The FDA investigators also observed live and dead insects on food packaging, as well as apparent bird droppings in the food storage area. So far...so good. The hardworking government inspectors actually did their jobs and discovered -- over the course of three weeks -- numerous significant health risks and disgustingly unsanitary ("insanitary? Huh?) conditions at this food warehouse. But...and it is a very big but indeed...they took more than two months to shut them down! How much filthy food got into the pipeline while this pathetically inept crew took two-hour lunches and six weeks of vacation and punched out at 4:00pm on the dot? Pathetic, lazy, inept hacks. From a lurker who wrote me with her thoughts about ice cream. She claims to be a not-very-skilled cook, although reading her comments makes me think she is being a bit critical! I cannot recommend highly enough to make your own ice cream instead of using store bought. They have little individual makers now that it is hardly any effort at all in order to make great homemade ice cream. I got one at Williams Sonoma and I use it all the time. The only time I buy out at a store now is if it is the dairy and I just want a cone while I'm out. The ice cream maker she is referring to is the Cuisinart, and while they have a few different models It seems as though all of them work well and are reasonably priced. I like ice cream but I don't seek it out too often, but the idea of making exactly the one I want in just a few minutes is intriguing. Here are some pretty impressively stupid things. I'm not sure which is dumbest, although the first one is certainly the most dangerous. Frying Ice? Rubber bands and watermelons don't mix She has crabs! There are no words for this stupidity [Hat Tip: redc1c4] This is Misanthropic Humanitarian's usual troll of me, but in this case it looked good, so I swallowed my pride and tried this Epicurious recipe. It's definitely a keeper, and while the chicken skin was a bit rubbery, the flavors worked very well and it was also quite easy and quick. I will play around with searing the skin side of the thighs before I put the crust on, and I think it will help. But in the meantime this is a good dish that deserves a try. Panko-Crusted Roast Chicken Thighs With Mustard and Thyme Oh...the carrots were pretty good too. I didn't expect them to cook that quickly, but it worked nicely. It's a bit abbreviated today because the power outage today put a crimp in my writing. Composing the Food Thread on my phone is something I would rather not do... Avocados sans thumbprints, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com. My only contribution to the ice cream discussion is that I've used and like the old fashioned type you have to add salt to, BUT:
We bought a small unit on clearance a couple of years ago that requires you to freeze a cylinder and that cold cylinder transfers the cold to the ice cream. It yields a more custardy texture but I really like it. A lot easy to use and clean up, but the tradeoff is you won't have any in the freezer for tomorrow. I have read that the secret to crispy chicken skin is to leave the chicken in the fridge uncovered and dried off for at least a couple hours before cooking.

If you can find it, go to the freezer section at the grocery store and get the small Butterball cajun turkey breast. It's the size of maybe two softballs so it's probably only three or four pounds or so.
It's my go-to for smoking turkey now. Really, really delicious and just enough. It will be plenty for one person to eat on for a few days. Make some dressing, mix up some Alabama white sauce, get some canberries, and you'll eat like royalty for a while. If you have a KitchenAid mixer, there is an ice cream attachment that's very reasonably priced. You have to chill it down in the freezer ahead of time but it's very easy to use. Husband and grandson used to make ice cream every time we kept the grandson when he was 3 or 4. We all love vanilla, but it's easy to make many variations.

After the discussions the other day about mushrooms, I've been on a stuffed mushroom binge. It's apparent that cheese, herbs, sausage are all acceptable. I don't see a lot of suitable mushrooms for stuffing tho'. At least the grocery store doesn't sell but 2-3 varieties that I can stuff.

Place into oven and cook for 45 minutes. Remove from oven and let cool for 15 minutes. Break salt shell, scrape off cod and salt. Eat plank. We were down in Chokoloskee, FL back sometime in the '70s at my maternal grandfather's 1st cousin and his wife's place. So, cousin Donovan takes us out on his boat and proceeds to catch several blow fish (or puffers as he called them). Brings the fish on the boat, deflates it and processes it right down to the muscle, which he then parked on a plate. The muscle mass then sat there and shivered on the plate for some time. Well, it might have tasted good but *that* fish twitching on the plate was the thing I still remember some 45 years later... Stuffed mushroom: portobello, scrape out the gills. Line with fresh baby spinach leaves. Stuff with cheddar, diced jalapeno, sauteed onion/garlic, tossed with paprika, salt pepper. Bake, with the gills soaked in some oil, on the broiler pan. Garnish with the gills. F'in awesome.

My Dad taught me how to make home made ice cream when I was a kid. It was something he did in the summer around holidays and when we were going to have family come over. I have my own ice cream maker now and still make it. Trying different recipes sounds fun but I still make the original recipe that my Dad taught me for Vanilla ice cream. It was handed down from his grandfather in the hand cranking-ice was rare-electricity didn't exist days. The taste brings back tons of good memories. One fast food chain here in SoCal that *might* come a little close to satisfying Whataburger fans is Farmer Boys (which for years I thought was called Farmer Bros).

Ive made tons of ice creams without an ice cream machine. Old refrigerator manuals often had several recipes. Generally you make up the custard and/or syrup, put it in the freezer for a bit, take it out and use a hand mixer on it, and put it back to freeze.

