Main difference is tensile strength. There are three common SAE grades, 2, 5, and 8. Standard is head markings, seen here: https://tinyurl.com/293zhn45 It's the tensile strength of the steel alloy used. Yield strength and all that is also important. Grade 8 bolts, the strongest commonly available are generally goldish colored as opposed to silvery zinc. This is one of the big distinguishing features. They make, or at least used to make, fine thread carriage bolts, too. The lower mounts for the front shock absorbers on "later model" Studebakers used 5/16-24 NF carriage bolts. Probably grade 5, too.
