Food Thread:In The Chocolate Chip Cookie World, Sometimes Size Does Matter!

Food photography is one of the many categories of photography at which I stink, so I figured instead of plaguing you with one of my lousy photos I would grab an attractive one off the internet, and this one jumped out at me.

Not only is it a nicely done photo, it has one of my favorite food garnishes...the simple fried egg. I love them on pretty much everything, although I usually forget until it is too late. But that's okay...I'll use this post as a reminder to put a fried egg on my dinner tonight...whatever that may be!

The intersection of food and political philosophy is something that most people don't consider much, if at all. And that is as it should be, since most of us just want to be left alone at the supermarket and in the kitchen, and just buy and cook what we feel like eating without interference from government.

But the left has used food as a political weapon for a very long time, and to great and terrible effect. And jsut because we in America are blessed with the best and most efficient and productive farmers in the world doesn't mean that we are immune to their use of food as a cultural weapon. Just think of the mostly fraudulent "organic" food push, or the ersatz meat products that have appeared in the last few years, or the demonization of sugar and fat and most things that normal people find pleasurable.

I don't want to live in a country that treats beef as a luxury and sugar as a drug. Just imagine an all-too-realistic extension of the Wuhan flu passport idea to food...

No sir, you are not permitted that bottle of corn oil; your last blood test revealed a lipid profile that limits your fat purchases to 50 grams/week, and with this purchase you will have exceeded your quota. Thank you and please come back next week.

That's my first attempt at recreating the ridiculously large chocolate chip cookie from Levain bakery in NYC. Of course I left out the nuts, because nuts do not belong in chocolate chip cookies. It is known.

Yup...it worked. But was it worth the extra trouble compared to the excellent recipe on the back of the Nestles chocolate chip bag?

Yes, it is definitely worth it. The only big difference was using cake flour as well as all-purpose flour (I don't know whether it made much difference), and using big chunks of 70% chocolate. And that is an excellent idea and one that I will use again. Those monster chunks really added to the texture and flavor.

I made a very large brisket for Passover Seder, and I was poking around for recipes for the leftovers that actually never materialized because I ate them. But this recipe sounded really good, even though it uses an instant pot instead of a normal dutch oven like God intended. Beef Brisket Soup is from the always reliable DadCooksDinner, so it is probably worth a try.

I am not a big fan of single-use tools for the kitchen, but this is just awesome! I use cast-iron a lot, especially in the oven at high temperatures, and having a slip-on holder like this makes it easy to maneuver once I put the pan back on the stove. Because I have been known to grab a blazing hot handle without the benefit of an oven mitt, because that's just how I roll...and I am stupid.

But mostly stupid.

It was a gift from a lovely and generous friend who one day will sit in my kitchen with a large glass of a good Highland Malt while I whip up something (hopefully) delicious in that cast-iron pan!

I haven't posted an entry in the World Famous Cheapo Holiday Banquet Contest in several weeks, but this one really jumped out at me. It sounds great. It's from a commenter called "Temple," and while I am not sure how inexpensive the ingredients are where he lives, they aren't tremendously pricey around here, so I will bet that with a bit of effort we can squeeze under the bar.

Appetizer: brandade de morue with toasted focaccia strips

Main course: braised pork belly with star anise

Sides: scalloped sweet potatoes and fennel; sauteed cavolo nero in olive oil with chili pepper and garlic

Dessert: red plum tarte tatin with creme fraiche


In case you haven't heard of Brandade de Morue, it's glorious...a sort of whipped cod dish that is just fantastic, and very rich so you can't really eat much.

And I had to look up cavolo nero!

I was pressed for time one day and couldn't use my usual Sous Vide technique on pork rib chops. It's a fantastic technique in part because it makes the chops incredibly juicy. But I had an epiphany...why not just add more fat to keep the chop as moist as possible? And what better fat to add to pork than bacon fat, in the form of bacon strips wrapped around the chop. I was cooking a mixed grill and had some chicken thighs cooking low and slow, so I tossed the chop onto the coolest part of the grill and pretty much forgot about it for an hour or so.

Yes...adding bacon to pork is an idea whose time has come!

