Food Thread: Cheap Ice Cream And Expensive Soup

icecream scoops.jpg

Visit any half-way decent supermarket and you will see a huge number of ice cream brands, running from the least expensive half-gallons of mostly air, to the super-premium pints that can be ridiculously expensive. And while I think the really inexpensive ice creams are so-so, the relationship between price and quality is not perfect. I have had some pretty good store brands and regional brands, and some of the most expensive pints have been disappointing.

I recently became fixated on the flying saucers of my youth, and we even chatted about them in a recent Food Thread. We used to go to the Carvel in town (Tom Carvel lived in town!) on hot summer nights and eat tons of those flying saucers and huge cake cones of the custardy soft-serve that they specialized in.

Fast forward a few years and I saw in a sort-of local market that they have flying saucers in vanilla, chocolate AND vanilla-chocolate swirl! How cool is that! And because I am a traditionalist I served them for Rosh Hashanah dinner, and they were well received. Apparently I am not the only person to enjoy revisiting the foods of my youth.

But the best part was a few days later when one of the brats asked for a container of the plain ice cream, and I picked up a quart of their chocolate ice cream (custard maybe?). Damn. It was great. I will usually eat a small scoop of whatever is served and enjoy it, but this stuff was creamy and dense and wonderfully chocolaty and just fine eating.

And I have no idea why. So Horde...or at least the ice cream making contingent...enlighten me!

******

At the risk of beating a very dead and smelly horse, I have been getting more and more exercised by the main premise of the planet/climate/environment hysterics, that we must make do with less to save Gaia. Less of everything!

I reject that. With careful management of our agricultural infrastructure we can improve the quality and quantity of the food we grow, and that means more animal protein for the poor, not less for everyone. It is disingenuous in the extreme for the planet alarmists to force their clearly false axiom on an unsuspecting audience. They lie to get what they want, which is a socialist paradise (for certain definitions of paradise) on earth, and it is incumbent upon us, the normies, to push back on every assumption they try to force into the public consciousnesses.

******

It's official: Misanthropic Humanitarian is trolling me.

Azafrán Soup With Spinach Greens and Yellow Cornmeal Dumplings

Yeah...I have no idea what that Azafrán is, and the recipe is in all other respects pretty straightforward. But one of the comments mentions that the ingredients were "only $28." So Azafrán costs about $22 for enough for that recipe? No thanks.

******

A few days ago my wife mentioned that she had always enjoyed the arancini I used to pick up at a local Italian deli, where I also got some pretty good (but not Vito's of Hoboken quality) sandwiches. I was a little taken aback. What...you like someone else's cooking?

So I am going to make them. Why not. It's not complicated, and I will not be shown up! Arancini with Tomato and Mozzarella.

******

I am confident that this photo will elicit only two reactions. The first one will be similar to my own, which was, "Hey! I'd eat that!" And the second of course is, "Gross!"

Hrothgar breakfast.jpeg

I recently bought some French bleu cheese at Costco. I had no intention or need for bleu cheese, but could not resist the free sample. It was so good I turned around and bought it.

So looking for uses, I invented (maybe too strong a word, perhaps perfected would be better) what I now think is the ultimate simple breakfast sandwich side dish.

Two slices of fresh sourdough bread, toasted lightly, Boar's Head Honey Mustard with Pale Ale on one slice, bleu cheese slathered on the other slice, and thick sliced bacon, straight from the skillet drained, folded to fit.

An addictive sammich if ever there was one. I am thinking about adding tomato slices, but so far have not tried that upgrade.

-- Hrothgar

He assures me that the sourdough was freshly baked and homemade! Good for him. And no maple syrup, which is another bonus.

I am fascinated by combinations of ingredients that at first glance seem to be discordant, but when actually tried taste pretty damned good!

******

There is very little wrong with a fried chicken sandwich, especially when it is dressed with something a little spicy and it is on a good bun. Not too much other stuff though...I dislike when places overload the sandwich with too much tomato or lettuce or pickles and it drowns out the glory of fried chicken. But if the chicken is dry just toss it in the garbage. That is truly awful eating.

Oh...thigh meat is the secret of a perfect fried chicken...um...anything.

******

Uh oh...commenter "Blake" is in the kitchen! Apparently his wife has a death wish and has allowed him one more opportunity to cook something edible before she takes away his knives and replaces them with safety scissors.

Blake guess.jpg

So...what is he making? It's an interesting collection of ingredients. Guess correctly and you don't have to eat it!

Hopefully Blake will be around to judge the contest.

