the garnishes as you sip on the drinks, they really add something to the flavor and aren’t just for show.

If these look inviting, give them a try. But whatever you do and whatever you drink, have a great Thanksgiving!

Pecanhattan


  • 1.5 oz Rye Whiskey (I used Rittenhouse)
  • 1.0 oz Select Club Pecan Praline Whisky
  • .75 oz Carpano Antica Formula Vermouth
  • 3 dashes Fee Brothers Black Walnut Bitters

Stir with ice for 30 seconds and serve up with a cocktail cherry and candied pecans.

Yam, What I Yam


  • 2.0 oz. Marshmallow Vodka*
  • 1.5 oz. Sweet Potato Simple Syrup**
  • 1.5 oz. Half and Half


Shake vigorously with ice for 10-15 seconds, strain fresh over ice and garnish with a dusting of freshly grated nutmeg and some charred mini-marshmallows.


* To make marshmallow vodka, simply put mini marshmallows in a jar and cover with vodka and allow to sit overnight, shaking occasionally. Make as much or as little as you like. Strain the finished vodka and store for use.

** To make sweet potato simple syrup, bake a sweet potato at 400 degrees until it is soft. Scoop the pulp out of half of it, combine with 1 cup of water and a 1/2 cup of light brown sugar and simmer on low heat for 30 minutes. Puree the mixture until smooth and strain through cheesecloth.

I can't think of many Thanksgiving cocktails. I do like the Cape Codder, which is based on cranberry juice. It is a funny drink that I am sure a bartender could expound upon. Even though I know too much about booze, I am no bartender. The Cape Codder is vodka, cranberry juice,and fresh lime. A cool drink and certainly in the Turkey Day realm. The funnys thing is, if you just add a bid of triple sec, and put it in a martini glass, you have the Cosmopolitan of Sex and the City fame.

Again,my wine picks for T Day are Pinot Noir, Bordeaux, and after that,whatever the Heck you want.

67 I have never seen black walnut bitters. Then again, I've never looked for black walnut bitters. I used to really, really like Manhattans back in the 90's, that was my go-to after work sedative.

One bourbon based drink that sounds awful but is really tasty is something I had at the Majestic Cafe in old town Alexandria. I haven't been in 13 or so years, but they had an awesome menu and mixed prohibition era type cocktails and had mostly 90-100 year old distillery hooch. The "Clinton" is really simple, IIRC it's 2oz bourbon, 1oz. lemon juice (should be a very lemony bitter one like a Eureka, not Meyer) and 1oz. dark maple syrup. Somehow, the lemon and maple cancel each other out, and the bourbon still stands out quite well. Dangerous with a capital D.

So I just made my own.

And your gonna mock me for it, but that drink is really good. I tried it out on some bartender friends that gave me a sideways look, but they smashed it and asked me for the recipe.

Everything the media has said has made this seem like a slam dunk GUILTY. Living through the Zimmerman and now the Rittenhouse case last week, I think Not Guilty may be possible. I do not know Guilty/Not Guilty for sure.

If they come back with a not guilty verdict? Look out for madness. This case has huge Racial Issues.

Marshmellow one is the yam cocktail. The other is the pecan one. They have moved around a few times. We are viewing this page in new "Drunk View" it's like 3D but instead of an extra dimension you're sloshed.

I think they've flavored vodka with everything at this point. This could be a good one - not sure what I'd mix with. I'm not a fan of sweet booze most of the time, but done right that might be nice.

One of my favorite things to do when they're available, the champagne mangoes make insanely great infused vodka. They're not too sweet, and lend it a nice golden color that's very, very drinkable. Now that I've discovered 5 Column, that'd be my choice - the cleanest vodka I've ever tasted. I've used regular mangoes, but they're sweeter, require straining and you've got to be careful the mangoes don't ferment themselves, giving the vodka a really nasty flavor. They don't seem quite as stable as the little champagne ones.