Sourdough bread requires sourdough starter, and feeding it regularly creates massive amounts of the stuff. And since I am a cheap bastard, I don't like throwing it away, so i will occasionally make a savory pancake with it. medium non-stick pan, olive oil, and instead of pouring the starter into the garbage pour it into the pan. I added bagel spices to this one, but minced scallions or caramelized onions work really well too. The texture is fun...crispy on the outside and sort of soft and tender on the inside, but with that wonderful sourdough tang!

Tender Broccoli Rabe that isn't bitter, beef short ribs that have meat on them (not the stupid little sliver of bone they sneak into the packages), Snap Peas (apparently they are no longer grown in quantity), spare bottles of Van Winkle Special Reserve 12 Year Old Bourbon, an herb garden that actually produces herbs, well-marbled NY strip steaks and elk backstrap to: cbd dot aoshq at gmail dot com.

Now, it so happens that this also works with my 2 allergies, but I've found that butter is about the worst fat to use in a cookie b/c it's so temperamental. Hilariously, the best fat is that "g$d knows how it was manufactured" sticks of Crisco. You will get perfectly shaped and heighted cookies with a beautiful texture outside and in.

Now, I rarely make chocolate chip cookies, but for the holidays, people will be amazed by your cookies - and you'll have to admit it's the tollhouse recipe with crisco, dark chocolate chunks, and the allergy chocolate chips (and no nuts...

7 Was watching an episode of Daryl's House where he has a guest chef in to cook for the guest and crew . This weird looking English dude chef made fish and chips by Sous Vide the fish and squirting a concoction of squid ink and vinegar on it and topping it with crushed potato chips.

Hope it tasted better than it looked.

27 That CCC recipe is like the Jacque Torres one I have used for years in it uses the bread flour and large chunks of 70% cacoa chips, plus letting them rest before baking. If I make CCC it is a 2 day endeavor to allow for the minimum rest time. I do portion the dough after mixing and lay them out on a parchment lined cookie sheet covered with plastic wrap so they don't dry out. Minimum of 24 hours of resting and up to 3 days. I usually freeze the portions to bake as needed.

47 I've got another Korean beef bulogi "Korea meets America" stir fry b/c the marinated beef was even cheaper (under $5/lb).

New changes are adding some chopped okra to the standard veg (onions - vidalia and green today, bell peppers, mushrooms - king oyster again, and carrots) to be the "natural" thickener...and to add more veg content, b/c who can have enough veg content with kids! Also adding some "need to use up cilantro" to my normal ginger/garlic/extra s&p add to the beef marinade's flavor...

Yes. Have done it. Like anything - flash frozen and under vacuum is best. But you and I can't do that. But running a vacuum sealer and regular freezing produces good results.

57 Found this ancient Swiss spice mix in the cabinet. From the picture it's apparently for pork. It has a strange cumin type smell. I ended up throwing it on steak and the results were amazing. The takeaway is that I am normally way too conservative in flavoring steak and there are probably a lot of flavors it pairs well with besides garlic and onion powder.

I must disagree, and I do so as a professional baker who sells lots of butter-ladened cookies each week. My chocolate chip cookies are award-winning.

Criso will give you good height and shape, for sure, but without that delicious butter taste, what good is it? Once you learn tricks of baking butter cookies, you get excellent height and shape and perfect texture, plus all of butter's deliciousness.

Of course, with allergies, you have to use other fats. But short of allergies, use butter.

I kinda' get - in a way - why the Dildo is such a foodie. It IS fun, once I got into the idea, to experiment with different preps. Its like art, sort of. 68 I learned about frozen bacon long ago, and it truly changed my world. I hate it when an open package of bacon gets slimy after a week or so. You can freeze the slizes individually and they last for months if you can hold out that long.

I recall working at a GC, and we got all our bacon that way . It is dumb the way we buy it inmo. That dumb package, that once you open it, you have about a week. Don't tell me that is not on purpose, because we all know it is. They don't even give you a change to seal the thing, it is a set up I tell ya.

I must disagree, and I do so as a professional baker who sells lots of butter-ladened cookies each week. My chocolate chip cookies are award-winning.

Criso will give you good height and shape, for sure, but without that delicious butter taste, what good is it? Once you learn tricks of baking butter cookies, you get excellent height and shape and perfect texture, plus all of butter's deliciousness.

