Food Thread: Ova There! That Looks Delicious!

Plain old Deviled Eggs! They are a staple on most French bistro menus, and they are usually delicious. There's nothing complicated about it, and in fact they keep them quite simple. That's a pretty presentation in the photo, and I thought that the pickled mustard seeds were a great addition, but in the end, it's just eggs and mayo, which is perfectly okay with me.

They are sitting on a base of very good potato salad, which was nice and tart to complement the richness of the eggs. It's not a complicated dish, and is well within the skills of most every home cook. And it looks great, so you can show off to your pompous cousin who fancies himself a chef and mixologist!

That was the other appetizer! Excellent tomatoes, presented novelly and beautifully. That's a big blob of whipped cheese in the middle...it's far lighter than it looks! And the admittedly ugly looking garnish is a blended olive tapenade, but not sharp at all. In fact it was delicate, and delicious.

Again, there is nothing complex and outside the skill-set of the home cook, but with a little skill at plating you can look like a kitchen rock star!

I was given a Sodastream machine, and while I very much enjoy seltzer, I have been suspicious of these machines, because...um...they're new and different and I cannot abide change!

They do work, but there is nothing like a freshly opened can of seltzer. It seems like the bubbles are more concentrated, abundant, and most of all, longer lived!

Do any of you use these machines?

This is about as decadent as potatoes can get. Classic French Aligot. Lots of butter? Damned straight! But now add a ton of cheese!

I have had this dish a few times, and it is the sort of food that after a couple of delicious spoonfuls, you look at the rest of the meal with complete detachment, and think fondly of your next destination; the couch.

Any scotch or bourbon I've had was greatly improved by the good company I was with.

Grilled pork shoulder steaks with fennel and apricot jam and pickled kohlrabi

That jam looks interesting. Fruit goes very well with pork. I'll reserve judgement about the fennel, and the kohlrabi is suspect.

So, just like most recipes, I'll be particular about which parts I use!

I thought France would have good garlic, but the Frogs seem to have the same problem we have in the U.S. At least they don't import filthy garlic from China. Pork is great here, but no game, so send all of your extra antelope to: cbd dot aoshq at gmail dot com.

Who are those poor deluded souls We know who shakes their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

$1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

Me too. Aldi's had smash burgers for $2/lb and microwave jalapeno bacon for $.89/box. So, we're having that with their chipotle pasta salad box (less mayo, added halved cherry tomatoes and doced cabbage), air fryed okra, and strawberries and grapes.

I may or may not have bought 4 burger boxes and 6 bacon boxes...but when it's a deal...

They had fun but being their first time out, the little brats didn't quite understand the concept of going back to the coop when I started shooing them. Fortunately they aren't as horrified about being picked up by the Tall Thing What Brings Food (I suspect the breeders handled them often as chicks) so they weren't too difficult to round up.

Yes on the Sodastream! I hit every bottle with the maximum setting (#3) and add a few drops of Bubly flavoring. You can buy tonic concentrate, too.

I have a SodaStream. I rationalized the purchase to get away from all the sugar/high-fructose/corn syrup used by the conglomerate companies. Turns out it was a good rationalization.

I'm a big fan of Orange Soda. So, I make the sparkling water, then the syrup separately (which is how SodaStream operates). You don't carbonate anything with the syrup already in.

So, fresh squeezed orange juice (always have a collection of juice oranges in the fridge), 1/4 cup of honey, maybe a few orange bitters to taste. Ice cold over ice....better than anything you'll get at the store, and better for you.

I don't penny-pinch with the bottles. I purchased three additional Sodastream to add to the two bottles that came with the machine. Each bottle is stamped with an expiry date. So far, so good.

We have a couple of those. The secret to a successful tray full of deviled eggs is to boil a couple more eggs than you need. So if your tray has twelve 1/2 egg spots then you need 8 eggs. There always one or two or three that don't turn out quite right and you have to eat them and maybe give one to spouse.