******

Avocados sans thumbprints, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), carrots that don't taste like stalky chalk, spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs (but no basil!), well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

And don't think that you are off the hook with maple syrup and French Toast: I'm watching you...all of you! And I am watching you perverts who shake Manhattans and keeping a list for the Burning Times.

19 Food!
Bone in prime rib with garlic mashed potatoes, homemade Cesar salad and sautéed mushrooms. Oh, and peppercorn sauce made with red wine, green peppercorns in brine, homemade Demi glacé and cream. Dinner for Marine last night.

This morning was a smoked salmon Benedict with homemade hollandaise sauce. And roasted purple potatoes.

I will make lunch for him on Tuesday. King salmon with raspberry sauce. Rice, steamed broccoli. Steamed mussels in Thai red curry as an appetizer.
All were by special request.

31 Grocery store ice cream is a less then suitable sub for really good ice cream or gelato or frozen custard. In a pinch Hagendaz (sp) was usually the best. When we lived in OH we had Ritters and Graeter's. Both great. Moved to MT and pretty much you get a couple local brands that are a bit better then grocery store brands. Couple weeks ago we stopped at a food truck that serves homemade gelato. Only 4 flavors but so, so good. I'm guessing the difference is ingredients, the processing and it's small batch.

43 I am not a big ice cream guy, that is probably why I am 50 lbs lighter than several years ago. If you need to know the culprit was chips y queso and Margaritas. But I think Breyers/Dryers is pretty good for the price.

Now any ;legit Texan has to mention Blue Bell. Shit,Have been there, I spent time in that tiny town. It used to have an aura but I am over it. It is now national and after the major scare,it is not like it used to be. Sure some of it was the scarcity, most could not get it. But I have to be fair, it is really just so so.

i agree with those who say Haagen Dazs is the best, certainly their vanilla is the best. But i admit I do like Ben and Jerry's pistachio, though I would never buy that shit. The best ice cream i have ever had was gelato in Italy. And the thing is, most gelato in Italy sucks. You need to seek out the top places. I mentioned this before, but the key is to find banana that looks grey, and pistachio that looks white.

67 Ice Cream is a fricking racket.

It ain't rocket science. Cream. Sugar. Eggs. Vanilla. Plus any of that foo foo shit people want to doctor it up with. Still the point remains.

Much confusion could be avoided if the shit they call ice cream wasn't allowed By Law to call itself by something it ain't. If the Ingredients looks like a fucking chemistry experiment, it ain't Ice Cream. Corn Syrup, artificial flavors, thickeners. Seaweed extract.

Yes, really. They add shit like seaweed. I'm not a Foodie, I just don't like Ersatz. And it shouldn't cost $40 a gallon. Those twee ghey containers with hippie shit all over it.

Get yourself a crank grinder and roll yer own. Even Half and Half and cane sugar makes excellent Ice Cream and you don't have to support aging communists in their dotage.

He stopped losing weight and gained back about 15 pounds on his ice cream dietary supplement. Whole eggs, evaporated milk, sugar, heavy cream, whole milk and vanilla. A friend gave us an electric churn I set in the sink. It took about an hour from start to end. I kind of miss doing it since Dad died, but I can't be having ice cream every night. You want the best pot roast you will ever eat? Take a chuck roast and soak it overnight in beef broth in the fridge. Take it out 4 hours before you are going to cook it and dry it off, season with whatever you like. Cover it and let it come to room temp.

Pre heat oven to 325 and put a dutch oven on the stove. Brown the roast on high heat, set aside and put a cut up large onion or two in the bottom of the pan, stir it around a bit. Put roast back in the pan and put in oven covered for 2 1/2 hours. Pull it out and add carrots, potatoes or whatever and return to oven for another 1 and 1/2 hours. Remove from oven take the roast out of the pan and let it sit for at least 20 minutes. Stir up the veggis in the bottom of the pan and serve.

160 AZ deplorable, sounds delicious.

I bought some Hatch chiles, going to make 2 things. A version of Mexican street corn, and some white chicken chile in the slow cooker. Corn will be for steaks off the grill, side dish.

Will roast/char everything on the grill before making both dishes.

that is should be on the Mount Rushmore of foods in the rotation. I made the sauce from scratch one with a hot Mexican girl (and I mean legit Mexican) and my Spanish teacher there as well. It was a major pain in the ass dealing with the tomatillos. It was good, but a freaking lot of work.

172 As the weather cools (a bit), I'll probably finally get around to making my (somewhat) famous mole poblano again. Used to take me the better part of a day.

Lost my original notes, but remember the ingredients. Around 40 or so, I think. All spices and nuts and other thinks toasted/roasted first. The usual trinity of dried chiles.

