The communities, churches and schools all echoed the same values because most people went to Church or Temple and so, the foundation of our mores being Judeo/Christian, Mom’s rules were designed by the Ten Commandments. Many towns didn’t lock their doors, even at night. So, after fifty years of the almighty “consciousness-raising” experiment to empower women, and during the recent Harvey Weinstein [sexual assaults] scandal, what we are hearing from the little girlish voices of the victims is, “I froze, I was paralyzed. I gave in because I didn’t know what to do. I was terrified!” Hey, that’s some weird kind of empowerment. When I was a girl we did what our moms instructed: we yelled “NO,” slapped his face, and left the room or called a cop.

It also keeps meat very tender and doesn't allow it to dry out.... which, of course, means that you have to sear any meat prior to pressure cooking. Like a slow cooker, you aren't getting any dry heat. But things won't dry out; and you likely aren't getting anything overdone.

I also tend to gather in pressure canners.
If you cook that carcass of a chicken for about 20 minutes at fifteen lbs pressure you will have cooked everything out of those chicken bones.
If you tip a quarter cup of vinegar in with the chicken to cook it, you will wind up getting even more.
The things you can do with the pressure cookers is wonderful.

Sodium. All prepackaged soups have more salt than a salt lick. Homemade soup has better taste, less sodium (usually... my mother in law's chicken soup? Might as well drink the Morton container!).
As is usual, homemade stuff is typically tastier and healthier. But not as convenient, oh no.

Pressure cookers cook much faster and much more cheaply than a pot or an oven.
If you put 15lbs of pressure on your pressure cooker, you are getting about 240degrees F, and one you get it up to pressure you can keep it there at very low heat. You can't do that with an open pot. You can do it in an oven of course

Thanks to the miracle of American medicine, I not only made it past infancy, but with surgeries for my eyes and treatments for my back, I am able to see straight and walk straight. By high school I was able to compete in athletics and excel in academics.
All of this progress, and for what? So that our twisted, freakish, evil overlords can have healthy, viable victims to murder for their sick death-cult.

Ah, I wondered what the purist would say. And that's basically why I haven't gotten one, nor an Instant Pot. I like to be hands-on with the food, and be involved in the cooking process. I do, however, have a crazy good rice cooker that sort of acts as a pressure cooker during one part of its robot cycle. It does a better job with rice than I ever could, and I don't need to be hands-on for that part of the meal.

Just one illustrative example (approx., from memory). Trimmed chicken thighs on sale - under 90 cents a pound. Bottle of house brand BBQ sauce (on sale) - maybe $2? Some spices. Slow cooker. 10 minutes of work, to include the "pulling". Huge amount of delicious pulled chicken.
Of course judging by results actual nutrition/cooking knowledge and skills in the populace have plummeted.

Yeah, we've got a deep freezer and I generally try to hit the grocery stores early in the morning to get the stuff the butcher has marked down. I've had some really good luck at Sam's Clubs, too. The Plus membership where you can enter at 7am has probably paid for itself just in that aspect.
My best ever buy was a few brisket(s?) that were marked down from $50ish to $15. Yes, I'll take all you have, and thank you very much.

But the women don't.
Eventually I had a Polish dude explain that this is because a lot of Europeans view deodorant as a women's product, and that dudes feel feminine using it (he was deodorant user, and not feminine, BTW).
But not the French. Even their chicks stink, and when women stink, it's worse than men.

I saw an old Top Gear where the celebrity guest was a Brit actor who lived in the States, and was a US citizen.
Clarkson spent the whole interview angling to get him to bash on America and Americans, and the guy was politely evasive for most of it.
Eventually, Clarkson landed a really petty, derisive dig about how the Americans are always asking you if you want extra cheese on everything. And it wasn't like an "isn't this a strange quirk" kind of thing - he was really nasty and mocking in his tone about it.
That, for whatever reason, was the line for this guy. He just told Clarkson "Have you stopped to consider that Americans really like cheese, and they are trying to be nice and accommodate you? Because they really are the nicest people in the world, and it's one of the things I love about being an American."

It saves a lot of time and has turned out great for the most part, but one time I gave my wife something that was intended for a step-mother. My step-mother. Which I don't have.
It's still the best approach I'm aware of, though, and the people standing around trying to find the perfect card that says something perfectly different than the other perfect cards always get a laugh out of me swooping in, grabbing my perfect card, and walking away immediately.

Yikes on that maryjane story. Some folks get good pain relief from the CBD and then there are the few epilepsy, parkinson's cases that are helped too, so I wish the feds would legalize the plant but set a THC limit or something. But I'd undo the recreational pot law here if I could. The med. MJ was such a joke, with real docs scared to prescribe and docs that would prescribe would do so on any excuse that I actually thought it would be better to end the charade, but that having to see even a quack doc or keep the usage on the down low did limit the damage.

