Food Thread: When Life Gives You Social Distancing And Duck, Make Duck Fat.

Passover starts this week, Easter is next Sunday (Holy Week begins today), and many of us who are accustomed to gathering with family for the Seder or going to church and then home for an Easter meal will be floundering a bit...unsure what to do and whether these important holidays (the most important in Christianity) will go relatively unnoticed.

While the more public celebrations are of course tamped down to nothing by Sino-Lung-Rot, that does not doom us to leftovers and a lonely table. Make something of it...whether it is one or two or 20 at your table, make your favorite holiday meal and enjoy it with the same pleasure had this week been normal. In fact, take greater (or perhaps different) pleasure in it; we have the rare opportunity to be focused on the more spiritual aspects of the holidays because of the enforced ease of preparing for only a few rather than the teeming hordes that descend upon some of us....

That doesn't mean that we should discard traditional foods though. I'll be making matzoh ball soup and my (better) version of gefilte fish and a flourless chocolate cake of my own design (that's a lie...I got the recipe from Bluebell, and it is fantastic!) and of course the Seder plate and the other things that make Passover special.

So...what is the Horde going to do that's different, aside from the obvious? Any interest work-arounds? Any new dishes that just won't work for crowds?

I roasted a duck last night, and I was pleased with the way it turned out. Of course one reason to roast duck is for the fat, which is perhaps the best cooking fat around. I trimmed the excess skin and fat and rendered it for about an hour. I was left with about 10 ounces of beautiful duck fat that is going to be used to great effect in my matzoh balls!

Then I roasted the duck at 300 degrees for four hours. Yup...four whole hours! it rendered another 12 ounces or so of fat, but this was flavored just a bit by the slowly roasting skin and meat. That's not a bad thing, but it is different than the first batch. And now that I think about it, maybe I should use the more intensely flavored fat for the matzoh balls. Ah...first-world problems.

I then put the duck into a very hot oven for about 15 minutes to brown and crisp the skin. It turned out wonderfully, although next time I think I will back off a bit on the time, because the leg that I had was, perhaps, just a bit dry. Maybe. I still gobbled it down with great glee and gusto.

And yes, I made cracklin's from the rendered skin (gribenes in Yiddish) and ate them all. In about 30 seconds of frantic spooning into my mouth.

I recommend to everyone who likes to cook and has access to good domestic duck to try this. I am a cheap bastard, so the financial calculation is easy. Duck fat is stupidly expensive in the stores, and I can make more than a pint and get a roast duck in the bargain for less than the cost of that much fat from one of the gourmet purveyors.

Anybody else like kimchi? I think it is a fantastic food, and it's one of the things I miss about living in California...the easy access to good kimchi (from friends and commercially).

This batch is from commenter "Wee Creek Farm Girl," who had better tell us how well it turns out, because it sure looks good.

In fact, I would be willing to be a taster if she needs help. What can I say? I'm a giver.

From commenter (and Bay Area denizen) "LeBoulanger" comes something new to me. I had no idea that there was a small industry dedicated to home roasting of coffee! Wow...people are amazing.
Anyone else out there roast their own coffee? A good roaster is a bit expensive, but I've made it up many times over because high quality green coffee beans cost far less than retail beans from a quality roasting company. The quality is excellent, and I find it enjoyable and rewarding. This a batch from a farm in Costa Rica:

He tells me that it is cost effective (high quality beans are inexpensive) and fun. I guess after the sunk cost of the roaster (there are some pricey home versions) and the learning curve it is just coasting. I am intrigued!

Pina Colada Mix:

1 15 oz can Coco Lopez
1 20 oz can Pineapple Chunks (in juice, not syrup)

Blend until smooth.

Pina Colada:

In a blender add

2 oz Papa's Pilar 24 Dark Rum
Ice (Use glass you are serving in to measure the amount of ice)
Piña Colada mix to the level of the ice

Blend until smooth.

Garnish with fresh pineapple.

Pastor has canceled his plan to try to hold an Easter outdoor service in the church's large backyard.

Anyhow, I'm scaling way back our Easter dinner. I usually do a ham, leg of lamb, lots of sides.

It will just be us, our son, and our Zimbabwean son, who is an RA living on campus.


