Food Thread: Bread, Champagne, and...Viking Flat Bread?

That is the bakery oven in a chateau called Chenonceau. It was built in the early 16th century, although I imagine the ladies of the house insisted on new kitchens every now and then, but the oven probably didn't change much.

What I found interesting is that there are plenty of people today who bake bread in an identical way. Big, heavy masonry wood-fired ovens hold heat wonderfully, and can produce fantastic quality stuff. Add in the bannetons (the woven-reed bread forms), which look the same today as they did in the 16th century, and what has changed?

Nothing. I'll bet the bread was good!

Apparently all the cool kids in biomedical research have decided that there is no safe amount of alcohol consumption. They say, with absolute seriousness and tremendous gravity, that the number of cancer deaths has doubled in men because of alcohol.

And typical biomedical research. If we listened to and acted upon 1% of the crap they pump out, we would be dead from malnutrition, because apparently every food causes cancer!

Twice a year a lot of champagne goes on sale in France. No idea why, and I don't much care, but I will take advantage of those sales. That bottle was about $27, and delicious! Straightforward flavors with delicious, fine bubbles....exactly what reasonably-priced Champagne should be. Yes, it is comparatively pricey, but Champagne requires more work than still wines, so the premium makes sense.

Sadly, only the big Champagne houses send much Champagne to the United States, and they are the expensive ones. The small "Grower" Champagnes are usually much less expensive and as good, if not better than the name brands!

This guy cooks like a normal human being. He makes messes and mistakes and tastes his own creations. It's wonderful! Julia Child's Epic Baked Alaska with COGNAC LAVA! probably isn't something I would try, but he's amusing enough that I will watch his videos even if I don't need cooking tips.

Kindletot mentioned that he is playing with his Japanese Milk Loaf recipe. I had no idea he was an actual foodie who seems to be approaching this with an analytical bent that puts my grunting attempts to shame!
I am playing with the Shokopan recipe for bread, it uses a roux to gelatinize flour, the pre-cooked flour to keep the finished loaf softer and finer crumb. This seems to make a finer crumb than potato bread.

1 Tbsp flour
1 Cup water
1 tsp salt

Disolve the flour and salt into the water and cook it into gravy. At this point you have either a "roux" you can mix your dough with, or you have library paste. Choose carefully
Let this cool, either way.

1 Cup flour
1 Cup water
1 tsp malt

Mix this together to let the yeast activate while the roux is cooling.

Mix the yeast mix together with the roux and then beat in about 5 more cups of flour. It needs to be firm enough to be handle and be smooth, but it will most likely to be sticky.

To handle the sticky dough you might try wetting your hands first, it is not ideal but you wind up not sticking to the dough

Let the dough rise in a warm space to double in size, twice, punching it down each time, and then turn out onto a floured board shape it down to fit in a greased loaf pan.

Let the dough rise again to just crest over the top of the loaf pan. Slit the dough top and bake at 400F for 40 minutes, then turn off the oven and let sit in the oven for another 10-15 minutes, then turn out of the pan to cool on a rack.

This is a recipe I put together while trying to work out a recipe for German brotchen using general purpose baking flour. I am still working on the brotchen

I didn't add any pictures because bread dough is as boring as . . . Well, bread dough.

I have made this stuff and it is good. Actually, I have made the rolls, not the loaves, but it should be the same.

I thought France would have good garlic, but the Frogs seem to have the same problem we have in the U.S. At least they don't import filthy garlic from China. Pork is great here, but no game, so send all of your extra antelope to: cbd dot aoshq at gmail dot com.

Who are those poor deluded souls We know who shakes their Manhattans! These are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

$1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

The problem...or the solution...is to buy lots of bourbon, take tasting notes, and eventually arrive at your favorites! It should take forty or fifty years, but it is worth it!

26 Just went out for potato skins with bacon & cheddar. Son had a hard cider and I had a coffee drink with Irish cream & butterscotch schnapps because coffee drinks with liquer are a rare treat for me. Spouse shared the bacon skins but only had club soda because he has gout and can’t drink. They will probably have sirloin kabobs with vegetables and mashed potatoes (made by me) , but after the potato skins I am not hungry.

31 Our 13-year-old grandson has a lot of "stuff" so for Christmas we gave him several coupons for cooking lessons with his grandfather (husband) and me. He was really touched by the gift and this week--with school being over--he collected one of the coupons. We made homemade burgers and French fries fried in beef tallow. It was all really delicious and he was very proud of our collective work.

Today we made another batch of fries and refined the recipe by crisping them up in the air fryer after the initial frying. I'm a pretty tough self-critic but these fries were pretty amazing.

45 I used that bread recipe to make a fake focaccia, too. Half that recipe, double raised and punched down before shaping, with a mix of tomato spaghetti sauce and anchovy powder (my wife loves it) smeared on top, and whatever extras you want, and shredded mozzarella sprinkled over top.

