Food Thread:Eating Well And Eating Frugally Are Not Mutually Exclusive

It's very easy to eat extremely well if you are a halfway-decent cook and have a generous food budget. Rack of lamb and halibut and fresh duck and heirloom pork and prime beef and gorgeous tomatoes flown in from south of the equator and fantastic fresh fruits and wonderful cakes from that great bakery everyone has heard about but nobody can afford and fantastic cured meats from stupidly expensive charcuteries and all the other things that a fat wallet can bring to the table.

And the flip side of those meals are simpler dishes made from ingredients that, while they may not peg the pompous meter, are equally delicious when prepared well. Yes, it is easy to eat like a king when you have his income, but it is also easy to eat very well on his butler's salary. We live in a country that is fabulously efficient at growing and raising food, and even more important, getting it to market in an amazingly efficient way.

A regional supermarket recently expanded into my area. I am not thrilled with their layout and most of their produce; the beef is just okay; and the fish counter is a disappointment. But their chickens are from Pennsylvania, are very inexpensive (usually on sale for about $1.59/lb.) and are excellent quality! Far better than the mass-market stuff from the big chains and just a tick behind my local poultry farm.

One of my favorite vegetables is the lowly cauliflower, but for some reason it has become relatively expensive; maybe the hipsters have discovered it! However, frozen cauliflower from Costco, or even the local chain supermarket is often just a fraction of the cost of fresh, and the quality is indistinguishable.

What's my point? Well, as usual, not much, but head below the fold and it will make a bit more sense.

Last week commenter Moki asked a good question that morphed into a bit of a challenge: create a celebratory menu for eight people that is reasonably priced.

And what are the rules? Well, it could get very complicated, but for our purposes how about assuming a typical pantry; no fancy and weird herbs and spices and try to take into account all of the costs: that bag of semisweet chocolate chips wasn't free, so the cookies should take that cost into account.

Oh...and try to avoid slow-cookers and air fryers and such; many people have them, but many people don't.

Appetizer.
Main course.
Two sides (vegetable and starch or two vegetables: your choice).
Dessert (yeah...that's tough).

Try to keep the cost at $50-$80.

Winner (judged by Moki and me) will receive a copy of the world famous cookbook, b>The Deplorable Gourmet.

And there is no second place.

Shrimp with ceci beans: $12
Grilled chicken with parsley/mustard glaze: $20
Mashed potatoes with garlic: $4
Sauteed green beans with shallots: $8.50
Flourless chocolate cake with ice cream: $12

Since I'm not in the running for the Grand Prize, I'm not giving the breakdown, but it should give you some idea of what we are looking for...

I'm assuming that I have the leisure time to plan the meal, so I can buy stuff on sale. For instance, that shrimp will be frozen American shrimp on sale for $10/lb.

This seems like a pretty solid recipe, very similar to Marcella Hazan's iconic version. But...the restaurant is in Brooklyn, not the West Village (that's in Manhattan). What else does this website get wrong?

I am overwhelmed by the choices in bourbon and rye. It's become ridiculous how many marginally different varieties there are. Luckily it is also quite easy to find a good one or two or nine. A Guide to Kentucky Bourbon Distillery House Styles is worth a read, although there still is nothing like trying them on for size at a friend's house, or if you are lucky, at the distilleries or the occasional tasting held in liquor stores.

No matter what anyone says, the best bourbon (or anything else) is the one you like the best, and yours is the only opinion that is worth a damn.

13 Made Marcella Hazan's "Tuscan Meat Roll with Wine and Porcini" which is a pound of ground beef made into a meat loaf. The sauce is tomato, wine, porcini and their juices cooked down. When I have a taste for meatloaf this is the only one I make anymore. Great sandwiches too.

This is also true is you are a vegetarian, as I am.

Over the years I have become quite a good home-chef, and when I calculate the cost of the from-scratch ingredients of whatever it is I am making, it often comes out to pennies per serving. Even if sometimes making "fancy" dishes. If you buy in the bulk section, or get what's on sale in the fresh vegs dept., all it takes is elbow grease and a knowledge of cooking to make great fod for very little money.

AND YET, the left constantly whines about poor people have "food insecurity." Yet when you see how much $$$ they get with SNAP (aka food stamps), it's often far far more than my monthly family food budget. I mean, like, double or triple what I spend, and I'm often buying nice stuff.