Trying to decide whether to do some racks of lamb, roasted lamb, or just stick with a ham. It feels weird to have such a toned-down dinner.

20 Found two YUGE long-stemmed artichokes at Fresh Market yesterday, the size of babies heads. I've never bought the long-stemmed ones, but I guess you peel the stems and cut them into manageable pieces and steam them along with the rest of the artichoke.

My husband loves them so much, he said that's all he wants for dinner. That, and a few cocktails.

23 So, takeout pizza has gotten really expensive and doesn't even taste that good. So I don't want to buy it anymore. But. I tried to make my own pizza once, and what I made was flatbread. It was pretty good, mind you, but it was not pizza. Does anyone have a good pizza crust recipe? Any tips, especially for thin and/or personal size crusts? How about pizza sauces, especially ones that aren't tomato-based, or if they are, do not have the nauseating* flavor of tomato? And tips for cooking - how hot does the oven have to be? Can/should we grill them?

*yes I mean that. I've tried tomatoes many times and in many forms. I can stand them in spaghetti or marinara sauce since it's so heavily flavored, but otherwise, tomatoes give me the dry heaves. (What were y'all saying about a food thread for picky eaters?)

25 I scored seriously inexpensive Butterball turkeys at Thanksgiving, so the final one gets to be Easter dinner. I'm not a fan of ham, so it was a double score for me. Just the husband and kiddos, but I need to do it up right for the soon-to-be seven-year-old whose birthday falls on Good Friday this year. That flourless chocolate cake sounds like a contendah.

Tonight's dinner is slow-cooked pork shoulder. Thank God I caught Aldi on a stocked day this week!

We watched Mass online also. Very, very odd feeling. It was odd not hearing any babies cry out during a 30 minute gospel.

I normally will cook a ham for the ravenous multitudes but it will just be the two of us this year. Not yet sure what I'll make. My wife is just sick she can't make Easter baskets for the grandbabies.

I've long wrestled with the timing problem for brisket. For a 9-10 lb brisket, I often have to delay dinner because it isn't done (I cook it low and slow at 225-230 F). A couple of weeks ago, I bought a 13 lb Prime brisket at Costco, trimmed it up a bit, injected it, put the rub on, and put it in the smoker at 11 pm. I got up the next morning, wrapped it in butcher paper, and continued. It finished up about 4 pm, and that was with a brief period at 260 F. I let it rest for an hour, and then we had dinner. Three people consumed all of it in two dinners plus a few sandwiches. It was, hands down, the best brisket I've ever made. This is the way I'm going from now on.

36 The hotel in PR that my dive shop was located in used to have a pina colada making demonstration every Wednesday afternoon. A couple of the bar tenders would set up a makeshift bar by the pool and mix up huge quantities of coladas for the guests.

More than one Wednesday we closed early, grabbed a couple pitchers and sat on our back deck overlooking the ocean. It was a very good job.

40 Mrs. Peel, ever tried making your own alfredo for pizza sauce? Stick of butter, salt and garlic to taste, heavy whipping cream and (not the green can) grated Parmesan cheese. I can't imagine a pleasant world without tomatoes, but I make my own alfredo sauce occasionally to match with shrimp and our asparagus when it arrives every spring.

47 Matzo ball soup, the hogmartin way:

constituent parts of 1 chicken with bones/skin (you're supposed to use a stewing hen, but I just get a tray of whole cut-up chicken)
parsnips
carrots
2 leeks, snapped but not cut
big bunch of dill
salt (I salt the water to taste before boiling, just enough that I can taste it, then add whatever it needs at the end)

Bring 1 gallon water to a boil with salt, leeks, 3/4 of the dill, and 2 parsnips. Reserve a bit of dill, parsnip, and carrot for the end, because whatever vegetables go in during the simmer will get straight wrecked and will be discarded. Put chicken parts in the boiling water then immediately reduce to a simmer so it doesn't re-boil. Simmer for a few hours. Most matzo ball recipes chill in the refrigerator for an hour or two, so do that part now.

Once the stock is properly simmered (~3 hours), pull the chicken out and pull the meat off. Do whatever you want with that. It won't be needed for the soup. Remove the vegetable carcasses and discard. Strain the broth well, slice 1 or 2 each of the remaining carrots/parsnips, then do whatever you do with matzo balls, and put them in. Finally, chop up the remaining dill and make it rain.