I don't call it pizza because the bread gets about an inch thick and stays tender, and I fear vendettas

With energy and labor costs and taxes where they are, the actual price of the food is a rounding error. So the price difference between a real restaurant and Mickey D's is becoming a rounding error.

That's why the Clown wants you to order your own food on a tablet before they cook it on a robotic grill. They can't pay an illiterate/innumerate $17 an hour to mess up your order for you.

I used to buy from Wild Fork because they would ship to me. But they just opened a store about three miles away. Very convenient, and the quality is good.

The lively and adventurous Mrs naturalfake isn't here right now, so I can't give you the exact recipe, but it's simple.

She flash fries the shishito peppers(no batter or coating) in hot oil then quickly toss them with miso and sesame seeds while they're still hot.

Great beer food! And nice as a side with grilled fish or meat.

132 Had some excellent food up in New Hampshire this past weekend. After meeting up with CBD, RMBS and his friend we met RI Red at a place right down the road from the hotel. A basement bar that served excellent Italian food. Being I was on the road for 7 hours I scarfed down the food like there was no tomorrow. Delicious.

The next day we met a diner for breakfast had a delicious Western omelette and proceeded to go and do what we were up there to do. (Read about in the next thread ;-) )

After the activities we decided to go the a Mexican place that again was nice a close to the hotel.
Awesome food. I had a stuffed jalapeno as a starter and ordered the paella for my main. The only negative about the paella was that the mussels were not fresh. Other than that it joined the clean plate club.

151 Just made a pot of chickpeas from dried beans. These things were so old we couldn't recall where or when we got them. Soaked overnight and simmered for about two hours. I'm surprised at the difference from canned versions. These are not so mealy and have, somehow, a fresher taste.

The canned are convenient but I think we'll save those for hummus and use the dried for soups. I'm still looking at other ways to use them as more carb friendly than potatoes.

I have used dried chickpeas for hummus and the results were delicious. One advantage of using dried is that you can cook the hell out of them and get rid of most of the shells. That way the hummus is incredibly smooth.

My best trailer park food which everyone loves...

Find a microwave safe cup. Put olive oil and (vegan) butter and a large scoop of jarred chopped garlic and some salt in the microwave and melt it for 30 seconds. No measuring besides eyeballs. Stir.

Then take bottom end, uber-white going stale hamburger and hot dog buns, open them up, and put a normal size drawer spoon of the topping on each one and spread it. Nope, no measuring spoons. Weasel recipe here.

Broil in the oven 3-5 minutes (sorry Weasel, 3.5 minutes is as low as I can go). Watch these suckers get devoured and be told it's world's better than almost any sold garlic bread outside of high end Italian places...

You can never go wrong with a food that comes in aerosol form.

Remember the "squeeze cheez" they used to sell? It came in a little plastic chub like ground beef or sausage.

It had enough MSG to stock every restaurant in China, but it hit the spot after a night of drinking.

Also, does anyone remember the old-fashioned brick chili? It came in a shelf-stable (more or less) brick. You added it to your own beans (if desired). We used to eat it fairly regularly when I was a kid, back in the Paleolithic.

Also can't do corned beef hash...sorry guys. I'm all bacon for breakfast. No ham, no sausage, no deviation (okay, I'd do a steak, but I have other concerns, like bankrupting myself, if I got that habit)...unless it's in gravy...then it's okay.

Let’s see, the vegetable contents include tomatoes, tomatoes in tomato juice, bell peppers, red bell peppers, green chiles, green chile purée, chile sauce (includes some garlic), seems to be thickened with oatmeal and corn flour. A touch of water if you overboil it or like it thinner

Warm together and add either parm or nutritional yeast to the top...protein bomb for your sandwich of choice...or a nice soup for a low salt salad...

2 minute recipe at your service (yes, you can add chopped veg or herbs to the top, but this is the simple "I have nothing" version)...

225 There was a great place in the Hill Country that used to serve Chicken Fried Steak dinner and Peach Cobbler and basically that was it.

Great Food. Best CFS I've ever had outside of Mom's.

Their gravy used CFS crispys and drippings and breakfast sausage. Excellent combo if a bit unusual.

And wonderful Peach Cobbler. Probably the best evah.

We used to drive about an hour from my folks place to get there, but it was worth it.

And then one day it was gone. Couldn't get enough folks to make the long haul i guess.

