Food Thread: I'll Have What He Is Having....Once!

That's a Swiss Speciall, concocted by one of our resident bartenders, naturalfake. Notice I didn't insult him by calling him a mixologist!

1 oz Gin
1 oz Kirsch
2 oz Rye
.25 oz Simple Syrup
Shake, strain into glass.
Float .5 tsp of Grand Marnier. Garnish with cherry.

He discussed this drink last week, and I was intrigued, so I made it that night.

And I didn't like it. At all. But it was certainly interesting and it gave me the opportunity to use some Kirsch, which I haven't used since I made fondue about 300 years ago.

it had medicinal undertones that I found unpleasant, and I though that the gin and the rye competed too much. I also think that with a little tweaking it could be an interesting drink for my palate. "My" being the important word here. You may love this drink as it is. That's why, while it may be tempting to make fun of silly or odd drinks, the only thing that matters is the pleasure you derive from them. And if a chocolate martini with extra chocolate sauce makes you tingle all over, or if a bourbon and coke (yuck!) is your idea of alcoholic perfection. then have at it!

That's the fun thing about cocktails, and why I absolutely love dropping into a new bar and discovering a new twist on an old standard, or even a completely wacky drink like this one. Sometimes they are successful, and sometimes they aren't. It was however interesting enough for me to finish it, and that's not just because I am a cheap bastard and don't like wasting booze.

By the way, it tasted nothing like what I expected, which was a hoot. The first thing I did when I tasted it was check whether I had in fact used Kirsch, or if I had grabbed something else in my haste!

I have had this stuff at restaurants, and have even made something like it. Off hand I can't think of anything that won't be improved by this. And don't say ice cream, because a bit of this on top of a scoop of butter pecan or vanilla ice cream would be damned fine eating.

Pro Tip: Never ever remove the top trim of your microwave/exhaust fan to reveal the secondary filter and the internal duct work. It is attached with hidden and poorly anchored screws, and it doesn't seem like something that is intended to be done regularly. Yet the space behind it collects an amazing amount of grease and dirt and yucky stuff.

Am I the only one who thinks that canola oil tastes sort of crappy? It is specified by many chefs, and I have seen restaurant menus that feature it as some sort of virtue-signalling frying oil.

But...damn! I think it tastes sort of rancid and fishy, and I stopped using it long ago. There is a local place that has a solid kitchen, and they use it for their frying. There is nothing so disappointing as a French Fry that has been cooked perfectly but tastes faintly of three-day-old mackerel.

My go-to oil is plain old corn oil, and if I am frying something special (a rarity) I will sometimes use peanut oil, even though it is quite pricey.

By the way, I have fried in vegetable shortening, and that stuff is great!

We always have tons of leftover mashed potatoes. It's not that I don't make a good version; it's that I always make far too much. So this sounds like a fun little snack for Friday morning after Thanksgiving. Or maybe Thursday evening after the dishes are done!

I like the dough hook! Made soft pretzels with the kid last week and they were delicious. In place of lye, the King Arthur Flour recipe had a baking soda and water dip -- didn't make them s golden brown, but super-tasty.

I almost pulled the trigger on 2 All-Clad 7 inch oval bake pans yesterday. It's a bitch to cook for one and most recipes and pans are too big. Seems like they'd be good for small lasagna's or casseroles.

31 I didn't make much food this week, but I ate some really nice food in DC. I especially recommend a Laotian place called Laos in Town if you're ever in DC again.

Two somewhat amazing things: (1) DC banned indoor dining, and so restaurants set up outdoor dining. In 30-odd degree temperatures. By setting up tents with heaters. It did mean drinking more.

And (2), despite DC being on lockdown due to mad rioters, restaurants remained open and happy to see customers. It was almost like the curfew was a response to a problem that nobody thought really existed.

Celery salt goes on Chicago style hotdogs and in Bloody Mary's. Not sure if putting salt in celery seed would be the same thing.

You'll definitely get better results with bread flour. Bread flour has a higher protein content, and makes the yeast make longer gluten chains for better stretchiness and rising, or some such.

No. I have never used bread flour. If you make whole grain breads, you will want some gluten to add, but that's it.

I did. They came out GREAT. Whatever cut of meat you are using, just make sure they aren't too thick. I also made sure the steaks were uniform in thickness so that multiple steaks can cook at the same time.

I roasted fingerling potatoes underneath. They were really good.