Back when I had my office in Palo Alto, the market around the corner (Molly Stones) had this hippy that made carrot juice (as well as orange/grapefruit/lemonade IIRC). I was honestly addicted to that stuff. It was SO sweet and thick and rich - like a vegetable milk shake. Then they had the whole people getting poisoned by juice thing (the Mexicans in Watsonville couldn't make it to the space shuttle) and started cooking everything, and they stopped carrying that juice. Naked and Odwalla couldn't touch it. If I was ever tempted to get a juicer... Juice has never been the same.

But carrot juice as a mixer - I'm just not seeing it.

Well there actually is already a shot called a carrot cake. Its Goldschlager, Baile's Kahlua and Butterscotch Schnapps in equal parts.

But if I was attempting one with actual carrot juice...hmm...it'd probably be all about proportions.

Maybe make a simple syrup with clove, cinnamon and nutmeg. Carrot juice, syrup, maybe a vanilla vodka and spiced rum in equal parts. I dunno, I'd have to play with it.

250 Pizza crust: makes 2 -10in or 1 half sheet tray
3.5 C AP flour, 1.5 T salt, 1 t sugar, 2 T olive oil, 1 and 1/3 C warm water (110F), 1 envelope yeast (Rapid Rise)
Add the yeast to water, stir and set aside until bubby (5 min or so). In the bowl of a good mixer, use the dough hook, mix flour, salt, sugar and olive oil. Stir in the yeast water. At medium speed, mix until well combined. Reduce speed to low and mix for 10 minutes. Now, oil a bowl with olive oil. Roll the dough into a ball. Place the ball in the bowl and brush the top with more olive oil. Wrap plastic wrap on the top of the bowl and let rise for 2 hrs in a warm place. Done - spread out on tray and spread out with fingers. Add toppings as you see fit - bake at 475 for 10 or so minutes.

When my wife was growing for the farmer's market (yes, we had a county approved garden) she grew blue lakes and would let some get to exactly the length of a ball jar. She'd make "dilly beans" specifically for bloody marys. That, celery and a strip of thick-cut crispy applewood bacon and the hangovers weren't so bad.

Pour all of those into a pint sized glass filled with ice. Add OJ to fill. Stir.

Sometimes I add a little cranberry juice and/or club soda. Whatever works for you!

A friend of mine gave me a box of unopened booze left over from a party, there is a bottle of chivas in there, and there is a fireplace in the new house I haven't used yet. I may have to try your recipe. lol

257 A guy earlier today told me he thought Glenfiddich was too peaty. I didn't have the heart to tell him it had no peat whatsover. JWB has way more peat than Glenfiddich. Some vs none at all is more.

Be wary of discount Long island Teas. they are usually made with a LIT blend from Barton's. You get an ounce and a half of cheap LIT pre-blended spirit.

You probably prefer the hand poured, which is vodka, rum, gin, silver tequila (debatable among bartenders), and triple sec. .5 oz of each. Then generally an ounce or so of sour mix, shake and top with coke.

I would suggest boiling the shrimp, making a remoulade sauce, dip the shrimp in the sauce, eat it, and take a sip of you favorite beer.

yeah no doubt, I did see them pouring 4 bottles, 2 in each hand, into the glass in this one place, and they were killer. The place limited you to 2, no more, and for good reason, lol. I'm guessing that would be white rum? I see that mentioned.

Yes, we call it the white trash drink, because it generally has all the white liquors in it.

Some people debate whether the inclusion of tequila is proper. But the original, created Robert "Rosebud" Butt, had it in there, so thats the classic.

We used to make a Bloody Caesar with two boiled shrimp and an Old Bay and salt rim as the garnish.

Its similar to a Bloody Mary, only made with clamato juice instead of tomato juice. If you can find Walter brand Caesar mix, they make a fine product. I think during the holidays they make one with lobster instead of clam juice. Tasty!

272 My manhattan: .75 oz Carpano Classico vermouth (or .5 oz Antica) 2 oz Jim Beam, 2.372 zotz Peychauds bitters, 1/2 tsp maple syrup. Real maple stuff only, stirred only, steel vacuum thermal cup to keep it cold.

LPT; drink in moderation to avoid excessive chest hair and testicular gigantism.
