Food Thread: Family, Friends And Pecan Pie...But Mostly Pecan Pie...And Family And Friends!

The pecan pie is the highest expression of the pie-making art, and it is uncomfortable when well-meaning people tout silly and pale reflections of pie as somehow superior.

I won't even discuss the lowly pumpkin pie, which reminds me of nothing more than the goo that seeps out of a broken sewage pipe or the remains of the vegetable bin after a 10-day blackout.

You apple pie people may have a point, but really, the best part of any apple pie is the crust, so just climb down off that high horse!

Blueberry you say? Yes, I will grant the glory of a well-made blueberry pie, but on the second day it is a soggy mess, while my pecan pie is a wonderful accompaniment to a great cup of coffee. And bacon. But that doesn't even have to be said.

Key lime and Boston cream and...um...other pies are certainly good eating, but for sheer pie power and authority there is nothing quite like American pecan pie served after a sumptuous Thanksgiving dinner.

[Here's my go-to recipe...probably from Cooks Illustrated, but I don't remember]

Thanksgiving Dinner is quintessentially American (even if America's Hat tried to steal it), but it can be overwhelming if not seen for what it truly is: an opportunity to join family and friends for a day of pleasure in each other and in the still undeniable glory of living in the greatest country in history.

So don't get caught up in the details. If your turkey is overdone...so what? If the potatoes are lumpy and sticky...so what? If nobody brought a pecan pie and you (horror of horrors) didn't bake one...so what? If the ice cream melted and the oven broke and you have to eat scrambled eggs...so what?

It is the pleasure of the day and the people around you that matters (the meal is a delightful, or not-so-delightful bonus). And if that is everyone in your world, good for you. If that is just you and one or two others, then good for you. And if you are alone but not by choice, then next year come to my house for Thanksgiving, or to the many Morons who frequent this crazy place who would be honored to have you at their tables.

It's from "Eater," so it is almost guaranteed to be a supercilious, tone-deaf, pompous diatribe on an issue about which literally no sentient being gives a shit.

You don't like banquettes? Fine. Then don't f%#king sit in them. But no, like all budding fascists, the soft left insists that the market accommodate their every whim and desire, including imagined ones from their preferred grievance pressure groups, in this case people in wheelchairs.

Yup...that's a cauliflower gratin, which will be front-and-center on my Thanksgiving table. Well...the one I will be making this week will be twice the size of the one in the photo...because contrary to what shiv-mistress Bluebell may think...everyone loves cauliflower!

The recipe is simple. Make a Béchamel, then put way more cheese than you could possibly imagine into it until it melts, then dump it all onto the cauliflower florets that you have blanched. Mix it, plop it in a baking dish, and cook until it's nice and bubbly and toasted.

Avocados sans thumbprints, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

20 I asked about induction because we live in an all electric community. We both love gas, but that is not an option. And with Frigidaire coming in at under $1000.00 for a freestanding induction range, I expect better quality, more full featured units to start coming in at far less than the original 8K plus when they first started to appear.

26 What a beautiful looking pie. Mom used to make a poor man's pecan pie with peanut butter, started when pecans were expensive for folks living in the wilderness of ND. It is a tasty pie and would probably work great topped with pecans, but the pie did want to boil over if pie pan was over filled or oven temp was too high.

The cauliflower gratin looks good. But even though I use gravy for the turkey pot pie after the big meal still need smashed taters to go with the gravy.

34 I can see the eye appeal of big chunks of corn bread and chopped veggies.

But our cornbread dressing is a homogenous blend of finely crumbled cornbread, DICED onions and celery wilted in bacon grease (or chicken fat), finely smashed hard-cooked eggs, seasonings and chicken broth. Lots of chicken broth. It has to sit overnight in the fridge to absorb it.

So, not as pretty, but very delicious.

36 As a native Texan I should love pee-KAHN pies but I don't. I can make a good one that's way less sweet than most, but after I've had a tiny slice with whipped cream, I'm done. I can't imagine having most of the whole darn thing staring at me the next morning.

I make pumpkin and apple for T'giving dinner. If it were just husband and me, I'd leave the peels on the apples--sliced mandoline thin--but for the kids I peel them first.

Rarely eat pie at all but love chocolate and key lime. Husband loves lemon meringue...which my dad did also interestingly enough. They're pretty different otherwise.

