Food Thread:The Question Of The Day: Is The Appetizer The Highest Form Of Food?

I love appetizers, which is the only reason I ever accept invitations to weddings. There is nothing quite like wandering around a big room, breathlessly waiting for the next round of lamb lollipops or crab and cheese cones or tenderloin with horseradish on buttered toast to emerge from the kitchens. It's as good, if not better than an open bar!

I have always wondered why people bother with the sit-down portion of wedding celebrations when they have at their fingertips (hah!) the perfect medium to get people to mingle and chat and drink and eat.

There have been appetizers at weddings that have knocked my socks off, but I don't remember a single dish at any of the dinners that was...well...memorable.

So my advice to the Horde: when you begin to plan your second wedding, consider an all-appetizer party. I'll come, and I'll make sure you get your money's worth!

So trapper's gal starts it off below the fold, but how about the rest of you reprobates? anyone have a knock-out app recipe? I posted one of my favorites last week, but too often we get stuck on main dishes and side dishes for dinners, and forget about that all-important first bite!

Wow...science...what can't it do? The relationship between sterilization (or killing enough of the microbes to be functionally equivalent), time and temperature is an important one. That's why Pasteurization works and doesn't ruin the milk.

Skip the "chicken" or "beef" or "fish" or "vegetarian" option.

12 Pretty much everyone here knows the outstanding job that bluebell and Weasel did on The Deplorable Gourmet and making it happen.

Most know about bluebell's proclivity (to put it politely) for muscle cars, fast driving, and burning donuts with same.

What most wouldn't know until now is that bluebell takes on a seasonal assignments as a 'Santa's helper', qualified not only by her good heart, but by her well-honed high-performance driving abilities.

Given a brand-new sleigh this year, she just completed a test-spin out to Texas and back. While here, she offered me the opportunity to try it out.

Getting behind the controls of the new sleigh, I looked around, and then asked "How does this work? The accelerator is made of raisins, the brake is made of marzipan, and the gearstick is a lump of sweet dough."

She replied "Just drive it like it's stollen."

Oh, I might add, had some stuffed mushrooms at Red Lobster recently that were pretty good.

Or, my wife and I were so hungry we only thought they were good.

But, seriously, we purchase the Red Lobster biscuit mix to make their biscuits at home. They are quite good.

Ben Had asked me for a gnocchi recipe. I described the basics a couple weeks ago, here are a couple videos to help anyone who wants to make them.

This first one is pretty much the way my family makes them, except nonnina doesn't do the "dig" on each dumpling:

And appropriate - this a.m. our parish had a post-service social to celebrate the church's restoration/rehab. One of the hospitality ladies offered me this slab of something wrapped in clear plastic. I thought it was bread. She told me it was a "baker's mistake", it was supposed to be scones, but it didn't look right so they were giving it out to people.

I took it home, ate a slice, omg it was so good! It was not a scone recipe, it was Stollen! Someone at the bakery messed up, thinking it was supposed to be a scone.

45 Baked dip. Do not have a recipe. Small tub of softened cream cheese, sour cream, chopped onion, bacon, shredded sharp cheddar and a crumbled Ritz cracker combines together. Top with pepper jelly and bake. Serve with crackers. Delish.

I do. It was at my own wedding. My father-in-law was a burned out lawyer who had retreated to Cape Cod to be an independent lobsterman and he set aside 100 lobstahs for the wedding reception.

Some idiots ate the roast beef.

57 If you're having a wedding with a sit-down dinner, the invite says, "Reception immediately afterward at (name of location)", and you're doing the bridal party and family photos after the ceremony, it's a really good idea to have appetizers available.


I remember going to a wedding where that happened, and they also had an open bar during the "waiting for the bridal party" time period. Once they arrived, it became a cash bar. Another wedding had no alcohol at all, so we just ate.

59 When my husband and I were married, our reception was held at his parent's club. D'oh and I paid for the food, bar, and musician (a harpist).