I no longer pay the slighrst attention to the whines coming from the Left about "poverty" and "foo insecurity: and "food deserts." None of it is true.

19 I have a pot roast in the oven as we speak. The studio smells divine. A side salad with a tart dressing and banana bread I made a couple days ago and I fed me, my oldest son and two of his friends for 40 bucks.

Add the wine, another 15. We have amazing, inexpensive wines here from independent wineries in the local grocery store.

Pot roast, onion, carrot, celery, potatoes.... some herbs from the neighbors garden, specifically parsley and rosemary, beef stock from the freezer.

Drink the same wine you cook with. Because if you wouldn't drink it, why would you cook with it?

28 I'm not really a bourbon drinker because it's usually too sweet for me. It's also the trendy beverage with millenials and younger, so prices for premium brands are increasing fast.

As far as rye is concerned, Whistlepig 10 is the best I've had, and it's
very good, but it's quite steep. As a result, I usually drink Russell's, which
isn't much of a sacrifice. However, rye in general seems to be on the same upward price
trajectory as bourbon, but a bit behind.
I've been sampling a bottle of Bunnahabhain 12 Scotch. It's pretty
good, especially if you're looking for less peat than my usual
Talisker. I really hope that with other liquors gaining in popularity, scotch prices will stabilize and maybe even decline a bit. They're really insane at this point.

You will need:

2 slices white bread
some peanut butter
some jelly

1) put 2 pieces of white bread on a plate
2) spread peanut butter on one, and jelly on the other
3) jam them together so the peanut butter and the jelly are touching
4) enjoy

also called a 'jam sandwich' because you jam the two parts together

I loathe Jim Beam. it's the Folger's coffee of bourbon (I will not drink Folger's. I hate the smell of it, even. so, naturally, it's the office coffee. Which is why I have my own coffee pot. Black Rifle B-B on deck).

but, I digress. Most of the bourbons I sample are very good, and they all have their own subtle flavors. Buffalo Trace is particularly good.

But my go-to is Evan Williams, black label. Lower price than Jim Beam, and orders of magnitude better.

By the way, I did it a little differently this year. Instead of steaming the eggplant I wrapped it in tinfoil and grilled it. I think that made a big difference. Not just the smoke flavor, but the keeping more liquid from the eggplant.

Today began with biscuits and gravy. Good way to kick off a day that is turning cold with a chance for snow. Dinner will be fresh green beans cooked with bacon, garlic, onion and about a dozen of those "two bite" potatoes, and lamb patties on the side. Mom carved the lamb and ground it, so we will have lamb patties or burgers. Keeping the spices for the lamb simple, salt, pepper and garlic.

70 Best money saver: just watch out for sales, especially for meat, fish and chicken. Buy cheaper cuts for stews and soups. If you're shopping and you see, for instance, that peppercorns or flour or some other staple is on sale, buy it even if you don't need at the moment, because eventually you will. I also use coupons.

One thing I am pretty good at is being a thrifty grocery shopper. Every now and then I feel free to splurge on an expensive but necessary ingredient- like dried morels for instance - because I've cut my costs elsewhere.

I have instituted "Celebratory Dinner Night" on Fridays in honor of this challenge, to play with menus, specific holiday requirements, all for 50 bucks or less for 8 people. I am really looking forward to making the menus people suggest - I love recipe testing, and this is a great way to get me out of my typical 15 meal rotation.

Note to CBD: the vegan bean and kale soup turned out fine, but today, I sauteed kielbasy until caramelized and the heated the leftover soup with it.

My husband proposed again.

In Berkeley (in the SF Bay Area) there is one of te largest and best-stocked and least-expensive fresh grocery stores in the United States, by the name of Berkeley Bowl (so-named because it used to be located in a disused bowling alley). They have aisles upon aisles upon aisles of the worlds best vegetables and fruit, at wholesale-level prices (most Bay Area restaurants shop there), plus a massive bulk area, also at wholesale-level prices.

This store is basically in the "poor" side of town, where the rent is cheaper, so the poor people have much easier access to it -- basically walking distance from most of Berkeley's "slum" --compared to the rich people, who have to drive miles to reach it.