There's a difference in protein content, but per King Arthur Flour, you can use *their* all purpose flour in bread machines: https://tinyurl.com/y4zbj3lo

67 I try not to buy too many ingredients that are basically the same. So all-purpose flour is pretty much it. And dark brown sugar--if I need light brown, I'll add white sugar. That's all it is anyway, white sugar with varying amounts of molasses. I've considered not buying brown sugar at all, but sugar plus molasses mixed at home is sticky.

Often use salted butter when a recipe calls for unsalted, if I think they're being trendy rather than that the recipe needs it.

I saw that Jaegermeister Cold Brew at a liquor store recently! It is just alcoholic coffee, right? Not Jaeger and coffee? Because Jaeger and coffee would be disgusting.

Celery salt with some mayonnaise and a blurp of yellow mustard to make deviled eggs. Top those with some capers and you end up with the best deviled eggs in the world. Rotary Club requested them one year for an event and I had to make 80 dozen.

I am assuming that it is the steel version, and not the non-stick. One of the things that may help is to cook at a high temperature...almost at the smoke point of the fat you are using. That will be a different temperature depending on the fat.Then...do not move the food! Let it sit in one place until it gets brown and crispy.


A trick I use is to drag the food across the bottom of the pan to make sure it has enough fat on the surface, then place it where I want it and never touch it again until I am ready to flip it.

88 Simple good cool weather one I did this week - Balsamic Pepper Chicken with Almonds.

chicken (white meat), cut or pounded into scallopini - eggs, flour, bread crumbs - 2-4 peppers (green, red, yellow) cut into thin strips (2") - sliced toasted almonds
raisins or golden raisins - olive oil - balsamic vinegar
salt/pepper

Coat chicken scallopini the usual way (flour/egg/crumbs), set aside.

In a large pan saute peppers in olive oil until they begin to soften. Toss in raisins, saute a few minutes.

Add balsamic vinegar (enough to drench the peppers, generous), and salt/pepper.

Cook down a bit, remove, add almonds, keep hot. Saute breaded chicken in olive oil. Deglaze pan with water and balsamic - our over pepper mixture, serve that over chicken.

Can highly recommend roasted walnut oil. Great for baking of various kinds.

My "house" salad dressing is a basic vinaigrette subbing in walnut oil for olive oil. Really rich and good flavor.

It's a derivative or more correctly formerly a mainstay from the paint industry is the way I heard it, Anyway it oxidizes and turns rancid fairly quickly in commercial or preserved foods. Peanut butter, for example. An unopened jar will start to take on a varnish or paint like "whang" and taste nasty fairly quickly. I store it in the refrigerator for this reason.

add to ice, stir/strain

104 I was out in South Bend Indiana for an extended period of time with a large crew of installers, we used to hit up the bars and we used to play a game we named, Call Your Shot, whereby we would make up a name and the bartender would have to create a shot based on the name.
Some names were Sudden Impact, Mississippi Divide, The Bender, Touch Down Jesus, etc.
Female bartenders would primarily make a fireball based shot, male bartenders would usually make a whiskey based shot.
Needless to say, we got drunk a lot.

108 Oooh, Ben Had, that sounds great. I made about 8 batches of pesto this summer/fall to freeze, using cashews with my own basil. Pecan oil pistachio pesto, yes.

The mizuna is abundant, the mixed lettuces (reds, greens, oak leaf, something else) are about ready for first use. 2nd wave - green romaine - looks like I can start picking in 2 weeks. Just planted a 6-pack of green romaine today. And bok choy, and komatsuna (Japanese mustard variety, mild, looks like bok choy). Meyer lemons are almost all ripe. Need to make some preserves.

110 I did. They came out GREAT. Whatever cut of meat you are using, just make sure they aren't too thick. I also made sure the steaks were uniform in thickness so that multiple steaks can cook at the same time.
I roasted fingerling potatoes underneath. They were really good.

Did one last week - leftover grilled tri-tip, leftover grilled anaheim peppers, leftover diced onion, leftover diced cooked chicken (forget what it was from), leftover diced tomatoes. Some shredded cheese towards the end. A bit of Tapatio on the plate. Fantastic.

Yeah, that's ridiculous. I wouldn't label that "hunting" at all.

Instant Pots are great! Here's a simple meal plan I discovered with it that I enjoy...

Cook a pork roast with some chicken broth and a jar of chopped-up dill pickles (brine and all). This takes about two hours. When it's done, take the roast out and cook some rice in that liquid. This takes about five minutes.