The food was all appetizers: shrimp, crab, I can't remember everything, but it was lovely and delicious, and plentiful. Our guests said it was the best, most fun reception ever.

Yesterday afternoon, we cohosted another oyster roast. It was dreadful. Brilliant sun, crisp breeze over sparkling water, ugly dolphins frolicking evilly, and lots of May River, Texas, and Chesapeake icky oysters. Someone even spotted one of the minks that lives near the marsh. They're a type of weasel.

We hit the Justice O' Peace in Henderson and shagged ass to Gatlinburg for the weekend.

Don't regret it. The Judge warmed up to it, once he figured out I was an Engineer and she was a Database Developer. He did a Hell of a job.

I've been to more of those than I have had weddings with booze. I was a bridesmaid in one of them and another one was a relative's. They tend to end early, though, so you can go out afterward (which many people do). A couple more only had wine available. As far as I know they're all still married.
One of those weddings I drove 4 hours to attend, and 2 people came along with me. Partway there, out in the middle of nowhere, I told them it was likely going to be an alcohol-free wedding. They were stunned. Turned out to be true, and we did end up a bar afterwards with a few of the groomsmen. There also wasn't a huge wedding cake; they did cupcake displays.

(1), that hot crab fondue recipe sounds pretty good. Think I'll try it.

(2), CBD, gotta agree about appetizers. There's at least a few restaurants over the years where I loved the appetizers far more than the entrees themselves.

This Thursday is my company's Christmas party, at a Long Beach barbecue place, and the boss buys a table full of appetizers for everyone, which we all (including me) enjoy loading up on, rather than ordering anything ourselves. Looking forward to it, though I might go ahead and splurge on some ribs and bbq sausage while I'm there as well.

In about 1998, I attended a Christmas party hosted by my then-boss, who owned our law firm.

Anyway, people went so nucking futs with the free bar, the boss ended up closing it at about 10pm.

AND, we had one of our main attorneys get himself so sick from drinking so much, he was vomiting everywhere. We had to drop him off at the nearest Marriott to dry out. He was humiliated.

Was probably the wildest party I've ever been to.

Years ago we were in Waukesha for a family gathering. Every morning before daybreak I was sent to the local store to wait for the kringle to be delivered from Racine. I didn't know why until I got there. I was the only one at the house big enough to have a chance at getting enough kringle before all the construction workers stripped the supply. Mind you, everyone was polite. But they were determined. We still laugh about it and make references to locusts in hard hats.

It ain't had a good one - with a can of mushroom soup, a bunch of those onions on top, and some other stuff mixed in. Broccoli works. Cheddar works in the right proportions.

You gotta' burn the top of the dish - to give it crunch. That's the trick with the onions - and the trick with working in the other stuff as well.

I've never used a butane torch on a dish - but I can see where that would work with Green Bean Casserole.

This broccoli recipe is the only one I have made for so many years, I can't remember how long, lol. I'm old, lol.

Broccoli Casserole

1 cup mayo
1 cup sour cream
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
4 cups fresh broccoli OR 2 10 ounce packages
frozen broccoli, I use florets
1 cup sliced or diced water chestnuts, drained
2 cups grated sharp Cheddar cheese
about 1 cup crumbled buttery crackers
salt, pepper and any other spices you want to use. Garlic powder is good and a bit of curry powder also. Just do it your way, lol.

Preheat oven to 350 degrees
cook broccoli , drain well
blend mayo, sour cream, onion and green pepper in a bowl.
In greased 2 quart casserole dish, layer broccoli, water chestnuts and sour cream mixture.
Cover with cheese top with cracker crumbs.

at this point the casserole can be refrigerated and baked later. Bake about 35-40 minutes.

I layer all the broccoli, then water chestnuts then sour cream mixture, then top with cheese and crackers.

I've never mixed it all up, just layered.

