Good SOS ... as I've experienced it ... is NOT as simple as Sausage Gravy.

It's a thinner consistency - not soupy, not runny - but thinner than sausage gravy. And it makes a fantastic contrast in texture to the crisp, but not burned, toast.

The way I've seen it done well is to brown the hamburger before adding the milk and flour. I like to pour off some of the grease - but that's just me.

As much as I've bitched about the cooking when I was a kid ... ScoggDad made some damn fine SOS.

Serves 4.

1/4 cup butter
1/4 cup flour
1/2 tsp pepper
1 tsp salt
2 cups milk

Melt the butter in a pan, blend in flour, salt and pepper. Stir in the milk. Cook over medium heat to light boil, stirring constantly. Reduce heat and let thicken.

Easy peasy.

There's this weird dynamic out there where we have simultaneously a shortage of workers, and employers who are seeking the perfect employee for every job opening, and often not willing to pay for good talent. They want a BMW for the price of a Hyundai. Sorry, but that's not how the market works.

Amen to that. The best part of my work is that I don't have to put up with any of the internal politics and bullshit of corporate America. I come in, do what I need to do and stay above all the nonesense. I try to get sucked into it, but my attitude is always "I'm just a guest here, I don't think it would be appropriate for me to take sides on this issue". Then after a few months, move on to the next gig. That freedom is hard to describe to people.

Yup, that's to be expected. But my point was that it was obviously going to be a HUGE battle, and would suck up most of his political capital at the very beginning of his term. Politically speaking, the timing was awful. And worse is that he backed down in the end and accepted a compromise that pissed off the very base that he was trying to appease.

I really think that if he'd have tread softer at the beginning, husbanding his political capital until it would be most effective, he'd have achieved a lot more of his agenda. In retrospect, it's actually a good thing that he fucked up right out of the gate.

It helps if you can make yourself indispensable to the company.

I do Automation and Control - every fucking Manufacturer I ever worked at - I WAS the guy they couldn't do without.

Every Weekend - every Holiday - 24/7 On-Call - if anything ever burped in those damn plants - I was the first guy they called.

Because I did the shit they didn't understand. Instrumentation. Programming. Servo-Control.

They either demanded me because they were running - or demanded me because they weren't running and there was always something I could improve so that they could run better on Monday.

Always on Salary.

Being the Automation Guy in an American Manufacturing Plant is about the worst fucking job in the world - by any measure.

I like Freelance better. And a big part of it is because I just don't answer those kind of calls anymore. Don't have to. "Their Problems" don't have to be "My Problems".
