Yes, some of these additives maybe be unhealthful for humans. Or not. We really don't know for sure. But...I am a big fan of eating foods with as few ingredients as possible, for aesthetic and culinary reasons as well as health. FDA moves to ban BHA — an additive used in processed foods such as meats and bread Marion Nestle, professor emerita of nutrition, food studies and public health at New York University, said she wants to know how the FDA plans to evaluate BHA for safety. Previous toxicology studies on BHA have relied on lab testing and animal experiments, and it’s not always clear how well those results translate to humans, she said. Human studies aren’t really possible, she added, noting that they’d take too long, cost too much and raise major ethical concerns. The problem is that food is so hyper-politicized that it is difficult to separate fact from fiction, or propaganda! For instance, pushing animal welfare may seem to be a noble and caring pursuit, but it has many malign influences on the food supply chain, not least of which increasing the price of food. That might not be a huge deal in America, but the people on the margins will struggle, and some will die. And of course the real goal of many in the animal welfare movement is the outlawing of meat production, because "MEAT IS MURDER!" Tasty, tasty murder! I am a big fan of manly drinks like the Martini and the stirred Manhattan (shaken Manhattans are for effete pseudo-Texans), but a well-constructed cocktail is usually going to be tasty, no matter what its reputation. I have a friend who used to be a successful bartender, and often when we sat at his bar he would make what many would consider "girlie" drinks for me, just to make me squirm with embarrassment. Sadly for him, he was excellent at his craft, and they were always tasty! Hell, his chocolate Martini was a revelation! So here is a good beginning for what many would consider the quintessential girlie drink; the Cosmopolitan Cocktail. I would cut the Cointreau in half and replace it with more vodka, but it's a start! Keens is a New York City institution, and an absolute hoot! Elegant dining it is not, but it is fun nonetheless, and the food is solid (and pricey, but it's NYC!). and this makes me want to go back! $525K flag that covered Abraham Lincoln’s casket finds home — in NYC steakhouse Inflation bit us all firmly in the ass under the Biden/Obama dictatorship. Yes, inflation is down, but for many foods, prices are not. So economizing is more important for many people, and this website does a reasonable job at showing how we can eat fairly well without breaking the bank. One thing I don't like is the reliance on packaged foods that are far more expensive than their homemade equivalents. Vegetable broth? Come on...how tough is it to make? But Cheap Eats is still a good place to start if you want to economize but don't have enough cooking experience to do it on your own. ![]() A friend graciously gave me some genuine grown-in-the-USA garlic, and I tasted one clove and planted the rest, because my pathetic failure last year is an anomaly...right? I hope so, because it's in the ground (actually, a large pot), and it had better work this time! In case it doesn't send all of your excellent home-grown garlic to: cbd dot aoshq at gmail dot com. Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it! Finally getting some snow flakes, 36°.
My bread is much better. I used 1.5tsp’s and 4cps KA bread flour to make a chiabatta dough. Only issue is my electric oven doesn’t get hot enough. I will use some whole wheat and set the oven to 500 next time. I use a cast iron DO to bake the bread which is heated for 30 minutes before the dough goes in. Checked the cheap eats site - I respect it, but there's way too few fruits and veg for me on those shopping lists (heck, even frozen or canned - just more!). Then again, my spouse has noticed that I will stress if we have too few fresh fruits or veg around. I don't stress if anything else is running out b/c I can make do...but we have to have fruits and veg around...

Bought a King Cake from Safeway baked Friday on Saturday. Great price and allergy safe for me and my 1st King Cake. Had never seen one sold here...and then had never seen one baked AFTER Mardi Gras, but still decked out. Could not decide if bakery decided to sell them this year and didn't understand why it gets bought and when or someone cancelled their bakery order (I'm leaning the latter, b/c it was priced at $5, which was a steal)... It was better than I expected - there's was a cross between cinnamon bread and cinnamon roll with tons of sugar and liquid glaze. I am a big fan of manly drinks like the Martini and the stirred Manhattan (shaken Manhattans are for effete pseudo-Texans), but a well-constructed cocktail is usually going to be tasty, no matter what its reputation.
I tried a new cocktail this week; the Corpse Reviver #2. It's equal parts gin, Cointreau (or other triple sec-type liqueur. I used Solerno), an aromatized wine (I used Cocchi Americano, which is delicious), and lemon juice. Add a couple of shakes of absinthe (and/or spritz the coupe with absinthe), and 1/8 oz simple syrup, stir in an ice-filled mixing glass, and pour into a chilled coupe. Garnish with lemon twist. It's a very complex drink due to the Cocchi Americano and absinthe, and you'll spend awhile trying to identify all the flavors. Protip: you will fail. Cocchi Americano is a Moscato-based Italian aperitif wine (16.5% ABV) with a complex flavor profile that is simultaneously sweet, bitter, and citrusy. It features strong notes of orange peel, gentian root, and white peach, balanced by a distinct quinine bitterness and a delicate, herbal finish. Ask a person with celiac. Food allergies make life difficult, and yes, it's their responsibility to read labels, etc. but. . . have you read labels lately? It is so freakin' hard to determine what is safe, what the heck some of the ingredients are, as well as maintain vigilance even with "safe" products since recipes/ingredients keep changing on long-time products. Even simple things like sour cream, cottage cheese, spices have gluten added to make them shelf stable. Texas gulf coast here, so BBQ season is all year. My wife buys a pork shoulder whenever they go on sale. We toss it in the deep freeze and roast one on a Weber kettle whenever.
I trim external fat as needed, put in a probe thermometer, cover it with the rub du jour, and smoke it to 160 degrees internal temperature. I use mostly hickory with a bit of pecan wood mixed in. After it reaches 160, I wrap it in heavy duty foil and bake it in an oven at 300 or 325 (depending on how much time I have left) until the internal temperature gets to ~200 to 210. The smoke to 160, bake to 200 comes from Alton Brown’s BBQ special, and it works great for maximizing the usable meat yield. Brisket flats work well with this method, too. After that, I open it up to let it cool and shred it, removing any internal fat or connective tissue that hasn’t rendered. We mix it with a BBQ sauce from the Weber big book of grilling. It goes onto sandwiches, baked potatoes, bao filling, etc. The liquid inside the baking dish gets defatted and used as a sort of broth, although allowances need to be made for the salt and smoke content. El Mencho, the now former founder and leader of the Jalisco New Generation Cartel, was killed in a gunfight with the Mexican Army. In response, the CJNG has been setting up blockcades and setting fire to buildings (including a Costco!) around Jalisco with Puerto Vallarta and Guadalajara getting the early brunt of the violence.
I'm watching a number of live feeds on YouTube and it's difficult to understand the extent of the violence because the videos are somewhat limited and without any context. Some of the gunfights have sounded pretty spicy. While not being reported. I'm reading this situation as a knock-on From Maduro getting arrested. It seems to have caused El Presidente Shinebaum to suddenly find her backbone. I'm giving President Trump a half a scalp for this since it's an ongoing operation. CJNG has purportedly issued a series of demands which includes the Mexican government handing over all the people in the Mexican Army involved with this operation to the cartel. I'm guessing that's not going to happen. You might want to rethink your vacation plans if they include anywhere close to Jalisco. That sounds delicious. I had a BBQ combo yesterday in Convention town. The brisket was a little dry, the pulled pork was pretty good and the real surprised was the Turkey Breast. Moist and flavorful. A few things (two, three,... ummm):
1) Smoked pork butt is AWESOME, but generally needs a good 8-12 hours in the smoker. PLUS I like to marinate mine (recipe varies, but several of them include soy or bourbon). 2) I like to finish my pork butt in the oven (wrapped in foil) to get the meat to an even temp throughout. 3) The prok rub is ESSENTIAL, but I don't really have a recipe,...just it needs some various chilli peppers, chipolte and/or ancho. 4) Also needs some SWEET, so DARK brown sugar plays an important part. -SLV Posted by: Shy Lurking Voter at February 22, 2026 05:28 PM (7kJyR) 88