AND YET, the clientele is 95% white and Asian, middle-class and upper-class. While the nearby poor people, if they do enter the store at all, it is merely to buy a can of beer or some pork rinds or cheetos. But mostly they avoid the store altogether, and walk right past it to the overpriced liquor store on a nearby corner.

Why??? The real reason is: They don[t want to cook. Too much bother. They just want insta=food. No patience. No tolerance for "delayed gratification."

91 Something else I've discovered: I've used good wine as a cooking ingredient and cheap wine and I really can't tell the difference. Don't use cooking wine or sherry but save the good stuff for drinking not cooking. I usually get those cheap miniature box wines for wine to put in a stew.

Use wine that has gone vinegary in salad dressing.

Domestic olive oil is just as good and can be less expensive.

I can understand the working poor- especially those with two jobs- not enthused about cooking in between shifts. It takes time to create a menu, shop, cook and then clean up. It's easier to get something to throw in the oven as a one and done (stouffer's lasagna) or drive through. A friend with five kids told me that when her husband was deployed, dinner meant grabbing the keys to the van and choosing a fast food place they hadn't been to in a couple of days.

I spend a lot of time menu planning, costing ingredients and shopping the sales, but I have to cook our food - we have a family with myriad food allergies that are in some cases, life-threatening. But husband and I are retired so I have time to do this. Someone working two jobs doesn't, and my heart goes out to them.

Someone who has plenty of time to make a meal plan, shop with a budget and prefers to get chips and beer, I don't have as much sympathy for.

114 Pug, I have a ziplock bag of veggie parts and chicken bones in the freezer now. When it's full, I'll throw it in the instapot.

I get migraine headaches from a lot of preservatives, so making my own stock has cut them down substantially. And it's so much better.

If you want, you can get beef bones super cheap at a butcher shop, roast them in a 400 degree oven for an hour or so and use those in stock.

Add that to your beef and barley soup.

One fun and unusual rye is the

Balcones Texas Rye in either the 100 Proof or Cask Strength version.

The Cask Strength has more of everything going for it so it's the one to buy if you can, though the 100 Proof is good as well.

The difference between the Balcones and most other ryes is that Balcones uses what they call Chocolate Rye and dammed if it does have a very nice chocolate nibs sort of thing going on along with the spiciness and apples and apple pie flavors as well.

Great for sipping or mixing.

Makes an unusual and excellent Manhattan.

Give it a whirl.

If you're on food stamps, you have time to cook, but even a prepared lasagna is better than the usual crap they eat. We were a two job house, with four kids, and we rarely ate out. We ate very well. At some point, you take responsibility for the choices you've made, e.g.
having kids, and quit trying to blame others for your shortcomings.

I visit Kentucky several times a year and have become quite the bourbon nerd. Totally agree that the best bourbon is the one that the individual drinker likes best. I always bring at least one bottle home to MD every time I visit KY. Even during Pappy mania and the trend of camping out for various special releases, I've discovered many varieties that are outstanding for less than $50. There's a reason some of those big names have been around for so long.

145 Cooking follows the Pareto Principle: putting in effort to learn about 20% of total knowledge will get you about 80% of the way. Learning the basics of cooking and having a decent spice rack will allow you to make very good meals for a reasonable price. I'd say start by learning to cook an egg, then roast meats, then cook vegetables in a few interesting ways, then add in some pastry basics so that you can make simple desserts.

About 10 hours seems to be the sweet spot. But I always cook to temp and not time on long cooks like that. It can vary by 2 or more hours either way depending on external temps, wind and humidity.

Let's see...this weekend, got a batch of kimchee made. Got whole duck on sale that I butchered. The legs are sous viding until tomorrow night to make duck confit, and the breast halves and wings made lunch for the visiting RMBS Mom and me (along with fondant potatoes and a black currant pan sauce). The carcass made a good gallon or so of duck stock, and the skin is currently rendering into lots of tasty, tasty *looks around for maud'dib* duck fat.

I'm done. It's cocktail time.

A couple of times I wanted to bail and try again another day (I was hungry and thirsty and had to pee). I was sustained by the thought that my vote for DJT would cancel out that nimrod's. It felt good.