I started to read the, Eater, article.
First issue is that it's NYC centered. I don't know how many restaurants there have all banquette seating. If I were in a place to eat, needed accomodation, I don't, and they refused, I'm outta there. Anyplace that at least makes the effort gets a better review.
I have to wonder, do these people ever go anywhere?
Do they just sit in their little bubble of smug and think that because they're always encountering asshoes that people they've never met are as well?
Just reinforces my lack of desire to ever go to NYC or environs.

51 The wife and I love our induction. We are an all gas household, but the induction allows for pretty good control. We use the heck out of it in the summertime so the house stays a little cooler. Plus we have a portable unit, and will use it in the Airstream, allows us to keep the cookie closed to save space.

55 Turkey brining is not sensitive unless you won't be able to keep the brine about fridge temperature. I usually brine about 24 hrs, One year I decided to wait till Saturday to cook the bird and the extra 2 days didn't hurt it a bit.

Usually my turkey is still somewhat frozen and serves as its own ice for final cooling of the brine after heating the salts and herbs.

Turns out it only needs to attract a magnet in order to work.

Our hard aluminum won't work, but the tri-ply stainless will work fine.

We've done wet brining in the past with no trouble. Put it in a 5 gallon Home Depot bucket, and left it on the porch for a few days (temps around here at Thanksgiving time are in the thirties). Now, if you live where it's warm, then you gotta find a way to keep things cool, which is more of a hassle.

That said, this slander against pumpkin pie must not be allowed to stand, sir. Our seconds shall meet at dawn. Weapons shall be the cream pie of your choosing.

We have one from "DuxTop." I presume it's Chinese. It's bulky but my wife tells me it's sturdy and won't transfer heat to the counter, which might be an issue if you have a material that could crack or melt.

It also has a cooling fan.

Very fast and holds temp well.

90 Pumpkin pie is good, how could someone not like pumpkin pie? Also, it's a great means to deliver whipped cream into your primary face hole. Yeah, you could just whip up a batch and grab a spoon but that would be uncouth. A piece of pumpkin pie though and you can have fun seeing how tall you can pile the whipped cream. Anything less than 3.5*T where T = pie thickness and you are not trying.

101 I have had a portable induction cooktop for years. It's very handy and heats up well with little heat around it. You do have to have a certain type of cookware. Cast iron and most stainless steel will work unless the stainless has high content of aluminum or other metals that lack magnetic properties. Glass and ceramics won't work.

We lived in an all-electric area and were planning to get an induction cooktop, but then we moved. Now have a gas cooktop that I love but I'd definitely consider induction if I were stuck with just electricity again.

I have an induction oven but I never use that setting. Plain old bake or broil for me. It just seems to be a 'feature' which is nothing more then a fan that facilitates heat transfer.

Since using the oven for most anything is like #4 or #5 in my cooking methods I don't care.

I don't know how she did it, but within my lifetime, Grammi baked pies and cakes in an outdoor masonry oven. She did this until they bought an electric oven in the mid 60's. How she regulated the temps and baked proper baked goods is beyond me.

This week I decided to splurge on Grand Marnier Couvee Louis Alexandre which is 30 dollars more than the standard. The Louis Alexandre version uses a higher percentage of cognac and the cognac is VSOP. To my surprise, even though the amount of cognac is higher, the orange and other elements come through stronger. The stuff is delicious. If you like that kind of booze, it is worth checking out.

Hmmm. Don't know what to tell you there. Years ago, they used to sell strips that you would wet and put around your layer cake pans to help the layers cook evenly without getting a peak, but I don't know about anything bigger.

Wilton makes 'em. And you can get long ones for bigger pans (also, you can pin them together). You can also get these metal things that you stick into the center of the cake pan, so that the heat gets to the middle quicker. I've heard people use an inverted flower nail for this purpose as well.

I grow Concords and there are two problems with using them, the skins are tough and the seeds are always there. You can stone them, but that takes forever!!

After I press I use the skins and seeds left over for jam, but I heat them up to boiling to get the last of the juice out, and then I run them through a food mill to press the pulp through but keep the seeds and skins back. It works the best for me.

