And since it pissed off all the right people, I am thrilled! But it also makes me sad that Americans have become so detached from their food, from the farms to their tables, that they don't know how to construct a healthful diet. Eat a wide variety of foods, cooked by you from fresh raw ingredients, be active, and don't eat too much. That's my method, and it seems to work pretty well. Sure, I try to avoid a lot of carbs, because they seem to make me fat, but if they work for you, go for it! The insane focus on food misses the mark. It is supposed to be a pleasure. It is supposed to be a centerpiece for the family. It is supposed to be a respite from the insanity of the world. Instead, too many of us have dragged the complexity of the modern world into the kitchen, and it has made us fat and worried! Relax, have a piece of bacon, and enjoy the bounty of our wonderful world! ![]() Speaking of Football Food! Here's a solid recipe from the website "Amazing Ribs." Easy BBQ Pulled Pork Recipe works well, although I think that he uses too much Rosemary in his signature rub. But that's just my personal taste...you might think that it is the Platonic ideal of dry rubs! ![]() Anne Burrell was a fine chef, whose recipes were also written well enough for the home cook to decipher, and not just roll our eyes and say, "F*ck off, there are too many steps and too many ingredients." Her Focaccia recipe is a winner, and if you are feeling energetic, make her Ricotta the same day. The combination is delicious. Focaccia and Ricotta. It's a four-panel cartoon, so it's impossible to see on the blog, but click it and you won't be disappointed! Calvin And Hobbes A friend graciously gave me some genuine grown-in-the-USA garlic, and I tasted one clove and planted the rest, because my pathetic failure last year is an anomaly...right? Rumor has it that the Bourbon Bubble is bursting. I have seen no evidence of decreasing prices, but maybe the bursting started somewhere else! I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it! Tonight with the Eagles game is Buffalo chicken tenders, air fried fries, yesterday's amazing chili lime acorn squash, and strawberries/raspberries/blueberries.
Sent the kid abroad for the semester, so splurged on the berries for her, and these are the rest. I'll be watching the Eagles game, so in and out. And yes, this meal was planned to be good football watching food (and b/c the 2 folks here who don't like buffalo will not be eating tonight)... That's what it is. It takes 3+ hours to play a game of football. There's only 1 hour on the clock. And the ball is in play for less than 15 minutes. That gives you a lot of time to talk strategy. And offer color commentary. And..... eat! Baseball probably has the next-biggest food culture. Hot dogs! And beer! And ballpark employees yelling about concessions as they walk through the stands! And that's because it's another slow, strategic game where there's more downtime than action. Hockey and basketball are almost constant action. For pork, my go to herb is oregano. Other spices include onion powder, dry mustard, paprika and brown sugar. Wash ribs in cider vinegar, then coat in a paste of crushed garlic, oregano, salt and black pepper. Then apply your rub. Let it rest for a few hours, then smoke/grill/bake until done to your taste. If it's good enough for the number one BBQ joint in Texas, Franklin's BBQ in Austin, it's good enough for me. All he uses is a 50/50 mix of kosher salt and coarse ground black pepper and he has a line forming up at his door everyday at 6am. I know you've all been awaiting the denouement of my Misen 3 qt saucier fiasco - the one I ordered on November 28, and which just showed up 2 days ago. I told them this was my first...and last... order from them. I intend to stick to that.
Now, as to the item itself, it's really good. It's think, well designed for its function, and I expect many years of good service from it. However, I'm not willing to overlook that abysmal customer service. When I complained, they sent me an e-mail saying that the item was in pre-sale, and I could expect it in a 2 week window several weeks later. Why it's pre-sale status was relevant I leave as an exercise to the reader. To say the least, this was unacceptable. They should have had the item Fed Exed to me the next day. Seriously, when I"m paying more for very high quality, and thus expensive, goods, you'd think they'd understand that I expect good service, not a "we don't care" approach. I found a great pork chop recipe. Sear thick chops in a braising pan with 1-2 T oil on medium high for 2 minutes on each side, then pour over a mixture of 1 T dijon, 1 T red wine vinegar, 2 T light brown sugar, 1 T Worcestershire sauce, 1/2 tsp garlic powder and 1/3 cup water. Cover and finish on low. Check temp after 15 minutes. Remove chops and if needed, simmer the sauce until thick. This tastes awesome.