63 We have a Soda Stream and I love it. I keep a bottle in the fridge ready to be aerated and usually drink it down in the course of the day so the bubbles last long enough. I find cold soda water to be refreshing. And I use it mixed with homemade kefir (yogurt drink for those who don't know). It doesn't interfere with the health benefits of the kefir, which are many, or the tart flavor, it just adds a sparkle to the texture.

BTW, our Soda Stream has lasted for several years so far.

Now that a dozen can be had for under $3 again (offer void in California), you can boil up a smorgasbord of these handheld appetite suppressants. Seriously, I get into my tenth one before I realize I've just downed five whole eggs before dinner. Some of the more notorious variants:

Hunan style: Replace half the mayo in a standard deviled egg with prepared mustard (Colemans would be a good start)

Nova Scotia: Mix in about eight ounces of smoked salmon to the cooked yolks. Garnish with capers and/or minced red onion

The Benedict: Replace the mayo with a freshly made hollandaise. Bacon garnish is highly suggested

Skittle eggs: Soak the cooked, unshelled eggs in beet juice, and/or a solution of tumeric or onion skins, and/or green tea. Soak for 3-4 hours. The whites will take on the color of the soaking solution.

Cool Hand Luke could probably knock off a few dozen as a light snack...

79 Deviled eggs were a standard thing growing up. Usually sprinkled paprika on them before serving. They never lasted long.

Last time I made them, instead of paprika I used zaatar. We have good paprika from Spice House, not the rusted 40 year old can most folks have. The zaatar adds even more depth without overpowering everything. (The paprika from Spice house is worth it. Vastly superior to anything on the grocery store shelves.)

I never worry about having too much, so I ignore online scaling "suggestions" - instead, I serve stuff I know I can use for myself later in the week, if I have extras. I remember one youth group, I made 50lbs of chicken thighs for 55 people...and apparently, it was good, so there was nothing left. Directors came up and thanked me for scaling so high b/c it was the 1st time the teen boys felt fed...

94 My wife has been getting tired of Italian meatballs, so I did some Greek ones with lamb & pork, bread crumbs, cumin, coriander, fresh oregano, cinnamon, and goat cheese. Mild farm cheese, not dry crumbly stuff.

The sauce is basically whatever tomato sauce you like, but I like to add in some fresh fennel.

You make them into little cigar shapes instead of balls, brown them heavily, and then finish them in the sauce at low temp.

When we moved my mom to a senior apartment, we went room to room with a legal pad with 4 columns: Yes, No, Maybe, Heirloom/Gift.

The "No" stuff was immediately boxed and taken to Goodwill. "Heirloom" list was distributed to family with a two-week deadline to claim something; 4 weeks to retrieve stuff. It was quite easy and great for my mom.

The whole process was over very quickly and reasonably painless.

Mom had designated some recipients plus there were no arguments among family members. The "heirloom" stuff that was unclaimed, I kept. When Mom died five years later, I sent many of those things to her numerous friends as a memento and as thanks for their friendship.

All-in-all it worked out well and took the burden off mom and reduced her anxiety tremendously.

Nah. The chocolate is there but doesn't dominate. It blends in. I'd go so far as to say it's what makes this cocktail. Otherwise it's like a ton of other tiki influenced cocktails out there.

Check Cabelas or Bass Pro. relatively high capacity slicers are not that expensive. I have one for slicing when we make a big batch of bacon. it is great.

I've never used an electric, battery or corded, can opener that worked well. We've used a manual one for decades. I don't recall the brand but Oxo makes a similar style. Unless you have hand issues, certainly possible, try a manual one.

Yes, I always have a Swiss Army knife in my pocket. And yes, the can opener works. Kinda awkward compared to the usual style but it does work. I'll leave the P-38 and P-51 styles to the infantry.