Important: don't bring it to a boil while it's simmering, or it'll get cloudy. Just keep it at a simmer. And don't skim it; you should be able to put the pot in the refrigerator overnight and walk across the layer of chilled fat the next day without falling in.

No one else in my house would eat either of those...), but the one time I tried to make it, the crust was like 2" thick. I'm good at cookies and cakes but have very little experience with breads.

55 My buddy in the Army (half Korean, but with the whitest name ever - think of a name like Brian Nelson) gave me some of his mother's kimchi, and I loved it. It's one of those things where every family has its own version. His mom's was spicy, but not all heat. Very tasty. Another buddy had married a Korean girl and her kimchi was good too, but more mild.

83 Corned beef was on sale after St. P's day so I slow baked a corned beef brisket at low temp with the top packed with brown sugar according to a recipe I found online.

Seemed a little strange but it tasted great, very tender. And I made a reduction sauce with the drippings using a little balsamic vinegar. Went well with the potatoes. Everyone was pretty happy with it.

We've been buying green beans from Sweet Maria's for 20 years. Had an expensive roaster, but there's a subculture race-to-the-bottom for the cheapest way to roast your coffee so we are now at a combination of: (1) old wok, (2) induction cooktop, and (3) two $10 heat guns from Harbor Freight. No really.

I get home roasted, freshly ground, freshly brewed cappuccino every morning. And yes, I am the luckiest woman in central Texas. Possibly the USA.

He face timed us a little while ago, to tell us how much he loves and misses us. I thought he was going to cry. We promised him we would come to visit him as soon as we're allowed.

What a sad Easter table mine will be.

116 Here's my recipe for the pizza crust:

1 Tbsp yeast
1 Tbsp sugar
1 cup warm water (about 110 degrees)
3 cups bread flour
2 Tbsp olive oil
1/2 tsp salt

It's a little more bread-like than I would prefer, but my family likes it.

I usually throw the yeast, sugar, and water together for 10 minutes before adding the rest of the ingredients. Let it rise once, and hand stretch the dough.

I also prick the dough with a fork after shaping, and throw it into a 475 degree oven for 1 minute. Pull it out, add your sauce and toppings, and put it back in for 7 more minutes (or to whatever doneness you prefer)

118 Sometime earlier this week I watched a video about making fat washed liquor. Specifically, bacon fat washed bourbon.
Directions were to gently cook off the bacon, pour off the fat and put the liquid in the freezer long enough for the fat to solidify and be removed.
Mix bourbon and bacon fat according to recipe and use in cocktail.
Any fat can be used, for instance butter.

I love bacon but I'm not sure about bacon flavored bourbon.

I been doing the (dedicated) wok to roast green coffee for a decade now.
and someone above mentioned Sweet Maria a a source of green beans. i buy from them and they deliver.

When roasting in a wok you must be there the whole time tending your beans. keep 'em moving and know the signs of that second pop crack and to cool immediately, depending on choice of roast.

137 The roasters are WAY overpriced, and only roast (typically) 1/2 cup at a time. They tend to have digital controls and LCD display, that hork due to the heat. Guess where they are made. Junk. Ask me how I know.

All you really need is a cast iron frying pan. You can be sure the folks down in Jamaica, Costa Rico and Brazil, etc, aren't using foo-foo $300 air roasters.

141 The whole Sabin clan normally would gather at daughter's house for Easter dinner. (Some times SIL 's parents tag along, but they just sit there like bumps on a log. Party poopers.) Daughter would cook a ham in the slow cooker and a leg of lamb in the sous vide followed by grilling to make it nice and crispy. The rest of us would bring the side dishes and desserts. But, of course, that's out the window this year.

I'm not allowed to eat ham and the XO will not eat lamb under any circumtances. I'm not supposed to eat potatoes either. So we are going to have a couple of good steaks and garlic bread. Whoop-de-do!!!!

152 Remove the duck skin, slice into small squares, throw it in a pot with a half cup or so of water. Cook until the fat is all rendered and skin is crispy.

Remove the duck breasts. Season with herbs, cover with salt on all sides, put in the fridge for a week. Remove from salt, rinse, wrap with cloth, and hang in the basement for another 2 weeks. Slice prosciutto thin.