I made a big pot of chicken stew today. 7 pints, will keep a couple of them out to have this week, and I have room in the freezer for the rest. I didn't feel like getting out the canner.
It's kind of a chicken "tonic" soup--broth, lots of kale, fresh parsley, onions, celery, some tuscany-spiced garbanzo beans I didn't know what else to do with, wild rice, red pepper. Trying to find stuff in grocery stores is a knack like looking for stuff online. Syntax and rationale is key. As long as you can figure out the thinking of who classified what, the rest opens up to you.
I was looking for chia seeds is publix last night for example. New store to me (though I like it.) Could not find it in baking or snack nuts, etc. Finally looked it up. One brand was next to granola (ok, health food.) But the store brand was over in produce. Same item, two different locations. Que?! About the food pyramid and eating Whole Foods...
I was digging in old pamphlets from the 50s to help housewives, and it talked about these newfangled box prep things, like hamburger helper and rice a roni type stuff. Why, you can use them once or twice a week to save some time! Boxed, frozen, and pre packaged stuff was meant to be a supplement. Not an everyday thing. And yet that's how the American diet evolved to be: so much of it is now prepackaged. It was actually fun when I did keto to make things completely from scratch, and build my own Alfredo sauces, cream soups, broths, and not buy them canned or jarred. So glad the pyramid got changed! I was digging in old pamphlets from the 50s to help housewives, and it talked about these newfangled box prep things, like hamburger helper and rice a roni type stuff. Why, you can use them once or twice a week to save some time! Boxed, frozen, and pre packaged stuff was meant to be a supplement. Not an everyday thing. And yet that's how the American diet evolved to be: so much of it is now prepackaged. It was actually fun when I did keto to make things completely from scratch, and build my own Alfredo sauces, cream soups, broths, and not buy them canned or jarred. So glad the pyramid got changed! But I know K-12 teaches My Plate now, so the nutrition teachers are probably hating life. CBD - Try Jacques Pepin's Chicken with Spinach and Garlic.
He doesn't remove the bone, just cuts along each side of it so it flattens out. Put in a hot pan to start a sear, then reduce heat and cover for about 25 mins. No oil in the pan, enough fat in the thighs. Pull out the thighs and sauté spinach (I use shredded Brussel Sprouts) and garlic then serve. Quick, easy, and delicious. On my regular rotation. I quit watching football about 10 years ago, when it became a thing about racialized fascism and street violence, instead of touchdowns and down conversions.
But up until then, I was a big football fan, and I had to retire a certain plate (my wife hated it, so she was happy). It was a giant, ceramic sombrero and it was glazed in bright Mexican colors, and it was oven safe for warming/melting. The concave dip in the top of the hat was for salsa or queso, and the curled brim of the hat held the nacho tips and other toppings. It was extremely garish. After I parted ways with football, I kept it on staff as a dish for keys, change, and receipts, etc. So it became a permanent instead of weekend feature. For about 2 months, and then she made me put it in the basement forever. Pork Butt Burnt Ends Prep 20 minutes mins - Cook 4 hours hrs Total Time 4 hours hrs 20 minutes Ingredients * 10 pound bone-in pork butt * 1 cup Sweet and Smoky Rub * 2 cups BBQ sauce * 3 Tablespoons honey * 3 Tablespoons brown sugar * 5 Tablespoons butter cubed Instructions * Preheat your electric smoker to 250 degrees Fahrenheit according to manufacturers directions. Cut pork butt into 1-inch cubes. Put a cup of the pieces into a mixing bowl. Sprinkle rub over the top and coat each side of the pieces with. Put on non-stick disposable aluminum grill liner. You can also set them on your grill grates. Repeat until all pieces have the rub on them. * Smoke for 2 1/2 to 3 hours or until they have a nice bark on them. Remove from smoker and place in two 13" x 9" aluminum pans. * Mix together BBQ sauce, honey and brown sugar in mixing bowl. Divide between two pans. Toss to coat pork pieces. Top with cubes of butter in each pan. Cover pans with tinfoil. Place back on smoker for 1 1/2 hours, stirring every half hour, or until internal temperature reaches 190 degrees