My mom ran a scientific experiment one year and made three t-day pecan pies using three different ingredients, one was corn oil, one was maple syrup-based, and the third used molasses. The results were inconclusive though because all three pies turned out unbelievably good. My mom was a pecan pie master and I will never taste as good as the ones she made.

My grandmother grew up on a farm in Quebec circa 1900 and would have done all her cooking on/in a coal or wood burning stove. I can only assume she was taught how to regulate the heat as needed and to keep track of the progress. She must have regarded her gas oven as a modern miracle.

The Townsends channel on YT has several videos of making an outside clay oven and baking in it. Sort of an 18th century wood fired pizza oven in the backyard. The results can be fantastic but there is a learning curve.

I was told there would be no math. I have an induction cooktop. It sucks donkey balls. Cannot get my waterbath canner hot enough to boil for something like an hour unless I use two burners and even then it takes forever. Putting in a gas range as this winter's project. Tossing the old one in the trash. I wouldn't wish it on anyone else.

Looking at the crust, my guess is that the cook used a sharp knife to make a single cut at an angle at intervals through a fairly thick edge. Maybe a bit of a twist to the knife when applying as well.

I have always used a whole egg just broken out of the shell in a small bowl. Drop it in whole. I use a stand mixer but used to use hand mixer. When they are a few minutes from finished drop the egg in. Just a slight change in color. Nothing unappealing. Sorta like using yukon golds for mashed taters.

After last week's recommendations, I decided to avoid fancy touch screens and bluetooth in favor of reliability and bought the Greater Goods Kitchen Sous Vide (1100 W model). All controlled by spinning and pressing one knob, a la the Pit IQ120 controller paradigm.

I put it through its paces in my Igloo cooler to see how it heated, time to temperature, etc., etc. We're ready to cook.

On a typical seven day week, my sous vide is used at least five of them. But I'm a guy, and inherently lazy, and only focused on the highest possible positive results with the least expenditure of time.

Other people who disagree have cooties. I learned this early in life and never forgot.

298 I think the crust on that pecan pie is a folding over technique. Kind of like you make too much crust, so you fold it over double, then trim off the excess before it goes in the oven.
Brush it in egg whites for that nice glaze.

I grew them in WI. They just plain grow, and then you pick 'em, cut 'em in half, cook 'em on a cookie sheet until they are a bit browned and then scoop out the flesh and put it through the Foley. Makes delightful pumpkin pie.

Five ingredients: cherry pie filling; Eagle Brand; crushed pineapple; a thawed container of Cool Whip. It's actually much better than it sounds. Made it once myself for Thanksgiving and son's upper midwestern in-laws went for it big time. Ex's family was from Michigan so maybe it's a midwest thing.

Pumpkin pie ice cream pie is my family tradition. And it didn't end when I got dairy allergies - now, it's vanilla coconut ice cream swirled with vegan coconut caramel and pumpkin pie mix in a graham cracker crust, then sliced and served with more caramel and coconut whipped cream. So good! And takes 10 minutes to make the day before - which is priceless.

It's the only dessert we serve and eat.

You'll have to spend 2-3x to get a better smoker than a WSM. When you've learned to use it well (and it won't take *that* long), you'll have people asking when they can come over.

And you may not ever need/want to go beyond it. A number of pro BBQ teams cook on them. (Some cook on semi-custom $20-50K smokers, for comparison.)

A WSM, a Weber chimney charcoal starter, some *lump* charcoal (avoid Cowboy brand, it's crap), some smoke wood chunks (I'd recommend pecan), and a thermometer or two are all you need to get started.

I have 3 WSMs (of varying sizes), an actual Kamado, a large pellet grill, and a couple of homemade smokers. I'll be doing our 16 lbs. Thanksgiving Wagyu brisket on a WSM.

394 I grow Concords and there are two problems with using them, the skins are tough and the seeds are always there. You can stone them, but that takes forever!!

After I press I use the skins and seeds left over for jam, but I heat them up to boiling to get the last of the juice out, and then I run them through a food mill to press the pulp through but keep the seeds and skins back. It works the best for me.

The instructions were to pop the insides out and cook the innards, then sieve to remove the seeds, then combine back in with the skins. It also called for just one cup of sugar, and it seems to me like that won't be enough. I love Concord grapes, but there is a bitterness in the skin that will make this an interesting experiment. It sounds like I should somehow chop the skins up a bit, too.