As a midwesterner, I have never before heard of blowfish tails or Sugar Toads. I thought they were deep-fried shrimp.
While I know that homemade ice cream is delicious, it is not a skill I wish to learn, for the same reason I don't make cakes or pies. I have such a sweet tooth that it is best to confine my enjoyment of such wonderful things to like, maybe once every month or so. Your post procedure meal should be a salad made with butter lettuce, cabbage, red beans, chickpeas, marinated artichoke, kalamata olives, corn, avocado, and a hard-boiled egg. Will keep working on it though. Back when I was in HS I would have soft drinks with dinner, but also water. I drank water during the meal, then had the soft drink for dessert. Wasn't bad. I had a late lunch with my people yesterday. We ate at the Yak and Yeti Himalayan cuisine. I have never eaten this type of food. I had lamb curry. I have never eaten lamb. It was wonderful. A little pricey but large portions. I loved it! Hubbymayhem and the girl spawn got goat dishes.

I drink a pitcher of coffee everyday. Not sure how much water i use, but i use 6 oz ground coffee. No idea how many "cups" of coffee that makes, but i do pee a lot. Coffee has many health benefits, one of which is being forced to stretch your legs and get up off the couch to go pee.

I used to make a spiral cut honey ham from Aldi and split up the primo slices with my dad. Then take the carcass and simmer it in pea soup with a ton of garlic until it was falling off the bone. Picked it clean and put it back in the soup. I'd keep a couple containers but my depression era dad loved all that meat so much I had to give him most of it.

I used to drink a LOT of Diet Coke. And if it wasn't that I would drink the diet ice teas. But over the past year I have significantly cut down on my processed beverage consumption. At home I will either drink water, milk or I drink cranberry juice with seltzer. Usually 2 parts seltzer, 1 part juice.

I did a smoked chuck roast yesterday, 3rd attempt at smoking something so still on a near vertical learning curve.
It was the best chuck roast I have ever made - tender, juicy, and pow! flavorful. 3.3 lb chuck smoked for 4-1/2 hours at 225-250 until 170 internal, foil wrapped and in the oven for 1 hr until internal 205, cooled back down to 170 then rested in the oven at 160 for the last hour. Pre-cook marinated overnight in worcestershire & lime juice [3:1], heavy Texas rub, and tallow coated wrap. Meat candy! So, last night I was drinking Macurichos Conejo Pechuga Mezcal.
Pechuga is a sort of celebratory or special occasion style of mezcal which is distilled dripping over fruit, spices and a raw chicken or turkey breast. In the case of the Conejo Pechuga, they use apple, cinnamon, banana, pineapple, orange, and various wild fruits. Instead of chicken, the conejo pechuga use a skinned rabbit. Conejo is Spanish for rabbit. So, there I was drinking Conejo Pechuga when it suddenly occurred to me that the word "conejo" is similar to the word "coney" used in The Lord of the Rings. Sam and Frodo are always blabbing about snaring coneys or getting a "brace of coneys". That's pretty much all they talk about until they toss the One Ring into the fires of Mt. Doom. They probably tossed in a brace of coneys too. Anyway, I thought, hey! I best those words are derived from the same Latin root word. And they are! The Latin word is cuniculus. Sous vide report: Sunday dinner at Che Blake.
I had a 3.5 lb tri-tip I decided to use as my first excursion into the wild and wonderful world of sous vide. (we won't mention the veggie stir fry, or the au gratin potatoes I also made. Pretty standard stuff, this time of year) Anyway, after much back and forth with CBD, the sous vide whisperer that he is, I decided to try 2.5 hours at 120 degrees, then move to the pellet grill to get the nice color and crust I was looking for. I might mention, this was an untrimmed tri tip, which necessitated removal of some fat. But not all, as I know where flavor country is. After sous and pellet, the taste was phenomenal, but, tenderizing wasn't quite there. Probably needed to go another hour to hour and a half in the sous vide. What is a beef clod?

As a primal, it generally is broken into 2 sub-primals. There are 5 muscles, 3 of which can be processed (in various ways) into retail cuts (including flat iron steaks, and the little known shoulder tender (or teres minor steak), which is filet-mignon quality). You can do the whole clod, or sometimes find the clod-lifter or nose cone cuts sold as clod. (A true clod is probably 12-15 lbs, the lifter/nose cone probably run 3-6 lbs. These aren't good for retail, but when smoked and pulled are fantastic. (The big clod is also fantastic, think brisket. Some Texas BBQ joints, like Kreuz Market in Lockhart, have it on their menu.) You can trim off that flap. Then you have the choice of trimming off the cartilage 'tips, or not. The flap and tips can be rubbed and grilled while you're doing the ribs. I'm guessing you got untrimmed ribs. You can trim off that flap. Then you have the choice of trimming off the cartilage 'tips, or not. The flap and tips can be rubbed and grilled while you're doing the ribs. These are then known as "cook's treats". growing up, my best friends dad used to make ice cream, and I grew up thinking I hated home made ice cream because it was so salty. I made Chapaguri, from that Korean movie Parasite. Apparently it's a thing in Free Korea. Other than sourcing the noodles (I had to enrich the Beezus) it's really worth it, easy and delicious. It's the kind of thing you make when you're tired or out of time but you want to serve something very tasty.