Almost everything that goes into the 'fridge/freezer for any period of time over a couple days/weeks/months goes into one of their bags. Not everything needs to have the air sucked out, so I guess you're basically making your own zip lock baggies.

243 Also, someone was talking about seal a meal vacuum baggers and I have burned through at least five in as many years. Small ones, game savers, all different styles, all food saver brands.

Got a vacmaster v95, it is a chamber sealer and three or four times the price of a seal a meal, it is meant for heavy duty home use or light commercial. It is an entirely different operation than a food saver, which sucks air out of a bag. You can actually vacuum pack water in it. It's really an amazing matching, but is heavy and needs to live in a spot pretty permanently.

You can use seal a meal bags in it but you can't use vacmaster bags in a seal a meal because they are not waffled, which means the seal a meal can;t suck air out of them.

It uses oil and has to be maintained, but if it lasts longer than a year I;ll be very happy.

I'll report back in a year if it hasn't broken like all my other seal a meals.

281 Talk about First World problems. I went outside to put the new auger belt idler in the snowthrower. Get it bolted onto the tension arm, and the arm attached to its bracket, with a shim washer in place to eliminate the floptivity.

I am about to bolt this assembly back on the machine, and I see a crack on the rim of the new idler. An inch or more of the rim on one side is hanging by a thread. And I handled it gently. No excess force was used while putting things together.

Furthermore, the bag in which it came has a hole in it, and marks consistent with crushing damage. Something got dropped on it while in transit to my local dealer.

So take it back tomorrow, and demand a replacement. When it costs $26, it's got to be undamaged.

The green stems etc of solenacea plants (potatoes, tomatoes, peppers etc) are poisonous.

Green potatoes, for example can be toxic, the eyes or sprouts are toxic. My experience has been mild digestive issues with green potatoes but since I am squeamish about stuff like this I pulled the jalapeño out of the crock pot to be on the safe side. Such a worrier.

I arranged one several years ago for some folks near the area I live, We just had it an a large meeting room at a restaurant and everybody ordered from the menu. Seal a meals are just great, I love how they work. The problem is a function of volume and the kind of things you tend to vacuum pack. The game saver is a better machine for volume packing of meats.

The trick with the food saver family is the wait time between sealing. If you are processing a deer, Or lot of meat from a costco run, you really have to wait at least twenty seconds between sealing to let the machine cool down. This is where I think the machine gets overloaded and breaks down,

What always goes is the vacuum. It still seals, but maybe not quite as good. When it fails, it looks like it sealed ok. Then an hour later the seal fails and everything you just put in the freezer (that you might look at the next day) may as well have been tossed in a ziplock bag. You get ice crystals and freezer burn.

The vac master or chamber sealer has different mil dimensions on the bags, some for sharper stuff. Bones in meat for instance, can pierce the bag so you buy heavier mil bags if you are bagging sharp stuff.

I sealed some dried commercial egg noodles. On the highest setting for a hard tight seal, the egg noodles pierced the bag and I lost the seal the next day. So you need to have a variety of bag thicknesses for different products. The vac chamber bags are soo much less expensive that the seal a meal bags, but the machine is $$$$$.

All that said, it depends on what you plan to use it for and do plan on replacing the seal a meal periodically. Nothing worse than bringing in a meat load and finding out your machine doesn't work any more and being 60 miles away from a store that sells them.

And watch out now, plastic products (Bags etc) are having some sort of supply chain failure.

The bigger ones, like Texas, Virginia, and Colorado, take a bunch of time and work by the organizers.

That being said, if there's one in your area, big or small, and you're able to go, do so. You'll put names to faces and you can feel very comfortable knowing that you're in friendly territory even though you've never met a bunch of the people face-to-face before in your life. And I include lurkers in this.

If you are vacuum sealing dried products like rice, noodles, beans and the like you need to use a vacuum attachment and use canning jars with regular canning lids.

I seal all of my beans and egg noodles and the like in canning jars with an attachment to my vacuum sealer with the regular lids and they last 2 or more years with no ill effects.


I vacuumed sealed some peanut butter cookies the wife made and opened them after six months in the jar and they were as good as the day she baked them.

You take a big mason jar, put in some dressing, and then start layering in salad components. For me that's usually broccoli and celery, lettuce, cheese, and some chicken or a hard boiled egg. They're good to make on the weekends and take to work during the week for lunch.