After church, we skipped coffee hour and rushed over the bridge to SC to an incredible little farm with the most amazing food in their on-site restaurant. Every vegetable is grown right outside the door, the eggs are laid in the hen house next door, etc.

We tried to get there early and beat the Bluffton after-church crowd, but had to wait about 30 minutes to be seated. It was SO worth it. I even hesitate to tell locals here about the place.

I really like TGI Friday's frozen cheddar-stuffed jalapeños. The only problem is, they say to fry for 3 minutes, take 'em out and shake 'em, then fry for ANOTHER 3 minutes.

NO. WRONG. Doing so will only result in lots of dripped-out cheese at the bottom of your fry pan. Fry them for JUST the first three minutes and they're perfect.

Also, my blackened ranch dressing recipe makes a great dip for 'em. :-)

Cacio e Pepe Puffs

Yields 20 bites

1 (17.3-oz.) pkg. frozen puff pastry sheets, thawed
2 T. extra-virgin olive oil
3 1/2 T. Parmesan cheese
1/2 tsp. black pepper
1/2 tsp. flaky sea salt
Chopped fresh chives, for topping

Roll pastry sheets into a 12" square on a lightly floured surface and cut into 20 (2") fluted rounds. Place puff pastry sheets on ungreased baking sheets.

Brush rounds evenly with extra-virgin olive oil; sprinkle with Parmesan cheese, black pepper, and flaky sea salt. Bake at 400 degrees for 15 minutes. Sprinkle with chopped fresh chives and additional Parmesan.

dice or mince meat, mix with cream cheese, seasonings to taste, juice (if the spirit moves you)

cut tops of jalapeno peppers (remove seeds for milder heat. also generally, the bigger the pepper the less heat)

pack pepper with cream cheese mix, seal opening with anywhere from a half, to whole slice of bacon and a toothpick.

place on grill or in smoker under lowish heat <300*F

ABT's are ready when the bacon is cooked (and not burnt, you barbarians out there)

Go to Michael's Crafts. Buy poster-board. Two sheets. And some tape. Maybe a Magic Marker, if you don't have it.

Fashion a shallow platter out of that. And don't fuck around. Make the edges sharp and the entire thing sturdy.

Now - draw in marker where all that cheese and whatever the fuck that other word was, and the shrimp, in outline.

Throw that project on the table, and tell that bitch to fill in the blanks. Best life lesson ever.

I love Christmas so much. Infidel, is there anything blocking the door sensors, even cobwebs? My garage door decided to freak out the night before Thanksgiving so I ended up leaving it part-way open overnight. When I cleaned up all the fuzz the next morning it finally closed, and it's been fine since.

As for appetizers when we're watching something special that lasts awhile, like election night, Jules just makes a bunch of appetizers and we graze all night. Mucho fun and delicious.

One of the best she makes is one of her Grandma's recipes. She took a culinary class in Chicago with mrs. Pope on appetizers. It's called cheese puffs. You put this mixture on rounds of white bread that you cut out before. You mix shredded cheddar cheese, chop't green onion, bacon crumbles, a bit of mayo and a beaten egg. Broil briefly and they're delicious.

TGI Friday's is doing a $12 promotion like that; you have to choose from a set menu of about 6 or so items (all fried, of course), you pay $12 for the first appetizer and then can get "unlimited select refills of your choice" from that same menu. No taking leftovers home, and no sharing (so it's $12 per person). Plus you add tax and tip, and I'm sure they're expecting you'll lay down some money for a drink or two.

275 I started curing my own capicola and salami's a couple years ago. I kinda layed off curing whole muscles because I just couldn't slice them thin enough by hand or my cheap slicer. Picked up a new one on Amazon from the reviews and holy moly that thing cuts a nice slice. $300 might seem like a lot for occasional use but well worth it to me and way cheaper than the commercial deli slicers. So I'm excited to try making my own prosciutto and bresiola etc. again. My doctor isn't going to like this.