The pickle flavor is actually pretty light, not overpowering. You can easily leave the pickles out, or substitute something else for them, if that sounds weird to you, but I like that little hint of tanginess.

143 re: the cocktail up top. I've never liked gin much, it's always tasted medicinal to me, and the only drinks I can take it is where it's mixed with enough other stuff to kill the taste of the gin. I like bourbon, but rum drinks have always been my favorite, vodka if you want an alcohol that has no taste of its own. Gin just seems like the best the English could do when they couldn't get better stuff from somewhere else.

145 Did my own carne asada marinade this past week. Standard flap meat (on sale, thus the choice). Soy, olive oil, worcestershire, white wine vinegar, cumin, black pepper, orange juice, lime juice, garlic slices, chile powder, cilantro - and a bit of ground clove. Just looked at about 10 recipes and did a consensus combo.

Marinated 2 days, grilled, made tacos, with onion/cilantro/cotija cheese, and salsa. Mexican street corn as the side. Very good.

160 More than once, at the range or gun stores, I've run into guys who regularly go up to central coast ranches to hunt pigs - ranch owners are happy to have them/let them hunt on their property. Mosin-Nagant carbine (M3 well suited to the task, know one guy who uses that.

Also, on different crazy note, in Hawaii, hunting pigs with spears, or bows. That's hunting. On the mainland I the bow hunters I know carry iron on their hop when hunting pigs, as they can turn the tables on you.

169 Yeah, canola oil is gross. I stay far away from it. When I accidentally get something fried in it, I'm reminded again how much I dislike it.

I don't like corn oil, either, there's something heavy and cloying about it.

I deep-fry in peanut oil, which I love, except when I'm getting fancy and doing fries or chips in beef tallow. Stir fry is peanut oil or lard. If I'm frying beef in a pan, beef tallow. For eggs, and especially omelettes, which require a hot pan, I use ghee, which is like butter without the stuff that burns.

Damn right it is. I almost bought the farm because of a boar. Friend had, by being grandfathered in, family property inside Anderson Air Force Base. He would set snares for boar using coconuts as bait (they ravaged his bananas and papayas). One time we went to check the snares, the squealing started and one charge straight at me. The snare had locked and the pig was running with the drag. Friend shot it dead just a few feet before it got to me. He said if it had gotten to me it would have gone immediately for the femoral artery. He knew a man who had died that way.

There used to be this little rural market there that had the most interesting selection of sausages. Mostly wild game... 198 Lunch was especially nice today. A yellow fin tuna steak on a bed of rice with slices of avocado on the side. The tuna was good enough for sushi and prepared simply: a bit of olive oil, salt, fresh cracked pepper, and fennel seeds. It goes into a hot skillet for just over a minute on each side. That left the middle just warmed through. That let all the flavor of the fish come through. It was a delish meal and one I should do more often. In season, slices of fresh fennel would work well with it.

The catch is that the tip was for one particular gin, which I had (Hendrick's Summer Solstice special edition, which I think may still be around because it was a hit). It is unhealthy! Lysol was originally marketed as a feminine hygiene product, and the company almost went out of business when doctors everywhere started telling their female patients not to use it because it was not good for them.

So, they turned around and started marketing it as a household disinfectant instead.

I am marinating lamb in garlic, olive oil, Dijon mustard and fresh mint.
I'll broiler and then slice thin.
Made my own tzaziki with Greek yogurt, mint, garlic, lemon and English cucumber.

Will use iceburg lettuce instead of pita and have feta, tomatoes and some thinly sliced sweet onions.

Hopefully it works!

Growing up we lived on what most would consider a rural road. Paved and lined, pretty busy, but with an unposted speed limit so 55. Our driveway was about 300 yds.long.

The mailbox was across the road.

Every year it seemed, the snowplow would knock it over, and my Dad would move it back.

Then, by spring, the mailman would complain that it was too far back, and my Dad would move it forward.

I sometimes wonder if that's still happening.

286 It won't be to everyone's taste but I've become a fan of chilled white retsina wine with grilled or fried fish. I get Kourtaki (sp?) white. The resin flavor is quite light but it is crisp and refreshing. Goes great with Mediterranean seafood dishes. 2 oz of vodka
5 tbsp of pickled egg brine
3 drops of worcestshire sauce
1 drop Tabasco.
Garnish with a tasty cured meat. In my case it was a slice of summer sausage.