I chamber sealed 25 pounds of rice in bags the other day. I did it also 7 years ago and just finished the last of that supply. Good as the day I bagged them.

I can see where you use the jars for the more delicate foods. sealing crackers /cookies i.e. the more delicate stuff in a jar, that would be super especially if you could get a year out of it. That stuff just goes bad so fast.

Do this from now on.

Also, save your old dome lids. You are not supposed to use them, but they can go on acid foods that are low value. In an emergency they are decent to use

There are a whole bunch of "preppers" that use the vacuum canning method for all sorts of stuff from rice, beans, noodles and crackers.

One lady on youtube even "cans" ritz crackers when she finds them on sale. They last 5+ years in vacuum sealed jars.


It works. I buy one 15 pound bag of pinto beans from Sams and put it in pint jars and vacuum seal them. I get about 30 jars of beans and they last me a six months or more and I have never had a problem with anything going bad.


We do the same with egg noodles, rice and other dry goods. Haven't had a single issue yet.


Caveat: I only use Ball canning jars with ball lids. The other brands of jars and lids do not seem to work as well and I can't get them to seal as well as ball jars.

I truly think it's the latter. He, the media talking heads and pundits, all of them are believing the polls which have Trump basically wiped out, a blue wave coming, the Senate flipping. I think they really believe it. And he knows the fraud machines in key states are churning to help even more. Cinching PA, which is a critical state.

I'd love to have the biggest smearing of egg all over their faces on Nov. 4 that the world has ever seen. I want a blow out of such colossal proportions they'll sit stunned in a state of catatonia for a year.

Non-stick pan on high, a little oil, cook the mushrooms in one layer at a time to get nice browning, cook until you like the look.

Turn down the heat to low, add in some chopped shallots, stir, stir, stir, cover for a few minutes on low, then deglaze with some white white or chicken stock. Cook it down until the liquid is almost gone. Hit it with a pad of butter if you're feeling special.

I do that too. I put them in a colander, salt them and put a plate on them so they lose moisture. Then rinse lightly and mix with vinegar, oil and garlic. They keep a long time in the fridge if you top them off with oil.

573 You can make shockingly good chili or spaghetti and meatballs or cream of potato soup or grilled pork loin chops with pesto pasta to serve four for about $5-6 total, maybe less. I learned how to do that when I was laid off in 2009 (and I could do it back then for $2-3).
If you look you can find boneless pork loin halves for about $3 per pound on sale, and you can get 10-12 good boneless chops from a pork loin half.

575 Just an FYI on frozen vegetables from Costco:

Check the package and make sure they are from a country you trust.

I mistakenly bought a bag of frozen veggies a few years ago at Costco, and didn't notice until I got home that it was FROM CHINA!!!

WTH, we need to outsource cauliflower and peas from CHINA? Ok, things that are native to Asia, like water chestnuts, are hard to grow elsewhere. But regular frozen veggies, it can't possibly be economical to source those from the other side of the globe.

I returned them the next day.

576 Non-stick pan on high, a little oil, cook the mushrooms in one layer at a time to get nice browning, cook until you like the look.

Turn down the heat to low, add in some chopped shallots, stir, stir, stir, cover for a few minutes on low, then deglaze with some white white or chicken stock. Cook it down until the liquid is almost gone. Hit it with a pad of butter if you're feeling special.

All day sauce and meatballs recipe.. You can probably serve 8 people for under $25
Personally, I would add 1 1/2 lbs of good Italian sausage to the sauce.
Now, you also need garlic bread. Cheap Italian loaves or french bread.. Slice into rounds (my preference) or cut lengthwise.. real garlic crushed into butter and melted.. spread on bread and broil for a few minutes,, don't burn as I have done!
Serve with a nice Italian dressed salad.. get some good greens.. don't skimp on this. (my daughter is salad girl.. she always brings the salad and they are so good!)
I would use penne pasta (or mostacioli) .. it is easier to eat.. no slurping like spaghetti..
Get some Italian cookies for dessert with coffee.. or splurge on canoli.
For a celebration, you might be making a cake.. even cheaper!
Your booze bill will be more than dinner if your guests are drinkers!
Ask people to bring wine..