In 7 qt. slow cooker

2 cans creme of chicken soup
1 finely chopped onion
1 C buffalo wing sauce (I use Frank's)
2 1/2 lbs skinless, boneless chicken, cut into bit size pieces
S and P and garlic powder to taste.

Mix in pot and cook 3 3 to 4 hours on high until chicken is cooked.

Cook 1 lb. penne pasta and drain.

Turn off cooker, add 1 cup shredded mozzarella cheese, 1/2 cup ranch dressing and 16 oz. sour creme.


Stir and pig out. Great for to go lunches and freezes ok.

337 I got married in July 2018, and I catered my own wedding.(I don't recommend this approach, even as an experienced caterer it was a massive undertaking to do it as the bride.) But we did the appetizer and dessert bar. Swedish meatballs, tiny barbecue sandwiches with chicken or pork, cheese, fruit, and veggie trays, various spreads and dips for all manner of crunchables. Wedding cake in three flavors, grooms cake in two, mini eclairs and tarts and a cookie assortment. Slaws and three kinds of potato salad. My mother made her devilled eggs...we fed about 75 people, and I didn't spot any plates going back with food still on. I've done
Multicourse meals for other people's weddings that wasted more food. I think the appetizer gnosh just works better at such events, promotes milling about, drinking, snacking, and socializing.

361 So, last weekend, I used Paul Prudhomme's Egg Fu Young recipe.

Very tasty by the way - loaded up mostly with shrimp and crabmeat, which turned a low cost meal into a semi-expensive one, but oh...so...good.

Bu-u-u-ut, my quest is to make something more like what my Mom used to make, which mostly involved veggies,

so I smashed together two recipes:

One by Rachael Ray, of all people that looked somewhat similar to Mom's and one by someone else online.

RR's stuck very close to the mostly veggies principle and used pork. I added some shrimp and Chinese seasoning from the other cook, and some water chestnuts and bamboo s[ports cuz Mi Madre always used those.

RR's gravy, had hot sauce which I threw out and I added more ginger. It came very close3 to Mom's sauce.

Fun Fact - RR's EFY makes a good breakfast omelet and pairs nicely with sausage should you be so inclined on the day after.

It's a Mrs. E special, baloney, crunchy peanut butter, and mayo on oatnut bread, which she made last Tuesday night to eat on her stand, and brought back home. They have both Japanese and Chinese menus. And they have the best Crab Rangoon I have ever tasted.
Pages of sushi and sashimi and maki..

Pork Gyoza ( a Japanese pot sticker kind of thing) and tempura shrimp and veggies is how we started tonight. I swear I could just make the whole meal out of appetizers.

375 Going to try a high temp brisket smoke this week. Not sure how it will turn out but the BBQ comp guys are all starting to experiment with higher temps for brisket and getting good results. 300 degrees is what they are messing around with now and getting a good brisket in about 6 hours.


I bought a trimmed one on sale at Krogers for $1.77 a pound so it won't be a huge expensive mistake if I screw it up.

377 Southern Living Eggnog Pound Cake

One 16 oz. box pound cake mix
1 1/4 cups eggnog
2 large eggs
1/2 tsp.freaky grated nutmeg
1/122 tsp. Vanilla extract

Preheat oven to 350. Beat all ingredients with an electric mixer until blended. Increase speed to medium, and beat 2 minutes. Pour into a lightly greased 9 x 5 loaf pan.

Bake at 350 for 1 hour and 5 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to wire rack, and cool completely (about 1 hour).

There you go infidel!

We made the dough yesterday, which is a bit of an ordeal. Cuz it needs to be left overnight.

Today we cooked the cookies and tomorrow(?) we will ice them.

Both the dough and icing are very finicky beasts indeed which makes the Lebkuchen Experience more Art than Cookery.

Since Egg Fu Young lives in the same neighborhood as okonomiyaki,

I tried Okonomiyaki sauce and mayo on part of my EFY.