We eat a lot of ham and/or turkey sandwiches for lunch because it's fast and easy. I've been buying pre-sliced meats at the local grocery but I finally noticed how much cheaper/pound I can get unsliced meats at Sam's.

I do something in a similar genre. With the smooshed yolks, mix tuna, garlic powder, mayo, fresh-ground black pepper, shredded sharp cheddar (Tillamook if you can get it in your location) and just a wee bit of liquid smoke.

If you wind up with too much to fill your egg halves (which you almost certainly will), the excess can be refrigerated for an awesome dip or sandwich filling.

Haven't checked long range but weather wise, temps are pretty moderate here in the Nashville area. We usually get one good snow but that's about it. Having said that, the older I get the more food anxiety I have. Pretty well stocked up. Justin cases.

We always get the opposite of the forecast...so I'm assuming a relatively mild winter.

That said, I may have picked up some pinto bean cans and tomato soup and product cans, b/c tomato soup and chili are winter staples (I make a homemade garlic bread crouton for my bone broth-added tomato soup to make it a meal, since I can't do the grilled cheese).

Something that's come in handy a few times is an inverter that takes the batteries from your power tools (Ryobi in my case, but I think the other major brands have similar units). It has 120V outlets -- enough amperage to run some lamps (preferably with LED bulbs), a radio, etc. and USB charging outlets so you can run your computer and charge your phone.

I got a peck of Cortland apples yesterday, so I picked up lemons today. Citrus juice keeps apple slices from turning brown. A bag was $1.25, which I thought was reasonable.

173 Just got home from a camping trip with my cow-orkers. It a was a great time, and we got to eat a lot of different foods. First night was burgers and the usual grilling stuff. But one guy made a dutch oven pineapple upside-down cake that was awesome.

Second night was a weird fun thing called walking taco, which is just single serving tortilla chips bag filled with spiced ground beef, onions, 'maters and cheese. Super fun, and simple.

Lots of beer, mostly local. And some bourbon. Larceny, and another whose name I cannot recall right now.

It was fun. And I was able to get away from the shitshow for a while. Heard an elk bugling this morning.

My wife brough home one from the church rummage sale, and it is chrome and I suspect the manufacturer was bought up by Rival in the early 60's.
I don't recommend it because it is a pain to clean, but I use it to slice hams and corned beef into lunch meat

191 For the winter/emergency pantry I'm checking our supplies of flour, rice, canned goods (especially tomatoes), crackers, dried eggs and dried milk. We already have a good amount of local honey, salt and sugar. Probably should check the supply of tellicherry pepper corns from Spice House. We use a LOT of that in cooking and on the table.

The nice thing is if we don't need it all we'll use it at some point anyhow.

Another thing - once a year, go through prep stuff and anything within 3 months of the expiration/use by date that you don't feel like making in that time, donate to your Church food drive and replace. Would it still be good a few years from now - very, vert likely. But in an emergency, wouldn't you be happier not worrying about it, while also doing a good thing? Yes.

241 CBD, I got that high carbon steel pan. Yes, it is difficult to season. It was supposed to come with some kind of seasoning and the first thing I tried was bacon. It might as well been glued to the pan. Since then, I've seasoned it myself four more times and it's getting better.

I recently fried two steaks in it and that went well enough, basically nonstick now. I guess I'll see how it goes. And it's heavier than I thought.

I was hoping it would be less than half the weight of my Lodge cast iron skillet but it is maybe 2/3 the weight.

Horseradish and a little Worcestershire sauce mixed in with the yolk and mayo does a lot for a deviled egg.

I have had the same experience with my soda stream, which was also gifted, (which says something) and have found using hard water, getting it real cold and running it through a couple times gives a little better result.

Speaking of tomatoes, anyone ever grow Azoychkas? I'm growing one this year (given to us as an extra); they're quite delicious. Smallish fruit (at least mine), full tomato flavor with a bright almost lemony tilt to them.
