THE MORNING RANT: Lemon Zest Has Gotten Entirely Out of Hand; also, Are Crows Holding a Multi-Generational Grudge Against Ace?

I am taking a break today from policy and politics to address what is indisputably a first-world problem. I know how blessed I am, and the fact that I can complain about this issue is evidence of how blessed I am.

With that disclaimer, may I address a situation that has become epidemic in America’s restaurant kitchens…lemon abuse. My plea to American chefs: Please ease up on the use of lemon zest.

Seriously, I have reached the point where I’d rather go to Texas Roadhouse for some reliable comfort food than pucker up to yet another mouthful of lemon peel at a fancy restaurant.

I don’t dislike lemon. I put lemon in my tea and I love chicken piccata. But lemon is like rosemary or cilantro – a little goes a long way. Too much will ruin a dish, as will putting it where it doesn’t belong.

At one expensive new restaurant my wife and I recently visited with another couple, we ordered a crawfish dip appetizer that tasted pretty much like straight lemon juice. The crawfish were visible in the dip, but they could not be tasted due to the intense lemon flavor. I noticed our guests not touching the dip after one bite.

Soon thereafter, my wife and I went to another restaurant that recently opened. Here I ordered the lobster roll. Again, all I tasted was lemon – extremely bitter lemon. Not only was the lobster drizzled in lemon juice, but it was also coated in lemon zest. The sous chef had clearly gotten into the bitter white pith of the lemon rind while grating it. Suffice it to say, there was zero lobster flavor amidst all the bitter lemon flavor.

At yet another recent meal – this time a prix fixe dinner with a celebrity chef – pretty much everything had lemon zest in it, including an appetizer, the entrée, one of the sides, and the dessert. To be fair, some of it was tasty and an appropriate use of lemon zest, but what is the obsession about putting lemon zest in every dish? I love the taste of oysters, but that doesn’t mean I need to put oysters in every dish I make.

A jar of hand-made peach preserves was recently given to my wife and me. She opened it, spread some on a bagel, took a bite, and then made a disgusted face. She said it tasted nothing at all like fresh peaches and asked me to try it. I did, and there it was again – the deeply bitter taste of lemon rind. We threw the jar away.

This lemon zest trend makes me recall the exasperation I felt a few years ago during “peak rosemary.” I don’t dislike rosemary, but I do dislike too much rosemary. There was one night my wife and I went to a small-menu restaurant at which we had previously enjoyed good meals. The chef had suddenly got caught up in rosemary fever. The pork and chicken dishes were both cooked with rosemary. Rosemary bread was served with the meal. And if you wanted potatoes as a side, they were served roasted with rosemary seasoning.

Occasionally if a waiter asks if I have any food restrictions, I’ll tell him/her that I’m allergic to organic food. They usually get the joke. (Organic food purists tend to also be the ones most likely to have self-diagnosed food allergies.) I’m thinking now that I may start telling waiters I’m allergic to lemon zest so that I can get a disclosure of which menu items have had lemon zest inflicted on them.

Crows Hold Grudges…Maybe They’re Holding a Grudge Against Ace?

Since this is a non-political post, this might also be good time to discuss the boss’ problem making friends with neighborhood crows. Several weeks back, as you may recall, Ace discussed his efforts to befriend the crows who were hanging around his place. Sadly, the crows rebuffed his efforts.

Is it possible that Ace’s neighborhood crows are nursing a grudge against him for some reason? Perhaps they actively dislike people who are shelving-impaired?

“If You Think You Can Hold a Grudge, Consider the Crow; The brainy birds carry big chips on their shoulders, scientists say. And some people who become subjects of their ire may be victims of mistaken identity.” [NY Times – 10/28/2024]

Renowned for their intelligence, crows can mimic human speech, use tools and gather for what seem to be funeral rites when a member of their murder, as groups of crows are known, dies or is killed. They can identify and remember faces, even among large crowds.

They also tenaciously hold grudges. When a murder of crows singles out a person as dangerous, its wrath can be alarming, and can be passed along beyond an individual crow’s life span of up to a dozen or so years, creating multigenerational grudges.

Crows hold multi-generational grudges!?

Ace has famously told us of his childhood trauma of having to eat Kaboom cereal. (“I suppose this was General Mills' attempt to tap the downscale demographic’ in six-year-olds.”)

How sad if Ace is still paying the price of his Kaboom years with the crows holding a multi-generational grudge against him.

7 Lemon zest is amazing, but, like most things, it benefits from it's rarity.

I make lemon-ricotta waffles that uses a lot of lemon zest and they are amazing. But I only make them for my family about once every 2-3 months.

Every day, or every week would get tiring.

That's the problem with "fads"- it wears out the novelty.

I feel the same way about cumin. A little goes a long way.

This is so funny, because this weekend I went to our local tea house, which does get creative but usually in good ways. The owner was experimenting with new concoctions and was making a cardamom cold foam. In my head I was like are you kidding me? Though I guess it’s not pumpkin spice, at least. Anyway, it was delicious. Really, really good.

