First-World Problems...Part 십칠

It's actually pretty difficult to find a cup of good coffee in my neck of the woods. There is Starbucks, which is foul swill, and a couple of boutique coffee houses that are good, but not as good as my home brew.

And then there is Dunkin' Donuts, which I have tried...once. And it wasn't bad! But it was at 7:30am, and there was a line out the door, and I got too much cream and too much sugar.

Yes, I am scarred.

But it was half the price of the other places and it was good coffee. Maybe not spectacular, but I also wasn't bombarded with New Age crap and political messages and overpriced coffee paraphernalia and pierced and tatted "baristas" who are really actors or writers.

And damn...they were hustling.

8 I had one great coffee house where they prepared their own beans. It was heaven. New owners took it over and destroyed it, claiming they were bringing it "back" to where it started. Except I was there when it started - it actually never changed - all the new people did was piss on my leg and tell me it was latte.

It had a good 20 year run. I miss it like hell.

I get the sense that they have been in decline for some decades now. A pity.... a vestige of an earlier time, when the waitresses called you "hon" and the coffee was strong enough for the spoon to stand up by itself.

Also: you'd never find a "pastry" made out of kale and tofu in DD.

Pure, white sugar. Or maybe brown sugar, maple syrup, or honey for variety. Chocolate. Caffeine. All the major food groups.

OT: looks like Kamaltoe has had really, REALLY bad plastic surgery.

17 Completely anecdotal/unscientific/tiny sample study to report - that is, by today's standards, a rigorous study from a "prestigious" institution, to be blared in headlines - but the local Dunkin' franchisee appears to be suspiciously American and sensible.

There is even an e-Verify sticker on the window of the store I've gone to!!!

Seriously - I'm surprised, in Weimar America, that any business displaying that sign isn't instantly firebombed, boycotted, or its personnel attacked. I guess that'll be in the next phase.

And yes, almost a Chic-Fil-A (spit) vibe with the young employees, or as I explain it to foreigners visiting when we go to In 'n Out, like much of America was up to the 1970s.

Coffee's OK, good enough for non-boutique stuff, which I don't generally want that often. And .... donuts.

24 Home-made cold brew is the way to go for me. Super-smooth, super-delicious, super-strong.

Buy one of those inexpensive home-brew coffee-maker dealies -- they're basically just a pitcher with a hole in the bottom into which you put a filter.

Follow the instructions -- out the filer in, then dump in a bunch of coffee ground and water.

Let it sit overnight (12 hours), then unplug he bottom and let it drain out into any container.

You will get a huge amount of super-delicious coffee concentrate. Smooth, less bitter than normal coffee, almost floral and sweet.

Store in glass container in fridge, use a little each day. Lasts for weeks.

30 Home brew is the best brew. I have a farmer's market near me with a stand run by a Columbian immigrant (legally jumped through all the hoops to become a US citizen...I know this because he is damn proud of that fact and shares it with everyone) Anyway, he roasts his own coffee and brings in the beans to sell. He won't grind them for you. He believes that speeds up the process that would make them stale.

So you buy whole bean from him or you don't buy anything. He does some great roasting including using a smoker of some blends with chickory. Good stuff.

I went out and bought a Ninja Coffee Bar set up. Sounds a bit pretentious....but it offered the one thing I truly wanted...the option to make a single cup of coffee using regular beans and not thos processed cups or whatever those things are.

McDonalds coffee is a great value, they buy a ton of coffee from suppliers, turn it quickly so the ground packs don't go stale, and are supposed to make a new pot every 20 minutes, or so a manager once told me.

Pro tip: Always ask the order person if the coffee is fresh. Most are trained to offer to make you a fresh pot if it is more than 20 minutes old. That is the life of a pot of fresh coffee sitting on a warming tray. It is cooking on the tray, unlike when in an airpot carafe.

Or if they seem lazy and the coffee isn't fresh, just flat out ask them to make a new pot, and yes I will wait the 4 minutes for it to brew.

It's worth the wait.