Apparently the cards with lovely flowers on them he bought were actually condolence cards for funerals.

For the meat, I used turkey leftover from cooking a turkey over the weekend.. it was one I got at Christmas when they were on loss-leader sale.. 11 pound turkey for $4.08!

BTW - I got a pressure cooker - Instant Pot - for Christmas. I have only made baby back ribs in it so far.. not bad.. (not great!) but I got plans for much more.
After a lifetime of cooking, my wife is kinda done. So, if I want something that takes more than 15 minutes, I gotta do it myself.
I have mostly been a bread baker over the years.. but I have my specialties as well.. BBQ, of course.. We grill a lot in the summer. but I do stuff in the crock pot too.. easy peasy if I can get my act together before heading to work!

I trapped all the time, racoon, muscrat, beaver and tromped across a lot of streams and threw it in the back of my 49 willys jeep for years. Completely ruined the finish and a couple years ago about fell over dead when I looked at some in same earlier condition for 1600 dollars.

YD, I'd pair for the steak. Which means cabernet (suavignon, or franc, again, like Cicero says, good ones), or malbec. Also can't go far wrong with syrah, like RickZ says, though depending on how you're cooking the steak, probably best to have a syrah with some spice (they vary quite a bit).
Only if you can find one, there are some zinfandels that have tremendous black pepper flavors, made for steak (esp. grilled).
But I think since it's a special meal and you're going to some trouble, insert crow bar into wallet, extract some $$, and get a very good cab sauvignon.

So I actually ordered a pizza from Round Table tonight for dinner, given what I said about Valentine's above.
I went ahead and splurged on delivery. It's now... 35 minutes past the time they promised to have it here.
So I just got off the phone with the store. They said my pizza just went out the door to be delivered.
They made it good by telling me my next pizza, no matter the size, is 100% free.

have you considered driving to Bellingham, WA and taking the ferry to SE Alaska? The ferry goes all the way to Anchorage, if I remember correctly. The ride through the Inside Passage is incredible. You have many options of where to disembark, and you can take your vehicle.

If you like wines that are a bit fruitier you could go with a red Zinfandel. Another idea for a special fruitier wine is crus beaujolais. The St. Amour is popular around Valentines for obvious reasons but there are bolder options like Morgon that might fit better with steak.
Really you can't go wrong. I would lean towards something she might like and not worry about the perfect pairing. IF it where me, I would go Chianti Classico because of the other ingredients. The Florentines have a huge steak culture too.

There's a lot of good hearty whites that will stand up to a steak while not overpowering a cream sauce dish. I've had some hearty Chardonnays from California that were good with red meat.
It's sort of like why a red is best for Thanksgiving meals. It's not because of the turkey, it's because of the usually heavy side dishes. With YD's menu, it's the cream sauce dish you have to think about when it comes to wine pairing. While a Zinfandel or a Chianti would be great with a steak, with a cream sauce dish, not so much.

One of the great wine writers/critics, Hugh Johnson (really, that was his name, pervs), I believe, said "great wine is wine you like".
Speaking of cheap wines, just opened a carmenere - it's OK, but not strong carmenere flavor (which I like but is not for everyone). It's a French red grape that, like malbec (one of the Bordeaux reds), really is known from its South American versions. Malbec still has some French/Euro presence (mostly used to blend), but Argentina is the home of most great malbec.
Carmenere's even a smaller niche wine. Chile is where it has found its best home. Thing is, only the really good ones are good. Have never had a cheap good one (which is common with things like Aussie syrah).

If I get what you are saying, you are talking Carlo Rossie type with the big burgundy label. I think it is still around but maybe they were stopped from using the name. Of course there is the high end burgundy from France. And the chablis which was also a Rossi version. They might have been stopped from using those names as they are French protected names. But I thought they were still around. Some American producers still use the name Champagne.

I once was able to walk into any major Wine & Spirits store, and find an entire section of racks of wine under the overhanging shingle titled: "Burgandies"
All but the bottom most shelf were various French labels and California (contested by the French) labels.
Bottom shelf were no name labels.
The domestic rotgut, Carlos Rossi, Gallo, Mateus, etc.... I think those were stocked either with the novelty bottles at the registers, or in the back in the hallway leading to the men's rest room.
I exaggerate. But not by very much.
Point is, BURGANDY (the region, not the color), used to be a prominent segment of the market, in and of itself.
And that was a grouping of some entirely satisfactory wines.

In the 90's, I ran into Trump one night in front of Trump Towers in NYC. I was a tourist, he was getting out of a limo with Marla.
He's very tall. They're saying 6'3", I'd say taller than that. My Dad was 6' and he seemed MUCH taller.
Also, he looked angry and intimidating at the time. I like that in a president.