336 Back in my bachelor days Crisco vegetable shortening was the frying oil for french fries. Didn't know any other way than to peel and cut up fresh russet potatoes and deep fry them in Crisco. Mom did it that way so it must have been the best way, right?

I still prefer vegetable shortening for pancakes and french toast (the kind properly made be dipping bread in egg batter and frying it, not pouring egg batter on bread and baking it, which isn't toast. Should be called, I dunno, french bake.)

And the plot of The Dirty Dozen has sort of a basis in real history. It wasn't a commando raid, but there was a massive air attack on a chateau just inland from the British section of the Normandy landing areas on June 9, targeting the leadership of the German armored units in the area.

Radio traffic analysis + codebreaking had revealed it as the armored HQ. Most of the officers were killed, and an armored counter-attack planned for the next day was cancelled.

I liked it. A nice, "I barely want to cook" recipe that tastes good.

I think next time I'll shred it and use it in sammiches with a roll, giardiniera, maybe a nice spread of mayo, possibly sautéed onions and peppers and mozzarella.

Thanks; I didn't know that about Lee Marvin nor about the history behind the film. I did know "The Great Escape" was based on a real incident although they changed things. For some reason, when Steve McQueen's character is brought back and they send him back to the cooler again and some guy gives him a baseball and mitt I found that amusing.


I like to watch films more than once if it's a film I really enjoy.

Once met a P-47 pilot who was in one of the Luftstalags near that one, there was a group of them. There's a pretty good "making of" documentary about the movie on UToob, and how the director sought to maximize authenticity where possible. Technical advisor was a survivor of the whole episode.

405 The way I heard it, Coconut oil was used for movie theater popcorn because it was stable, in the sense they could pop up a crapload of corn on a single day, and then re-heat the popped corn for a week or so. I don't believe it has a superior flavor as such.

For popping I use bacon grease quite a bit. Tastes fine, doesn't have a bacon flavor particularly. Just good to save on cooking oil (or butter).

424 There is a big difference in the cod loin versus regular cod fillets. It is a thick solid piece and needs to be baked versus fried like fish and chips. It is closer to Monkfish than anything else.

Yup....there is a Lion Fish catch and eat contest for divers in Destin, Florida during one of their Seafood Festivals each year.

Supposed to be tasty but you gotta learn how to clean them properly.

The last time I was in Bermuda everyonevhsd it on the menu to encourage fishing for it. Our dive boat captain bagged a few with a spear gun that afternoon. Probably made him a nice dinner.

427 OT (well, on-topic for POW topic), there's an interesting documentary on UToob about the POW camp at Concordia, KS. Many of the issues there were similar to what was seen with German POWs generally - the hard-core becoming a danger to most of them, and eventually being segregated. And the cordial easygoing relations with locals, for whom they worked as farm labor. And the post-war marriages.

Quite good for anyone interested in the topic.

428 In my haul from Spice House (the non-cray Penzi's) I included "Gateway to the North" just for the weirdity -- it's a maple and garlic blend they claim is good for pork, baked beans, and sweet potatoes.


Since I'm making a meatloaf that includes maple flavored bacon, I added some to the mix. I will report back when it's cooked.

Anybody used this before? Maple sugar, brown sugar, salt, garlic, pepper, onion.

Anyway, one of the previous pastors-over 30 years ago paid a visit to this guy in my congregation and pastor fell asleep in the chair. Congregant and his dad piled empty beer cans all over and around the pastor and took a picture. Did I mention that this congregant is 89 years old-a Korean vet and has a mischevious side. I laughed. That might have been male humor. That pastor was male. Congregant probably wouldn't have piled beer cans around me.

My second favorite was Turkish kebap (like a gyro with better sauce). Lot of Turks in Germany, even in the '80s.

Grapeseed oil works really well. Has a slight nutty flavor, to my taste buds. Doesn't oxidize and smell fishy like canola.

My grandparents used to keep bacon fat in a coffee can on the middle of their stove. Cook bacon or sausage and drain the fat into the can. Need some fat? Scoop some out.

But they raised their family during the Great Depression, when food was harder to come by and nothing was wasted.

Funny story about the flip top beers. One morning the Battalion Sgt Major stopped by our tent and sat on my drivers bunk. He reached under the bunk, picked up a bottle, flipped the lid and took a big drink. He re-sealed the bottle, put it back under the bunk, and exited the tent. Turns out my driver would pee in the bottles at night rather than go outside in the cold. It was never mentioned.