Y'know, pork kind of gets short shrift here on the food thread, because I'm all about the beef on Sunday, so you are deprived of my pork kung fu, which is awesome. Using your outline: 1) marinade is a must. Keep it simple and acidic. Vinegar or citrus, infused with aromatic herbs (oregano is my go to), about half as much oil to vinegar. The oil tenderizes the meat and will help the smoke sink in. Diced onion and maybe a bit of mustard of turmeric. Place meat in a bag and pour marinade over it. Give it a few turns and refrigerate overnight. 2} I haven't done shoulders or big roasts in my smoker for many a year. Loin roasts, sure. Usually can cook those through in about 8-9 hours. I leave the meat out for at least an hour to get the chill off. Pierce the meat all around and fill the holes with mashed garlic and herbs. 3) Brown sugar and mustard rub. Don't like mustard? They also knew that their goalie wasn't going to let one in, and that is so energizing. After that 2nd and 3rd period, they got to say "we can't lose - our goalie won't let us" - while Canada had the opposite reaction of "What does it possibly take the score against him? My best pork shoulders have always come out of the oven. Not only is the meat evenly cooked and the fat wonderfully rendered, nothing stirs the appetite like a 5-6 lb pork shoulder roasting for about 4-5 hours at about 275. I stopped by the La Cumbre Brewery in Albuquerque yesterday. If you ever find yourself in ABQ and have a hankering for a craft beer this place is highly recommened.
The Elevated IPA out of the tap was excellent but I already knew that would be the case as it is one of my all-time favorite IPAs, something I have rigorously tested many times over the years. I then tried the 10.1% Siberian Silk, their Baltic style Porter (I never heard of a Baltic style Porter until that moment). It's in my top two two all-time porters I've ever drank. It is robust, smooth as could be, and not too sweet, It could easily be consumed like a session beer if you don't have any car keys and have the entire next day to recover. And yes, a four pack of pints went home with me. The only other Porter I've had up in this class is this Deschutes Brewery Black Butte Porter Anniversary Edition. It is very much like the Siberian Silk and it should not be confused with their okay standard Black Butte Porter. I made a nice experimental dish the other day. A small dice of butternut squash, same size dice of fennel, ditto shallot or onion. About equal amounts of each. Cooked covered with a little oil and water until tender, uncovered to get a little caramelization, then added a dash of hot pepper flakes, powdered ginger, and a little raw sugar, then deglazed with cider vinegar. I got a boneless Boston butt a couple of weeks ago to make sausage. It was fatty enough to not need additional fat, and it ground up very nicely in my light grinder. I have not found casings yet, so I made patties and canned a fair amount.

Meat is hugely expensive here in the PNW, even at Costco, I've seen price spikes. Was gonna buy a complete beef loin and carve it up into steak and prices went over $200 a package. So....no.

152 Meat is hugely expensive here in the PNW, even at Costco, I've seen price spikes. Was gonna buy a complete beef loin and carve it up into steak and prices went over $200 a package. So....no.

I've mentioned before that Wild Turkey 101 is my go to bourbon. It suits my taste preferences and is inexpensive, about 28 bucks at our state run booze emporiums. Now I'll add Bowman Brothers Virginia Straight Bourbon small batch to the list. It suits me and is about 34 dollars, still a damn good value. I've tried some of the high end bourbons but my cheap stuff suits me fine. I don't drink enough for cost to matter much. A bottle will easily last me a year. I'll put the 'savings' into the single malts I like. Win-win.
