This was not smashed beans and rice..this was excellent and inventive cooking. I don't have any photos because I was too busy stuffing the food in my mouth as fast as I could manage without requiring a Heimlich, but suffice it to say that the fresh tortillas were just as good as the chiles, and the cheese sauce was nothing like the gloppy crap I have had on too many occasions. The owner, Yebel Shlimovitch, spent some time at Rick Bayless' Frontera Grill, which is one of the best Mexican restaurants in the country. If you are anywhere near Corsicana, find this guy's food truck and enjoy! He is on Twitter and FaceBook This is exactly the kind of drink that I shy away from, because all too often they are cloyingly sweet and faintly nauseating. But this was excellent! I was surprised how well balanced it was. There was enough of an alcohol bite to remind me that it had booze in it, and while it was thick and creamy it was not too sugary. There were other things going on besides sweet and fat, and that made it a pleasure to drink.
Combine all ingredients in a blender and set on high speed for 30 seconds. Bottle in a tightly sealed container and refrigerate. Shake while cooling and before using. Will keep for up to two months. This makes me suspicious. The smoke in Scotch makes it a very difficult ingredient, even in cocktails. I have had many Scotch-based cocktails and every single one was a disappointment. I am sure that some people like them, but if I want smoke, I'll drink Scotch straight or have a good cigar! Scotch whiskey caramel milkshake I would just leave the whiskey out of it and enjoy the salty caramel milkshake. I can confirm that the roast pig and the Irish cream were spectacular. I don't know that I'll ever have the call to roast a pig (our friends do every year and invite us and they only live 2 miles away so I feel like I'm off the hook there) but something tells me that Irish cream recipe is going to come in handy. I think I'll whip some up for Thanksgiving. We'll have a full house, as usual. Hooray!

I spent 10 days eating in my mom's retirement community dining room. $20 per day got me a full breakfast, a very nice lunch, and amazing dinners, including grilled salmon and wonderful rib-eyes. Everything you could want, including carrot cake for dessert.

I went feral hog hunting once. Really wanted to taste that sucker on a spit. But after the kill their were so many parasites unassing from the carcas, I lost my appetite. Which takes a lot.

