Mollasses or Oatmeal, or Ginger Snap tend to be the default. They are tasty, and go well with Coffee.
Cinnamon, Cardamom, Clove or Allspice and even a bit of Pepper or Cayenne adds a nice Zip. Letting cookie dough age overnight in the fridge makes them brown up nice and they taste better, maybe the flour hydrates or something like that.

It is good to keep on hand for a variety of uses--homemade teriyaki sauce, minced into apple pie, and just to eat.

(my new guilt-free dessert every day hack, also involving ginger, but dried and ground: I CAN have dessert every day if I make it out of vegetables. My carrot cake recipe uses 1 1/2 lbs of grated carrot, plus dried cranberries, and nuts. I alternate making and having that with making either sweet potato or pumpkin pie. Vegetables ROCK for dessert. Not gainnnzzzz worthy, I know, but still delicious, AND has vegetables!)