Seattle's Best Coffee was a leading independent roaster in the 80's and 90's. Really exceptional coffee, Jim somebodyorother was the founder. They sold out to an Atlanta food conglomerate about 1996, they ran the brand into the ground, and then Starbuck's bought it up for nickels and dimes in the mid-aughts.

SBC is now the "budget" brand for the Green Dragon.

And it is all roasted at the same Starbucks roasting plants as the more expensive SBUX brand.

111 Worked in China for many year and the premier CHinese grown coffee was "Blue Mountian coffee" which was absolute shit.Commies can't tell the truth about ANYTHING.
The 2nd best coffee I had was working in Turkey (Izmir). They make it strong. Hand grind the beans fresh, put the grounds in this tall tin lined triangular brew flask (narrow top, wide bottom) with a handle on the top. You pour the mixture into a cup and the design of the brew pot kept the grounds in the pot (although you never drank the cup tpo the last drop because a few grounds were in the bottom). They like their coffee real sweet. I loved that coffee. Thick, ricj and it would put hair on your chest (and eyeballs).

But the very best coffee I ever had was working in Nam in the Boun Me Thouc region. Forget Kona coffee, Vietnamese coffee was the shizzle. Man that stuff was good. They do a pour over, little tin press contraption with holes in it, that you put the coffee in and pour the hot water over.
I still make coffee that way. Each cup is fresh and not that stale burnt out piss you get at Starbucks. You can take the blandest , commodity medium roast coffee (found at Aldi's). brew it like that and it kicks ass. People always ask me, after drinking a cup , "Thats some good coffee, what brand of coffee is that?"
Its not the coffee, its the brew method.

123 If you visit Vietnam, among the non-First World problems you'll have will *not* include coffee - though they don't do much American style coffee. I suppose you could always add water to the strong brew they make, sort of an "americano" as in Italy - a diluted espresso. They use little metal drip containers, and tend to make it *strong*. Local coffee, of course, they're a major exporter now.

Usually it's "diluted" with sweetened condensed milk, and then ice if you prefer, and for hot days (most of them).

World-class coffee + sit watching the local world go by, on a par with Japan, Brazil, etc. Street-side cafe in Saigon/HCMC, morning rush hour - slow-moving rivers of main streets, filled with people on their motorscooters.

Here's the full story:

https://www.peets.com/major-dickason-s-blend

HISTORY

"A loyal customer of our original Berkeley store, retired army officer Key Dickason brought the idea for our most beloved blend to Mr. Peet in 1969. Intrigued, our founder worked with the local gourmand and coffee aficionado to refine it. They sampled countless combinations before arriving at what is now our all-time bestseller. The result was so good, Alfred Peet decided naming it after his friend wasn't enough -- Dickason's rich, complex blend also deserved a promotion from sergeant to major. Major Dickason's combines the best origin coffees from the world's premier growing regions, each imparting its distinctive regional characteristics while still effortlessly rounding into a smooth, balanced cup."

Peet's is now just another corporation, but back in the '60s it was just one store and among the first in the nation to do fancy-pants in-house roasting.

Order them "wet", with w/everything (mustard, pickles and onions) with a chocolate or strawberry malt. They will even freeze them and ship your order to any where in the continental US. Until a few years ago if you wanted ketchup you had to bring your own. Adding ketchup to a Taylor's Maid-Rite sacrilegious!

He may have grumbled about me ruining him for cheap coffee, but it didn't stop him from offering a ring and a lifetime together with better coffee in his house.

Down here in Wichita Falls, TX, one of the local Airmen off Sheppard AFB started Odd Duck Coffee, where they roast their own. It's great coffee; I'm glad that of all the things I miss about living in Alaska, great coffee doesn't have to be one of them.

Although the baristas did look mildly confused when my darling man reluctantly tried a new brew, and emphatically declared their Ethiopian Coffee to be absolutely nothing like the swill he'd actually drunk in Ethiopia when negotiating with some tribes there.

So it was easy to be a coffee snob. It was actually my job. I would make 10 pots of coffee, blended differently, taste it and toss them. It was essentially testing.