Note: Tried the bacon recipe from a couple of weeks ago, Not quite failure, but close.
My mistakes were: Too much salt, though I'm reasonably sure I used exactly what the recipe called for. Molasses was a poor substitute for sorghum. (went with molasses because sorghum was impossible to find) Overcooked on the pellet grill on too high heat. So, I will try again, but, next time, cut the salt by 50%, use sorghum or real maple syrup (molasses just seems to be a no go due to how sweet it is) and put on the pellet grill on a lower temperature for a shorter period of time. One thing that was interesting was the molasses sugar and salt was rather thick but after being in the refrigerator on the pork belly for a few days, the stuff poured out like water. It is actually more 'traditional' than a regular Pizza. Pizza was a simple bread topped with whatever was at hand: and often veggies, a bit of cured meat, some fresh cheese and eggs were exactly what was at hand. We would eat stuff like this in the morning when we were getting the Pizzeria ready / oreooed for the day. The last time I smoked a pork belly it burst into flame. The skin wss crispy that time. The meat was fine that flaming time, but I prefer the meat this time. So how do I get the skin crisp, while keeping the meat smoky and tender? I suppose I could finish it with a blowtorch. Just a rookie experimenter. I made peri peri chicken with pinto beans and rice on Friday, and it was a huge hit with family and guests.
I started using organic chicken as the primary protein. I hate to admit it, but there is an immense difference in the texture and flavor of the bird versus cheap stuff from Wally world. Don't get me wrong- I don't you can't make good food from the cheap stuff, because you can and I have for many years. But after a fourth cancer diagnosis, I thought it was time too make some changes in the diet that would maybe stop a fifth. Organic was one of those changes. Fresh cilantro, good olive oil, fresh garlic, salt, pepper, rehydrated chipotle chilies that I pureed, fresh parsley, and Hungarian paprika smooshed together, and then the chicken pieces immersed in this marinade overnight. Slice red or yukon gold potatoes and place a layer no more than two slices thick on the bottom of a 13x9 pan, and drizzle with olive oil and salt and pepper. Place the marinated chicken pieces on the potatoes, making sure to get all of the marinade over the meat. Bake at 425 for 15 minutes. Baste with a little melted butter (or schmaltz if you have it, which is my newfound preferred fat) and continue baking at 375 for 45-50 minutes, basting with a little more butter every 20 minutes or so, until chicken registers 170. (165 is what chefs say, but I prefer to go higher because salmonella is not pleasant.) Beans: cooking dried beans is a chore. You have to start a day ahead, and tend them all day, like a cranky, demanding toddler. But the result is a creamy dish that elevates beans and rice to something special. The day before, wash and pick over a 1 pound bag of pinto beans, place in a nonreactive bowl (plastic or glass) and cover with water. You will be rinsing and refilling the bowl of water a couple of times before cooking starts. Some people claim this reduces the gas producing effect of the bean, but they would be wrong or liars. After the beans have soaked for at least 12 hours, rinse a final time. Chop one large onion and 1 large green pepper into small pieces, and saute in olive oil in a heavy pot, preferably a dutch oven. (Nods to CBD). Chop two stalks of celery the same size as the onion and pepper, and add it to the pot, stirring so nothing burns. Add olive oil as needed. Don't be skimpy, but don't drown it either. Finally, add chopped garlic-around three cloves, and then the beans. Stir a minute or so, then add vegetable broth-around 6 cups. You can use chicken broth or water, but I prefer the flavor of vegetable, and for this meal I was cooking for a vegetarian. Throwing in a ham bone at this point for non vegetarians would be good at this point too. Bring the beans to a boil, then reduce heat to a simmer, and put the cover on, slightly askew. Cook for one hour. After one hour, add the following: 1 tsp salt, 1 tsp pepper, 1 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder. Stir, add more liquid as needed, then replace lid. Cook slowly, stirring occasionally for two more hours. Add 1 tsp salt, 1tsp pepper, 1 tsp cumin, 1 tsp onion powder and 1 tsp garlic powder, stir, add liquid, and cook for two more hours. After that, the beans should be ready. The spice lovers added generous shakes of Goya's hot sauce, which is not sweet, and enjoyed the beans, rice and chicken immensely. Yes you are allowed to cook Italian food in Texas. In fact, you will likely have to cook your own, since I've never been to a really good Italian restaurant here--and I've lived here all of my life. (A lot of restaurants have a good rep, but none I've been to are as good average places in Providence, Philly, or Jersey, for example.) In fairness, there may be some good Italian restaurants in Houston, but I'm not fond enough of the city to go there to look for them. How the pig roast came to be. Towards the end of the 2nd annual thingy, Texas Zombie said he was all for a pig roast and so we all kinda agreed. I'll just call him Navy Guy said he would cook. Now I'm not really wanting to dig a pit in my barn aisle so Jim recommends the cooking box. Navy guy purchased the box and had test driven it several times before this get together.

When I'm back from a trip I'm going to keep an eye out for sales on pork shoulder, to make buckboard bacon (wet cure, in the fridge). Even though I presently have but a poor man's improvised smoking set-up (gas grill - though I'm able to get/keep low 200s-degrees pretty consistently, and have learned to add packets of soaked chips periodically to keep up the smoke). OT: OK, since people are socking 8th and 20th Air Forces, a tidbit from Sweeney's memoir of his war career and the Nagasaki mission.
When Bock's Car was approaching Okinawa, expecting to ditch because not enough fuel, Sweeney for reasons still unexplained couldn't get Yontan control tower to acknowledge his May Day! calls. So finally he yells to his crew to fire every flare they have - all colors. Each color represented something specific: "dead/wounded on board" "heavy damage" "plane on fire" etc. They fired all of them (none of them really applied, the only problem was no fuel). Finally, the word gets through, Sweeney sees runways being cleared and traffic exiting the pattern. Miraculously the plane makes it (one engine died on approach), and touches down. Quickly, an emergency vehicle arrives and somebody yells up into the open hatch "where are the wounded?". Sweeney points north, toward Nagasaki, and says "up that way". I tried the 'No Knead' Pizza dough recipe this week. Worked quite well; the dough was super smooth.