248 Since we are pretty good at using diet, within reason, instead of strong medication to deal with our mild diabetes, I'm always looking at labels of prepared foods. Since canned soup was mentioned, I'm always surprised at how high the carbs are. Even a simple canned tomato soup is high. Not sure why. We keep a few cans of soup on hand for emergency provisions but I make most of the soup from scratch these days. And mine tastes better. Enameled cast iron dutch ovens are our friends. They aren't just for bread anymore. :-)

257 In college I had a friend who would eat dog biscuits as a snack. She swore they were not bad, so I tried one. They were not bad, even tasty, but they don’t have the same standards as human food, so there were noticeable rat hairs in the biscuit. I suppose the dog biscuit was fired enough it sterilized the contents, but that was unsettling. Didn’t seem to bother the girl though.

A canned veg soup is almost all carbs b/c it's all veg...there's no fat added and usually little to no protein. It's why you want to expand with a fat or protein to balance it.

Like my can of tomato soup - the can (which you split with 2, once you add the bone broth) has 50 carbs in it. Split, it's 25, which isn't bad for a veg side - but it could be better. Adding the bone broth brings the protein in the can from 5 grams to 25 grams (or 12.5 split). Thus, a better option for balancing (but you still need a fat source for lunch - parm is okay, but something more helps)...

That makes sense. How bad would dog food have to be before a dog wouldn't eat it? Dogs are scavengers. If they eat something completely unpalatable and hork it back up, they're likely to give it a second try.

India? Actually low on my list, for various reasons, but fear not one of them.

Japan. More orderly, cleaner, than probably anywhere you've been. Culture of politeness, especially to foreigners. Not many faux pas you're likely to commit, and in the remote possibility you do, nothing will be said, or smiling "help" offered, at worst.

Never had an off moment or experience - small towns in Indonesia, Borneo, Singapore. And these days "American" conveniences/standards more prevalent all the time.

There is a brief season for small.flying dish on the Black.Sea. Rajai ran a little restaurant in Sinop. When the season was in, he'd get some.of the fish fresh off the boat, and prepare Fish Sish. OMG!!!
Cubed, skewered, fried in butter and garlic. Served with rice and beans. Best meal I had in my year there.

When I was in Augsburg, the worst dining out was Chinese. Pricey too. Germans, and their Asian imports just could not replicate Asian food. My local Puyallup Panda Express makes it better than anything I found in Europe.

Agreed. I keep broth I've made in the freezer and throw some in when adding the liquid. Also, I saute most of the veggies in GOOD olive oil and use fresh cracked black pepper (there is a mill by the side of the stove) and herbs for seasoning. I often add kidney beans for the protein or chicken if I have any. I like to adjust the salt to taste. Not sure of the carbs but my glucose readings are better after my soup than after canned. All this adds maybe ten minutes to preparing the soup.

Gochujang is what I'd use and see how close that is. Just head to HMart, buy a container of the paste, and rub it on. They have other jang pastes, but that is most common when someone calls something "Korean" - if you want to make it yourself, it's normally made with a mix of red chili powder, glutinous rice, and fermented soybean powder (and some other things).

I don't know. The fire was on inside of the hood in the center. I'm thinking build up of carbon and creosote. Normally, I just pre-heat before grilling and wipe down the grates twice.

That was always our standard for really bad food. We were trailer camping in the mountains and were out of food and options one evening, so there was this weird little gas station down the road that said they sold pizza. Ended up being cold tomato sauce over a big matzo cracker, none of us could eat it. Someone said “give it to the dog” a half husky who was usually ravenous. We set it on the ground and he sniffed it, then looked up at us like “are you f’n kiddin me???”
After that, the ultimate low standard was So Bad even the Dog Won’t Touch It.

You reminded me of a favorite simple bacon thing, appropriate now with grilling season everywhere.

A topping for burgers. Just put some fresh rosemary and black pepper on good bacon, bake it in the oven how you usually do. Amazing on top of a burger (or by itself, or so I was told, or something).

When I was in Augsburg, we learned that we could eat in the German workers mess hall and on Thursday, it was jager schnitzel day. Damn!!!
Even Mrs D. made a point of joining me for lunch.
Then Saturday at our little golf course for schnitzel sammiches.

327 There was a great German restaurant in Baltimore called Hausner's, (IIRC). One memorable dinner consisted of chilled cantaloupe soup with hasenpfeffer as the main course, washed down with copious amounts of beer.

337 Sweet, Diogenes. I was single when I was in, but my girlfriend had Mess Hall privilege a few times, and she was shocked by the quantity/quality of the food. She was Dutch S. African, lived in Namibia, studying abroad in Germany, and her go-to lunch snack was Gerber's baby food. So weird taking her for waffles and bacon and eventually out for Prime Rib and Whiskey. Alas, I ultimately ditched her.

Wow, I read that wrong the first time.

There was a German man and wife that used to cook and sell bratwursts at the local farmers' market. He also had a spiced sauerkraut on hand. The brats were out of this world good, the kraut was tasty (although he had it hot and I prefer it room temp). He sold packs of them too, fair price for the quality. I haven't seen him there in years though, unfortunatley.