Years ago, I ran across a book with a title something like "Dr. M.....'s 7 day allergy relief diet" which recommended cutting out major food allergens for people like that and doing a 7 day rotation on remaining "minor allergen" foods. This often entails eating strange "staple foods" the kid has never before eaten, as from a health food store. Things like millet and quinoa.

Also, look up "leaky gut" for clues on how to manage. Might have some clues.

Alka Seltzer Gold (no aspirin) or baking soda are good to have on hand in case the kid starts to feel a tummy reaction to something he ate.

Yeah, it is sad. The father had taken it over when his father died so it had been there for quite a while. I think they had 2 other locations in the burbs. There were 4 kids, 2 became dentists, 1 a lawyer (husband to my friend...well ex husband now) and I don't know what the last son became. He was the one I would have thought would take it over.

Leastways in the big city (far north Dallas in this case), there are restaurants that do a Thanksgiving spread. My wife found one by poking around on the web, so we did that one year when no one was really up for cooking.

The north Texas version of this contains cream cheese and chopped pecans. It was on the salad table at every church potluck I attended as a child, because of course salad consists of sweetened condensed milk and cool whip. It can be frozen in muffin liners and thawed a few hours before dinner, which makes it handy for large gatherings.

I'm less offended(?) by ketchup on a steak than I am by ketchup on a hot dog.

A hot dog is a sausage and by definition the proper accompaniment is mustard.

Mayo or ketchup on a hot dog is a pitiable, low-class blasphemy.

Whereas ketchup on a steak is just a choice of one of many sauces available. That being said a steak should be grilled perfectly and seasoned well enough that a sauce is not required.

Ketchup on steak = cook fail. No blame is accrued by the steak douser is order to make a poorly prepared steak edible.

It's harder than it should be to find good lump charcoal. A friend called me a few years ago for some 'Q counsel. After listening to his woe, I said "You're using Cowboy charcoal, aren't you?". He was astounded I that I knew that.

I tried some stuff that Costco had a couple of years ago in a red bag from somewhere in South America. It burned well, but the flavor was ... quite off.

Big Green Egg brand has worked well for me.

Here's an Italian Beef recipe I've been making for years in the slow cooker. Different in that it's so tender it's hard to slice so I just shred it and the meat stays tender from sucking up the juice.

Yes. We had a food emergency one year when one of the Goldens got the turkey. We ended up at a local restaurant that did a nice Thanksgiving dinner. Not home cooked but not bad.

That's *exactly* what I'm using right now. Back when I bought my kamado, the local hardware store stocked the Kamado Joe and Primo brands (I used the KJ). They stopped stocking it and I've grabbed the lump charcoal from the All About Spas place in Roswell, NM for some years now.

With my allergies now, cherry pie is also my favorite pie, b/c I can eat it as is, and cherries are the bomb.

My old favorite used to be key lime pie - the sour sweet combo is always my favorite (followed by sweet/salty, but not a lot of pies can do that). However, I haven't figured out how to adapt key lime pie to my allergies, like I have my pumpkin pie ice cream pie...

If you can't make it to town this is an ok alternative but amazingribs dot com had a recipe that's based on Al's beef in Chicago. There are really three Italian beef joints in town, the rest are trying to be one of them. Not bad, just not as good. Al's, Johnny's and Mr. Beef.
Anyway, I picked up a Globe meat slicer off a deli that closed and the slice... that's the hardest part of getting the sammich just right. If you can get the slices right the recipe is on point.

Truth. And for the very best apple pie, use a variety of good baking apples. The flavor is best with a mix (try for three), not just one variety. Empire (RD is actually one of its parents), Rome and Jonathan is a phenomenal mix. I like it so well, I planted a tree of each on my property.

509 I saw an interesting recipe for Prime Rib on Masterclass.
Blow Torch Prime Rib:
1) Season prime rib with lots o' salt
2) Light blow torch and brown outside of PR till it looks cooked
3) Slow cook PR at 275* in oven for IIRC roughly 2 hours.
4) Use instant read thermometer to look for PR interior temp of 128*
5) Take PR out of Oven and let rest for 30 minutes
6) Slice PR and observe that the PR is cooked perfectly to Medium Rare and super juicy throughout the entirety of the meat.
The reason this works so well is 1) blowtorching seals the juices inside the meat and 2) the slow cook prevents over cooking outside layers of meat.
But, now The Failure:
I will not be using this method because the low temp does not render the fat required for the Absolutely Mandated By Cooking Law for Yorkshire Pudding.
However, if you're one of the benighted who doesn't make Yorkshire Pudding with your Rib Roast, then this seems like a no-brainer win.
Try it out.