The region of Burgundy is still kicking. Many people are priced out of it because rich people from Asia in particular bid the prices up. There was a special on netflix about fake wines, burgundy is probably the most faked because of the high prices.
At the normal people level, it is not that easy to get a well priced burgundy. There are cheaper options such as Oregon Pinot Noirs and some from Cali. The ones from Oregon are more like Burgundy. And really, they are not cheap either.
Anyway, if someone called something a Burgundy, I would expect it to at least be a pinot noir. The white Burgundy is chardonnay.

In recent decades, tastes have moved to drier wines (traditional Burgundies would be considered sweet today), and the producers have wanted to be more specific about types and origins. "Burgundy", being a historical region, is also not trademarkable.
Therefore the French producers have divided into smaller recognized regions, under a stricter DOC system.

A good wine store should still have some lower-priced options. That's what I generally drink for pinot - though I'm lucky to have some Oregons from a trip a few years back, and some Kosta Browne (collectible, cult-level spoiled grape juice) thanks to a now-deceased friend who was on their list.

The American market "Lancers", et al, were horrid alcoholic kool aid, in comparison.
SWEET wines, are a Riesling and such. Blue Nun was a candy bar in a bottle, but bore no resemblance to an authentic, mid-road Burgandy.
To be able to sip a wine, and cringe NEITHER as sweet nor dry.
That's pretty damn hard to find these days, it seems.
And don't even get me started on the wines so heavy with nitrites that I get heartburn before I even swallow the first sip.
What the FUCK is it with the nitrides? They trying to cure bacon in a bottle, or what?

American champagnes, or even the Spanish Frexeneit, are usually labeled 'Champagne Methode', or champagne method; sometimes it's called 'sparkling wine'. To be called champagne only, like Veuve Cliquot, is to be from the Champagne region of France.
I think of champagne in the same way I think of Parmigiano-Reggiano, it's a brand name tied to a specific geographic location. If you've ever had American parmesan, you noticed the very definitive taste difference - for the worst.

Yeah it is taking over the wine section like yogurt did the dairy section five years ago. I remember the California field blends and the California Meritage in the Bordeaux style. Those were good wines I would actually seek out, good food wines. But this new style is gross imo. Way to fruit forward, low acidity, and lots of residual sugar. It is interesting, the sellers say this is what Millennialls want, and this is the growing category, but the wine category is shrinking. I am thinking the market experts might have judged poorly.

I used to have a buddy who'd make this awful concoction - he'd get a big jug, and mix it about half and half with Paul Masson brandy, and cherry wine.
It was... something else.

Right that is what it means. And several domestic producers use the Methode Champenoise, Korbel is an example. The Spanish Cava is also made by the Methode Champenoise or Traditional Method. The omnipresent Prosseco and many domestic sparkling wines are carbonated in tanks, also called the Charmant method.

Fresh cheese can be quite good. It all depends on what the cheese maker is going for. Some cheeses are good after a couple of weeks, or less if we're talking fresh mozzarella, but some require many months on the shelf to get the flavor the cheese maker wants. I happen to like the Mexican Cotija cheese. It's crumbly, like a feta, but has a unique flavor profile.
"When the (Cotija) cheese is made, it is white, fresh and salty thus bearing immense resemblance to feta cheese. However, with aging it becomes hard and crumbly like Parmigiano-Reggiano."

Such a perfect wine for a pre-national-chain made, local market pizza.

Real ports probably are a bit underpriced. I think real Spanish Sherry is underpriced and simply underappreciated in this country. That is another name that got trampled by misuse of the term.
I like Portuguese Madeiras and would love to visit the island. There is some great history there too as the Founders loved the stuff. They toasted the Constitution (or was it the Declaration?), with Madeira.

My Shakey's years were before I was of age to drink alcohol. So I went the Snoopy/Dennis the Menace route: Pizza and root beer. Shakey's had pretty good root beer. And IIRC, their pizza sauce was on the spicy side, which I like to this day.

These were considered FAMILY places, by the way. And they were.
The kind of Family Place where kids got to see their dad being a Man, eating and drinking responsibly (mostly), engaging with other men as MEN around the pool table, and teaching the kids how to engage in that scene, without it being a collegiate binge drinking bacchanal.

We talked about how (quality) pinot noir has been priced to the heavens in recent years, but a broader story is just how inexpensive decent wines of all kinds are now. As I've said to my favorite wine store owner for years, as I buy another quite drinkable $7 Aussie shiraz - "hard to imagine that everybody involved is making a profit when you're producing decent wine and shipping it half way around the world, for $7". He agrees.
Also the golden age of guns in America. Prices, quality, selection. Ammo prices pretty good too.
Just don't combine your Gun Golden Age with your Guns Golden Age, unless you do it in that order.