Everything else gets broken down, thrown in a shallow pan with the duck fat and roasted for 2-3 hours to make confit.

156 Just got off the phone with my parents. Nothing exciting. Found out our glorious governor Beshear is trying to keep anyone from entering or leaving the state. So I am now planning a day trip out of state. Maybe drive up to Muncie and see my grandparent's old house. Would be a nice drive.

Sorry I am late to the party. Gnubreed, the jars I use are Ball wide mouth quart jars. Easier to pack it all in there. I am fairly new to fermenting but the key to the salt is not to use iodized salt, it kills the ferment, I use Himalayan sea salt. The tops on the jars are fermentation airlocks in silicone. Got them online, not too expensive, they let the gases out and over flow of juices so the jars don't explode and you don't have to burp them. The batch will be done tomorrow so I will let you know how it came out next week. Hang in there everyone!

If you want to get started with roasting, a good way to start is how I did (we'll ignore my initial attempts to do it in a cast iron pan) -- with a hand-cranked popcorn roaster.

Roasting your own coffee beans is great.

I started and ran a coffee roasting company for about 15 years. Every growing season with each bean, I had to roast and taste the batch of beans to compare with last season's crop, and adjust flavor profiles accordingly, kind of like red wine grapes, but the finished product is a whole lot cheaper.

Many times I would make a pot of coffee and taste a few ounces. Tasters just throw some grounds in a cup, pour hot water on it, and use a spoon. I found that I would get a better sampling if I made a batch using the same equipment as my customers (offices and independent restaurants). Lots of left over coffee.

The oils in coffee beans turn rancid from the oxygen in the air over time. Those bags of gourmet coffee in the store you buy, there is a little one-way degassing valve, usually in the front built into the bag.

They bag and seal the beans soon after cooling, so they continue to degas for about 5 days, which is carbon atoms of a cooked item pushing away those oxygen atoms in the air that are trying to get into the bag.

Rancid coffee oils are similar to rancid olive oil. You can roast a batch to last you 3 weeks if you keep the roasted coffee in an airtight container in the shelf, never ever in the refrigerator.

There are a few old popcorn air poppers that work well, but eventually the oils clog them up and there is no way to clean them.


The best source for a home roaster for a variety of beans sold in small quantities is Sweet Maria's, in Oakland, CA but they ship everywhere.

Second this. I've gotten many, many great beans from them, almost all under $8/lb. They go a great job of providing useful descriptions of the taste profile of the coffee. That helps you to pick out things you're likely to like, but it's also handy because if you're not getting those flavors out of it, you want to think about how to adjust your roast. Also they roast at a variety of darkness levels and give a recommended range for that bean.

We are blessed to have an ancient large cooler from my in-laws that holds cold amazingly, but my veggie and fruit pickle containers were too large to go in and I have to start over. pretty much, yeah. Any spot that pays points. I haven't bothered with the real thing in years, but there's a little bit more aggression here, I think. And it could easily get very competetive; tens of thousands for gear. vs. 20 million or more for a car. Or whatever they go for now.

219 I'm on a beef stew tear. I made a Chinese beef with garlic recipe, which has 6 lbs of beef shank and 1/2 lb of peeled garlic cloves. Yes, 1/2 lb. You brown the cloves thoroughly in the oil, and they tame down like roasted garlic does, and add a huge savory quality to the sauce. You'd think it would have to be overwhelming, but it's not.

220 Chi-Town Jerry, You might not have time to do these today, but if you soften one stick of butter and mix it with one envelope of Lipton onion soup until it is a paste-like consistency, then take your russets or any kind of potato and slice into four or five slices, add the paste between the slices and sort of put the potato back together again and wrap in foil (I usually double wrap, because they leak a lot of that butter). Bake at 400 for at least an hour and fifteen minutes. My Mom always called them potatoes a la David, because my brother loved them so much. Any leftovers are darn good in a fry pan the next morning for breakfast taters.

She usually goes whole hog when she makes this and we have a variety pack of 5 or 6 different flavors as well as tempura style fried veggies to go with it.

As much as I love regular fried chicken with biscuits and gravy, this is just as good and a nice change of pace.


Yesterday, i made BBQ'd Pork Ribs.

Ho-hum, another perfect batch. They disappeared in a cloud of smoke and clatter of meat-stripped bones.

