In case it doesn't, send all of your excellent home-grown garlic to: cbd dot aoshq at gmail dot com. Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it! Among the goodies I scooped up at Trader Joe's yesterday were the lemon stuffed green olives I mentioned in the last thread and a wedge of Irish Porter Cheddar Cheese. Mild cheddar veined with Irish Porter. It's quite good. Wish I'd picked up more than a small wedge.

I had pulled pork yesterday. Buc-ee's.
The wife and I went to Bristol, VA yesterday to try out the Hard Rock Hotel & Casino. On the way back, we finally had a chance to hit the Buc-ee's east of Knoxville not too far from Dandridge. Well! You know how there are regular Walmarts and Super Walmarts? Apparently there are Super Buc-ee's and this was one of them. This place was far bigger than the ones in N. Tonight is Crockpot BBQ (red) Shredded Pork Sandwiches. I was gonna do baked beans, but it's been forever since I've been lazy and just dumped a bag of Aldi's fries into my air fry function on my oven - so fries it is.
With that I made a brand new coleslaw (pickled onion coleslaw with the 19 cent cabbage, green onions, pickled onion, cilantro, pickled onion liquid, olive oil, salt, pepper, and a PINCH of sugar b/c my pickling is a red wine vinegar and it's tart)...and a strawberry and jam grape salad (yes, another new type of grape, but if you sell it to me cheap, and it's seedless, I'll try it - and they are good)... Meatloaf is one of my wife's "comfort foods". In fact, I have been married long enough to know that the smell of a comfort food being cooked almost certainly means she had a bad day or a bad week. I'm sure its a bit of PITA, but actual SNAP recipients that need a bit of help with groceries probably just get the eligible items with the SNAP card, and then buy their treats with the EBT card or cash. Posted by: PaleRider at March 15, 2026 04:24 PM (+89TD) 49

I get 12oz of 1/2" thick bacon from our butcher, only give it an hour on the smoker, then cut it up into 1" pieces and throw in the Dutch oven, cover with a cut up onion, 28 oz Bush's baked beans, 1/2 cup brown sugar, some ketchup and mustard and molasses to taste, bake at 225 for 6 hours and refrigerate overnight. We lost power Friday with the last windstorm for 3 hours (hadn't lost power in years)...so I don't know which way this will go. Thankfully, we had a Church soup dinner to go to which had power (told the spouse if I'd have been in the middle of prepping dinner, it would have had to be tossed, so at least tomorrow is a 20 minute cook plan). I'll probably prebake homemade blueberry muffins and serve 2 cold salads (fruit and cucumber), so it's just the salmon for the worst of the storms... I tried making a pot pie using a boiled water crust, instead of the usual rough pastry. I need to try a couple of tweaks to see if I can make it better, but on the whole it was as good as my poor rough pastry, and it was much easier to make. The downside is it had much the same texture as the Swanson frozen crust, which is why I need to try some changes.
I had enough dough to make two pies, one was with the leavings of a rosemary pork stew, and the second one was leftovers of my corned beef and cabbage dinner, with the gravy made from the cooking broth. Corned beef makes a surprising pot pie. Posted by: Kindltot at March 15, 2026 04:40 PM (rbvCR) 83

Add all the other ingredients to your crock pot. About an hour before dinner time, Roughly dice your cabbage and saute in olive oil and maybe some carraway seeds. I usually would do this in a large stock pot so you can move the cabbage around as it cooks. Posted by: Joe Kidd at March 15, 2026 04:40 PM (nbLIj) 84