Homemade pumpkin pie is made with these.
Libby's canned pumpkin (as all the big canneries) use a variety, a verynold variety, called 'Dickinson'. 3-8 pounds, oblong like a football, buff-brown color.dry flesh, few seeds and little fibrous stringy stuff. I grow some every other year or so for pie. I like it just barey cooked (u MUST add salt while cooking pumpkin, and it only needs about 6 minutes at the boil or so) i drain and add a.little butter and pure maple syrup. (Homer Simpson sounds. Brown sugar will do in a pinch.

Never met a.pie i did not like. Personal favorites are wild blackberry. Raspberry is a close second. This year my border bushes yielded 4 gallons of wild raspberry. Made two pies and froze 3 gallons.

521 We are having pecan pie (pee-can not pikhan) and pumpkin pie. My pumpkin pie doesn't resemble anything that comes out of a sewage pipe. It's fabulous, creamy and sweet and filled with cinnamon/nutmeg/cloves/allspice and ginger. Covered in whipped cram for serving. Anything left over will be eaten for breakfast.

If you want charcoal and you are willing to make it, look up a project called top-loading upward-draft stoves (TLUD)
They were developed to make wood gas for cooking, but the Permiculture people like them because the byproduct is biochar (charcoal). And you can use yard debris or tree service chips, or whatever wood you like to make the charcoal.
The equipment can be as simple as a couple of large nested cans to a very large Adams biochar retort that can be the size of a shipping container.

Dad liked oysters so Mom would buy them in the glass jars, she didn't like oysters but she would use the jars to can jam. They were 10 oz and were bigger than the standard Ball jars, and free.

I have the same criteria for buying pasta sauce, I much prefer the stuff that comes in the standard mason jar sized mouth.

596 Regarding induction, we have a Frigidaire induction range and it's been fantastic. If you're familiar with how gas has faster and more precise control of temperature over electric cooktops, induction is like that again over gas. I'm a fairly crappy cook, but it makes me look like CBD.

The one downside is that not all pans work with it - copper and cast iron are generally OK, but other materials can be problematic. Most modern cookware says on the label if it's induction compatible or not.

You're sure it's induction? That all sounds like a conventional electric heating element stove. My induction range is none of those things.

Haven't made one in ages but, the last time I did, I warmed all the filling ingredients in a saute pan on the stovetop while getting the piecrust rolled out and placed in the baking dish (and also while waiting for the oven to reach temp). It shortened the baking time -- which kept the edges from over-browning -- and didn't seem to cause anything detrimental to the crust bottom.

Back from shopping. Some empty spaces and shelves. Mangoes and, oddly, egg roll wrappers, are nowhere to be found. Really, egg roll wrappers?

On the plus side, my favorite store was just putting out a load of Snake River Farms pseudo wagyu ribeyes at $15 a pound. Sold American!

Thanksgiving dinner shall be baked brie with a homemade mango cranberry chutney assuming I can find some mangoes, unfrenched rack of lamb with mushroom risotto, and pumpkin pie turon rolled in cinnamon and sugar. Assuming I can find some egg roll wrappers. NomNom!

1 Cup sugar
grated rind and Julce of one lemon
2 eggs, separated
2 T. melted buttar
3/4 tsp. salt
1 cup milk

Mix sugar, flour and melted butter. Add
lemon rind and juice. Blend In beaten egg yolks and milk. Fold in well beaten egg whites. Bake at 425° for 10 minutes then reduce oven to 350° and continue baking for 25 mlnutes.

Texas style:
Go to Tractor Supply and buy a 22" disc. The disc are replacements for worn ones used to "disc" a field for planting.
Weld the hole in the center closed.
Weld a couple of X-tra EZ number 4 horse shoes on or bend some rebar for handles.
Set on the turkey fryer propane unit.
The interior has some nice smooth ripples that hold a little oil on the sides when stir frying.
You might be able to feed the horde at a TxMoMe.
