Is anyone surprised that Boar's Head is running more than one filthy food production facility? The USDA has released a series of non-compliance reports linked to Boar's Head following Freedom of Information Act requests from several news agencies, The Associated Press reported Tuesday. The findings from inspections of Boar's Head plants in New Castle, Indiana, Forrest City, Arkansas, and Petersburg, Virginia, date back roughly six years and flagged numerous violations, the AP said. The outlet pointed to multiple descriptions in the reports, including equipment "covered in meat scraps," "dry crusted meat from the previous day's production," "dark, stinky residue," and "unidentified slime" and "an abundance of insects." I am confident that most of their plants are substandard. But...What the hell? the findings date back six years? Why is Boar's Head still in business? That is an abject failure on the part of the government agency tasked with holding food production in America to a minimum standard. Apparently "dark, stinky residue" is just fine in our food! I was avoiding Boar's Head already, but absent a complete turnover in its corporate ranks and a radical change in their corporate culture, I will never again buy any of their products. But the government deserves accountability, and I hope Donald Trump's nominee for Secretary of Agriculture (Brooke Rollins) takes some scalps for this monumental screw-up. Well, this looks interesting! I love Scrapple, and I always order it any time I am eating breakfast in Pennsylvania. I have never seen it anywhere else, but there is always hope. Except, it only has pork butt and maybe pork hocks or rib tips! No ring meat, no intestines, no eyeballs, no ears, no... Harrumph! There are a bunch of interchangeable chicken dishes that are common on the menus of Italian restaurants in America. I don't know enough about Italian food to explain the origins of these dishes, but Chicken Piccata, Chicken Francese, Chicken Florentine, Chicken Saltimbocca, Chicken Sorrento, and the one I usually don't order because someone (not me) is allergic to mushrooms: Chicken Marsala, are standards. And that is not a criticism. They are pretty simple to make and can be delicious. They are smart dishes to have on a restaurant menu because they start with the same base chicken, are a quick dish to make, food cost is low, and prep is easy. Nobody goes to the neighborhood Italian joint for a rarified culinary experience. We go because they are often family restaurants (at my favorite, the bartenders are the owners!), the food is tasty, they aren't ripping you off with expensive wine, and the waiters aren't sullen actor wanna-bes. Anyway, back to mushrooms! I love mushrooms. Even the commodity white button mushrooms are fun, and some of the rarer (and more expensive) ones like Morels are absolutely spectacular. I was going to illustrate this section with a photo of "Balut," but I decided that I just don't want to look at it more than once. I have eaten a bunch of these, but I absolutely draw the line at eating live vertebrates! And yes, oysters and clams are alive (or should be) very close to the time of consumption, but they are invertebrates with a rudimentary nervous system. Why is Boar's Head still in business?
I can only speak for myself, but the premier hotel in Charlottesville, until just recently, is the Boar's Head Inn, and I suspect more than a few people figure it's the same company, so it must be good. I am embarked on the recreation of a broetchen recipe. Broetchen are a small German bun that are crunchy outside and light and airy inside.
Still working on it, I think the problem is American bread flour has too much gluten so it comes out tough. I have had some success in adding in some Scottish oats, but that is not the solution, and I have had more success in how I treat the fairly wet dough, but stretching and rolling it. We got our beef quarter on Thursday. 224 pounds of beef takes up most of the space in my freezer!
Pro: freezer is more efficient and less prone to frost if full, we will not run out of beef for at least two years. Con: there is no room for any pork or chicken or... anything, the boy spawn requested the heart which I had to request from the meat locker. Ick. He took that away with him and will cook it his own self. I now want bacon. Or a tuna sandwich. Perhaps grilled cheese is the way. Boar's Head is available here but a couple of the grocery stores offer products from Dietz & Watson (sp?) instead or in addition to BH. D&W has pretty decent brats also.

FenSpouse and son are making a gazpacho. Yes; I know. It's cold and gazpacho is better at a time when the weather is warmer, but son loves gazpacho, and he's trying it out for some soup cook-off which is taking place at a local Evangelical church next week.