Of course, with allergies, you have to use other fats. But short of allergies, use butter.

Frozen blueberries were on sale a few weeks ago in giant bags, so I have made blueberry gelatin squares, blueberry cornbread, and now this cobbler.

I always keep cranberries in the freezer, and had an open bag from making cranberry gelatin squares over Christmas.

So when the recipe called for four cups of mixed frozen berries, it was blueberry and cranberry.

And it was good. I just finished eating too much of it.

I also keep jarred pumpkin year round - but that goes in my vegan (or not vegan if I add the meat) pumpkin sweet potato and black bean chili - top 8 allergy free and vegan as is, so it tends to be my Lenten go-to soup dinner potluck dish...

117 The best thing in my kitchen (besides the 25 sf kitchen island) is the pull-out pantry. These things are awesome - I've got the 68" tall one with 6 8" wide shelves.

I keep all of my oils and vinegars on the top shelf, then sort my spices according to function/frequency of use. Gone is the annoyance of digging for a spice jar in the dark regions of cabinets and having others tumble out or fall over.

I originally started filling my freezer with cheap post-Thanksgiving bags b/c they were uber-cheap (I remember the year Aldi's had them for 25 cents/bag), and b/c I like to do an uber-cheap turkey meal sometime in the spring or fall from the one I get cheap (and don't make) at Christmas or Easter...and my kids always asked for my fresh cranberry sauce. So, I had them on hand for that (vs trying to find them, and if I did, paying WAY too much a bag), and then started using them elsewhere b/c I tended to buy too many bags, and my goal is to get through all of them between each Thanksgiving!

I can't say. But your comment made me think of that movie and that line. I think in that context it was a term of othering. Everyone does that now, but in this case I get what they were saying. But the scene shows both sides, the restaurant owners were the outsiders and they knew it. There needed to be a coming together, a symbiosis. It was a great film. And not to give it away, but even in the end, nothing even tried to say they made it in America.

I have decided, after an entire year of use, that a vacuum sealer is a 'must have' kitchen appliance, worthy of perpetual countertop space. Sure, it's a necessity for sous vide, but so many bags of everyday items it will reseal and keep fresh, like every snack, that we never have to toss anything out because of staleness.

Dinner tonight was veal, ravioli, salad. Saving room for low-carb New York cheesecake with low-carb strawberries and low carb whipped cream.

Not to put to fine a point on it but the county makes a difference. When I picked the site of my new restaurant, the city proper fell into two counties. I was sold on the city so I wanted to be there but - one county just simply wouldn't work with you. The other bent over backwards to try to land us. I chose the final location based on that.

There's a lot of processing going on with the photos you see on websites. Most decent photo software will apply LUTs to your shot to get specific styles. The cheap one I have from cyberlink called PhotoDirector has food LUTs.

To my taste, Crisco lacks flavor, and butter lends a delicious aroma and taste to the cookies. Especially any type made with brown sugar--the butter and brown sugar blend to a caramel flavor. I never have a problem with texture when using butter.

Two dashes Angostura bitters

Stir for 30 seconds in lots of ice and then strain into a lowball glass. Garnish with a good Maraschino cherry or an orange twist.

If you shake it instead of stir it just pour directly into the garbage.

Besides flying the helicopter, which flew its third test flight, NASA has also been cooking up oxygen on MARS. On 4/20 they fired up the MOXIE experimental solid oxide electrolysis test unit on the Rover.

It made 5.37g of O2 over an hour. Scaled up versions of these things will allow for the production of oxygen for use by manned missions and oxidizer for return fuel and such.

403 But seriously, bluebell, I live alone so I don't need to go out often and when I do, it's usually grocery shopping anyway. And Quebec's alot worse than Toronto and Ontario because they've gotta b.s. curfew there.

Ontario's premier backed down on the stopping people in the streets b.s. too because most municipal police forces or their unions said they wouldn't enforce it.

I'm in the suburbs too so it's not like there's a ton of foot traffic anyway. (Although I have seen alot more couples, dog-walkers, and families out walking than before the Now Wuhan times.) I see two of three brothers often too.