That also worked really well. As did Bulldog Sauce.

I've mostly seen them used as a coating on shrimp dishes and bitter melon dishes. I think a search for "prawns with egg yolk" or similar would turn them up.

She famously made the eggnog every year, and served it at the Christmas party at RU.

her many students spread the recipe far and wide,
to microbiology departments around the world, the WHO, the NIH, etc.

What's missing in the recipe linked above is that it is to be made 2-3 weeks in advance, and stored in the fridge until Christmas.

Lancefield was a world renowned scientist,
and her eggnog has been a tradition for 100 years.

I first had it in graduate school, in 1985, made by a professor who got the recipe from 'Becca during WWII.

440 This Wednesday is one year ago that my husband's youngest cousin in upstate SC was the victim of a home invasion and robbery. He was kidnapped, held and tortured by the gangster thugs who took him. His body was found, bound and shot in the back of the head, the day after Christmas.

Four of the five gangster thugs who killed him are in custody. They continue to search for one more.

I cannot express the things I'd like to see done to the evil monsters who did this to him.

441 Mini Spinach Frittatas

1 cup ricotta cheese
1/4 cup grated parmesan
1/2 cup chopped fresh mushrooms
1 pkg. frozen chopped spinach (10 oz.)
1 egg
1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper
24 slices pepperoni

In a small bowl combine the first 8 ingredients. Place a slice of pepperoni in each of 24 greased mini muffin cups. Fill muffin cups threefourths full with cheese mixture.

Bake at 375 for 20-25 minutes or until completely set. Carefully run a knife around edges of muffin cups to loosen. Serve warm.

The original prosecutor has retired. The new one says it may be another year before trial for the four they have in custody. They look exactly as you'd expect.

The whole thing has been weighing on us all month. I dedicated a poinsettia in church in cousin's memory.

One of those recipes that has some odd ingredients that somehow meld together very well. In addition to being flavored with a bottle of Guinness, it also has caraway seeds and raisins. Sounds weird but that slight sweetness was a nice addition.

Can't speak to the medical aspects, but having made bone broth, my opinion is that it is just as much work as regular stock, and doesn't taste as good. So personally I'd make a half-meat, half-bones stock and use that. Also I'd cook it for a long time, to allow lots of extraction. You can cook for 7-8 hours on very low, turn off the heat overnight, and resume in the morning. If you can get ahold of some old hens, they make great stock.

Tami if you are still here, this is that sugar cookie recipe:

1c butter
1c granulated sugar
3 eggs
1/2 t vanilla
1/2 t nutmeg
2 t cream of tartar
1 t baking soda
3 c flour

Cream butter and sugar.
Add eggs 1 at a time and beat until fluffy.
Add vanilla and the dry ingredients.
(I put the nutmeg, cream of tartar, and b. soda in with the 1st c of flour, mix, and then add the rest of the flour slowly. I usually end up mixing the last cup of flour in by hand.)

Chill until easy to handle. If chilling it overnite, cover with plastic wrap. Roll out small portions on a floured table to about 1/8" thick. Cut with cookie cutter and place on an ungreased cookie sheet.
Sprinkle with colored sugar.

Bake at 425 ° for 5-8 minutes. (I like mine a little tanned on the edges, so I usually go the 8 minutes, especially if i get lazy with the rolling and they arent quite 1/8" thin.

Depending how big your cookie cutters are it will make about 4 dozen cookies.

My usual method is to roll out some dough, cut and then take the scraps from that roll and add some new dough to it. That way you dont have over-floured dough to make your cookies too dry/tough.

These cookies don't frost well as they are not as dense as some sugar cookie doughs, which is why the sugared tops make for easy decorating.

I've used this recipe as a non-rolled out cookie, just form into a ball and tamp down with the bottom of a sugared glass. All the taste, less work! But that doesn't cut it for Christmas, those gotta be special!