Wow, you can get a tender brisket after only a few hours of roasting? You must have some cooking voodoo, a time dilation machine, or we have different definitions of ‘tender.’
For truly tender, fall-apart brisket nirvana where Christians and Jews agree on a messiah, I have to roast the meat at least 8 hours, preferably 10+. That’s how long it takes to break down the collagen at low and slow. Yea, I can make a pretty good brisket in a few hours. The meat is not hard, and quite flavorful, but I wouldn’t call it tender or anywhere near the nirvana ideal. In fact, we did St Paddy dinner yesterday, and we did corned beef — duh — and only had time to roast for maybe 3-4 hours. Came out good, tasty, but I wouldn’t call it tender. Smokey Bacon Brisket Chili
1 medium yellow onion 2 bell peppers, chopped 1 tbsp minced garlic 1 14 oz can fire-roasted tomatoes, diced 2 cups chicken stock 1 cup beef stock 1 bottle beer (I used Dead Guy Ale on hand) 2.5 lbs brisket, cubed* 6 strips of cooked bacon, cut into pieces 2 cans chili beans in mild sauce 1 tsp chocolate/cocoa powder 1 tbsp smoked paprika 1 tbsp cumin 2-3 tbsp chili powder (I used a chipotle blend) 1/2 tsp dried thyme 1/4 tsp oregano Black pepper and salt to taste 2 spoonfuls of masa hating to thicken I don't have a smoker so I used a smoky black pepper rub in the brisket and cooked it at 250 degrees for 5-6 hours in a pan, with a bit of liquid (tented in foil for the first two hours). Sauté onion, garlic, and peppers; add seasonings, sauté for three more mins. Dump in crockpot along with can of tomatoes and chicken/beef stock. Add brisket, bacon, and beans. Stir so the delicious gestalt of flavors can brood. Heat on low for 3-4 hours. Posted by: All Hail Eris, She-Wolf of the 'Ettes 'Ettes. at March 15, 2026 04:46 PM (kpS4V) 95

Sofrito (3 Tbspn) Oregano (2 Tbspn) Garlic powder (1 Tbspn) 1 teaspoon: ground coriander onion powder paprika cumin ½ cup olive oil S&P to taste After four hours (over night even better) make a braising liquid of 1 cup orange juice, 1/2 cup of water and a 1/4 cup of lime juice. Pour this into a roasting pan, add the shoulder, cover tightly with aluminum foil and bake at 300. 5-6 lb roast should be done in about three hours, then remove foil and blast at 400-450 for another 30 minutes to crisp up the skin. Remove from the oven, skim fat from the braising liquid, add maybe two tbspns of cider vinegar then pour into a bowl filled with chopped parsley. This is your garnish. I can’t tell what that bourbon guy is bitching about. Maybe there’s a backstory I’m not aware of, but is he complaining that he buys expensive bourbon — he’s pimping a fairly expensive bottle — and others in the ‘club’ don’t like that? Or is the opposite, that he doesn’t buy pricey shit and the snobs in the club don’t like that?

Speaking of berries,
I had a hankering for some salmon yesterday, so got a previously frozen fillet of silver at my fish monger. Because it was frozen, it needed some fat, so I melted some butter and threw in blackberries, lemon, a pinch of sugar and some salt. Salt and pepper on the fish, then the blackberry sauce, oven for 10 minutes at 400. Served with homemade coleslaw and turmeric spiked rice. Beautiful colorful flavorful plate. Leftover salmon will be a salmon salad sammich tomorrow. Because no one should reheat silver salmon in a microwave. Just. No. Posted by: nurse ratched at March 15, 2026 05:24 PM (A5RD0) 160

The Bourbon scene is pretty much a "mean girls club." Distilleries purposely bottle a very limited number of certain blends and fete the "mean girls" to fork over big monies for them.
It's a business model as old as the hills. And to be frank. There's not a whole lot "special" other than rarity between a bottle with a run of 250 bottles and the one before it, using the same equipment and mostly the same ingredients and mash bill that sells for $65. The recipe itself is simple. Sear, then remove it and brown a ton of mirepoix, then return the meat to the roasting pan, along with a lot of red wine, some tomato, some ketchup for the sweet teeth among the guests, and some herbs. Cover and roast for a few hours, until it is nice and tender.