Polish guest is back, so I'm cooking for 7 again...
Tonight, it's meatloaf (Italian style), roasted cabbage, roasted carrots with ginger and honey, strawberries and grapes, and some pizza crust bread sticks (last bakery pizza crust wasn't needed for pizza, so this is a use up - everyone gets 1 stick). Now that he and my daughter are back, I need extra sides at meals since I really don't want to add 50% to my protein amount... It's probably healthier having all the veg sides. And for dessert (that certain people couldn't avoid), I played with my guest's gifts of rose water and strawberry rhubarb syrup into a Duncan Hines white cake made with whole eggs...same 2 syrups into 1/3 of a vanilla frosting...and have a glazed bundt cake that my son said tastes like "a vanilla frosted donut with sprinkles" from Duncan Hines. Having spent a fair bit of time in food quality, the Boar's Head thing makes a certain amount of sense if the overall company has shitty overall control. Profit margins in food are very slim and production (as in all industries) always want to ship everything and run continuously. The Quality dept has to have support from the overall leadership or they are fucked. I have seen it a lot, over the course of years, in a lot of industries besides food. Some places are great, but they are a night and day difference from a lot of the others.

When we took the young man out for her birthday about two weeks ago the French restaurant served a delicious roasted chestnut purée soup with some whole chestnuts in it. I would like to find a recipe for that because I had never had a chestnut soup before.

It was the only produce item type they would eat, so we always had it. Now, I can add 2 veg dishes (or a potato and a veg) and still have the fresh fruit (which is the easiest to prep and plan now - and they even eat melons/dragonfruit/crazy fruits now, so even that has more options for loss leader buys)... I read that the secret ingredient in great gazpacho was sherry vinegar and I've been using it in mine ever since. Don't know if it's true, but husband and I both REALLY like my gazpacho.

I made a butternut/sweet potato soup yesterday because that's what I had I needed to use. I also made a baked potato soup yesterday. today I'm baking a loaf of French bread and Italian sausage soup. it's a lot of soup but it's cold outside and it's easy to warm up if someone is hungry. I'm not cooking the rest of the week. It's been a while since I've made bread from scratch so we'll see how it turns out. I need to gat a new sourdough starter.

Incidentally, in honor of the current snow storm I loaded up yesterday and currently have a HUGE pot filled with authentic PA Dutch Chicken Corn soup simmering to perfection. Authentic means the addition of pieces of hard boiled eggs and homemade dumplings to the usual mix. White shoe peg corn, carrots, onions (white, cause I'm racist apparently), chicken of course (white meat only, because, you know), spring onions, various cornucopia of seasonings. And, of course homemade chicken stock (store bought bouillon tastes like salted medicine.)

So much in terms of food quality is now in the hands of individuals and companies that are willing to do a good job. I just assume the government regulatory bodies that are supposed to inspect regularly aren't even doing their jobs anymore, and they're not going to, either because screw you, that's why.
Wash all raw meats and vegetables thoroughly. Cook things to proper temperatures all the way through. Above all, trust your senses, especially your nose. If it smells even the littlest bit "off" from normal, take what you bought back to the store and demand a fresh one of whatever you purchased and do it the same day so they can't refuse you. Back in my college days I had a roommate from Nagaland, India. He taught me to make curry, which we would then put on rice. He even taught me a better way to cook white rice. Best compliment I receive from him after a couple years is that I could cook a curry dish better than a native Indian. The Boars Head situation is sad to me. As someone who's been involved in the meat industry most of my career (as a supplier), I can attest firsthand that they used to be the absolute standard bearer in terms of producing high quality products. They rejected products for very trivial/minor imperfections that no other manufacturers would think of doing. In visiting their facilities, you were asked to not speak with the machine operators so as to avoid distracting them from their work - I never experienced that in the dozens/hundreds of other companies/plants I've visited before or since. They charged a significant premium for their products, but I was willing to pay it based on what I saw of their operations.
I believe they were a family owned/run company based in Brooklyn, but I suspect recent retirements and management changes must have resulted in the erosion of standards. A sadly common occurrence in corporate America - anything that happened before I got here probably wasn't that important, (especially if there's nothing on YouTube to verify what these old guys are yelling at me about).... Taste matters more than looks. Ugly carrots that TASTE good, that's fine. I even like Olive Garden. You get a ton of food for the money and their soup and breadsticks are great. I cook it in a crock pot for 4-6 hours, let it cool and then slice it. It is usually too salty still, so I will poach the slices gently for a minute or so before making them up in sandwiches. A thank you to Moki (pita bread) and Ben Had (skillet bread) for their recipes. They both worked out great, were easy to make even for me, and were delicious. I have to remember to roll out the pita dough thinner and will try Ben Had's recipe a bit thicker. These are as easy to make as biscuits.
The pita bread is excellent for scooping up mass quantities of hummus and baba ganoush. The skillet bread (gotta try adding some lemon zest like she mentioned last week) is delicious. I’m willing to pay more for good scotch than bourbon. My go-to bottles are in the $75 range (Laphroaig 10, Lagavulin 8, Ardbeg 10, Abelour, etc). I think you can taste a difference up the scale to about $200. After that it gets very subtle. But I once had Macallan 30 and it was the bomb.