Well Tokay cane from Hungary, and what have the Californians done with that? As I understand, the first commercial winery in California was from a Hungarian who brought plantlings around Cape Horn. He figured that selling something alcoholic to miners was a better bet than panning for gold himself.
In recent years cuttings have been brought back to Hungary to restart red grape/wine production on the north shore of Lake Balaton, where all the red vines were killed off by phylloxera about a century ago.

Well I don't know about wine, but I do know about Millennials and marketing.
Half the time, whatever it is they like is terrible, and it's not a product you want to market.
The other half of the time, they're latching on to some existing product. But it's just a trend, and a quick one. Usually it's some derisive, ironic statement-type thing where they don't actually care about the product, like with their craze for PBR.
This means that there is little potential to build brand loyalty, or lifetime customer value. It's all just momentary, and has a really bad effect on brands.
Often, it just drives up the price of a low-priced product for no apparent reason, prices out its existing loyal customer base, and then ruins everything when the hipsters move to the next trend.
Trying to make long-term market decisions based on millennials (as I assume the wine industry pretty much has to make long-term decisions) is a fool's errand.

Yeah you are right, particularly the vintage ports are very expensive. I think Sherry is the most under priced considering the work involved and the time it takes to make it. Most supermarkets and even some wine stores don't even try to stock good sherry.

Somewhere around the turn of the century Gallo started branding some high quality wines with the Gallo name. Supposedly it was the kids from that family that decided to rebrand. They were not crazy expensive, they were in the $20 range. I haven't seen one of these wines in years so i guess they dropped it. But Gallo makes a lot of really great wines under other names. Many don't realize that the Gallo company makes as much wine as some wine producing states.

Being an avid cigar enthusiast, I'm kind of INTO a good Port, you might say.
Surprisingly, an economical purchase, at about $16 the 750 ml, in a "Captain's Bottle" heavy based decanter.
Today?
Not only is it not on the market, but the very winery which produced it can NOT be found on the net, no matter how strong your Google Fu.
This is strange.
That Port, was amazing, sublime, enchanting.
And as intended, THE perfect match with any fine cigar.
It was so good, after the port and cigar, I had to roll over and have a cigarette.

I recall reading that it was about three times a decade. Of course the theory would be they would do it in really good years so you can't predict a number. I think there are more now, not fewer.
I had a Colheita port recently. That is a single vintage but aged in wood for a long time like a tawny port. It was good stuff. I like the tawny ports for the nutty characteristics and because they last a while after opening. They are not better than vintage of course, just different.

I would venture a guess that the best Chinese food in North America can be found in Vancouver, B.C. It's not just in Chinatown any more. All over the entire metro area. And just about any Chinese regional and/or fusion cuisine you could imagine. And lots of fresh seafood.

Also the golden age of guns in America. Prices, quality, selection. Ammo prices pretty good too.

I like Aussie Shiraz too. My ultimate dream wine is Penfold's Grange. I watched a program about Grange decades ago and it always intrigued me. It sucks that it is one of the most expensive regularly produced wines in the world.
As for shipping, others know more about the subject than I do. I do recall an import/export class where they told us it cost less to ship something across an ocean than to put that same product on a truck in the USA and drive it a hundred miles. That was a generalization of course but interesting nonetheless.

You see, there's only one road. The next fork in the road is about 250 miles, and the next one after that is about 300 miles. Then close to 400. Then close to 500.

We rode the ferry from Juneau to Whittier. It makes that run in January, when the legislative session is starting, so they can take all the legislators' cars to Juneau.
I don't recommend crossing the Gulf of Alaska in January. I don't think I have ever barfed that much in the span of three days. The boy doesn't hardly remember any of it, he was so seasick. And I'm usually not affected by wave action. This was something else.

Woke up at 3 with localized back pain, one side only, never had em before but "internet research" ( I know, I know) leads me, early 60s male in otherwise good health (not on any medications) to believe a kidney stone is the cause of my current unease.
Outright pain, actually, which is why I am here, to ask if this sort of thing is an ER visit or hold out for a regular office visit a few hours later?
Or, more specifically, will a regular doc send me to the hospital or do something in office to 1) make determination of cause, like a sonogram or 2) send me straight over to the hospital for testing?
The pain level is nearly the abdominal equivalent of migraine pain - not completely incapacitating but pretty damn close. Ibuprofen not helpful at all.
Anyone been through kidney stones lately?

No problem. I woke up with a little pain in the center of the back myself. Nothing I did yesterday. I just think it's muscular from sleeping in a cold bedroom. I probably kicked the covers off during the night.
Naproxen (Aleve) is the best stuff for muscular pain and cramping (women). Might want to up your intake of magnesium.

You really have to wonder if people like him have ever set foot outside the country not as a tourist. They need to spend some time somewhere south of the border in places that are not bubble wrapped sanitized beaches, hotels and vacation destinations. And eat what the locals are eating, not the Americanized version.