And when green coffee beans are $2 or $3 a pound in bulk, and lose about 20% of weight getting roasted, making 10 pots just doesn't cost much. But to find a popular blend was worth thousands a month in revenue from a commercial account.

Some days though, I would be making some good blends, and drink too much. By lunchtime, I was shaking. Time for a big fat cheeseburger to calm the nerves.

After about eight years it looked exactly like the day I picked it out of the vending machine. Except hard as concrete. Didn't try eating it.

Major Dickeson's Blend is in most local stores around my neck of the woods. If I don't buy my 3 lb bag of Columbian at Costco (fresh cuz it is always turning, and a little over 5 bucks a pound), Peet's MDB is my go to.

Have to watch out to make sure you get the whole bean, not the ground. Most of the pre-packaged stuff is ground. The flavor is fading much faster that way.

He is lamenting the apparent demise of the drop-side crib in favor of the big, fancy, low-slung Cadillac crib of today.

His problem is that he has a bad back, and my mom is practically a freakin' midget. Leaning over these giant cribs makes it hard for them to change or pick up the babies.

184 runner there was at least one location in AZ that did it as a fairly regular thing, for summer-time - but of course it was immediately portrayed as the apocalypse.

Given the complete collapse of the press as an information source, and the deep degradation and corruption and mediocrity of the public health sector and almost all levels/branches of guvamint, serious observers are down to using only basic incorruptible macro measures - all-cause deaths, compared to average of previous years - to gauge the state of things.

And guess what ...... TX and AZ have been going through, appear to have now gone through, their own curves (with big boost from imported curve of northern Mexico), and will be heading down, rapidly, soon.

Just like the path of every epidemic in the history of Earf. Not that such knowledge should be allowed to confuse the illiterates who dominate the public square and attempt to maintain control of public perceptions.

Posted by: Oleander Salad at July 19, 2020 02:53 PM (IhJme)

A lot of grocery stores and commercial food supply stores (Cash and Carry locally) carry "white coffee".

That is robusta coffee.

Robusa beans are double the caffeine on average than Arabica beans. And harsh taste, too. But the plants grow anywhere, like weeds, and can offer an immediate cash crop to grow for a poor country. And the cost of robusta beans are half price or less compared to Arabicas. The UN did this in Vietnam after the war, to generate a cash crop for world trade.

And there was a new roasting system created in Germany about 20 years ago to roast robusta beans and eliminating a lot of the harshness in the taste.

Your low end Folger's and Maxwell House in the can are now robustas. 40 years ago, they were the leftovers from the coffee auctions in Latin America. Those leftovers were all Arabicas, which is what all "gourmet coffee" is. And why brand coffee used to "taste better". Because it was better coffee than today.

I learned a lot of fairly minuscule coffee information in 15 years.

255 LCD, good info on robusta/arabica. Was aware of this, but didn't know Vietnam was mostly robusta? They have excellent coffee country (mountainous, climate) for arabica, I would think.

I recall, years back, at a local roasting chain in NoVa, I started bs-ing with the owner about world coffee matters, and he brought out some green beans from Colombia, Kenya, and Vietnam. The Vietnamese ones were much smaller, irregular, and had lots of foreign matter mixed in. The guy said Vietnam was really infuriating the other major exporters, as they were able to price their exports far below the others.

No. The cigar tobacco is nowhere nearly as processed as cigarette tobacco. It can be very harsh and provoke much coughing if inhaled.
Cigars are more for contemplation, conversation, even if only with yourself, or celebration.
Pipes are for working out things. Writing, editing.

I may have mentioned this before, but we were in the Seattle airport about 2 weeks ago. There is, of course, a mandatory mask requirement. Lemme tell ya', the first time this fellow made a pot of coffee he was the coffee guy on all subsequent campouts. His coffee came from Columbia - a relative shipped it to him. Coffeepot was an old school blue enameled metal percolator, heated on a camp stove. What poured out of that pot was heavenly. Being outdoors was the sweetener.