i w*rked for their subsidiary here in #Failifornia for 6 months, and, when i filed a harassment complaint against my stuporvisors for discrimination, etc, Kroger corporate turfed it back locally. they investigate, sent me a letter saying they had substantiated some of my complaints, but that it didn't rise to the level of "actionable harassment"*. so they were doing nothing. that friday they fired me. checked with a lawyer who said i needed a stronger case. my fault for being a straight white male, apparently. i'd rather eat out of garbage cans than shop at a store they own. #YMMV *this, from an organization that claims to have a zero-tolerance for harassment. I bring the frozen out for an hour before shaping, throw a ton of flour down, then the cold dough ( on a 12'' dinner plate ) and I get a nice little circle. Perfect? Not quite. Never roll a pizza dough.
Put the head on a floured surface. Using your fingertips start flattening from the center out, NEVER touching the rim of the pizza. Leave 1" on the edge, completely untouched. Continue while rotating 45 degrees until the center is uniform thcknes. Then grab over the untouched edge with both hands and lift while rotating around the dough. Always taking care not to crush the edge. Gravity will start to pull the pizza into shape. Adjust the speed you are rotating to keep it round-ish. Then lay it over the backs of your hands and stratch to size. If you are feeling bold, or have an extra dough handy in case of calamity, give it a toss and spin. Another trick that works well is to add a tablespoon of plain breadcrumbs to your working flour.
Just make sure you keep it off the top of the pie. But, it'll help you get it off the peel if you take a long time assembling. If your pie gets stuck to the peel a well floured piece of string used like floss will get it unstuck. I had a boring lunch. Hamburgers-Thomas Kitchen brand beef which has carmelized onions mixed in and rosemary French friend potatoes. Tasted good thought and quick. We didn't get home till almost 1:30 because son had a car accident.

Once my tomatoes ran out in the garden I started making pizza with white cheese sauce since I had it and I wanted something different.
I found chopping ham and bacon really fine for a topping made for a fabulous pizza, as did adding a little extra shredded cheese like a Colby. It is not classic pizza, a couple of weeks ago I made it with chicken, and last night I made it with pepperoni, thai peppers, and extra basil. Tried no knead bread dough for the first time the other night.. let it rise for two hours and made a great rustic loaf with sesames.. Nice crispy crust with water in the oven to create steam.. Wife and I ate half the loaf with butter!
Second half of the batch, I let rise and ferment overnight and made a focaccia last night..wonderful! All I put on it (besides a good amount of olive oil) was some carmelized onions, sea salt and a biit of rosemary.. delish! I'm sold on no-knead method! 273 .. bluebell, Thanks for the good suggestion. We don't do much with BBQ sauce because of all the sugar and such and most of the commercial sauces just taste nasty. We'll experiment with homemade versions and use the liquid smoke as needed.

I think chile rellenos (stuffed chiles, in translation) are meant as an homage to the Mexican flag, thus the colors - red, white, green. The green from the chiles (duh), the white from the cream sauce, the red from those pomegranate seeds.
I've made the dish a few times over the years, decent but not great, lots of work (breading/frying something, while sacred, is a hassle), but not usually with the cream sauce - substitute a lighter tomato-based sauce. "Not great" refers to my results, not the potential of the dish - I've had great versions and I'm sure those at the TX place were fantastic. There is no real substitute for maple syrup but the good stuff isn't always available (or affordable). But after reading about Beorn and his baking in "The Hobbit", which called for a lot of honey, I discovered that warming honey with a bit of butter works great.

I live close to the very last remaining Me-'N-Ed's Pizza Parlor in all of Southern California. Pizza with a soda-cracker style crust. Yum. I just looked up and a scarecrow was walking across my TV screen. They have been doing this "Thriller" marathon all weekend. Never heard of it before, but I like it as much, or better, than the Twilight Zone. It is perfect Halloween mood TV.

Just make sure to not light your hair on fire Skip. It is a thing, people think the candle creates both warmth and gentle suction. Myth busting blogs have shown there is no real suction from a candle. Warmth is comforting for some ear aches but join the 21st century and just microwave a hot pack; or tie some uncooked rice in a clean (not nylon) sock to improvise a reusable warming pack. Soothing warmth with no flame and no risk of dripping hot wax on yourself.

Other ear remedies. Put a bit of rubbing alcohol in the affected ear. This will really beef up the results for candling