Take my Mexican meatloaf idea above - do salsa, guac, eggs, salt, pepper and then food process some corn chips and/or tortilla chips and mix in...use I'd just say crush, but I don't think you want the sog factor of the product in the eventual meatloaf. Cook like you would normal meatloaf. I'd suggest you could also use your normal gluten free fake subs...but I like to stick to suggesting real foods ideas if I can (but like, using your gluten free bread as the dry binder will also likely work for a "regular" meatloaf type)... I have a question about sea salt. We like sea salt because it has all the trace minerals in the sea, which are essential for life, and make things taste subtly better.

There is also as much Pappy van Winkle 23 as you want on the secondary market, and it's about $3,000-$5,000/bottle, with a list price of about $250. As for avocados, any food can be made to taste terribly or taste wonderfully.
Avocados are a great sub for folks that can't eat eggs. You'd be using the avocado mashed, so it needs to be riped and in almost spreadable form (thus, why guac is a nice sub in) and you want a firmer binder b/c avocado will give you less structure but more mouthfeel, so you want to combat that less structure with enough dry bind. 100 years ago, folks wouldn't have imagined half the foods we now just eat normally - but this is where creativity in cooking or screw ups (hello ice cream cone and corn flakes) come in... Egg allergies in adults are very rare.
And if you’re eating real meat, the incidence is statistically impossible in adults. Adding avocado to meatloaf and brownies is an abomination and folks who force it on others should be drawn and quartered. Posted by: nurse ratched at March 15, 2026 05:53 PM (A5RD0) 226

This Friday, after 4 months of being on high-protein meal replacements, we begin the 6-week transition back to eating regular food and the very thought of having a 4 oz. piece of baked chicken is making me drool. It's a PITA but going through rapid weight loss under doctor supervision is worth it; I've lost 40 lbs as of today, 5 inches off all of my measurements, and have dropped down 3 pants sizes. DH is down 43 lbs and is also down 3 pants sizes. I have 18 lbs to go to reach a "healthy" BMI. Then I'm gonna go crazy with some of the great recipes from the Food Thread!

Meatloaf tricks:
Cook the ground Mirepoix the night before, and chill. Add a gelatin packet to the cream/bread crumb mix. Add the egg, then add the veggies, then the meat. Go easy on the salt in the mix. Add the bulk of the seasoning to the outside. Too much salt on the inside turns it into a cake. Use a floured, greased bread pan, covered with double foil. Turn over and knock out the loaf 30 min in. Add the glaze after a few and cook till crispy. Posted by: weft cut-loop at March 15, 2026 06:06 PM (diia5) 243

CBD, mash one , add diced red onion and use it as a condiment for a BLT. Disclaimer, I leave out the lettuce and add cheese.

I've learned to use avocados for a variety of things. My wife makes a white chicken chili that just begs for avocado garnishes. I'll eat them with just some salad dressing for lunch too.

Avocados with just a sprinkle of Tajin seasoning are quite good as an appetizer.

Only trouble with avocados is how they are only ripe for like five minutes. Got in the habit for a bit of sidlin' up to some mexican-looking lady in the grocery store and asking her opinion on how to pick a good avocado. Sometimes you learn a lot by just asking.

It seems to me that if food stamp recipients have enough money to hire a lawyer and file a lawsuit, they should have enough money to buy their own food.

Husband wants to cook a corned beef, potatoes, cabbage and carrots in the crockpot for St. Patrick's Day.
I told him I think that is too much stuff to put in the crockpot. How do ya'll cook that? Posted by: four seasons at March 15, 2026 04:25 PM (3ek7K) If that's too much for your crockpot, your crockpot is way too small. I can get about 4-6# of meat and ample supplies of taters and carrots into my 6-quart with no trouble at all Posted by: GWB at March 15, 2026 07:07 PM (CnuyB) 321
Turkey and avocado sandwiches are a fantastic.
Generally I don't buy too many avocados because of their 'shelf' life and I'm lazy. I'm scrambling to clean out the frig because my eye for food is bigger than my appetite. Posted by: Rev. Wishbone at March 15, 2026 07:11 PM (M9gjJ) 322
Use a “Second Cut” brisket. You have to ask the butcher for it, and don’t take “no” for an answer. You can thank me later.