The weather is cold, windy, and sleeting and this week is supposed to be frigid. And that means two things: making a big pot of chili (Kent Rollins recipe) and a bigger pot of chicken and vegetable soup. Fifteen minutes to prep and then a few hours at low temps. I've become a fan of long, slow simmered recipes. New England baked beans are in the same category. Ideal winter weather chow and I have time to read several chapters without having to check the pot. Then there's the bonus that both freeze great, which means a couple of weeks of dishes for a quick reheat.

There was a Korean restaurant in New Jersey...I want to say Union City...anyway, I'd watch the sushi master take a live fish out of the tank, club it once on the head, then proceed to slice the flesh, season it, and serve it up while the gills still moved. Always wanted to try it. The sashimi they served was outstanding. Went there a few times and my friend and I were always the only round eyes in the place..

Here's the modern version: 3# spareribs, 3 1/2 C beef broth, 1 T salt, 1/2-1 t. pepper, 1 medium onion fine chop, 1 t. parsley, 2 bay leaves, 2 C water, 2 1/2 C corn meal, bit of flour. Cook everything together (except corn meal) for 2 1/2 -3 hours. Strip meat from bones, and fine chop it all or use food processor. Bring all back to a boil, add corn meal and cook about 10 minutes. We've been using Kerry Gold butter. More expensive but definitely worth it. So much better than Land O Lakes and other supermarket brands.

The few restaurants we used to frequent have all gone out of business for one reason or another. Sometimes the owners retired, some lost their leases, some couldn't make it past the Covid BS restrictions, some couldn't survive the Biden economy. The result is we are willing to spend a bit more on basic ingredients for our cooking: Kerry Gold butter, better quality flours and grains, locally produced honey, better cuts of meat. At my age I don't eat a pound or more of steak as an appetizer. A six ounce portion does the job these days. That stretches the meat budget nicely.

I always go for the local brands. There used to be a creamery up in north east PA called Leiby's Ice Cream. I knew it was good stuff because you could drive by the farms where they got the milk. The farm's photo was depicted on the ice cream container. They closed down in 2007, but a bunch of relatives re-started the business in 2017....and it's still good stuff. Had to run over and save the last piece of my cake for later...a whole dang cake is gone in less than 6 hours. Spouse said the problem was it was too good. I threw it in the microwave so I can have it later b/c it's a little early for dessert.
Although this is how you make carbs without eating them - just have lots of teens and young adults, especially males, around, and make something tasty... Gonna now figure out how to use rose water in a savory dish b/c this was a win (with the strawberry rhubarb combo)...less seems to be more (and add slowly til it's where you want it)... Thanks to my loving ginger we had a tremendous day here spent in front of the fire with sticky buns for breakfast (w/hot chocolate & marshmallows), followed by just lazing around doing nothing with one exception, and that was roasting chestnuts she found at the grocery store yesterday. Those things are absolutely addicting. Weather today was totally nasty, icy spots from freezing rain plus wet snow accompanied by a wind that was only 8-10 mph, but penetrated clothing like it wasn't there. I never did venture outside.