337 55 LCD, good info on robusta/arabica.

Posted by: rhomboid at July 19, 2020 03:45 PM (OTzUX)

Yup, those little round beans are robustas.

Virtually all Arabica beans grow within 5 degrees of the equator, in mountainous regions, starting at 3,000 feet elevation. Lots of Latin American beans are grown at 5,000 feet or even more. And an Arabica tree cannot take cold weather, it will kill it even before freezing. Of course, not a lot of freezing 5 degrees from the equator.

The highest priced gourmet green beans are from Hawaii and Jamaica. Hawaiian Kona Coffee, and Jamaica Blue Mountain. BTW, Hawaiian Kawai Coffee is NOT Kona!

Cost wholesale is easy $20 a pound or more, compared to a good Latin American bean at $3 or $4.
Now, a really good Panama bean tastes like a Hawaiian Kona. About 20 years ago, a group was buying high end Panama at $6 or $7, shipping it all to Hawaii, re-branding it as Kona, and selling it for $25 a pound.

They were making a lot of money for a few years, until the big importers, who would notice this stuff, said "where the hell is all this Kona coming from?".

The powers that be took some beans and CSI'ed them, tracing their origin to Panama. The crooks later got busted and went to jail, the scam made many millions until they were caught.

Today, almost all the good Panama beans are pre-sold to mega-buyers and the small roaster has difficulty getting Panama beans. Prices have gone through the roof.

Good Panamas, closely followed by good Costa Ricans, are my favorites.

356 Can we talk about First World problems that don't involve coffee?

Our parish church opened again three weeks ago, alleluia. I am OK with the social distancing and the lack of Handshakes of Peace (never liked that anyway). But with no live choir, our pastor has been playing prerecorded hymns at the beginning of Mass and they are HORRIBLE. Sweet, sticky, obnoxious ... the artificially-flavored pancake syrup version of church music.

I wrote to the pastor and said silence would be better than that stuff (a music-free Mass is still a Mass). He wrote back saying that the recorded stuff is "perhaps not the best option," and that he and some committee are going to look into it. In the meantime, though, I may have to bring my earplugs (the same ones I wear at the range) and plug 'em in until they turn off the tape recorder.

357 17 Completely anecdotal/unscientific/tiny sample study to report - that is, by today's standards, a rigorous study from a "prestigious" institution, to be blared in headlines - but the local Dunkin' franchisee appears to be suspiciously American and sensible.

And .... donuts.
Posted by: rhomboid at July 19, 2020 02:07 PM (OTzUX)

I love Dunkin.

My beloved hometown was deprived of Dunkin Donuts locations for years. Well, they were there but you'd have to go look for them to find them. Now they are popping up all over San Antonio, thankfully, so I have a place to grab coffee and doughnuts if I am ever so inclined.

Once, when on Reserve duty in another state, I went to a DD location, and the base was and is pretty far from anything. So a drive to DD requires a bit of time. I went in, in uniform, and ordered my usual items. As I recall: hash browns, Munchkins (doughnuts were off limits at the time) and a large black coffee. I got my goods and went to pay for them and was told "don't worry about it" by those behind the counter.

364 Best coffee I ever had was Hawaiian.
Boosted by the dishwasher at Carrow's Restaurant in the 1980's

Never have been able to find as good since.

Stuff was heavenly.

365 7-Eleven has better coffee than Charbunk's, much better than McDs, and is cheaper than either.

366 Saw a couple people mention it in passing above, but Dunkin Donuts (will always add the "Donuts" to the name, no matter how much they fiddle with it) was one of the first - if not THE first - major US chain to go all-in with mandatory E-Verify for their new hires.
It was a big deal at the time, as the left was lobbying hard for amnesty at the time, and a lot of us saw it a a big push back. Most other companies quietly joined in as well shortly after (or it may have since been made mandatory/strongly encouraged by law - can't say for sure).

And the coffee is great.

Unfortunately, they're mostly in the Eastern US, so it's not always an option for folks who live in Free America.