It was a recipe that was clearly better after a day or two, the sauce really achieved a new flavor. Brought in leftovers once at work - people there asked me about when I was bringing in more, for a long time after.

I love Cod wings. But seriously, some of this stuff gets weird. I was at a famous local bar for a meal not long ago and the special was a tenderloin for cheap.i had to try it because that price stood out. When it came it was obviously not a tenderloin. They said they used the term because the meat was tender.

They also have Laphroig 10 on the menu but they serve Laphroig Select. The latter whisky is ten twenty bucks cheaper. You might think I am talking about some shady place, but it has been around for decades and everyone loves it.

206 Azafran Soup
The link is broken, but the page source gave it up:
tinyurl.com/52braf29

Azafran (Carthamus tinctorius) are the stamens from the safflower. The safflower was introduced to New Mexico by the Spaniards as a substitute for true saffron. As well as adding it to recipes for flavor and color many tribes historically used azafran for medicinal purposes. Many Native Peoples as well as Spanish descendants still use azafran medicinally, but the majority of people today use is as a spice in cooking. The subtle aromatic flavor of azafran in this nutritious soup is wonderful with fresh sweet vegetables.
Cooks' Note: Azafran, also called Native American saffron, is an herb that is actually the fine threads from the stigma of the safflower plant. Despite the name, azafran is not the same as saffron, which is usually more expensive and derived from the crocus plant in the iris family. (Saffron can be substituted for azafran, though: use one pinch of saffron for 2 tablespoons of azafran.)

248 Picked some plain pork rinds at the store on a whim, and because they were so cheap, as I vaguely knew you could do various things with them. Yesterday I heated some in the microwave and then tossed with a dry mix of chili powder, salt/pepper, smoked paprika, garlic and onion powder. Not bad. Will work on the seasoning, could get better. Zero carbs is the nice feature (apart from dirt cheap), along with passable-substitute-for-chips.

it's carried in local chains here in town Vons/Pavilions and they have small stores scattered about as well. they started out in SB, but have expanded a bit, recently.

Salt and Straw is another LA local chain, but they have a lofty impression of their product, and prices to match. pretty good ice cream, though.

Hey Mrs JTB!!!!!! Hope you and Mr. JTB are doing well!

Walmart in Fairfax carries several varieties of Bluebell ice cream and novelties. Family hasn't tried Tillamook, so I might have to grab some for them.

I'll be honest, coconut milk ice cream will tide you over when you need a fix, but it isn't the same. It doesn't have the same creaminess of full fat, full cream ice cream.

257 One time I was in Georgia (republic, not state) in the fall, out west the persimmons were ripening, beautiful, everywhere. Think they grow a hachiya variety (sort of acorn-shaped). Think I tried one from a farmer's market (well, we call it a farmer's market, at the time, stalls along roads or in squares were really the only way to buy food there). Early 90s, sporty times. I sometimes come off as a Spain fan boy, when not considered France guy. But i did love my time in Spain. I loved Andalucia in particular, it is the Spain Americans think of when they think of Spain. With that set up, I am a huge proponent of Ajo Blanco, the white gazpacho.

Look up the ingredients on the interweb. it is basically bread, water, garlic, white grapes and almonds as I recall. To be honest, i think it kicks the ass out of the gazpacho served most places in this country. It is peasant food, damn near poverty food, and really nothing could be better with some fino sherry on a hot day.

347 Quint, any recommendations on a good sherry?

Posted by: Ben Had at September 19, 2021 04:55 PM (2XkiP)

that is a good question. The issue is most Americans don't like sherry because they think it is some sweet wine their grandmothers took nip of. For that reason,it is difficult to find good sherry. It is a never ending loop, most Americans think sherry is bad, and the retailers rarely have good sherry for that reason.

The solioquy aside, there are many variations of sherry. A fino or Manzanilla are great cold and with tapas type foods like olives, cheese, cod fritters etc. And Amantilado sherry is my fave, and goes with almonds, cheeses, olives and heartier foods.

An Oloroso is a weird wine and will cost you. It is very stark and will last for ages even open. You might have it with grilled steak and hearty foods in that genre. There are also sweet sherries like Pedro Ximenez, they go with blue cheeses and as after dinner drinks

Posted by: Quint at September 19, 2021 05:07 PM (Ks/+3)

348 Pawpaw doesn't taste like papaya. Back in the 70s I heard people refer to them as an Indiana banana. But they don't have a banana flavor either. Hard to describe really. Almost a combo of banana, and mango.