Fahrenheit. So. Not for food, but for the hearing aids price, we join Costco. Costco the cult. Costco the religion. Costco the thing you can never speak ill of. And we wander like zombies through the mostrously crowded aisles, and hardly anything makes sense. Huge quantities of everything. I enjoy Reddit because I have a good knowledge of housebuilding and sourdough breadmaking and participate in those subs. So I go to join the Costco one, and no, cannot do, not enough karma. So I spend two months going "hey, nice loaf" and shit like that to get the points, and go to Costco reddit to ask, how do you all do frozen diet meals for one. See, I don't know Costco. But I do know Publix and Kroger. The Costco reddit assholes throw me snide remarks! I want to say, hey, HEY, I had to slave in the Minnesota ranks of NICE to get here. And for THIS? M. Gaga, I'm also exploring individual frozen meals containing real, wholesome food. There are a few freezer-to-microwave leakproof containers on the market (I need leakproof to carry in my school backpack) and I figure I can find some good recipes I can cook large quantities of and use some immediately, some for leftovers, and some for individual servings in the freezer.

I read maps well. But, when driving I can't always do that. My wife is a terrible navigator, and she knows it. Thank the Lord that our son was able to go to Georgia with us when my Mom was in the hospital. He's a great navigator. Had it been just wife and I, we might be divorced now.

My GPS gets a thorough cussing out when it hits me up with "proceed to the route" as its instruction. I'm not staring, bug-eyed, at the screen, you nitwit. Name a street, or an upcoming turn, or something that I can see outside my windshield! Mine just puts up all relevant information: distance to next turn, lane, street name/symbol, distance after that to next waypoint all on the head up display. The Genesis line of cars converts the almost all of 24" dashboard touch display into a huge map with a speedometer overlay. Then the map changes its zoom level based on rate of travel. Back on topic... I tried a different chili recipe last night. F'rinstance, instead of oregano it used marjoram. The biggest difference was that it had you throw some dark chocolate in at the end and stir it in. Actually, didn't make a huge difference as you couldn't taste the chocolate as "chocolate". It seemed to make the earthy flavor of the chilies "earthier". And dampened down the fruity or vegetable aspect of things. Earthier, you know. like dirt or soil or like maybe like you used a root vegetable like parsnips, or or or beets in your chili or possibly carrots🥕 like CBD uses in his chili. I have bought large cuts of meat, bulk, at Chef's Source -- The store chain formerly known as Cash and Carry -- but I usually am going for cuts that can be turned into stew meats, small roasts, or things like pork shoulder that I can turn into sausage.

The Brits always had the hots for Iran, it was the only place they could conceivably influence that had oil pre-WWI , and they wanted in 1909 to convert their fleet to oil like the American fleet. If you want to put the blame on someone for that overthrow....put it on the Shah. He was, basically, a dictator (and a corrupt one at that). He had his political prisoners. He applied censorship of counter ideas and philosophies. And, despite such a wealth of resources, the people lived poorly. It was ripe for a revolution, and Carter took a step back from supporting the Shah due to his vulnerabilities. The people of Iran, on the other hand, didn't think it through. I think I'm in real trouble. Over Christmas, I ordered an "American Wagyu" New York Strip from Snake River Farms, to go along with our Christmas ham.
I can't believe how good it was. The price was insane, though. Can I really wait a year to taste that again? The ham was superb. Our newer cars have GPS with what I call two-screen mapping. A small one adjacent the speedometer showing the driver a graphic and listing constant feedback for next waypoint or turn. As in, "L in 1.6 miles on county road 886"
The big screen at center dashboard shows your location on the map, and you can zoom in or out. It also is showing traffic conditions, such as work zones and congestion. What I like about this new age of phone based GPS is you never have to give anyone directions to your house, and you say to them "text me when 20 minutes out" and the device makes it easy for them to do so.