Not being widely reported is death of four US citizens in Athens, Greece from explosionover the weekend. Gas leak is intial report, but it looks a bit too convenient for that. To me. From the timing and geography, I hope our authorities look to Iranian involvement and, if shown, take necessary response

Last SPring I noticed the local crows enjoying our bird bath, so I started putting out some snacks on the edge of it for them.

Squirrels discovered this and shamelessly stole the snacks immediately after I placed them, so I backed off. A few weeks later, I'm walking my dog when suddenly -- THWACK!! -- something hits the back of my head. And now the darn thing is sitting on a nearby tree scolding me!!

Yes, the crow was pissed I had stopped. Message received, I resumed with the snacks.

It's an old chef's trick: when the food ain't that great, add some strong spices.

Similar thing with the cheap beer brewers (the odious Budweiser, etc) constantly pimping "ice old" beer. Beer is not supposed to be drank ice cold. But the colder the beer, the less you'll notice the dogshit flavors.

So the cheap beer brewers have spent generations trying to get their customers to drink their crappy beer at near-freezing temps.

Mentioned on the Food Thread yesterday, went to to a new-to-me cafe, and ordered poutine. They made it with curly fries, and sprinkled fenugreek on it. Was barely edible. Won't be going back there.

We started to feed hummingbirds last summer and we discovered they too will memorize not only the location of the feeder(s) but the face of the person(s) who put it out.

The old saw has it that spices were used to cover the the taste and smell of rotting meat in medieval times, but if you think about it, that doesn't really make sense. Spices, especially pepper, were very expensive, and the only people who could afford them were the rich, who were also the least likely to eat rotten meat.

Chorizo...My FIL, God rest his soul, told me about a time he visited a chorizo factory in Mexico...some of the meat was green...they add lots of spices to cover up the smell and flavor.

Way back in the day, heavily salting meats was a way to sustain the meat and cover up the rotting flavors. Corned beef, for one.

I actually haven't found much hobo locally, and the imported hobo is very pricey.

Use the cheapest, nastiest hot sauce on the snacks. Birds cannot process the heat so it passes through with no problems.

Mammals, not so much. Liquid is easier to apply as if you use the dry powder on a windy day in filling the birdfeeders, you pepper spray yourself with the powder. Nasty.

After a layoff, I've just bought some iceberg lettuce, radishes, and green onions to assemble into my daily salad. Pickles instead of cucumbers, and pickle juice instead of a high-calorie dressing. Salty and tasty.

Long ago when I was on a diet, I made up the salad and used lemon juice on it. The taste was okay. Years after that I tried it again, and my throat felt like I'd swallowed drain cleaner. Never again.

Add a bit of garlic if you like as well to baby spinach. The adult stuff, I usually remove stems as it can get a bit woody. I don't care for the texture of boiled spinach.

Slaws are also a good way to get a mix of goodness including cabbage without the odor. Essentially a shredded salad and usually pretty cheap because a large component of slaw is usually cabbage.

I should probably cook more with cumin but it is simply the odd spice out on my spice collection. Same for some of the exotic mixes like Za'tar.

I've found personally that Mediterranean cooking recipes with a spot of Italian and French digest better for me. Will do Tex Mex, Szechuan, and Cajun when I feel the urge. Usually when I am stopped up from seasonal allergies.

Heh, the trick to odious foods that are good for you is to hide the taste within the spices that you like. Brussel Sprouts roasted in a bacon fat for example. You taste the bacon fat and spices and get the Brussel Sprouts as filler. Or add veggies that you do like.

I worked with a lady who must have had some sort of dietary deficiency--she used tobasco sauce on LITERALLY everything. She carried a bottle in her purse. Go out for lunch? She'd dump tobasco on ANY genre of food served. Have lunch brought in by a salesperson? She'd reach into her purse on pour the sauce on whatever sandwich/pizza/entree they brought us. It was quite strange. I never saw her eat any non-desert item that she didn't put tobasco sauce on.

Yeah they need to be halved and roasted, not boiled. Most anything other than pasta shouldn't see boiling water in general.

The reason I asked the question is because the brussels sprouts everyone hated as a kid 30-40-50 years ago were objectively terrible. Gross bitter little balls of nasty -- But today's brussels sprouts are barely recognizable against those old ones. We've bred the nasty and bitter out of them and now they're really pretty damn good veggies.

You can still use pesticides and call your food "organic"...it's just you're limited as to which pesticides you're allowed to use.
You can't use "synthetic" pesticides.

316 We're not sure if it was one of those changes that Fauci's Engineered Bioweapon of 2019-2020 brought along, or if there's some actual reason that fast food has been dousing ingredients with black pepper. Popeyes? Over-peppered, we don't go there anymore. KFC? Sometimes with the chicken, but and even the gravy got a bit too peppery.

Chicken a la Thing and The Four Fingers of Death were barely edible, but you could get through them. The dehydrated meat patties were awful.

I thank my lucky stars that i DROS'd before the time of The Vomlet.

329 You never ate MRE's obviously. The tiny tabasco sauce in the packets was the only thing that could make some of the entrees edible. Killing the palate so the body could survive.