356 personally I would just try the various options. SHerry in this country is very underrated and we are wrong. But first you have to find a place that has the good stuff. You asked for ideas, so I will give two brands off the top of my head. One is Lustau. That one is not very expensive and pretty much nothing they sell is not at least a good example of the type. Try their amontillado for starters. The second is La Gitana (the gypsy), they make really good stuff.

I love the sweet wines like PX and pedro Ximinez, burt i would suggest trying a fino cold with some various snacks for starters. And for sure try an ammontilado with some almonds, olives, cheese, etc. The sweet ones don't pair with many things but the good ones are light years above what many think of sherry.

420 I wanted to replace my electric in-cabinet oven - Had some guy tell me a couple of months ago - Easy job! Just pry out the old oven, toss on curb, lift new oven in place, rewire as directed, and wa-la! New Oven!

I was smart enough to say nope...took the appliance crew three hours and three guys to take out and install a new oven...never, ever listen to someone tell you something you have never done is easy peasy....

It's pretty mild, and when prepared correctly It's tender but with a bit of firmness. And as Mr. Scott says, it is best eaten hot!

427 Infidel, my mom hated peanut butter. It was the rare thing during the war that was plentiful and she ate it to just have something to eat. Never touched after the war was over.

Posted by: Jewells45 at September 19, 2021 05:39 PM

Back in the day before food stamps and EBT cards we would get government surplus food. Had to go to the warehouse place and stand in line and we got what they had, and they always had peanut butter.

Huge green cardboard cans of the stuff that had 2-3 inches of oil on the top that you had to stir up to make it semi edible. I haven't eaten peanut butter since then, probably 55 years ago.

I do enjoy the peanut butter cookies the wife makes though.

Prepared properly, it's kind of reminiscent of scallops but a bit fishier maybe? It's quite good. However, if it's overcooked at ALL, it's like trying to eat a handful of rubberbands.

IMO, at most restaurants, done properly, it's relatively neutral. The real pleasure is the coating from the deep frying plus whatever dipping sauce you use (marinara, etc.).

437 Peanut butter. George Washington Carver

lol. I was lazy in grade school because I was bored. We were assigned to to a report on a famous person and let go in the library. So, I'm looking for a book on George Washington and the first one I yank off the shelf was about George Washington Carver. I was fascinated and that started my love of books. Much admiration for Carver. Amazing man.

Posted by: Infidel at September 19, 2021 05:46 PM (Kx3kq)

438 Thanks to all for the calamari advice. I think I shall try it and a pizza (separately!) for supper tomorrow. The pizza place that makes this calamari appetizer has a very good reputation in the area, so I should be pretty safe.

Posted by: Ann Wilson, aka Empire 1 at September 19, 2021 05:47 PM (JJatH)

439 Calamari is like 2 minutes in boiling water and quick into ice water for salads in my experience. Almost always overcooked in restaurants around here. Great with shrimp in a seafood salad.

-------
After pointedly reminding Dr. Zhivago that he's "been listening to rumormongers, Comrade. There is no typhus in our city," the delegate shortly thereafter has Zhivago pulled from work to discreetly diagnose an ill man in the house.
Zhivago: Why? Is it typhus?
Zhivago: (after inspecting patient) It isn't typhus. It's another disease we don't have in Moscow: starvation.
Delegate: That seems to give you satisfaction.
Zhivago: It would give me satisfaction to hear you admit it.
Delegate: Would it? Why?
Zhivago: Because it is so.
Delegate: Your attitude is noticed, you know. Oh, yes, it's been noticed!

453 407 Easy job! Buy a garbage disposal unit, rip out your old one, probably bending some pipe or connection below sink along with the electrical connection, take the new one, find out that new one doesn't exactly fit connection below sink or the electrical wires don't reach your connections or the hook up requires a greater wattage, then go and get new all new connection, twist in, then run water into disposal that will dribble water out of that connection all into your kitchen and short your electrical connection, finally call a real plumber that does this shit for a living, costing you twice what you already paid, thinking that you, Mr. accounting/dweb guy, could just read things over the interwebs and do things just like people who have done this job for 30 years - and ultimately learn a fucking life lesson.
Posted by: Boswell at September 19, 2021 05:34 PM

Or are you talking about why it's thriftier to throw Blake's food in the garbage than destroy the disposal?

Great memories of Mister-Misties, Fudgy the Whale and the aforementioned Flying Saucers. I haven't been satisfied with most store stuff. The Talenti gelato is pretty good, if you can hey out on sale instead of $10 pint, but everything else is a bummer around here. We have a few local homemade shops that are great, but being in a city and homemade it's again pretty expensive.