Had Gimlets with them as well as fresh guacamole.

i've got about 100#s of sugar left over from when we fed hummingbirds year round... i had to stop due to bee sting reactions swelling my fingers.

getting anti-venom injections at the VA, so we will likely start again, after the panic-demic is over and i get the back yard cleaned up.

and we gave away all our chocolate chips last fall, as they have soy lecithin in them, and my body decided it was allergic to soy in any form or amount.

294 Okay, here's a new cocktail that if you can use on your upcoming festive occasions should you wish.

It just a variation on the Martini, but a particularly good one. The measurement are more like a Manhattan though.

If you can, use the same ingredients and you will have a can't miss cocktail:

The Martooni

2 oz Harahorn Gin

1/2 oz Contratto Vermouth Blanco

1/2 oz Cap Corse Quinquina

Shake with ice. Strain. Garnish with lemon peel twisted over the top and rubbed around the rim.

Drink!

The Harahorn is a high proof (92) Norwegian small batch gin. It's a London Dry style gin heavy on the juniper and with some Norwegian botanicals like blueberries. Extremely smooth yet flavorful enough to stand up in a cocktail.

Contratto Vermouth Blanco is simply the most flavorful vermouth I've found. Try it in a Manhattan sometime. Yum. And it's flavorful enough to stand up to the rye.

The Cap Corse is a Quinquina which is basically a dry vermouth with quinine. Lots of flavor with some nice bitterness.

All three blend really well together to produce something more and deeper than just 3 likkers mixed together.

Yup...I had a friend who did lots of water fowl hunting all over the world. Ducks, geese, other weird water birdees.

He used to give me their breasts with part of the wing still attached so you could tell what kind of bird it was.

I have cooked them all with all kinds of recipes and all tasted liked salty crap.

Even tried a raspberry reduction with one kind of duck and it came out tasting like salty raspberry crap.

Thanks! This is very much like a newer recipe that seems to be all over the food blogs called "melting potatoes". But those are only about an inch thick as opposed to Chef John's 2 inches or so.

I think it's because we don't have a color spectrum or a musical scale for flavors/odors. We can only liken them to other things. I suppose if you have a home spectroanalysis machine you might be able to pinpoint what molecules a given wine (or honey) contains.

Main ingredients for kimchi are crushed red pepper (use the stuff from korean market, get the 10# bag), garlic, fish sauce, maybe some sesame oil, shrimp fry, cabbage, daikon, for your basic recipe... not at all like 'kraut, but if mild enough you might pick up a similar tang. But if you like spicy it will grow on you.

Both fermented. Sauerkraut is sour. Kimchee is spicy. Differed type of cabbage for kimchee - napa. Spicing is red pepper, or a variant of , garlic. Often there are scallions in it.

Mustards is a Chicago-style hot dog place that apparently used to have several locations in SoCal. I think at their height they were in Los Alamitos, Long Beach, Tustin and maybe a few other spots.

They're now down to one last location in Los Al. Glad they're there as no one sells a Vienna Beef Chicago dog here that's anywhere as delicious as theirs.

393 Report from texas roadhouse online order/pick up. I'm stuffed. Not as good as eating there in person. All the potato fixins come in separate containers. Same with salad. Steak was good. The extra steak I ordered for freezer came vacuum packed and with a container of spice mix. They seemed very organised.

Only down side, it wasn't very warm by the time I got home, but that is to be expected.

She is also interested finally in getting Korean cookbooks and learning how to actually make the food she is often faking through as well.


By the way, if no-one has mentioned it, from personal experience the higher 11+ scale for hot sauce wraps the needle around the peg just short of "Korean"

I make this soup five or six times a year. It's beyond merely "good".

That said, it *will* clear your sinuses! It's not a HOT soup, but it does have a bit of kick.

The hens I'd roasted start out as a Caribbean Jerk recipe, and then in the soup I'll use a fair amount of Cajun seasonings.

Deep, rich, lingering flavor. It does not in any way resemble any "canned" chicken soup, ever.

I used to have around 14. Not a huge crowd, but my family is gone except my prog sister who doesn't believe in Easter. Husband's family stays in NY and Atlanta, so I always invited people with no family, or lonely foreign students and an elderly couple we were very close to, who are no longer a couple.
